So, if you are ready as I am let’s make the 2 of the best gingerbread coffee cake.

Since I need to describe 2 in one recipe …let me start with the following:

-layered mousse cake with a mirror glaze

-super tasty

-and elegant dessert for Christmas party, family celebration or just every day dessert when you need “special chocolate mixture” magic.

-eggs (large eggs)

-white sugar

-brown sugar

-flour (all purpose flour)

-baking powder

-cornstarch

-cinnamon

-ground coffee

-cream cheese

-heavy cream

-ground ginger

-nutmeg

-pure vanilla extract

-Nutella

-dark chocolate

-powdered gelatin

-white chocolate

-corn syrup

Equipment Needed

-baking sheet (16 by 12 inches)

-large bowl

-sauce pan

-KitchenAid mixer (or the electric mixer you are using)

-mixing bowl (for the cake and the filling)

-small bowl

-silicone molds

Ginger Coffee Cakes Recipe
Ginger Coffee Chocolate Cakes

ACTION TIME

Making Ginger Coffee Chocolate Cakes

Ingredients

6 eggs (large eggs size)

3/4 cup white sugar

1 cup flour (all purpose, unbleached)

2 tsp grounded cinnamon

1 tsp baking powder

1/2 tsp cornstarch

Gingerbread Coffee Mousse

2 cup heavy cream

1/3 cup cream cheese (Philadelphia cream cheese)

3/4 cup white chocolate chips, melted

1/4 cup brown sugar

2 tsp powdered gelatin

1/4 cup of cold water

1/2 cup of coffee (cooled)

1 tsp cinnamon

1/2 tsp ground ginger

1 tsp of pure vanilla extract

1/8 tsp of nutmeg

Nutella Ganache

1/2 cup Nutella

2 oz dark chocolate, chopped

2 TBSP unsalted butter, room temperature

1/2 cup heavy cream

1 TBSP corn syrup

Instructions for making 2 Gingerbread coffee cake

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes high speed)

Dry ingredients: In another bowl sift the flour, baking powder. Then add corn starch and cinnamon.

Add the flour mixture into the eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour mixture or dry ingredients are incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Bake at 350 for 15 minutes. (start checking after 12 minutes)

Cool completely. (for about 2 hours)

How to make Gingerbread Coffee Mousse

Using small bowl or small cup bloom the gelatin by sprinkling it over cold water.

Let it sit for 5 minutes.

In a small saucepan, gently heat the coffee, brown sugar, cinnamon, ginger, and nutmeg until warm but not 

boiling. 

Add the bloomed gelatin and stir until fully dissolved.

Be sure that gelatin is not mixed with boiling liquid.

When gelatin is fully dissolved remove from heat.

Add melted white chocolate and pure vanilla extract. 

Coll the mixture. (image 1 below)

In a separate bowl, small bowl, mix cream cheese until smooth. 

In another large bowl, whip the heavy cream.

Add mixed cheese into whipped heavy cream and mix just for a second. (image 2)

Your next step is to add cooled coffee/gelatin mixture into heavy cream/cheese mixture.

Gently fold until incorporated. (image 3)

Recipe 1 – Ginger coffee chocolate domes

Assemble:

Using the cookie cutter, cut 6 cake rounds. Set aside.

Fill silicone dome with about 3/4 full with the Gingerbread Coffee Mousse.

Press one cake round into each mold.

Take a moment and enjoy your best work.

Cover with plastic wrap and freeze overnight.(or for a few hours)

Perfect Chocolate Gingerbread Cake or roll cake – Recipe 2

Add 3/4 cup of Nutella to leftover of Gingerbread Coffee Mousse.

Mix quickly until it is incorporated.

You just made Nutella Gingerbread Coffee Mousse. 

Cut aluminum foil to 16 by 12 inches.

Transfer second half of your cinnamon base cake to the aluminum foil..

Spread the cake with the best Nutella Gingerbread Coffee Mousse and roll roll it using aluminum foil for the perfect roll.

Transfer to the freezer for a few hours of over night.

Meanwhile make large cup of hot coffee.

Take a moment and enjoy your life.

You do have 2 cakes in the freezer and you are ready for Christmas party/

NEXT Day 

MAKING NUTELLA GANACHE

Using a medium size cup or bowl add Nutella, chopped dark chocolate and butter. Set aside.

Add heavy cream and corn syrup into small sauce pan and heat until it begins to simmer.

Remove from heat and pour over Nutella, dark chocolate and butter.

Cover the cup with aluminum foil for 5 minutes.

After 5 minutes whisk until smooth.

Remove your cakes from the freezer and cover with the best Nutella ganache.

Decorate the top of the cake with ground ginger, cinnamon, sprinkles, ground walnuts or use anything which makes you happy.

Quick Note

Eggs – please use large eggs. Organic if you can. This is the most important ingredient for the cake.

Heavy Cream – use 33% or 35% . Please don’t use half and half. You need heavy cream with 33% or higher.

Coffee – use fresh, homemade hot coffee.

Ginger – I used ground organic ginger (see picture).

Gelatin Powder – I used GoBio organic gelatin. It is my favorite. You can use your favorite brand.

Dark Chocolate – I used Lindt 70 % cocoa. You can use your favorite dark chocolate, bittersweet chocolate or semi-sweet chocolate.

Base Cake

  • 6 eggs (large eggs size)
  • 3/4 cup white sugar
  • 1 cup flour (all purpose, unbleached)
  • 2 tsp grounded cinnamon
  • 1 tsp baking powder
  • 1/2 tsp cornstarch

Gingerbread Coffee Mousse

  • 2 cup heavy cream
  • 1/3 cup cream cheese (Philadelphia cream cheese)
  • 3/4 cup white chocolate chips, melted
  • 1/4 cup brown sugar
  • 2 tsp powdered gelatin
  • 1/4 cup of cold water
  • 1/2 cup of coffee (cooled)
  • 1 tsp cinnamon

  • 1 tsp of pure vanilla extract
  • 1/8 tsp of nutmeg

If you love/like walnuts this is MUST make recipe.Yes, my dear reader you need to make this recipe for any holiday season.

You don’t need to be Martha Stewart to make this easy Walnut Christmas cake. 

​So, to make this cake you will need to have the following ingredients…

Shopping List for Walnut Christmas Cake

  • butter (room temperature)
  • sugar
  • eggs (room temperature)
  • flour
  • walnuts
  • baking powder
  • milk

Equipment Needed

-KitchenAid mixer (or the stand mixer you are using. Can be hand mixer too)

-mixing bowl (large bowl)

-measuring cup

-separate bowl 

-sauce pan

-baking pan 9 by 13 inches

Action Time

Making Moon Walnut Christmas Cake

Ingredients

1 layer

1/2 + 1/8 cup butter (unsalted and room temperature)

2/3 cup regular sugar

5 egg whites

3 TBSP flour (AP)

1 and 1/4 cups ground walnuts

1 tsp baking powder (aluminum free)

Filling-2nd layer

5 egg yolks

5 TBSP regular sugar

Walnut Topping

1/4 cup butter

4 TBSP sugar (or 1/4 cup)

1/4 cup milk

3 cup grated walnuts

​Decoration: ground walnuts

Instructions for Festive Recipe

Line 9×13 baking pan with aluminum foil (or parchment paper)

Preheat oven to 350 F.

Dry ingredients

Mix flour, baking powder and ground walnuts. Set aside.

Mixing bowl 1:

Using a large bowl beat 5 egg whites to stiff peaks. Set aside.

Mixing Bowl 2:

In another bowl mix butter and sugar until light and fluffy.

Then add egg whites from bowl 1 and mix all ingredients in a very low speed.

Your next step is to add flour mixture with walnuts.

Mix until all ingredients are incorporated.

Pour batter into the prepared 9×13 baking pan.

Bake at 350 F for about 12 minutes. (it will not be completely baked)

While your cake is baking, prepare the layer 2.

Yellow Layer

Mix 5 egg yolks and 5 TBSP sugar until the mixture becomes thick and triples in volume. (about 5 minutes, check image 1 and 2 below)

Set aside.

After 12 minutes remove cake from the oven.(image 3 below)

Spread egg yolks mixture on top of the cake. (image or picture 4 below)

Return cake to oven and bake for additional 12 to 14 minutes.

Use toothpick to test if cake is done. (image 5 above, cake is baked)

While first and second layer of the cake are in the oven, make the best walnut topping.

Walnuts Topping Recipe

Using a small bowl add 1/4 cup butter, 1/4 cup sugar and 1/4 cup milk. (image 1 below)

Heat on a medium temperature until boils. (image 2)

Add 3 cups grounded walnuts and mix all ingredients together. (you can add more walnuts, image 3)

Important: You can add more walnuts but be sure the mixture is spreadable.

When cake is baked, remove from the oven and top with walnuts topping. (image 4 below)

Sprinkle with additional ground walnuts. 

Cool the cake.

When cake is cooled or next day if you can wait…

Cut the walnut cake into moon shapes. 

You can use cookie cutter or you can just use glass and cut into moon shape.

Transfer to the baking tray.

Important: you can cut into squares, moon shapes or any smaller sizes you like.

Don’t forget: Enjoy and share the best festive recipe with your family and friends.

  • 2/3 cup regular sugar
  • 5 egg whites
  • 3 TBSP flour (AP)
  • 1 and 1/4 cups ground walnuts
  • 1 tsp baking powder (aluminum free)

1 cup flour (all purpose flour)

1/2 and 1/4 tsp baking powder

1 tsp baking soda

1/4 tsp salt

1/2 cup brown sugar

2 eggs (room temperature)

1/2 cup white sugar

1/4 tsp vanilla extract

1/2 cup vegetable oil

1 1/4 cups carrots (finely grated carrots)

1/3 cup raisins

1 1/2 tsp rum

Cream Cheese Frosting

12 oz cream cheese, softened

1/4 cup heavy cream

1 tsp vanilla extract

3 to 4 cup of icing sugar (powdered sugar)

Chocolate Icing

1/3 cup heavy cream

1 1/4 cup chocolate chips

Instructions for Gordon Ramsay Carrot Cake

Preheat oven to 350 F.

Line one cake pan with parchment paper. (I used 9 inch round cake pan). Set aside.

Bowl 1 – Dry ingredients

Add dry ingredients to the bowl: all purpose flour, white sugar, brown sugar, baking soda, baking powder, salt, cinnamon and nutmeg.

Prep carrots and raisins

Cover raisins with rum. Set aside.

Grate carrots.

Mixing Bowl (using paddle attachment)

Add the wet ingredients to the mixing bowl: oil, white sugar and brown sugar.

Beat together until smooth and then add eggs, one at time. Mix well after each addition.

Stir in pure vanilla extract.

Your next step is to add the finely grated carrots, raisins with rum and mix until all ingredients are incorporated.

Then add all dry ingredients and mix on low speed until no streaks of flour remain. (this is just for a minute)

Pour the best carrot cake into prepared cake pan.

Bake at 350 F until a toothpick inserted into center comes out clean. (for my oven it was 30 minutes)

Remove from the oven and let it cool.

How to make fluffy cream cheese frosting

In a large bowl add cream cheese, milk and vanilla. Mix until smooth.

Then gradually beat in icing sugar until you get the frosting for the carrot cake spreadable.

Transfer to the fridge for an hour.

Chocolate Icing

Heat the heavy cream until almost boiled and pour over chocolate chips.

Let it sit for 3 minutes and then stir with the spatula until smooth.

Next day or when your cake is cooled

Half of the cake cover with fluffy cream cheese frosting and half with the chocolate icing.

​Transfer to fridge and when ready enjoy and share.

The ingredients for the cake are the following: eggs, sugar, flour, coffee, cocoa, oil, coffee powder, pure vanilla extract and baking powder.

For the filling you will need: orange juice, Dr. Oetker vanilla pudding, heavy cream, sugar and Nutella

Chocolate Icing: dark chocolate, heavy cream

Before you start making this amazing orange cake for the first time please be sure you have all ingredients needed for the recipe.

Easy Orange Chocolate Cake

Action Time

Making Easy Orange Chocolate Cake Bombs

Ingredients

4 eggs

1 1/2 cups sugar

1/2 cup strong homemade coffee

3/4 cup oil

2 1/4 cups flour

3 TBSP coffee powder

1 tsp baking powder

Orange/Nutella Filling

3 cups orange juice (fresh oranges or store bought orange juice)

8 TBSP sugar

3 vanilla puddings (Dr Oetker)

1 2/3 cups heavy cream (double cream)

1/2 tsp vanilla extract

3/4 cup Nutella (or add as much as you want)

orange zest

Chocolate Ganache

1/3 cup heavy cream

1/4 cup corn syrup

6 oz dark chocolate (or semi sweet chocolate)

1/2 TBSP unsalted butter

1 TBSP rum

Instructions for making Orange Cake with Chocolate

Preheat oven to 400 F.

Line baking sheet with aluminum foil/parchment paper and spray with baking spray. Set aside.

Make strong coffee or strong espresso.

Important: You will use cold espresso/cold coffee.

In a small bowl add flour, cocoa, coffee powder and baking powder. Set aside.

Beat eggs and sugar until light.

Then add oil, cold coffee and mix until incorporated.

Your next step is to add flour/cocoa mixture and mix quickly or until ingredients are incorporated and happy together.

Pour into prepared baking sheet and bake in the oven at 400 F until done.

For me it was 14 minutes.

Remove from the oven and cool the orange cake.

Cut the cake to the following size: 4 by 10 ( 2 layers)

The rest use cookie cutter and cut 6 round cakes (for me the size was 2 and 1/2 inches)

It really depends of the size of your bomb mold.

​How to prepare Orange/Nutella Filling

Add Dr. Oetker vanilla puddings and 6 TBS of sugar to the bowl. (small bowl)
Then add 8 TBSP of orange juice into it. (take from 3 cups of orange juice)
Stir with the wooden spoon until smooth.
Meanwhile add the rest of the orange juice  and sugar to the sauce pan and bring to boil.
Then remove from the heat and add the pudding mixture.
Return to heat and stir non stop for about 3 minutes or until thickness.

Remove from heat.

Then add vanilla extract and orange zest. Stir with wooden spoon until incorporated.

​Cover with the plastic wrap and let it cool.
In another mixing bowl mix heavy cream until soft pick.

When your orange filling is cooled transfer to the mixing bowl and mix until smooth. (about 1 minute)

Then add heavy cream and mix until incorporated.

Now, take 1/3 of the mixture and transfer to another mixing bowl.

Add Nutella and mix until incorporated.

BTW, you just made 2 amazing fillings for the best orange cake: Orange filling and Nutella Orange Filling.

How to make Chocolate Ganache

In a sauce pan add heavy cream and corn syrup.
Stir until the syrup dissolves and bring the mixture to full boil.
Then remove from heat and add chopped dark chocolate.
Wait for 3 minutes and then stir until smooth.
Add unsalted butter and whisk until incorporated.

Optional: You can make Nutella Ganache too

Assemble of the cake

Place first layer of the cake.

Cover with orange filling, then with Nutella filling.

Add second layer of the cake.

Cover with orange filling.

Transfer to the fridge / freezer for a few hours.

Then cover cake with chocolate or Nutella ganache.

Decorated with orange zest, shaved chocolate.

For the Orange Chocolate Bombs

Scoop 1/4 cup of the Orange filling into each mold.

Make it even and pretty.

Then gently press the cake circles on top of the Orange filling.

Cover with plastic wrap and freeze overnight.

Next day or when ready

Pour the glaze over the Orange filling.

Decorate as you wish.

And are you craving something special like classic Austrian chocolate cake. Of course you are and because of you I am making this cake.

Let me give you a little more information about this elegant dessert …

Description of  Austria Sacher Chocolate Torte or Sacher-Torte Recipe

The world famous recipe was created by Franz Sacher in 1832.

Austrian state chancellor Prince Klemens Wenzel has requested a dessert for a special occasion to impress a group of guests.

The head chef was ill that day which left a 16 year old Franz Sacher to use his imagination and talent and step up to the challenge.

And he did. He created the most famous cake made of chocolate cake layers with one or more layers of apricot jam and covered with smooth chocolate glaze. God, who doesn’t want this cake.

The cake is full of melted chocolate, butter, eggs and apricot jam.

Yes, this cake is the true magic full of chocolate flavors and served with heavy cream in many coffee shops in Austria.

Making Austria Sacher Chocolate Torte or Sacher-Torte Recipe

Ingredients

6 eggs 

1 1/2 cups sugar

1/2 cup unsalted butter

6 oz dark chocolate 

3 oz semi sweet chocolate

1/3 cup unsalted butter

1/2 cup sour cream (14%)

1/2 TBSP pure vanilla extract

1 1/2 all purpose flour

1/2 TBSP baking powder

1/2 tsp salt

Syrup

1/3 sugar

1/2 cup water

Filling

1 jar apricot jam (375 gr)

 Chocolate Glaze

1/2 cup heavy cream

1 1/2 cups chocolate chips

Whipped Cream

1 cup heavy cream

1/4 cup sugar

1/2 tsp vanilla extract

Instructions for making Sacher Chocolate Torte

Preheat oven to 325 F.

Line baking sheet with aluminum foil /parchment paper. Spray with baking spray.

To a medium size bowl add sifted all purpose flour, baking powder and salt. Set aside.

Add to the mixing bowl 6 egg whites and mix using the whisk attachment until foamy.

Reduce mixer speed and add 3/4 cup sugar very slowly. 

When all sugar added increase the speed and mix until medium peaks form. (picture 1)

Meanwhile using the double boiler method add chopped chocolate and unsalted butter into sauce pan.

When chocolate and butter are melted and happy together remove from the heat. (picture 2)

Add 3/4 cup of the sugar to the the melted chocolate and mix together. (picture 3)

Set aside to cool. (about 10 minutes)

When the chocolate mixture is cooled add 6 egg yolks, sour cream, pure vanilla extract and mix until well combined.(picture 4 and 5)

Your next step is to add flour mixture. (picture 6)

Mix until flour mixture is incorporated with the chocolate mixture.

Then carefully fold 1/3 of egg white mixture. (picture 7)

Continue adding egg whites in 2 additions.

Important: Carefully fold the egg whites using the spatula.(don’t use the mixer when adding egg whites)

When egg whites and chocolate mixture are incorporated transfer to the prepared baking sheet.

Bake at 325 until done. (picture 8)

For my oven it was 17 minutes.

Let it cool.

Making Sugar Syrup and Chocolate Ganache

To a small sauce pan add sugar and water.

Cook over high heat util water is boiled and sugar is dissolved.

Remove from heat and cool.

Making smooth chocolate glaze

To a small sauce pan add heavy cream and heat until steaming hot.

Pour the heavy cream over the chocolate chips and let it sit for 3 minutes.

Then stir until you get smooth chocolate glaze.

Assembly of the Austria Sacher Chocolate Torte 

Cut the cake into 6 by 9 inches. 

Place first cake layer on wire rack and brush with cooled syrup.

Spread apricot jam and top with second cake layer.

Brush the top of the second layers chocolate cake with syrup.

Spread remaining apricot jam.

Transfer to the fridge until set. (about 45 minutes)

Remove from the fridge and pour smooth chocolate glaze over the top of the cake and sides of the cake.

Decorate as you wish. I used shaved dark chocolate and icing sugar. 

Transfer to the fridge until set.

Serving Sacher Torte

Select your best plate, add the slice of the most delicious chocolate cake and serve with generous amount of whipped cream.

Of course if you are planning trip to Austria and visiting Sacher hotel you will have to order cup of coffee too.

How to prepare whipped cream

Add heavy cream, sugar and vanilla to the mixing bowl.

Mix until stiff peaks.

When ready to cut the cake use the serrated knife or the best knife you have for cutting the cake.

Important: Dip knife into hot water and dry. Make cut. Again dip into hot water and dry. Cut.

Butter – unsalted butter, room temperature

Austria Sacher Chocolate Torte

Austria Sacher Chocolate Torte or Sacher-Torte Recipe

Total Time: 1 hour 3 minutes

One of the most famous cakes in the world is the Austria Sacher Chocolate Torte or Sacher-Torte Recipe. Full of dark chocolate, semi-sweet chocolate, apricot jam, chocolate glaze...and more.

Ingredients

  • 6 eggs 
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter
  • 6 oz dark chocolate 
  • 3 oz semi sweet chocolate
  • 1/3 cup unsalted butter
  • 1/2 cup sour cream (14%)
  • 1/2 TBSP pure vanilla extract
  • 1 1/2 all purpose flour
  • 1/2 TBSP baking powder
  • 1/2 tsp salt

Syrup

  • 1/3 sugar
  • 1/2 cup water

Filling

  • 1 jar apricot jam (375 gr)

Chocolate Glaze

  • 1/2 cup heavy cream
  • 1 1/2 cups chocolate chips

Whipped Cream

  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract

Instructions

    Preheat oven to 325 F.
    Line baking sheet with aluminum foil /parchment paper. Spray with baking spray.
    To a medium size bowl add sifted all purpose flour, baking powder and salt. Set aside.
    Add to the mixing bowl 6 egg whites and mix using the whisk attachment until foamy.
    Reduce mixer speed and add 3/4 cup sugar very slowly. 
    When all sugar added increase the speed and mix until medium peaks form.
    Meanwhile using the double boiler method add chopped chocolate and unsalted butter into sauce pan.
    When chocolate and butter are melted and happy together remove from the heat.
    Add 3/4 cup of the sugar to the the melted chocolate and mix together.
    Set aside to cool. (about 10 minutes)
    When the chocolate mixture is cooled add 6 egg yolks, sour cream, pure vanilla extract and mix until well combined.
    Your next step is to add flour mixture.
    Mix until flour mixture is incorporated with the chocolate mixture.
    Then carefully fold 1/3 of egg white mixture.
    Continue adding egg whites in 2 additions.
    Important: Carefully fold the egg whites using the spatula.(don't use the mixer when adding egg whites)
    When egg whites and chocolate mixture are incorporated transfer to the prepared baking sheet.
    Bake at 325 until done.
    For my oven it was 17 minutes.
    Let it cool.
    Making Sugar Syrup and Chocolate Ganache
    To a small sauce pan add sugar and water.
    Cook over high heat util water is boiled and sugar is dissolved.
    Remove from heat and cool.
    Making smooth chocolate glaze
    To a small sauce pan add heavy cream and heat until steaming hot.
    Pour the heavy cream over the chocolate chips and let it sit for 3 minutes.
    Then stir until you get smooth chocolate glaze.
    Assembly of the Austria Sacher Chocolate Torte 
    Cut the cake into 6 by 9 inches. 
    Place first cake layer on wire rack and brush with cooled syrup.
    Spread apricot jam and top with second cake layer.
    Brush the top of the second layers chocolate cake with syrup.
    Spread remaining apricot jam.
    Transfer to the fridge until set. (about 45 minutes)
    Remove from the fridge and pour smooth chocolate glaze over the top of the cake and sides of the cake.
    Decorate as you wish. I used shaved dark chocolate and icing sugar. 
    Transfer to the fridge until set.

    When ready to eat, serve with whipped cream, melted chocolate. And don't forget coffee .

EQUIPMENT NEEDED

-KitchenAid Mixer (or your favorite stand mixer with whisk attachment) or hand mixer

-mixing bowl

-baking glass pan 8 by 8 or 9 by 5 pan 

ACTION TIME

Making No Bake Summer Cake-Easy Desserts to Make

Ingredients

1 1/2 cups heavy cream

1 cup icing sugar

3/4 cup sour cream (14%)

1/2 tsp pure vanilla extract

1 (8 oz) can crushed pineapple (drained, the juice will be used for lady fingers)

Lady fingers

Fresh fruits (grapes, blueberries, fresh strawberries…)

Optional decoration: white chocolate or chocolate chips 

Instructions for No Bake Summer Cake

Line bottom of 9 by 5 or 8 by 8 inch with foil/parchment paper. Set aside.

Add the heavy cream to the mixing bowl and mix until soft peaks form.

Then add the icing sugar and vanilla extract and mix to combine.

When completed add sour cream and just stir using the spatula until all ingredients are incorporated and happy together.

To complete happiness inside of the large mixing bowl. add drained pineapple.

Stir again and set aside. 

Assembly of the cake

Dip lady fingers into pineapple juice and place at the bottom of the pan. 

Add half of heavy cream mixture then add grapes (or use your favorite fresh fruits)

Then add another layer of lady fingers dipped into pineapple juice.

Cover with heavy cream mixture, more grapes.

Cover with the plastic wrap and transfer to the fridge for a few hours (or overnight)

The following day:

Cover with grated white chocolate, chocolate chips or whipped heavy cream.

Cut into your favorite size and serve.

Heavy Cream – use 33% or higher. 

Icing sugar – if you don’t have the icing sugar, just make homemade version. Use coffee grinder or blender to make icing sugar from regular.

Ladyfingers – check Walmart, Superstore, Safeway or any food store near you. All Italian stores in North America usually sells this cookie beauty called ladyfingers.

Fresh fruits – for this recipe I used grapes and blueberries. I also made this recipe with fresh peaches and raspberries. Use the fresh fruits you like. It can be fresh strawberries or any summer berries.

Also, visit your local farms and buy fresh berries.

Of course you are since our recipe today is full of yellow sunshine with easy, light cheese filling.

From sunshine to chocolate … it is all for you.

Description of Simple Yellow Cheese Cake

For this recipe you have 2 steps to follow or to complete:

Step 1.make simple yellow cake (we made this many times)

Step 2 make the most delicious filling full of cheese and heavy cream.  (yes, I know – calorie diet bye, bye)

The ingredients for the yellow cake are basic, simple ingredients and it is already on your kitchen counter: eggs, sugar, all purpose flour, baking powder, salt and cornstarch.

​In order to make this cake like the picture or meaning the real, yellow sunshine cake we need to think about the key ingredient. And the key ingredient is EGG!

Yes, the eggs are the star of this recipe.

For the best results please use large, organic eggs (visit your local Farmers market and support vendors from your community)

If you can’t afford good quality eggs use what you have. You still can make the cake.

Just be aware that the cake will have light yellow color (almost white if you use no good quality eggs)

Shopping List for Yellow Cake

  • eggs
  • sugar
  • flour (all purpose flour)
  • cornstarch
  • baking powder
  • baking soda and salt
  • cream cheese
  • heavy cream
  • icing sugar
  • sour cream
  • pure vanilla extract
  • Raspberry jam (or blueberry jam)
  • Nutella 

Equipment Needed

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

-large bowl for mixing 

-small bowl for chocolate filling

-baking sheet (12 by 16 inch)

-wooden spoon or spatula

Making Simple Yellow Cheese Cake

Ingredients

6 large eggs (organic and  room temperature)

3/4 cup sugar

1 cup flour (AP)

1 tsp baking powder

1/8 tsp salt

1/2 tsp cornstarch

Filling

Raspberry Jam

Cream Cheese Mixture

12 oz cream cheese (Philadelphia)

1 1/2 cup heavy cream

1 cup icing sugar

1/2 cup sour cream

1 tsp pure vanilla extract

1/2 cup of Nutella or melted chocolate

INSTRUCTIONS

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

Sift the flour, cornstarch, baking powder and salt.

Add into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Baking time is about 15 minutes at 350. (this is for my oven so please check your oven temps) 

Important: Check the center of the cake using the fork or a toothpick. Insert a toothpick into the center of the cake; if it comes out clean, the cake is done,

Cool completely.

When cooled cut the cake with a sharp knife into 3 equal pieces ( I used size 10 by 5 inches)

While cake cools or while cake is baking/cooling you can make cream cheese mixture or cheese filling.

How to make Cream Cheese Mixture

Add cream cheese to the large mixing bowl and mix using the paddle attachment. (just for a minute)

Then add icing sugar and continue mixing until ingredients are happy together.

In a separate small bowl mix the heavy cream until soft peaks.

Then transfer the mixed heavy cream into cheese mixture and mix until incorporated. ( 1 to 2 minutes on medium speed)

Your next step is to add sour cream and pure vanilla extract.

Mix on a low speed until incorporated.

Now take 1/3 of the filling and transfer to the small bowl.

Add Nutella and mix until ingredients are blended and happy together.

Transfer cream cheese mixture to the fridge for an hour.

Assemble of the Simple Yellow Cheese Cake

Place 1 cake layer on your cake stand (or use baking sheet as the assembly station)

Cover with half of white cream cheese mixture

Then add second layer of the yellow cake.

Cover with white cream cheese mixture and using your artistic personality add about 1/2 cup of your favorite jam (blueberry jam, raspberry or any flavor you like)

Top with the third cake layer and transfer to the fridge for a few hours. (if you want fast just transfer to the freezer for about 45 minutes)

Remove from the fridge and spread the chocolate filling all over the top and sides.

Decorate as you wish. 

The top of the cake can be decorate using chocolate shavings, sprinkles, Lindt chocolate…

Enjoy and share the best and the most Simple Yellow Cheese Cake. (but not a cheesecake)

My best tip for you is to have good quality ingredients.

Let’s start with the most important.

EGGS – use large, organic eggs. (room temperature). 

Flour – I used all purpose flour, unbleached flour. 

Cream Cheese – I used Philadelphia cream cheese. You can use your favorite cream cheese.

Sour Cream – for this yellow cake I used sour cream 14 %.

Simple Yellow Cheese Cake - New Light Recipe

Yield: Serving 6 people
Prep Time: 45 minutes
Cook Time: 15 minutes
Total Time: 1 hour

Easy and simple yellow cake full of cheese and heavy cream... Who can say NO to this recipe

Ingredients

  • 6 large eggs (organic and  room temperature)
  • 3/4 cup sugar
  • 1 cup flour (AP)
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 1/2 tsp cornstarch

Filling

  • Raspberry Jam
  • Cream Cheese Mixture
  • 12 oz cream cheese (Philadelphia)
  • 1 1/2 cup heavy cream
  • 1 cup icing sugar
  • 1/2 cup sour cream
  • 1 tsp pure vanilla extract
  • 1/2 cup of Nutella or melted chocolate

Instructions

    Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).
    Spray with baking spray and set aside.
    Preheat oven to 350 F.
    In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)
    Sift the flour, cornstarch, baking powder and salt.
    Add into eggs mixture and fold gently using a spatula.
    Important: Don’t use mixer when adding flour mixture.
    Fold using a spatula.
    Be sure that flour mixture is incorporated into eggs mixture.
    Spread the batter on the prepared jelly roll pan.
    Baking time is about 15 minutes at 350. (this is for my oven so please check your oven temps) 
    Important: Check the center of the cake using the fork or a toothpick. Insert a toothpick into the center of the cake; if it comes out clean, the cake is done,
    Cool completely.
    When cooled cut the cake with a sharp knife into 3 equal pieces ( I used size 10 by 5 inches)
    While cake cools or while cake is baking/cooling you can make cream cheese mixture or cheese filling.
    How to make Cream Cheese Mixture
    Add cream cheese to the large mixing bowl and mix using the paddle attachment. (just for a minute)
    Then add icing sugar and continue mixing until ingredients are happy together.
    In a separate small bowl mix the heavy cream until soft peaks.
    Then transfer the mixed heavy cream into cheese mixture and mix until incorporated. ( 1 to 2 minutes on medium speed)
    Your next step is to add sour cream and pure vanilla extract.
    Mix on a low speed until incorporated.
    Now take 1/3 of the filling and transfer to the small bowl.
    Add Nutella and mix until ingredients are blended and happy together.
    Transfer cream cheese mixture to the fridge for an hour.
    Assemble of the Simple Yellow Cheese Cake
    Place 1 cake layer on your cake stand (or use baking sheet as the assembly station)
    Cover with half of white cream cheese mixture
    Then add second layer of the yellow cake.
    Cover with white cream cheese mixture and using your artistic personality add about 1/2 cup of your favorite jam (blueberry jam, raspberry or any flavor you like)
    Top with the third cake layer and transfer to the fridge for a few hours. (if you want fast just transfer to the freezer for about 45 minutes)
    Remove from the fridge and spread the chocolate filling all over the top and sides.
    Decorate as you wish. 
    The top of the cake can be decorate using chocolate shavings, sprinkles, Lindt chocolate...

Today’s recipe is simple and easy to make. Also, very helpful if you are into “portion control”.

Shopping List for Mini Cheesecakes Bites

Cream Cheese – use your favorite. For this recipe I used the one and only Philadelphia cheese (original)

Heavy cream – I used 35% heavy cream

Vanilla extract – my favorite vanilla extract is homemade version from 5 star cookies blog – LINK for the vanilla extract recipe

Sugar – I use icing sugar

Lotus Biscoff Cookies – to make the base of mini cheesecake

EQUIPMENT NEEDED

-KitchenAid Mixer (or any stand mixer you are using/electric hand mixer)

-Food processor

-large mixing bowl

-medium bowl

-mini muffin pan or regular muffin pan (you will need cupcake liners)

-5 inch mini pan

ACTION TIME

Making Easy Mini Cheesecakes Bites-The Best No Bake Recipe

Ingredients

Base for mini cheesecakes

1 package of Lotus Biscoff Cookies (180gr)

1/4 cup melted butter

Cream Cheese Mixture 

8 oz cream cheese, room temperature 

1/2 cup whipped cream (heavy cream)

2/3 cup icing sugar

1 tsp pure vanilla extract

My Favorite Topping

Take 1/2 cup of cream cheese mixture and add 1/2 cup Nutella

Mix together and top a few of the mini individual cheesecakes. 

The rest you can top with caramel sauce and fresh fruit. (or nothing if you chose too)

INSTRUCTION FOR MAKING THE BEST NO BAKE RECIPE

To your favorite food processor add 1 package of  of Lotus Biscoff Cookies and turn into crumbs.

Transfer the cookies crumbs into medium bowl and add melted butter.

Stir to combine and then evenly distribute the mixture.

I used 1/2 TBS for mini muffin

1 TBSP for regular muffin

5 TBSP for 5 inch round pan

Use small glass to firmly press it down.

Put this in the fridge to chill.

This is 100% optional step: You can bake in the oven for 5 minutes if you are using regular muffin tin or 3 minutes if you are using very mini muffin tin.

How to make creamy cheesecake filling?

To a large bowl add cream cheese and beat until smooth using paddle attachment or whisk attachment. (2-3 minutes

Then add icing sugar and pure vanilla extract.on high speed until incorporated.

Your next step is very important.

To the separate bowl add cold heavy cream and mix on medium speed until is turn into stiff peaks.

Then fold into the creamy cheesecake filling until all ingredients are incorporated and happy. 

Transfer mixture into the piping bag and divide the batter between all the liners.

You can also use ice cream scoop or spoon the filling onto the crusts. The choice is yours.

Once you have your bottom fine crumbs and the filling together move the muffin tin to the fridge until set.(2 to 3 hours)

BTW, you just made the perfect dessert or mini individual cheesecakes. 

Congratulations! Job well done.

The final step is to add your favorite topping. 

For me it is Nutella.

My Favorite Topping

Super Important when Making your perfect dessert

1. Please use full fat cream cheese. Do not use LOW-FAT cream cheese. I will repeat use full fat cream cheese

2. Be sure the cream cheese is the room temperature or softened cream cheese.

3. Whip cold heavy cream in a separate bowl before folding into the cheesecake mixture in order to make fluffy cheesecake filling.
