This recipe is everything you want the healthy breakfast to be.

Easy to make and fun to eat. To make this recipe you need only a few ingredients: broccoli, cheese, eggs, red peppers…How easy is that?

Important: This is my favorite dish to bring to the office. Yes, instead of buying or ordering this is my office breakfast/lunch option.

Also, this is an ideal Sunday brunch recipe, Friday dinner option or just an Easter Breakfast. Like I said you can use this recipe from breakfast to dinner and from Sunday to Friday. Any day any time.

  • broccoli
  • eggs
  • Mozzarella cheese

-9 by 13 baking dish (I used glass baking dish)

-plastic or glass bowl (to mix all ingredients)

Action Time

Making Easy Broccoli Eggs Breakfast

Ingredients

2 cups broccoli

5 eggs

3 TBSP milk

3/4 cup Mozzarella cheese, grated

1 red pepper, chopped

1/2 tsp salt

1 TBSP oregano

1/2 tsp black pepper

1/3 cup feta cheese

3 clover of garlic or 1 onion

Instruction for broccoli breakfast

Preheat oven to 375 F.

Spray the glass pan with baking spray. Set aside.

Prepare the broccoli by cutting into small broccoli florets.

Put the prepared broccoli to the bottom of the glass pan.

Sprinkle with cheese and chopped red peppers over the broccoli.

Your next step is to add eggs, milk, salt, black pepper and oregano into the medium size bowl.

Beat all ingredients until incorporated.

Pour the eggs mixture over broccoli/cheese/pepper mixture.

Use the fork or spoon to gently stir so that all ingredients are mixed well together.

Bake at 375 F for 20 minutes, remove from the oven and sprinkle with feta cheese.

Return to the oven and bake for additional 7 minutes.

OPTIONAL: Remove from the oven and sprinkle with fresh minced garlic or onions.

Serve immediately with yogurt, sour cream and green salad.

If you have leftovers store in the fridge.

Broccoli – I used fresh, organic broccoli.

Eggs – for this recipe I used large eggs from my local farmers market. (organic if you can)

Making French Bread Cheese Boat

Ingredients

1 loaf of French Bread

4 eggs, large

1 1/2 cups grated mozzarella cheese

spinach (just to cover the top of the eggs)

1 small pepper, chopped

3 cloves of garlic,minced

1/2 onion, chopped (optional)

salt, pepper and oregano to your taste

feta cheese to your taste

INSTRUCTIONS FOR MAKING CHEESE BOAT

Preheat oven to 375 F.

Line baking sheet with aluminum foil.

Now you are ready for the recipe.

Your first step is to cut the top of the bread.

Then scoop out the bread in the center and make your French bread boat.

Place your French bread boat in a baking sheet or pan (9 by 13 inch).

Add grated mozzarella cheese into the hollow center of the bread.

Crack 4 eggs on top of the cheese and season with salt, black pepper and oregano.

Cover eggs with spinach and top with the rest of grated mozzarella cheese and peppers .

Bake at 375 F for 30 to 35 minutes. (depends how baked you want your eggs to be)

Remove from oven and top with fresh garlic and feta cheese.

Optional: you can add fresh tomatoes, Italian parsley, chopped onions.

Super easy, flavorful and the perfect recipe for lunch, dinner or lazy Sunday afternoon.

The ingredients are simple and the most important is the star of the recipe. The chicken.

You need a good quality chicken. For this recipe I used organic chicken from the local store.

From there you can add whatever makes you happy. Lemon, garlic, onions, Italian parsley, celery and so on.

My favorite addition is potatoes and today we are making the oven roasted chicken and potatoes.

Life can be perfect, don’t you think. Just simple chicken, potatoes and Greek salad and I am happy.

If it is -36 C outside and tons of snow…who cares?

SHOPPING LIST FOR ROASTED CHICKEN

  • whole chicken (3 to 5 lbs or 1.5 kg to 2.5 kg)
  • potatoes
  • carrots
  • onions
  • garlic
  • lemon
  • salt
  • black pepper
  • oregano

  • olive oil

EQUIPMENT NEEDED

-large roasting pan or baking sheet (or any pan that chicken can be baked happily)

-small sauce pan (to melt the butter)

ACTION TIME

MAKING Oven Roasted Whole Chicken – Best Chicken Recipe

Ingredients

1 whole chicken (3 to 5 lbs)

3 carrots

4 large potatoes

2 medium size onions

6 cloves of garlic

1 lemon, organic and washed

1/2 tsp black pepper

2 and 1/2 tsp salt

1 TBSP dry oregano

6 TBSP butter

3 TBSP olive oil

INSTRUCTIONS FOR MAKING THE BEST CHICKEN RECIPE

Melt butter in a small sauce pan and set aside. (be sure it is not completely melted)

Preheat oven to 425 F.

Rinse the chicken inside and out.

Then pat dry with paper towel.

IMPORTANT: Please be sure that chicken is as DRY as POSSIBLE. Why? Because it helps with browning.

Season chicken outside and inside with salt and pepper.

I used 2 tsp plus 1/2 tsp of salt and 1/2 tsp of ground black pepper. (you use salt and pepper to your taste)

Stuff the chicken cavity with 6 cloves of garlic, both halves of lemon.

OPTIONAL: You can add rosemary, Italian parsley, Thyme or any other herb you like to the chicken cavity.

Tie the legs together with kitchen string ( I did not)

Drizzle chicken all over with melted butter. Be very generous.

IMPORTANT: FOR MAXIMIZING FLAVOR USE THIS TRICK – TUCK UNDER OF CHICKEN SKIN A BIT OF BUTTER (or as much as you like)

Drizzle oregano all over the chicken.

BTW, you are almost done.

Add sliced onions, potatoes, carrots to the bottom of baking dish. (I don’t add salt but you can if you want to)

Drizzle olive oil over the veggies and toss to coat.

Place the chicken on top of vegetables. (breast side up)

BAKING THE CHICKEN

Bake at 425 F for 90 minutes or until done.

It is done when the internal temperature reaches 165 degrees.

Use a meat thermometer to check the temperature.

When chicken is baked remove from the oven.

Transfer the roasted chicken to the aluminum foil.

Be sure the whole chicken is covered with aluminum foil for about 30 minutes.

Slice the chicken onto your favorite platter.

Serve with a simple salad, potatoes and slice of my favorite bread.

Quick Note  

Butter – you can substitute butter with olive oil. Use organic olive oil if you can.

Chicken – use the good quality chicken when making this recipe. Visit your local farmers market for the best price and quality.

Potatoes – use the best potato for baking like Idaho Potatoes or Yukon Gold potatoes from Canada. For this recipe you can use whole potatoes or just cut potatoes in half length size.

Roasting Pan – if you don`t have roasting pan you can use a high-sided casserole dish, rimmed baking sheet, large skillet.

5 eggs, hard boiled

1/3 cup mayo

2 tsp mustard

1/2 tsp salt

1/4 tsp black pepper

1/8 tsp paprika

2 cloves of garlic (minced)

1/2 cup of cooked peas

1 tomato

INSTRUCTION FOR THE BEST EGG SALAD RECIPE

Hard boiled 5 eggs. If you don’t know how check below or check this link

Bring eggs to rolling boil over high heat.

When the water has reached a boil, set the timer for 12 minutes.

Important: Boil the eggs for 12 at medium heat.

If you really like hard, hard boiled eggs set your timer for 15 minutes.

After 12 minutes or your ideal time, remove the saucepan from the heat and let the eggs rest for 10 minutes.

Then drain the hot water and run cold water over eggs until cooled.

Peel and chop the eggs.

Then add to a medium size bowl.

Add mayo, mustard, salt, pepper and mix well.

This is the base simple homemade version.

I liked to add cooked cooled peas and garlic.

Optional: add sliced tomatoes, Italian parsley, dill and so on…

Fast and easy solution for our busy life - Egg Salad Sandwich Recipe.

Ingredients

  • 5 eggs, hard boiled
  • 1/3 cup mayo
  • 2 tsp mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp paprika
  • 2 cloves of garlic (minced)
  • 1/2 cup of cooked peas
  • 1 tomato

Instructions

    Hard boiled 5 eggs. If you don't know how check below or
    check this link

    Bring eggs to rolling boil over high heat.

    When the water has reached a boil, set the timer for 12 minutes.

    Important: Boil the eggs for 12 at medium heat.

    If you really like hard, hard boiled eggs set your timer for 15 minutes.

    After 12 minutes or your ideal time, remove the saucepan from the heat and let the eggs rest for 10 minutes.

    Then drain the hot water and run cold water over eggs until cooled.

    Peel and chop the eggs.

    Then add to a medium size bowl.

    Add mayo, mustard, salt, pepper and mix well.

    This is the base simple homemade version.

    I liked to add cooked cooled peas and garlic.

    Optional: add sliced tomatoes, Italian parsley, dill and so on...

    Spread on your favorite bread, lettuce.

Yes, I know the winter is coming and we need to bake. There is something about the snow, cold weather and the warm kitchen.

Warm kitchen full of baking possibilities and one of them is ready to be shared today. With you. With all of you. My smart, kind and amazing people. So, what is it?

It is …. the pie and you need to know more…

DESCRIPTION of Spinach Cheese Easy Pie

This recipe can be your breakfast, lunch, dinner or it can be a great appetizer, snack, side dish. So, yes this can be your main course. Serve with very healthy cold Greek yogurt or cold kefir. There is something in that combo, hot pie and cold yogurt that makes me happy. Another option is to serve with homemade salad.

This classic dish is made with phyllo sheets layered with spinach and cheese filling. Yes, yes and yes. My grandmother used to make her own phyllo sheets and so will we. (just kidding). We are using the store bought phyllo sheets. (thank you for 21 century)

The spinach cheese filling is super easy to make. Just a few ingredients sleeping together and sharing the magic of easy homemade pie.

So, what ingredients do we need in order to make this pie. Let’s check our ….

Spinach Cheese easy pie

SHOPPING LIST

  • phyllo pastry sheets (thawed)
  • spinach (fresh)
  • feta cheese
  • ricotta cheese
  • eggs
  • yogurt (Greek)
  • sour cream (14%)
  • eggs
  • oil (olive or use your favorite)
  • salt
  • black pepper (ground)

EQUIPMENT NEEDED

-big bowl (plastic or glass)

-1 medium size bowl

-4 cups measuring cup or bowl (for cheese sauce)

-9 by 13 baking pan (I used glass)

Making Spinach Cheese Easy Pie

Ingredients

1 package of phyllo pastry sheets

2 cups ricotta cheese

1 1/2 cups feta cheese

1 package of fresh spinach (312 gr)

4 eggs

1 1/2 tsp salt

1 tsp ground black pepper

3 TBSP sour cream (14%)

Pie sauce

1 1/2 cup Greek yogurt (or use plain yogurt)

1/2 cup oil

INSTRUCTIONS

Preheat oven to 400F.

In a large bowl, thoroughly combined ricotta cheese, feta cheese, eggs, salt and pepper. Set aside.

Important: Use salt and pepper to your taste.

Your next step is to chop the spinach into the medium size bowl.

Transfer the chopped spinach into the cheese mixture and stir until all ingredients are combined.

Making pie sauce – add yogurt and oil into the bowl. Just stir using the wooden spoon. Set aside.

Now, you just made spinach cheese filling and pie sauce.

Your next step is assemble of the pie.

Grease 9×13 pan with oil. (use 3 TBSP oil,be generous)

Place 3 sheets of phyllo into prepared 9×13 pan, with their ends crossing.

Lightly brush it with yogurt oil mixture.

Continue with 3 more sheets of phyllo. (be sure each is brush with yogurt oil mixture).

Then spread 1/3 of the total filling. (for me it was about 1 1/2 cups).

Add another 3 sheets of phyllo. (be sure each is brush with yogurt oil mixture)

Your next step is to add spinach cheese filling.

Then repeat one more time: 3 sheets of phyllo + spinach cheese filling.

Now those ends that are hanging on the sides put over the filling.

Top with 2 sheets (folded so that fits the size of 9×13). It doesn’t need to be perfect.

Top with the yogurt oil mixture.

And you are almost done, just spread 3 TBSP of sour cream over the pie. (as evenly as you can)

Bake at 400 F for about 50 minutes or until golden brown.

Remove from the oven and cover with kitchen towel for about 30 minutes.

Slice into desired size.

Optional: You can top with more sour cream, feta cheese or yogurt.

Enjoy and share.

Quick Note

Feta cheese – for this recipe we used the feta cheese from the Superstore. (TRE STELLE FETA CHEESE)

Eggs – large, organic from the local farmers market

Ricotta cheese – for this recipe we used – check the picture

Oil – my choice is always olive oil. If you don’t have it use the oil you use every day.

This is the magical pie from the Balkan.

It is very popular dish in Serbia, Bulgaria, Croatia, Bosnia. So, if you can’t afford to travel…well you can bake.

So imagine you can be in Bulgaria, Greece, Serbia, Macedonia, Croatia and you want to order something that is so like salad but in the same time it is so much more. It is your dream salad. Fresh, tasty and full of everything you want life to be. BTW, you are on diet too. (kind of … you will see soon and please don’t cry.)

And let me make the introduction again.

So, our winner recipe is … the one and only from Europe to you called…

SUMMER TOMATO FRESH SALAD OR BALKAN SHOPSKA SALATA!

Description of SALAD

It is very simple recipe made with fresh ingredients. And when I say simple I really mean it.

And how simple it is! Really! Fresh tomatoes, cucumbers, peppers, onions, parsley and the best ingredient you can imagine. The CHEESE. Yes, it is Dr. Cheese. I like to use Feta cheese or white brine cheese. You use what you have or can find it. In case you want to make your own cheese check this link – How to Make Cheese at Home – Got Milk

BTW, white brine cheese is made in the Balkans. You can find it in Bulgaria, Serbia, Montenegro, Macedonia, Romania. The cheese is made of the milk of goats, sheep or cows. It is crumbly and commonly produced in blocks with slightly grainy texture. It is super tasty and something you need to try. Of course, if you can’t find it use the feta cheese. (made from goats milk).

So, are you ready to make your “feel good” diet salad? I know, I am. So, let’s start shopping and getting all the ingredients under the title called…

SHOPPING LIST FOR SUMMER SALAD

  • tomatoes
  • cucumber
  • green peppers
  • Feta Cheese
  • onion (so optional)
  • Italian parsley
  • olive oil
  • vinegar

EQUIPMENT NEEDED

-salad bowl, deep plate or any dish you like to use to serve the salad

Making Summer Tomato Fresh Salad-Balkan Shopska Salata

Ingredients

5 tomatoes

1 large cucumber

1 green pepper, (medium size)

3/4 cup cheese (crumbled or grated)

1/2 onion (the smallest one you can find)

Italian parsley (use to your taste)

3 TBSP olive oil (or the oil you like to use)

2 TBSP vinegar

salt and ground black pepper (to your taste)

INSTRUCTIONS

In a small cup add olive oil, vinegar, salt and pepper. Set aside.

Your next step is to add diced tomatoes, cucumber and green peppers into a bowl or deep plate.

Then cover with onions (if you want to) and Italian parsley.

Give everything a stir until evenly distributed.

Taste and add salt and pepper if need it.

Now divide the salad into 3 different plates or serving bowl.

Then start singing because the best is to come.

Dr. CHEESE.

Grate, crumble or do what you like to do when it comes to cheese.

And be sure to cover the top of each serving dish with the most cheese you can imagine.

Olives – to make the salad extra special you can add olives

Serving – you can cool the salad in the fridge for 20 minutes.

So quick, easy and flavorful. Perfect for busy weeknights or just an ideal lunch for lazy Saturdays or Sundays. So, yes you will be making this delicious casserole recipe again, again and again. How can you say no to this magical chicken recipe.

Of course you can’t. Tender baked chicken breast covered with spinach mixture, cheese and more cheese. Mmmm….

Do I need to say more…no! You are ready to make it happen.

And because of that you need to buy the following ingredients.

ACTION TIME

THE BEST BAKED CHICKEN SPINACH

(SERVE 3 PEOPLE)

Ingredients

1 lbs chicken breast (about 425 gr), boneless and skinless

2 cups fresh spinach, chopped

3/4 cup grated mozzarella cheese

1/4 cup feta cheese

5 cloves of garlic, minced

1/2 cup sour cream

Toppings:

1/3 mozzarella cheese, grated and cubed

5 TBSP Greek Yogurt

3 TBSP basil pesto

1 TBSP oregano

1/8 tsp black pepper

1/4 tsp salt

INSTRUCTIONS

Preheat oven to 400 F.

In a medium size bowl add spinach, mozzarella cheese, feta cheese, garlic and sour cream.

Then add salt, pepper and oregano to your taste.

Stir all ingredients using a metal spoon. Set aside.

Add 3 TBSP of olive oil in baking dish.

Lay chicken breast in baking dish. Drizzle 1 TBSP of olive oil or your favorite oil all over the chicken.

Then sprinkle chicken breast with salt, black pepper and oregano. (to your taste, be generous)

Spread the spinach cheese mixture on top of the chicken.

Then top with more grated and cubed mozzarella cheese, basil pesto and yogurt.

When adding basil pesto and yogurt add where you want to. Paint the top in the way you wanted.

There is no right or wrong way when adding yogurt or pesto. Just enjoy.

Cover with aluminum foil and baked for 21 minutes.

Then remove the cover and bake for another 21 minutes or until the chicken is baked. (165 F or 71 C internal temperature).

Serve immediately.

You can serve with mashed potatoes, oven baked potatoes, Greek salad

Also, you can serve with bread. Make chicken sandwich.

Review the Steps

-place chicken breast into oiled baking dish

-season to your taste

-make spinach cheese mixture and cover the chicken breast

-top spinach mixture with more grated or cubed cheese, yogurt and basil pesto.

-bake at 400 F (21 minutes covered with aluminum foil and 21 minutes uncovered)

-enjoy and share

Quick Note

Chicken breast – use organic or free-range.

Optional: I know this step is important but you don’t have to do it if you feel lazy. Another option is to ask your butcher to do it for you. So, what is it? Place the chicken between sheets of plastic wrap and pound until they are even in thickness. In case you are angry, please pound lightly.

Spinach – I used fresh, organic

Cheese – I used store bought mozzarella cheese. Feel free to use the cheese you like.

Sour cream – organic, 14%

Feta cheese – I used Greek cheese made of sheep and goat’s milk

Basil Pesto – you can use homemade or store bought

Bread – this is the bread I like to use when making chicken sandwich.

Important: You can bake this recipe in 9 by 13 inches. Use about 1 1/2 lbs or about 630 gr of chicken.

    Stir all ingredients using a metal spoon. Set aside.

    Add 3 TBSP of olive oil in baking dish.

    Lay chicken breast in baking dish. Drizzle 1 TBSP of olive oil or your favorite oil all over the chicken.

    Then sprinkle chicken breast with salt, black pepper and oregano. (to your taste, be generous)

    Spread the spinach cheese mixture on top of the chicken.

    Then top with more grated and cubed mozzarella cheese, basil pesto and yogurt.

    When adding basil pesto and yogurt add where you want to. Paint the top in the way you wanted.

    There is no right or wrong way when adding yogurt or pesto. Just enjoy.

    Cover with aluminum foil and baked for 21 minutes.

    Then remove the cover and bake for another 21 minutes or until the chicken is baked. (165 F or 71 C internal temperature).

    Serve immediately.

I will repeat again: This is an easy comfort-food recipe for your busy days. Just a few ingredients and you have the perfect meal.

Also, it can be made for holiday parties, family events, Sunday brunch or it can be your ideal meal for Saturday morning. You know, when you wake up, it is snowing outside and you only have 9 minutes to prepare something to eat.

BTW, you will be making this recipe for years to come. It is that good and simple to make.

  • Black forest smoked ham
  • Swish cheese
  • Multigrain Kaiser Rolls or your favorite sandwich bun

2 sandwich buns (use the one you like)

4 slices of ham

2 slices of Swish cheese

1 TBSP pizza sauce

2 TBSP Alfredo sauce (store bought)

1 TBSP mustard

For 4 people

8 slices of ham

4 slices of Swish cheese

2 TBSP pizza sauce

4 TBSP Alfredo sauce (store bought)

2 TBSP mustard

INSTRUCTIONS

Preheat oven to 350 F.

Line 9 by 5 baking pan with aluminum foil. Spray with baking spray.

Separate top from bottom of the buns. (if it is not done for you, use knife and do it yourself)

Place the bottom pieces into prepared 9 by 5 pan.

Coat the buns with pizza sauce.

Your next step is to add piece of cheese to each bun.

Then top with slices of black forest smoked ham.

Place the top buns on the sandwiches.

Make Toppings – add Alfredo sauce and yellow mustard to a small bowl. Stir until incorporated.

Pour the mustard mixture evenly over rolls.

Bake at preheated oven at 350 F for 19 minutes.

Remove from oven.

Slice and enjoy.

Recipe for 8 by 8 pan

Instructions for 8 by 8 pan are the same.

Line 8 by 8 with aluminum foil. Spray with baking spray.

Place 4 bottom of buns into the pan.

Coat with pizza sauce, add cheese, ham.

Bake at 350 F for 19 minutes.

Quick Note

Black forest smoked ham – use your favorite ham. Also, you don’t need to use smoked. You can use the regular black forest ham.

Pizza sauce – use the one you have in your house. I used Catelli sauce with basil. If you don’t like pizza sauce you can use basil pesto.

Sandwich buns – I used Multigrain Kaiser Roll. It was $3.48 for 12 pcs. Please use what you have or what you can afford.

or I should say Ciao since my post is all about my favorite food from Italy. Can you guess what it is?

It is one and only PASTA.

Since we can’t travel and enjoy pasta in Italy we can make our own kitchens “Small Italy”. So, are you ready to travel to your kitchen and enjoy the best homemade pasta dough? Of course you are and since this recipe is for absolute beginners let me start with ….

Description of Homemade Pasta Dough

For this recipe you need only 4 ingredients. Flour, eggs, olive oil and salt. Yes, it is that simple.

So, if you think that only chefs can make pasta you are wrong. You can do it. Using your own hands or your best food processor. The choice is yours.

What do you need to practice when it comes to making homemade pasta dough?

Whisking, kneading and rolling…Are you afraid? Don’t be. I already said this is the recipe for absolute beginners. So, I will hold your hands and show you how. Also, this recipe is using less than 1 cup of flour so you can make mistakes and learn.

SHOPPING LIST

  • flour (all purpose or 00)
  • olive oil
  • eggs
  • salt

EQUIPMENT NEEDED

-food processor

-plate or mixing bowl (if you decide to do by hand)

-sharp knife

ACTION TIME

Homemade Pasta Dough Without Machine in 6 Minutes

Ingredients

2/3 cup flour

1 egg

1 egg yolk

2 tsp olive oil

pinch of sea salt

INSTRUCTIONS

Making pasta using a food processor.

Add flour, eggs, olive oil and salt to the food processor.

Pulse until you see a crumbly texture.

Transfer to a lightly floured cutting board and pat it into a ball. (use your hands)

Then kneed until it is smooth and elastic. (about 3 minutes)

Your next step is to form the dough into a small ball, wrap with plastic wrap and let is rest for 1 hour.

Then use immediately or transfer to the fridge for up to one day.

MAKING PASTA DOUG BY HAND

For this you can use large plate, large cutting board or smooth surface like a marble counter.

Place flour in a mound on a large cutting board.

Create a well in the center and crack 1 whole egg and 1 egg yolk.

Sprinkle the salt and add olive oil on top of the eggs.

Use a fork to whisk the eggs gradually drawing in the flour mixture.

Keep going until forms a ragged dough. (This will be quick for you because you are using a very small amount of the flour.)

Then start to knead until it is smooth and elastic. (for about 3 minutes)

If it is sticky add a little flour, if it is dry add a water.

Form the dough into a very small ball and wrap in a plastic wrap.

Let the dough rest for 1 hour at room temperature.

HOW TO ROLL FRESH PASTA BY HAND

After the dough has been resting for 1 hour, transfer the dough to a cutting board.

Dust some flour on top of it and start rolling.

Keep rolling until the dough becomes as thin as paper (about 1 to 2 mm).

If you are still asking how thin think crepes paper thickens or you should be able to see your hand through the dough if you lift it up.

Remember to master any skills you need to practice. So, keep practicing and you will become the pasta expert.

IMPORTANT: Add extra flour to prevent sticking but don’t get crazy. Always add a very small amount of flour.

Let it rest for 15 minutes.

Cutting the Pasta

Your next step is to lightly flour dough circle, roll loosely on rolling pin.

Slide rolling pin our, press dough roll with hand and cut into desired size strips. (use sharp knife).

Carefully unfold strips.

Boil the salty water and add your homemade fresh pasta. (yes, you did it)

Boil from 4 to 6 minutes.

Enjoy with your favorite sauce.

-You can make homemade pasta dough using food processor or by hand

-If you are using food processor add 4 ingredients, blend and transfer to cutting board. Make the ball and kneed for 3 minutes. Cover in plastic wrap. Store.

-If making pasta by hand create a well in the center and add eggs, salt and oil. Mix all ingredients using a fork and slowly incorporating the flour into it. Kneed until smooth and elastic. Cover and store.

Quick Note

Flour – use all purpose flour or use 00 flour for pasta. You can find “00 flour for pasta” in Superstore or on amazon. Just search for zero zero flour and you will find it. Personally, I love using the 00 flour for this recipe. It makes a texture of the pasta more smooth. However, you can make homemade pasta dough using an unbleached all purpose flour. The texture is chewier.

Eggs – use large, organic eggs for this recipe.

Salt – please use fine sea salt. You can also skip the salt if you are on diet.

Olive oil – I used organic olive oil.

Making fresh homemade pasta dough can be prepared in any kitchen. You don’t need fancy equipment or ingredients. Super easy to make. Only 4 ingredients or 3 if you don’t use salt.

Making Italian Pasta Cheese Torte

Ingredients

4 cups pasta (See note if you are using 6 inch pan)

1 red or yellow pepper (medium size), chopped

3 eggs (large and organic if you can)

3/4 cups milk (2%)

1/3 cup sour cream (14%)

1 cup shredded mozzarella cheese

1/4 tsp salt

1/2 tsp grounded black pepper

1 tsp oregano

1/8 cup Italian parsley, chopped + more for decoration

3 cloves of garlic, minced

Optional: Feta cheese (as much as you want to)

INSTRUCTIONS

Preheat oven to 400 F.

Line springform with aluminum foil or spray with baking spray. Place on baking sheet.

Using a large saucepan boil salted water and add 4 cups of pasta. Boil for about 8 minutes.

While pasta is cooking, find medium size bowl.

Add eggs, milk, Italian parsley, garlic, salt, pepper, oregano to the bowl and whisk all ingredients.

Then stir in mozzarella cheese and chopped red or yellow pepper.

When pasta is done, drain.

Add hot pasta to cheese mixture.

Stir all ingredients together using the metal spoon.

Your next step is to transfer pasta mixture into prepared springform pan.

Baked at 400 F for about 20 minutes.

Remove from oven and top with sour cream, feta cheese and Italian parsley.

Return to oven and bake for additional 5 minutes.

Then remove from the oven and cool it for about 15 minutes.

Bake for 20 minutes at 400 F.

Top with sour cream, feta cheese and Italian parsley.

Return to oven and bake for 5 minutes extra.

Remove from oven.

Storage

Store leftovers in the fridge for no longer than 2 days. (if it last that long)
