Denver Sandwich Italian Way

Ingredients

1 TBSP oil

2 eggs

1/4 cup chopped peppers

1/8 cup chopped prosciuttino

1/4 cup finally shredded cheddar cheese

a few basil leaves

salt and pepper, to taste

4 slices bread

Instructions

Mix 2 eggs and basil.

Set aside.

Heat 1 TBSP of oil in the pan.

Add chopped peppers, prosciuttiono and saute a couple of minutes.

Add egg mixture and sprinkle cheese on top.

Sprinkle salt and pepper to your taste.

Let the eggs cook until lightly browned.

When done, cut into 2 equal pieces.

Place between toasted bread slices.

If you make homemade pizza dough, you will notice the difference between that and store bought pizza dough.

Now, let’s prepare our toppings. It is really your choice.

I will give you the list of possibilities:

-Mozzarella cheese, grated

-Feta cheese

– Mushrooms, thinly sliced

-Peppers

-Italian sausage

-Pepperoni

-Ham

-Pesto

-Chopped fresh basil

-Onions

-Oregano

…..

Preheat oven to 405 F.

Flatten your dough ball with your hands and stretch out into a round or any shape that you like.

Brush dough top with organic olive oil.

Spread with tomato sauce or traditional pizza sauce.

After that add toppings of your choice.

For me: mushrooms, spinach, mozzarella cheese, feta cheese, basil, oregano

To finish sprinkle with an organic dry oregano and olive oil. Bake for 25 min at 405 F.

I like to say “Take a little time and enjoy the homemade pizza dough”.

This recipe is very simple and it only takes 15 minutes to prepare.

On top of that you will need just a few ingredients which you probably already have. (let’s hope…)

The ingredients are:

-flour, instant yeast, sugar, salt, olive oil and water

Keynote:

-Please be sure that you get a soft dough and to let it rise in a warm place.

Note for busy mums or busy people:

Freezes well.

So, let’s make the homemade pizza dough.

ACTION MODE …

Ingredients:

1 cup + 3/4 cup  + 1/8 cup AP flour (almost 2 cups)

1 tsp instant yeast or active yeast

1 cup water (you will use 1/4 cup + 3/4 cup)

1 tsp salt

1/4 tsp sugar

2 Tbsp olive oil

Directions:

If using the active yeast:

In a bowl, combine 1/4 cup of water, yeast and sugar. Let stand for 5 min.

Add 3/4 cup warm water, 2 TBSP olive oil, 1 tsp salt.

If using the instant yeast:

In a bowl, combine 1/4 cup of water, yeast, salt and sugar. Let stand for 1 min.

Add 3/4 cup warm water, 2 TBSP olive oil.

Mix all ingredients together using a metal spoon.

Add 1 cup of flour and mix with a spoon.

After you mix with 1 cup of flour it will look like this.

Then add 3/4 cup of flour and keep mixing

until the spoon say: “Leave me alone your hard working bitch!”

Trust me, you will hear it. At this point retire your spoon unless you want the conflict to escalate.

Since I know your are kind and peaceful human being you will start using your hands at this point.

Calmly and surely. (don’t be afraid, you need to practice)

Knead dough until smooth, adding more flour by TBSP. You will know. If you add 2 TBSP of flour and

dough is happy you can stop at that point. You don’t need to use all 1/8 cup of flour.

Transfer to prepared bowl and coat with olive oil.

Cover bowl with tea towel and let dough rise in warm area until double in volume, about 60 min or 1 hour.

Homemade pizza dough - you will need only 15 min.

Ingredients

  9. Transfer to prepared bowl and coat with olive oil.
  10. Cover bowl with tea towel and let dough rise in warm area until double in volume, about 60 min or 1 hour.

If you want to freeze, you can wrap the pizza dough in plastic and freeze in a freezer bag for up to 3 months.

If you want to make smaller pizza divide into half before freezing.

You can make this homemade pizza dough using a food processor. It is your choice.

Lucky Food – Cabbage Rolls Part 2

Where did we stop last time?

When your dish is full of cosily placed cabbage rolls,cover with the remaining cabbage leaves, pour water over all so that the cabbage rolls sinks.

At the beginning cook on a high temperature until water boils.

Then continue cooking at medium temperature for 3 hours, adding more hot water as necessary. (always have a lots of water above your cabbage rolls …just imagine underwater swimming

and your head is like cabbage roll)

After 3 hours add can of crushed tomatoes (28 oz) and 1 TBSP of salt. (you can add less or more salt, taste to your liking).

Continue cooking for another 15 min…and then it is ready for you and your family.

It can be lunch or dinner for a few days.

You can serve cabbage rolls with mashed potatoes, polenta, sour cream…

You really don’t need anything else…just plain and simple food that our grandparents use to eat…

Tips:

1. Before you make the rolls i suggest you soak the sour cabbage in water because it might be too salty and sour.

2. Don’t add too much salt into your food, always taste to your liking. This recipe is using just 1/2 tsp into meat filling and 1 TBSP to the crashed tomatoes and water.

3.Practice making the cabbage rolls

Hold one cabbage leaf in your left hand and place a meat filling near stem end.

Fold stem over the meat filling

Fold the two sides to the middle

Roll up.Use your finger to tuck the open side of the leaf inside.

Place in a large pot and say “thank you” to your cabbage rolls.

Cabbage Rolls-Your Lucky Food

If you want 2017 to be your lucky year you will need to make this recipe!

Why? Because the cabbage rolls are considered to be very lucky food and it will bring you luck in life.

And, please don’t tell me you don’t need luck. We all do.

So, let’s be a lucky soldiers in this life. Let’s make the Sour Cabbage Rolls.

We need the following ingredients:ground meat (beef or/and pork), rice, onions, salt and ground black pepper.

500 gr ground meat (beef or/and pork)

1/3 cup brown rice

1 chopped large onion

1/2 tsp salt

1tsp ground black pepper

Instructions:

You can find the sour cabbage heads at Safeway or Superstore.

Remove and separate cabbage leaves from head.Cut the thick root on the back of the each leaf because of the easier folding.

Then, wash them in cold water or follow the notice below. (Please do not skip this step.)

Very Important: Immerse all cabbage leaves in cold water for 1/2 hour or longer because you need to wash off the salt so cabbage rolls are not too salty.

Now, let’s make filling.

Mix thoroughly 500 gr ground meat, 1/3 cup brown rice, 1 chopped large onion, 1/2 tsp salt and 1 tsp ground black pepper.

Take one by one cabbage leaf and on each put the meat filling (about 1 TBSP) and roll cabbage rolls and place them in suitable cooking pot.

It is Sunday, June 26, 2016.

And I believe I am on this land called earth…trying to be the best human being that I can be. And if UFO is flying somewhere….I don’t know…up there,

and trying to come to our land what should we do?

And who they are? Can you imagine them? …I like to imagine them like a smart-mouthed creature who come to be with us

and help us become better people. So,as I am thinking somebody is knocking on my door.

Who is it? – I am asking.

Alf.

Who?

Alf? Do you remember me?

Sorry, I don’t. Who are you?

I am from that show “Alf”? How can you forget me? You used to watch me. And laugh… I hate humans, they don’t know how to be loyal.

How can I help you?-I ask.

I am hungry! And I know you have new blog and I want to taste your food.

You know I have a new blog? Now I am interested… Alf, how do you know I have new blog?

Well, Christopher Columbus told me. He said: You are pretty interesting person? You just don’t belong to people….

We need the following:

potato (2 lbs)

oil, salt, pepper, oregano

Preheat oven to 400 degrees F

Cut the potatoes in quarters and place to a large pan. Add salt, pepper, oregano.

Roast in the oven for 30 min or until browned and crisp.

Now you are ready to make the sour cabbage salad.

Your main ingredient is the sour cabbage.

Wash the cabbage. Add salt, black pepper, vinegar and oil. And that is your salad.

Now, let’s have lunch.

Easy, breezy, beautiful cover … Chicken Alfredo

Easy, breezy, beautiful cover … PASTA!!! Yes,it is.

This is one of those quick weeknight meals, which makes it even nicer.

You need the following ingredients:

pasta, chicken, sour cream, mozzarella cheese, oregano, basil, garlic, carrot, olive oils, salt and pepper.

Start by preparing  the theater pasta. The theater pasta is farfalle or commonly known as “bow-tie pasta”.

Bring a large pot of water to a boil. Add Farfalle and cook until al-dente, about 8 minutes. Drain and leave in strainer until you cook the sauce.

Heat olive oil, add garlic and carrot and saute until soft . Add chicken and 2 Tbsp of water and cook until no longer pink, stirring occasionally.

Pour 1 cup of sour cream and 1 cup of mozzarella cheese into chicken mix and continue stirring until it is well mixed and creamy.

Once it is fully mixed add in the drained pasta, oregano, salt, pepper and basil. Stir it one more time until all ingredients are mixed together like best friends.

  • 2 cups Farfalle Pasta
  • 200 gr Chicken cut into small pcs (about half pound)
  • 2 Tbsp Olive Oil
  • 5 Cloves of Garlic
  • 3 Large Carrots cut into really small pieces
  • 1 cup sour cream
  • 1 cup mozzarella cheese
  • Oregano, Basil, Salt, Pepper

Instructions

  1. Begin by cooking the pasta as instructed on the package, drain and leave in strainer until you cook the sauce.
  2. Heat olive oil, add garlic, carrot and saute until soft.
  3. Add chicken,2 Tbsp of water and cook until no longer pink, stirring occasionally. (about 5 min)
  4. Pour 1 cup of sour cream, 1 cup of mozzarella cheese and mix it.
  5. Add drained pasta, oregano, salt, pepper and basil.
  6. Stir one more time and there you have it.
  7. Your easy, breezy, beautiful cover girl pasta.
  8. Share and enjoy!
