It is my family recipe and an integral part of so many family events.

From birthdays to weddings and so much more.

This cake have many, many versions and today I am going to share one of my favorite.

  • Please, make the filling 2 days before you plan to make the cake.
  • Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).
  • Spray with baking spray and set aside.

Ingredients

6 large eggs (organic)

3/4 cup sugar

1 cup flour (AP)

1 tsp baking powder

1/8 tsp salt

1 tsp cornstarch

FILLING

1 1/2 cups heavy cream

2 1/2 cups Nutella

3 oz melted chocolate

1/3 cup raspberry jam

Vintage Grandma’s Nostalgia Cake from the best food blog 5starcookies

Instructions

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

Sift the flour, cornstarch, baking powder and salt.

Add into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Bake at 350 for 15 minutes.

Cool completely. (for about 2 hours)

Filling

Melt the chocolate using a double boiler method.

Cool it.

In a mixing bowl mix 1 1/2 cups of heavy cream for about 3 minutes.

Add Nutella and chocolate and mix until incorporated. (1 minute)

Keep in the fridge until your cake is ready.

Now, if your cake is cool we can start my favorite part…

ASSEMBLY

Cut the cake with a knife into five equal pieces.

The size is 3×12 inches.

Cut through the underlying foil so you can each move independently. (don’t worry)

Use your first piece (3×12 inch) and spread with Nutella filling.

Roll the first cake.

Use the aluminum foil as the cake support, begin to roll the cake

into a roll and continue tucking cake as you peeling away the aluminum foil.

Place the rolled cake upright on a plate. (or what you have for your cake)

Then back to jelly pan where you have 4 strips of cake left.

Spread raspberry jam on second strip/cake and lift it from the foil.

Wrap the second cake around the roll on the serving plate.

Don’t be afraid, just do it.

Now use the third cake strip and cover with Nutella filling.

Lift from the aluminum foil and wrap around the roll on the serving plate.

Continue with the next 2 strips or until done.

Then…

Wrap the whole cake in plastic wrap and keep in the fridge for 3 hours.

DECORATE

Top the cake with Nutella filling and decorate with chocolate.

Keep in the fridge for about 5 hours before you start serving.

I hope you are doing well and you are ready for this magic recipe in mini version.

The name : MINI FERRERO ROCHER TORTE

So, let’s start with our shopping list.

  • flour
  • cocoa powder
  • baking powder
  • Nutella
  • heavy cream
  • mascarpone cheese
  • crushed wafers

Mini Ferrero Rocher Torte

Ingredients

  • 5 large eggs
  • 6 TBSP sugar
  • 2 cups ground Hazelnuts
  • 2 TBSP flour
  • 2 TBSP cocoa powder
  • 2 tsp baking powder (no aluminum)

Instructions

Line 8 inch round pan with foil or if you have use 4 inch round pans. (I used 3 mini 4 inch round pan + 1 6 inch round pan)

Whisk 5 eggs and 6 TBSP sugar on high speed for about 7 minutes. (until tripled in volume)

In another bowl (bowl #2) sift 2 TBSP flour, 2 TBSP cocoa and 2 tsp baking powder.

Then add 2 cups ground hazelnuts and mix all dry ingredients together.

Using spatula fold dry ingredients into the eggs, in 3 additions. (slowly)

IMPORTANT: Be very gently when mixing with a spatula.

I will repeat, be very gently because you don’t want to upset the dough.

You want the dough to have the fluffiness. Even if you are a jerk you will have to control your anger and be gentle.

Pour batter into prepared pan/pans and bake at 350 F until done.

Use a toothpick to check if the cake is done.

IMPORTANT

Just stick a toothpick into the center of cake. If it comes out clean, your cake is done!

Once baked, leave in the pan for 10 minutes, then transfer to a cooling rack.

Once the cake is cool, slice it into two layers.



NOTE

-If you don’t have 4 or 6 inch round pan bake in a pan you have.

Then use the cookie cutter to cut into desired size.

FILLING

1 cup mascarpone cheese

2 1/2 cups Nutella

1 cup whip cream

1 cup crushed Wafers

1/2 cup Hazelnuts

Mix 1 cup Mascarpone and 2 1/2 cups Nutella.

In another bowl mix 1 cup of whip cream.

Now add whipped cream to Nutella Mascarpone mixture.

Mix all ingredients together for about 1 minute until colour is dark brown.

Using your food processor ground 1 cup wafers and ½ cup hazelnuts together.

Now, you have everything: Cake, Filling and ground hazelnut/wafers mixture.

The Final Steps – ASSEMBLY LINE

First layer cake + Nutella filling and sprinkle with crushed wafers/hazelnut mix

Second layer cake and cover with Nutella filling.

Decorate outside with crushed wafers/hazelnuts mixture. 

Use your imagination to decorate your magic cake.

ACTION TIME

MAKING MINT NANAIMO BARS

Ingredients

1/2 cup butter

1/4 cup sugar

1/3 cup cocoa

1 egg

2 tsp vanilla extract

1 cup coconut

2 cups graham crumbs

1/2 cup walnuts, finely chopped

Middle Layer 

1/2 cup margarine

5 TBSP milk

4 TBSP Bird’s custard powder

3 1/2 cups icing sugar

2 tsp mint extract

drops of green food coloring (use to your taste)

Top Layer

5 oz chocolate

1 TBSP oil

INSTRUCTIONS

Line 9 x 9 inch square pan with aluminum foil. Set aside.

In a medium saucepan over low heat combine the butter, sugar,cocoa, egg until the mixture boils.

Boil for 2 minutes and add vanilla extract.

Remove from heat and stir graham crumbs, coconut and walnuts.

Press evenly into a 9 inch pan.

Chill in the freezer for a few hours or overnight.

Making Green Filling of JOY

Using a mixing bowl combine custard powder and milk.

Stir until smooth.

Add icing sugar, margarine and mint extract.

Mix using the whisk attachment for about 5 minutes. (high speed)

Then add a few drops of green color and mix until combined.

Note: Use as much as you wanted of green color.

Spread the filling evenly over the base and return to fridge of freezer while you make the topping.

Top Layer – Chocolate Nirvana

Using a double boiler method melt 5 oz chocolate and 1 TBSP of oil.

Spread over the second layer of JOY.

Decorate as you wish.

Keep in the fridge until the chocolate is set.

Cut, enjoy and share.

Important:

Please use ROOM TEMPERATURE EGGS AND MILK.

Line the bottom of a jelly roll pan (11×17) with aluminum foil and lightly spray with baking spray.

Set aside.

Wash one cup of raspberries.

Dry it.  Use 1/2 cup of raspberries and break into smaller pieces.

Preheat oven to 350 F.

Making WHITE RASPBERRY DREAM CAKE


Ingredients

5 egg yolks

4 egg whites

3 TBSP milk

2 TBSP olive oil

1 cup sugar

1/2 tsp vanilla extract

3/4 cup flour (AP)

2 TBSP cornstarch

1 tsp baking powder (no AL)

Filling for the best raspberry cake

8 oz cheese

1 3/4 cups icing sugar

1 pouch Knox gelatine

1 1/4 cups heavy cream

1 cup fresh raspberries

Instructions

Using the whisk attachment mix 5 eggs yolks, 3 TBSP milk, 2 TBSP olive oil, 2/3 cup of sugar and 1/2 tsp vanilla extract for about 5 minutes.

Sift together 3/4 cup flour. Add 1 tsp baking powder,, 2 TBSP cornstarch and mix into the yolk mixture until well blended.

In a large bowl, mix 4 egg whites for about 1 minutes and add 1/3 cup sugar.

Please add sugar slowly and mix for another 2 minutes or until 3 times in volume.

Use a spatula to fold the egg whites into yellow/eggs mixture until fully incorporated.

Pour into prepared baking sheet and bake for 15 minutes at 350 F.

Cool completely.

While cake is cooling let’s make the filling.

Mix 8 oz cheese and 1 3/4 cups icing sugar. (for about 2 minutes)

In another bowl mix heavy cream.

Add into cheese mixture and mix until incorporated. (for about 1 minute)

Add 1/2 cup raspberries (cut into small pieces) and mix all ingredients.

Next step is to add the prepared gelatine. (see instructions below)

Quickly mix all ingredients.

How to Prepare gelatine

In a small cup sprinkle 1 pouch Knox unflavoured gelatine over 1/4 cup (50 ml) cold water.

Let stand for 1 minute.

Add 1/4 cup (50 ml) boiling water and stir until granules are completely dissolved.

Now your cake is cool and your filling is done.

You are ready for assemble.

YOU ARE. Trust me.

White Raspberry Dream Cake Assembly

You will need loaf pan (11-5/8″ L x 5-1/8″ W x 2-3/4″ H)

Line your loaf pan with plastic wrap.

Now take your cool cake and cut into 2 pieces.

One is 11×10 size and the other is 11×7

Now take your bigger pieces (11×10) and place inside of loaf pan.

Pour your raspberry filing into it and close the top with your second cut part 11×7.

Cover everything with plastic wrap and leave in the freezer for at least 4 hours or overnight.

Next Day

Free cake from the loaf pan.

Decorate as you wish, share and enjoy.

MAKING EMPIRE COOKIES

Ingredients

1 cup butter

3/4 cup icing sugar

3 egg yolks

1/2 TBSP vanilla extract

2 +1/2+ 1/8 cups flour (AP)

Raspberry jam

Icing for Empire Cookies

1 1/2 cups icing sugar

3 TBSP warm water

1/2 TBSP almond extract

Instructions for making Imperial Cookies

Line 3 baking trays with parchment paper.

Set aside.

Beat 1 cup butter and 3/4 cup icing sugar until smooth. (about 2 minutes)

Add egg yolks and vanilla extract and mix for about 1 minute.

Add sifted flour and stir until blended.

Shape into a disc and wrap in plastic wrap.

Chill for about 3 hours.

After chilling….

Time to play with your dough…

Roll it out to 1/4 inch thick.

Cut out the cookies using any cookie cutter you like.

Place the cookies on the baking tray with 1 inch space between them.

Bake cookies at 350 F for 10 minutes.

(it should be lightly browned around the edges)

Cool the cookies.

Spread half of the cookies with 1/2 TBSP raspberry jam and top with remaining cookies.

Icing for the Empire Cookies

Combine icing sugar, almond extract and enough hot water to make a thin icing.

 

Frost tops of cookies and decorate with a small piece of candied cherry.

Making the best cookie recipe ever

RICH GOLDEN MINT COOKIES HEAVEN

Ingredients

1/2 cup unsalted butter

1 cup brown sugar

1 egg

2 tsp vanilla extract

1 tsp mint extract

1 cup flour (AP)

3/4 cup M&&

10 Golden Oreo cookies, chopped

9 Mint Oreo cookies, chopped

3 Kit Kat chocolates and Twix, chopped

Instructions

Preheat oven to 350 F.

Line 9 inch glass round pan with aluminum foil. (dull side up). Don’t spray.

Set aside.

Melt 1/2 cup butter in a large saucepan.

Remove from the heat and add 1 cup brown sugar and 1 egg.

Mix until smooth.

Add vanilla and mint extract.

Mix until incorporated.

Next step is to add 1 cup flour and stir until combined.

Don’t over mix.

Stir in chopped golden and mint Oreos, Kit Kat and Twix.

Add 1/4 cup of M&M.

Stir all ingredients and turn batter into prepared glass pan.

Smooth the top with your hands or spatula.

Sprinkle the rest of M&M over the top, pressing down with your fingers.

Bake at 350 for about 25 minutes.

Cool it.

Nutella Cheese Carrot Cake

Ingredients

3 eggs

1½ cups sugar

1 cup oil

2 cups AP flour

1 TBS cinnamon

¼ tsp salt

1 tsp baking soda

1 tsp vanilla extract

3 cups carrots

1½ cup walnuts

Nutella Filling

1 1/2 cups Nutella

1/8 cup heavy cream

Cheese Filling

1 and 1/2 package (12 oz) cream cheese

1 1/4 cup heavy cream

1 and 3/4 cups icing sugar

1/2 TBSP vanilla extract

Instructions

Heat oven to 350 F.
Line baking sheet 16 x 11 with aluminum foil.
Mix sugar,oil and eggs.
Add flour, cinnamon, baking soda, salt and vanilla extract.
Stir in carrots and walnuts.
Pour into pan.

Bake until toothpick inserted in center comes out clean. (Mine was for about 25 min).
Cool it.

Make Nutella Filling

Mix heavy cream until firm.
Add Nutella and mix until incorporated for about 1 minute.
Keep in the fridge.

Make Cheese Filling

Mix cream cheese for about 3 minutes.
Add icing sugar, vanilla extract and mix until incorporated.
Set aside.
In another bowl mix heavy cream until firm.
Add heavy cream into cheese mixture and mix all ingredients together for about 1 minutes.
Keep in the fridge.
Now, you have everything:
-baked cake
-Nutella filling
-Cheese filling
Our next step is to cut the cake into 3 equal strips, size 4.5 x 11. ( you will have extra cake strip 2.5×11)

ASSEMBLING TIME

Begin assembling by placing 1 of the 3 cake pieces on parchment paper.
Spread the Nutella filling on top of the first layer.
Place the second layer on top and spread cheese frosting.
Place third layer and spread cheese frosting.
Decorate as you wish.

Keep the cake in the fridge for about 8 hours before … the best part.

Ingredients

-6 oz finely chopped semi-sweet chocolate

-1/2 cup heavy cream

-1/2 TBSP butter softened to room temperature

Instructions

Pour 1/2 cup of heavy cream into a small saucepan and heat until it comes to a simmer.

Pour the hot cream over chopped chocolate.

Let it sit for 3 minutes.

Gently whisk the cream and chocolate together until your ganache is shine and smooth.

Add 1/2 TBSP butter and whisk until incorporate.

STEP 2-Peanut Butter Bubble

Ingredients 

2/3 cup peanut butter (smooth)

2 /3 cup icing sugar

1/3 cup graham crumbs

1/8 cup butter (salted)

muffin/cupcake papers (you can use miniature size muffin cups or the regular one)

Instructions

Combine icing sugar and graham crumbs in a small bowl. Set aside.

Melt peanut butter and butter.

Add icing sugar/graham crumbs into melted butter and stir until all ingredients are incorporated.

Let it cool for about 45 minutes or until you can handle the mixture to roll into the ball.

Take 2 TBSP sized balls of mixture.

Flatten each ball and place one of chocolate truffle inside.

Wrap the peanut butter mixture around the chocolate truffle and roll into ball.

Place into the cupcake liner.

Repeat the process until you used all peanut butter mixture.

Cover with chocolate icing.

Store in the fridge.

1 TBSP oil

Add in raspberry syrup a little bit at a time until the mixture is moist and can hold a shape.

Next step is to form a long log using your hands.

Store in a freezer for a few hours or overnight.

FONDANT

Roll out the fondant to the size of your log.

Place the log on one side of fondant and begin rolling up.

Use your fingers to press fondant against the log.

Be sure that the log is completely covered in the fondant.

Return to the freezer for another hour or as long as you want to.

Before serving

Using a knife cut off the excess fondant.

Cut the roll into any size you like.
