Our recipe today is one of the the most perfect no bake summer desserts. It is full of heavy cream, sour cream, fresh fruit and you don’t need the oven.

You don’t even need the stove. So, yes this it the perfect no bake summer dessert recipe.

EQUIPMENT NEEDED

-KitchenAid Mixer (or your favorite stand mixer with whisk attachment) or hand mixer

-mixing bowl

-baking glass pan 8 by 8 or 9 by 5 pan 

ACTION TIME

Making No Bake Summer Cake-Easy Desserts to Make

Ingredients

1 1/2 cups heavy cream

1 cup icing sugar

3/4 cup sour cream (14%)

1/2 tsp pure vanilla extract

1 (8 oz) can crushed pineapple (drained, the juice will be used for lady fingers)

Lady fingers

Fresh fruits (grapes, blueberries, fresh strawberries…)

Optional decoration: white chocolate or chocolate chips 

Instructions for No Bake Summer Cake

Line bottom of 9 by 5 or 8 by 8 inch with foil/parchment paper. Set aside.

Add the heavy cream to the mixing bowl and mix until soft peaks form.

Then add the icing sugar and vanilla extract and mix to combine.

When completed add sour cream and just stir using the spatula until all ingredients are incorporated and happy together.

To complete happiness inside of the large mixing bowl. add drained pineapple.

Stir again and set aside. 

Assembly of the cake

Dip lady fingers into pineapple juice and place at the bottom of the pan. 

Add half of heavy cream mixture then add grapes (or use your favorite fresh fruits)

Then add another layer of lady fingers dipped into pineapple juice.

Cover with heavy cream mixture, more grapes.

Cover with the plastic wrap and transfer to the fridge for a few hours (or overnight)

The following day:

Cover with grated white chocolate, chocolate chips or whipped heavy cream.

Cut into your favorite size and serve.

Quick Note

Heavy Cream – use 33% or higher. 

Icing sugar – if you don’t have the icing sugar, just make homemade version. Use coffee grinder or blender to make icing sugar from regular.

Ladyfingers – check Walmart, Superstore, Safeway or any food store near you. All Italian stores in North America usually sells this cookie beauty called ladyfingers.

Fresh fruits – for this recipe I used grapes and blueberries. I also made this recipe with fresh peaches and raspberries. Use the fresh fruits you like. It can be fresh strawberries or any summer berries.

Also, visit your local farms and buy fresh berries.

For this recipe you have 2 steps to follow or to complete:

Step 1.make simple yellow cake (we made this many times)

Step 2 make the most delicious filling full of cheese and heavy cream.  (yes, I know – calorie diet bye, bye)

The ingredients for the yellow cake are basic, simple ingredients and it is already on your kitchen counter: eggs, sugar, all purpose flour, baking powder, salt and cornstarch.

​In order to make this cake like the picture or meaning the real, yellow sunshine cake we need to think about the key ingredient. And the key ingredient is EGG!

Yes, the eggs are the star of this recipe.

For the best results please use large, organic eggs (visit your local Farmers market and support vendors from your community)

If you can’t afford good quality eggs use what you have. You still can make the cake.

Just be aware that the cake will have light yellow color (almost white if you use no good quality eggs)

  • sugar
  • flour (all purpose flour)
  • cornstarch
  • baking powder
  • baking soda and salt
  • cream cheese
  • heavy cream
  • icing sugar
  • sour cream
  • pure vanilla extract
  • Raspberry jam (or blueberry jam)
  • Nutella 

Equipment Needed

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

-large bowl for mixing 

-small bowl for chocolate filling

-baking sheet (12 by 16 inch)

-wooden spoon or spatula

Making Simple Yellow Cheese Cake

Ingredients

6 large eggs (organic and  room temperature)

3/4 cup sugar

1 cup flour (AP)

1 tsp baking powder

1/8 tsp salt

1/2 tsp cornstarch

Filling

Raspberry Jam

Cream Cheese Mixture

12 oz cream cheese (Philadelphia)

1 1/2 cup heavy cream

1 cup icing sugar

1/2 cup sour cream

1 tsp pure vanilla extract

1/2 cup of Nutella or melted chocolate

INSTRUCTIONS

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

Sift the flour, cornstarch, baking powder and salt.

Add into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Baking time is about 15 minutes at 350. (this is for my oven so please check your oven temps) 

Important: Check the center of the cake using the fork or a toothpick. Insert a toothpick into the center of the cake; if it comes out clean, the cake is done,

Cool completely.

When cooled cut the cake with a sharp knife into 3 equal pieces ( I used size 10 by 5 inches)

While cake cools or while cake is baking/cooling you can make cream cheese mixture or cheese filling.

How to make Cream Cheese Mixture

Add cream cheese to the large mixing bowl and mix using the paddle attachment. (just for a minute)

Then add icing sugar and continue mixing until ingredients are happy together.

In a separate small bowl mix the heavy cream until soft peaks.

Then transfer the mixed heavy cream into cheese mixture and mix until incorporated. ( 1 to 2 minutes on medium speed)

Your next step is to add sour cream and pure vanilla extract.

Mix on a low speed until incorporated.

Now take 1/3 of the filling and transfer to the small bowl.

Add Nutella and mix until ingredients are blended and happy together.

Transfer cream cheese mixture to the fridge for an hour.

Assemble of the Simple Yellow Cheese Cake

Place 1 cake layer on your cake stand (or use baking sheet as the assembly station)

Cover with half of white cream cheese mixture

Then add second layer of the yellow cake.

Cover with white cream cheese mixture and using your artistic personality add about 1/2 cup of your favorite jam (blueberry jam, raspberry or any flavor you like)

Top with the third cake layer and transfer to the fridge for a few hours. (if you want fast just transfer to the freezer for about 45 minutes)

Remove from the fridge and spread the chocolate filling all over the top and sides.

Decorate as you wish. 

The top of the cake can be decorate using chocolate shavings, sprinkles, Lindt chocolate…

Quick Note

My best tip for you is to have good quality ingredients.

Let’s start with the most important.

EGGS – use large, organic eggs. (room temperature). 

Flour – I used all purpose flour, unbleached flour. 

Cream Cheese – I used Philadelphia cream cheese. You can use your favorite cream cheese.

Sour Cream – for this yellow cake I used sour cream 14 %. 

Pure vanilla Extract – I used my homemade vanilla extract. If you want to check how to make check the LINK

Heavy Cream – this recipe was made with 33% heavy cream. You can buy in Safeway, Walmart, Super Store…

Final Note about Simple Yellow Cheese Cake

This cake is one of the best cake I ever tried and made.

Easy to make and even easier to eat.

You don’t need any fancy equipment or ingredients. (no need for food processor)

 The best thing about this recipe is that can be made in no time. Simple mix, pour and chill.

Shopping List for Mini Cheesecakes Bites

Cream Cheese – use your favorite. For this recipe I used the one and only Philadelphia cheese (original)

Heavy cream – I used 35% heavy cream

Vanilla extract – my favorite vanilla extract is homemade version from 5 star cookies blog – LINK for the vanilla extract recipe

Sugar – I use icing sugar

Lotus Biscoff Cookies – to make the base of mini cheesecake

-KitchenAid Mixer (or any stand mixer you are using/electric hand mixer)

-Food processor

-large mixing bowl

-medium bowl

-mini muffin pan or regular muffin pan (you will need cupcake liners)

-5 inch mini pan

ACTION TIME

Making Easy Mini Cheesecakes Bites-The Best No Bake Recipe

Ingredients

Base for mini cheesecakes

1 package of Lotus Biscoff Cookies (180gr)

1/4 cup melted butter

Cream Cheese Mixture 

8 oz cream cheese, room temperature 

1/2 cup whipped cream (heavy cream)

2/3 cup icing sugar

1 tsp pure vanilla extract

My Favorite Topping

Take 1/2 cup of cream cheese mixture and add 1/2 cup Nutella

Mix together and top a few of the mini individual cheesecakes. 

The rest you can top with caramel sauce and fresh fruit. (or nothing if you chose too)

INSTRUCTION FOR MAKING THE BEST NO BAKE RECIPE

To your favorite food processor add 1 package of  of Lotus Biscoff Cookies and turn into crumbs.

Transfer the cookies crumbs into medium bowl and add melted butter.

Stir to combine and then evenly distribute the mixture.

I used 1/2 TBS for mini muffin

1 TBSP for regular muffin

5 TBSP for 5 inch round pan

Use small glass to firmly press it down.

Put this in the fridge to chill.

This is 100% optional step: You can bake in the oven for 5 minutes if you are using regular muffin tin or 3 minutes if you are using very mini muffin tin.

How to make creamy cheesecake filling?

To a large bowl add cream cheese and beat until smooth using paddle attachment or whisk attachment. (2-3 minutes

Then add icing sugar and pure vanilla extract.on high speed until incorporated.

Your next step is very important.

To the separate bowl add cold heavy cream and mix on medium speed until is turn into stiff peaks.

Then fold into the creamy cheesecake filling until all ingredients are incorporated and happy. 

Transfer mixture into the piping bag and divide the batter between all the liners.

You can also use ice cream scoop or spoon the filling onto the crusts. The choice is yours.

Once you have your bottom fine crumbs and the filling together move the muffin tin to the fridge until set.(2 to 3 hours)

BTW, you just made the perfect dessert or mini individual cheesecakes. 

Congratulations! Job well done.

The final step is to add your favorite topping. 

For me it is Nutella.

My Favorite Topping

Take 1/2 cup of cream cheese mixture and add 1/2 cup Nutella

Mix together and top a few of the mini individual cheesecakes. 

The rest you can top with caramel sauce and fresh fruit. (or nothing if you chose too)

Super Important when Making your perfect dessert

1. Please use full fat cream cheese. Do not use LOW-FAT cream cheese. I will repeat use full fat cream cheese

2. Be sure the cream cheese is the room temperature or softened cream cheese.

3. Whip cold heavy cream in a separate bowl before folding into the cheesecake mixture in order to make fluffy cheesecake filling.

5 TBSP for 5 inch round pan

Use small glass to firmly press it down.

Put this in the fridge to chill.

This is 100% optional step: You can bake in the oven for 5 minutes if you are using regular muffin tin or 3 minutes if you are using very mini muffin tin.

How to make creamy cheesecake filling?

To a large bowl add cream cheese and beat until smooth using paddle attachment or whisk attachment. (2-3 minutes

Then add icing sugar and pure vanilla extract.on high speed until incorporated.

Your next step is very important.

To the separate bowl add cold heavy cream and mix on medium speed until is turn into stiff peaks.

Then fold into the creamy cheesecake filling until all ingredients are incorporated and happy. 

Transfer mixture into the piping bag and divide the batter between all the liners.

You can also use ice cream scoop or spoon the filling onto the crusts. The choice is yours.

Once you have your bottom fine crumbs and the filling together move the muffin tin to the fridge until set.(2 to 3 hours)

BTW, you just made the perfect dessert or mini individual cheesecakes. 

Congratulations! Job well done.

The final step is to add your favorite topping. 

For me it is Nutella.

My Favorite Topping

Take 1/2 cup of cream cheese mixture and add 1/2 cup Nutella

Mix together and top a few of the mini individual cheesecakes. 

The rest you can top with caramel sauce and fresh fruit. (or nothing if you chose too)

Making Easy Chocolate Alcoholic Cake Recipe for New Year’s Party

Ingredients

2 eggs (large eggs, room temperature)

1/2 cup olive oil (or oil of your choice)

1 cup milk (room temperature)

1/2 TBSP of Espresso vodka

1 tsp pure vanilla extract

2 1/4 cups all purpose flour

1 3/4 cup granulated sugar

3/4 cup cocoa powder

1/2 TBSP baking powder

1 1/4 tsp baking soda

1/2 tsp salt

Chocolate Frosting

2 cups milk

1/3 cup sugar

2 chocolate pudding (Dr Oetker)

3 oz dark chocolate 

1/2 cup unsalted butter

1 cup Nutella 

3 TBSP rum

Coffee Espresso Vodka Whipped Cream

2 cups heavy cream

1/4 cup icing sugar

1 1/2 TBSP instant coffee

3 TBSP Espresso Vodka

Optional: Dr Oetker Whip It

Chocolate Ganache

1/3 cup heavy cream

1/4 cup corn syrup

6 oz dark chocolate (or semi sweet chocolate)

1/2 TBSP unsalted butter

1 TBSP rum

Instructions for making the Best Chocolate Cake

Line the baking sheet (16 by 12 inch) with aluminum foil or parchment paper.

Spray with baking spray and set aside.

Preheat oven to 350 F.

To the mixing large bowl add all dry ingredients which is: all purpose flour, sugar, cocoa powder, baking powder, baking soda and salt.

Briefly blend all dry ingredients.

Then add all wet ingredients: milk, olive oil,pure vanilla extract, eggs.

Using the whisk attachment mix dry ingredients with wet ingredients until the mixture is creamy and smooth. (from 3 to 5 minutes)

Then turn mixer to low speed and add hot coffee.

Mix everything quickly (for about minute).

Then turn the mixer off and add espresso vodka. (if using)

Using the spatula stir the mixture and transfer to prepared baking sheet.

Bake at 350 F until tester inserted into center comes out clean.

Remove from the oven and cool the cake.

Now it is perfect time to make best chocolate frosting. So, the question is …

How to make the best Chocolate Frosting

Add chocolate pudding, sugar and 1/3 cup of the milk into the mixing bowl. 

Mix until smooth.

Meanwhile, add 1 2/3 cup cold milk into large or medium pot.

Bring the milk to a boil. Remove from heat and stir in the pudding mixture. 

Return to heat and stir non stop for about 3 minutes or until thickness.

Remove from heat and add chopped dark chocolate or semi sweet chopped chocolate.

Stir until chocolate is melted.

Cover bowl with plastic wrap and let it cool.

While the filling is cooling, mix the unsalted butter. Set aside.

When the best chocolate filling is cooled add  mixed butter. (1/2 cup unsalted butter).

Mix until incorporated. (2 to 3 minutes if using KitchenAid mixer)

Your next step is to add Nutella i mix for a minute or until incorporated.

Then add rum and stir with wooden spoon until incorporated.

Yes, you just made the best boozy chocolate frosting.

Making Coffee Espresso Vodka Whipped Cream

Add Espresso vodka into a small cup.

Then add instant coffee into vodka.

Stir until smooth.

In a separate bowl mix heavy whipping cream, powdered sugar and Whip it (if using).

Mix until medium peaks form.

Stop the mixer and add coffee vodka mixture.

Mix for a few seconds or until all ingredients are incorporated.

Now, you are ready for assembly line. 

Assembly of Easy Chocolate Alcoholic Cake Recipe

Place 8 inch cake cutter inside of baking sheet and cut 2 cakes.

Transfer one layer to cake plate and spread 1/2 filling of the coffee espresso vodka whipped cream.

​Cover with chocolate frosting and then add second half of the coffee espresso vodka whipped cream.

Top with second cake layer.

Transfer to the fridge.

Add unsalted butter and whisk until incorporate.

Then add rum and stir with spatula.

Remove the cake from the fridge and cover with chocolate ganache.

Quick Note

Chocolate – I used dark chocolate for this recipe but you can use semi sweet chocolate. It is your choice.

Eggs – use large, organic eggs (say hello to your local farmers market). Be sure the eggs are room temperature.

Heavy Cream – I used 35%. (also you can use 33%)

Flour – I used all purpose flour, unbleached.

Alcohol – use what you like. I used Espresso Vodka from the local supplier and rum. You can use jack daniels products, Irish whiskey, your favorite vodka.

Unsalted butter – I use organic, unsalted butter. It is expensive and you don’t have to use it. You can use your favorite brand. Be sure you are using the unsalted butter room temperature.

But there is something extra about this recipe.

It is very fancy or the perfect dessert for all of you. Baking beginners.

So, if you never made tiramisu this is your time. This traditional recipe is made as an individual desserts.

And it is not mini tiramisu cups or individual tiramisu cups.  It looks like fancy Opera Cake. 

To make this recipe you will need basic ingredients, electric hand mixer or stand mixer, large bowl and about 1 hour of your time. (depends how much shots of espresso you will have)

  • homemade, very strong espresso coffee (or decaffeinated coffee)

Ingredients

1/4 cup regular white sugar

8 oz cream cheese (you can use mascarpone cheese or Philadelphia cheese), room temperature

1/2 cup icing sugar

1 cup heavy cream

1/2 TBSP pure vanilla extract

3 TBSP rum

package of lady fingers 

1 1/4 cups strong coffee

1/2 cup milk 

unsweetened cocoa powder for magical dusting

INSTRUCTIONS FOR MAKING EASY TIRAMISU

Your first step is to make very strong coffee.

For this recipe I used 1 and 1/4 cups homemade strong coffee.

Mix with 1/2 cup milk and dark rum if using. Set aside.

MAKING FILLING

Add egg yolks and sugar to the mixing bowl.

Mix at high speed for about 6 minutes.

Then add 8 oz of mascarpone cheese or Philadelphia cheese (room temperature) and mix until combined.

Your next step is to add icing sugar and mix it in. (1 minute)

In another mixing bowl mix heavy cream.

Add whipped heavy cream to the cheese mixture and quickly mix. (until combined)

Then add pure vanilla extract and stir until combined.

Now if you have cooled coffee mixture and cheese filling we can start building the individual desserts.

Assemble of the Real Tiramisu

Transfer cheese filling into piping bag. (I used large piping bag)

Dip ladyfingers into coffee mixture and place on individual plate.

Pipe the cheese mixture on top of lady fingers.

Top with another lady finger.

Pipe the cheese on top.and finish with light dusting of cocoa powder

Move your first plate to the fridge for a few hours.

Yes, you just made your first individual desserts of Tiramisu.

Repeat process with more lady fingers until you used all cheese mixture.

Quick Note

Cheese – for this recipe you can use mascarpone cheese. If you can’t find the Italian cream cheese or if it is too expensive use Philadelphia cream cheese. (original, don’t use light version)

Raw Eggs – this recipe is using raw eggs yolks. So be sure to use fresh, organic eggs. If you are afraid of raw egg yolks, you can cook egg yolks using double boiler method.

Lady fingers – check Walmart, Superstore, Safeway, Italian food stores in your area or any food store. If you have time you can make homemade lady fingers.  

Heavy Cream – use 33% or higher

Icing sugar – if you don’t have the icing sugar, just make homemade version. Use coffee grinder or blender to make icing sugar from regular.

Cocoa – I used organic from Costco. If you don’t like the taste of cocoa use shaved chocolate or ground coffee.

It is the most decadent chocolate dessert. Full of the best quality chocolates and so simple to make.

For the ingredients you will need heavy cream, a little bit of milk, sugar, eggs, unsalted butter, flour and tons of chopped chocolate.

When I say tons of chopped chocolate I mean it. My favorite combo is combo of milk chocolate and bittersweet chocolate.

Add to that Lindt 70% cocoa dark chocolate and you have it.The ultra-smooth chocolate lover dessert which is calling  your name.

  • flour

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

Making The most chocolate tart recipe

Ingredients

Tart Crust

1/3 cup flour (all purpose flour0

2 TBSP cocoa

1/8 cup sugar

4 TBSP unsalted butter

1/4 cup whole liquid eggs

TART FILLING

1/2 cup milk

1 TBSP sugar

1/3 cup heavy cream

4 oz dark chocolate

3 oz milk chocolate

2 oz Lindt chocolate (70% cocoa)

1 egg

2 TBSP rum (optional)

Optional for decoration:  Fresh berries, sea salt, Oreo cookies, dusting of cocoa powder, shaved chocolate

Instructions for making Simple Chocolate Tart

For tart crust you will need to add dry ingredients to the medium bowl.

So, your first step is to sift flour and cocoa into medium bowl.

Stir together using the wooden spoon.

Then transfer to the large mixing bowl.

Then add sugar, whole liquid egg and room temperature unsalted butter.

Mix until incorporated.

Divide mixture into 2 equal part.

Transfer to plastic wrap and flatten using rolling pin.

Transfer to the freezer for 30 minutes.

Remove from the freezer and press into 4 tart pan.

Transfer back to the freezer for 15 minutes.

Preheat oven to 350 F.

​Remove 4 baking tart par from the freezer and place on baking sheet.

Bake at 350 F for 15 minutes.

Meanwhile make chocolate tart filling.

How to make chocolate tart filling

In a medium saucepan add milk, cream and sugar.

Bring to boil on medium-low heat.

Take off heat and add chopped chocolate. (milk chocolate, dark chocolate and Lindt chocolate)

Mix until chocolate is melted .

Add egg into the mixture and stir with wooden spoon until combined.

Then add rum if you are using it.

When tart shell are baked remove from the oven and pour chocolate filling into each tart pan.

Return to the oven and bake for additional 10 minutes at 350 F.

Remove from the oven and let it cool.

Decorate as you wish.

You can use fresh berries, chocolate shavings, chopped chocolate, sea salt, Oreo cookies, heavy whipping cream and very simple icing sugar.

Chocolate – use good quality chocolate. This recipe can be made with only dark chocolate if you like taste of it.

Heavy Cream – I used 33% heavy cream

Butter – I used unsalted butter. If you can buy organic unsalted butter.

Time to travel. Let’s go to Europe or one of my favorite Balkan’s country called Serbia.

And from Serbia we have the best birthday cake called Vasina Torta or Vasa’s Cake.

This cake has everything dreams are made of and we know what dreams are made of…

Chocolate – Walnut – Orange – More chocolate and keep dreaming. 

Description of Vasina Torta Serbian Vasa’s Cake

There are 3 layers for this cake:

-walnut sponge cake

-chocolate walnut filling with orange juice or simple the best chocolate mixture / chocolate filling

-white cloud made of egg whites, sugar and vanilla

This birthday cake is one of tastiest cakes you will ever make or try. 

Different cream layers makes this special cake the ideal dessert for special occasions. (birthday cake, wedding cake, Christmas Cake…)

Do you want to know a little bit of history regarding this legendary Serbian recipe…

Well, Vasa’s torte dates back to 1908, when it was prepared as a gift from a mother-in-law to Vasa (son-in-law).

Vasa took his wife to Vienna so she could give birth in a better conditions than in Serbia. What a nice husband don’t you think.

His mother in law as the thank you made this special cake. BTW, very expensive cake. Imagine in 1908 oranges were a real treasure in Serbia.

So, my dear readers if you love chocolate filling, orange juice, orange zest and you want to try one of the legendary serbian recipe you are welcome.

To make this dessert you will need to have the following ingredients (check below)

– eggs (egg yolks and egg whites)

– sugar

– flour

– walnuts (ground nuts)

– icing sugar

– milk

– 1 orange (orange juice, orange peel)

– chocolate 

– butter

-vanilla extract 

Equipment Needed

-large bowl 

-KitchenAid mixer or hand mixer (using paddle attachment)

-medium bowl for flour mixture

-baking sheet (16 by 12 inches)

-large rubber spatula or wooden spoon

-measuring cup

-plastic wrap 

Action Time

Vasina Torta Serbian Vasa’s Cake – Balkan Desserts

Ingredients

6 eggs

7 TBSP sugar

8 TBSP walnuts (ground walnuts)

3 TBSP flour (all purpose flour)

​orange zest

Chocolate Filling

3 cups ground walnuts

4 TBSP milk

1 1/3 cups icing sugar

orange juice from 1 orange

3 oz chocolate, chopped chocolate

1/2 cup butter

4 egg yolks

​3 1/2 TBS sugar

White Cloud

1/2 cup sugar

1 cup water

4 egg whites

1/2 tsp vanilla extract (pure vanilla extract)

Instructions for making Serbian Vasa’s Cake

Line baking sheet with aluminum foil and spray with baking spray. Set aside.

Preheat oven to 375 F.

Separate egg whites from egg yolks.

Add egg whites to the mixing bowl and start mixing gradually adding sugar spoon by spoon.

Keep mixing until the stiff peak is created. (you should be able to turn bowl upside down and nothing should fall out)

Then add in the egg yolks, one at a time and mix until incorporated.

At this point stop using the mixer.

Add the flour, walnuts and orange zest and mix using the wooden spoon or spatula stir until combined.

IMPORTANT:Be sure the walnut / flour mixture is incorporated.

Transfer the Serbian cake to the baking sheet and bake until golden brown.

Remove from the oven and let it cool.

Making Chocolate Filling

Heat milk to boiling point.

Remove from heat and add ground nuts and icing sugar.

​Stir with wooden spoon until incorporated.

Then add chocolate and stir until melted.

Add orange juice and stir again. Let it cool.

Meanwhile mix 4 egg yolks and 3 1/2 TBSP white sugar in the bowl.

Using the double boiler method heat the egg yolks mixture until 158 F or 70 C.

Then remove from the heat and let it cool.

In the mixing bowl mix butter until smooth.

Add cooled egg yolks mixture and mix until incorporated. 

Then add walnut/chocolate mixture and mix everything until smooth.

​BTW, you are almost done. 

You just need to make the white dream sugar syrup topping.

Meringue Top or White Cloud

n a small pot bring sugar and water to boil.

Don’t stir. Just keep cooking until sugar syrup reaches 240 F. 

When syrup is almost ready, begin beating the egg whites until soft white froth forms.

Then, when your syrup reaches 240 F, carefully and slowly drizzle the syrup into the mixing egg whites.

Keep whipping the whites and sugar syrup for another 7 to 9 minutes. (or until you can touch the mixing bowl

and it is not hot)

Also, you will know it is done when the white mixture is stiff and glossy.

Add the pure vanilla extract and mix for a few more seconds.

Assemble of Balkan Dessert

Cut the cake to 9 inch round cake.  

Pour the chocolate filling or thick layer of the cream mixture over the cake layer and spread evenly.

​Cover the entire cake or just the top with the white dream filling.

Decorate as you wish. You can use your favorite chocolate, orange pieces and walnuts.

Transfer to the fridge for a few hours or overnight.

Enjoy and share because you just made the most special cake or one of the best Serbian cakes.

Eggs – I used large, organic eggs.

Chocolate – you can use dark chocolate or semi-sweet chocolate. I love using Lindt 70% Cocoa chocolate.

Walnuts – my favorite place to buy walnuts is Costco. (the best price)

Easy recipe for the best carrot cake made with chopped walnuts, grated carrot, ground ginger and more.

So, if you are looking for a big cake recipe for your family party, office party or just dessert for your family, please try this recipe.

1 cup buttermilk

2 2/3 cups white sugar

1 cup olive oil

2 2/3 cups all purpose flour

1 1/2 TBSP cinnamon

1/2 TBSP ground ginger

1 TBSP baking soda

2 1/3 cups carrot (grated carrots)

1 can crushed pineapple (398 ml)

2 cups chopped walnuts

3TBSP crystallized ginger, finely chopped

1 1/8 cup shredded coconut

​Cream Cheese Maple Icing

10 oz cream cheese (Philadelphia cheese room temperature)

3/4 cup butter

1/2 cup heavy cream

3 TBSP maple syrup

8 cups icing sugar (powdered sugar)

Instructions for making the best Carrot Cake

Line baking sheet (16 by 12 inches) with aluminum foil or parchment paper.

Spray with baking spray. 

Your first step is to add dry ingredients to the separate bowl.

Add all purpose flour, baking soda, ground ginger and cinnamon.

Stir all dry ingredients and set aside.

Next step – wet ingredients

In a large mixing bowl add eggs, oil, butter milk and sugar.

Mix well all wet ingredients on high speed  or until all ingredients are incorporated.

Then add dry ingredients and mix.

After mixing dry ingredients with wet ingredients you are almost done.

You need to add the following to the mixture: pineapple, grated carrots, coconut and crystallized ginger.

Mix until incorporated.

Pour the best cake batter into prepared pan.

Bake at 325 F for about 35 to 40 minutes.

For me the best carrot cake was baked in 36 minutes.

Please use cake tester to check if cake is done.

Remove from the oven and let the cake cool.

How to make Cream Cheese Maple Icing

To make the best carrot cake recipe you need to make the best cream cheese icing.

Your first step is to add cream cheese to the bowl of a mixer.

Mix on a high speed until smooth.

Then add butter and continue beating until smooth.

In a separate large bowl mix heavy cream.

Add heavy cream to the cheese/butter mixture and mix until incorporated.

BTW, you are almost done.

Add maple syrup and 6 cups of icing sugar (powdered sugar) and mix until incorporated.

Keep adding icing sugar until you get consistency you like or spreadable consistency you like to work with. ( I added 8 cups of icing sugar)

IMPORTANT: You can add up to 10 cups of icing sugar.

Assembly of Big Carrot Cake

Take your cooled cake and cut into 6 by 12 inch size. (you will have some extra cake)

Spread cream cheese maple icing on the first layer of the carrot cake.

Add second layer and cover with remaining icing.

Decorate with walnut pieces, grated ginger and cinnamon.

Transfer to the fridge for a few hours or overnight.

You just made the best carrot cake recipe so prepare yourself for rave reviews.

Serve with maple syrup, heavy cream and walnut pieces.

Big Carrot Walnut Ginger Cake Recipe

The best carrot cake recipe for your next office party or just for you.

Ingredients

  • 5 eggs (large eggs)
  • 1 cup buttermilk
  • 2 2/3 cups white sugar
  • 1 cup olive oil
  • 2 2/3 cups all purpose flour
  • 1 1/2 TBSP cinnamon
  • 1/2 TBSP ground ginger
  • 1 TBSP baking soda
  • 2 1/3 cups carrot (grated carrots)
  • 1 can crushed pineapple (398 ml)
  • 2 cups chopped walnuts
  • 3TBSP crystallized ginger, finely chopped
  • 1 1/8 cup shredded coconut

Cream Cheese Maple Icing

  • 10 oz cream cheese (Philadelphia cheese room temperature)
  • 3/4 cup butter
  • 1/2 cup heavy cream
  • 3 TBSP maple syrup
  • 8 cups icing sugar (powdered sugar)

Instructions

    Instructions for making the best Carrot Cake
    Line baking sheet (16 by 12 inches) with aluminum foil or parchment paper.
    Spray with baking spray. 
    Your first step is to add dry ingredients to the separate bowl.
    Add all purpose flour, baking soda, ground ginger and cinnamon.
    Stir all dry ingredients and set aside.
    Next step - wet ingredients
    In a large mixing bowl add eggs, oil, butter milk and sugar.
    Mix well all wet ingredients on high speed  or until all ingredients are incorporated.
    Then add dry ingredients and mix.
    After mixing dry ingredients with wet ingredients you are almost done.
    You need to add the following to the mixture: pineapple, grated carrots, coconut and crystallized ginger.
    Mix until incorporated.
    Pour the best cake batter into prepared pan.
    Bake at 325 F for about 35 to 40 minutes.
    For me the best carrot cake was baked in 36 minutes.
    Please use cake tester to check if cake is done.
    Remove from the oven and let the cake cool.
    How to make Cream Cheese Maple Icing
    To make the best carrot cake recipe you need to make the best cream cheese icing.
    Your first step is to add cream cheese to the bowl of a mixer.
    Mix on a high speed until smooth.
    Then add butter and continue beating until smooth.
    In a separate large bowl mix heavy cream.
    Add heavy cream to the cheese/butter mixture and mix until incorporated.
    BTW, you are almost done.
    Add maple syrup and 6 cups of icing sugar (powdered sugar) and mix until incorporated.
    Keep adding icing sugar until you get consistency you like or spreadable consistency you like to work with. ( I added 8 cups of icing sugar)
    IMPORTANT: You can add up to 10 cups of icing sugar.
    Assembly of Big Carrot Cake
    Take your cooled cake and cut into 6 by 12 inch size. (you will have some extra cake)
    Spread cream cheese maple icing on the first layer of the carrot cake.
    Add second layer and cover with remaining icing.
    Decorate with walnut pieces, grated ginger and cinnamon.
    Transfer to the fridge for a few hours or overnight.
    You just made the best carrot cake recipe so prepare yourself for rave reviews.
    Serve with maple syrup, heavy cream, walnut pieces.

Our recipe today is one of my favorite recipe. Why?

Because it is full of my 2 favorite ingredients: chocolate and coffee!

And who doesn’t like chocolate? From the milk chocolate or unsweetened chocolate to dark chocolate we have it all.

Yes, this is the most fun recipe and the perfect treat for your little happy soul.

So, let me start with…

Description of Easy Hot Chocolate Coffee Bombs

Hot chocolate bombs with coffee is the top of the bombs recipe you have ever tried or made.

I can’t say enough about this recipe. There are no words to describe this chocolate heaven dessert.

The base is made using simple ingredients and one star called … Coffee Powder. (no instant coffee)

On top of the coffee base we are adding the most chocolate flavor you can imagine. 

Yes, can I say … excess chocolate is here. Just kidding. We are having a little bit of unsweetened chocolate, milk chocolate, dark chocolate. (You can use semi-sweet chocolate chips too)

There is also hot cocoa mix … So, if you are looking for fun recipes please try this one. It is the WINNER

Equipment Needed

-baking sheet (16 by 12 inches)

-glass measuring cup (4 cups size)

-sauce pan

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

-mixing bowl (for the cake and the filling)

-2 silicone mold

Making Easy Hot Chocolate Coffee Bombs(Mocha Recipe Bomb)

Ingredients

6 large eggs (organic)

3/4 cup sugar

1 cup flour (AP)

1/2 tsp baking powder

1 tsp cornstarch

2 TBSP coffee powder

Chocolate Filling

3 cups milk 

4 TBSP sugar

3 Dr Chocolate Pudding

1 oz unsweetened chocolate (chopped)

3 oz milk chocolate (chopped)

2 oz dark chocolate (70% Cocoa Lindt Chocolate)

1/2 cup butter

1 3/4 cups Nutella

2 cups heavy cream

Chocolate Icing

​3/4 cup white chocolate chips

1 1/2 cup heavy cream

Instructions for Hot Chocolate Bombs with coffee

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

Sift the flour, cornstarch and baking powder.

Add coffee powder and stir so it is incorporated into flour mixture.

Add into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Bake at 350 for 15 minutes or until done.

Cool completely. 

Meanwhile make the best chocolate filling.

How to make the best chocolate filling

Add chocolate pudding, sugar and 1/2 cup of the milk into the mixing bowl. 

Mix until smooth.

Meanwhile, add 2 1/2 cup cold milk into large pot.

Bring the milk to a boil. Remove from heat and stir in the pudding mixture. (or hot cocoa mix)

Return to heat and stir non stop for about 3 minutes or until thickness.

Remove from heat and add remaining chocolate or chopped unsweetened chocolate, milk chocolate, dark chocolate

​Stir until chocolate is melted.

Cover bowl with plastic wrap and let it cool.

Be proud of yourself. You just made the best hot chocolate mix.

While the filling is cooling, mix the butter. Set aside.

When the best chocolate filling is cooled add  mixed butter. (1/2 cup butter).

Mix until incorporated. (2 to 3 minutes if using KitchenAid mixer)

Your next step is to add Nutella i mix for a minute or until incorporated.

Now, you are ready for assembly line. (so your coffee cake is cool and the chocolate filling is done)

Assembly Line for Mocha bombs

Scoop 1/4 cup of the chocolate Nutella mixture into each mold of the silicone mold.

Make it even and pretty.

Optional: You can add 1 mini marshmallows into chocolate filling.

Then gently press the cake circles on top of the chocolate filling.

Cover with plastic wrap and freeze overnight.

I made 12 hot chocolate bombs with coffee base.

Next Day Icing and Chocolate Decoration

Add white chocolate chips to the small bowl.

Bring heavy cream to boil and pour over white chocolate.

Let it sit for a minute or until chocolate pieces starts to melt.

​Stir until chocolate is melted.

Important: You can use double-boiler method to make icing.

Pour the glaze over the hot chocolate bombs.

Optional: You can serve without chocolate icing too…

Chocolate Decoration

Use your imagination. You can make second coat with dark chocolate.

Small amount of raspberry jam, chocolate, tablespoon of instant espresso powder and so on… 

Enjoy with ice cream, heavy cream, cup of coffee or any chocolate drink. 

What If you only have 1 silicone mold?

You can make hot chocolate bombs and chocolate roll cake.

Use your coffee cake base and cover with chocolate filling + whipped heavy cream.

Roll it into a log.
Wrap in plastic wrap and transfer into the freezer.

Decorate with more heavy cream and melted chocolate.

Quick Note

Eggs – please use large, organic eggs

Heavy Cream – use 33% or 35%

Chocolate – unsweetened chocolate, milk chocolate, dark chocolate. You can use semi-sweet chocolate chips. My favorite dark chocolate is 70% LIndt dark chocolate

Dr. Oetker Chocolate Pudding – If you can’t find chocolate pudding use Dr. Oetker vanilla pudding and mix with hot cocoa mix (3 TBSP cocoa and 1 TBSP sugar)

Important: It is not instant pudding.

The best summer dessert for you and all your friends and family you love. 

To make this easy orange chocolate cake you don’t need oven. 

All you need is a few dry ingredients, electric mixer, whole milk and maybe 30 minutes of your time.

Yes it is that easy to make no bake desserts recipe.

Shopping List for No Bake Orange Cake

  • orange juice (fresh oranges or store bought orange juice)
  • Dr Oetker Vanilla pudding
  • sugar
  • heavy cream (double cream)
  • chocolate
  • icing sugar
  • Nutella
  • vanilla extract
  • 1 Orange (for fresh orange slices)
  • Lady finger
  • whipped cream

Equipment Needed

-KitchenAid mixer (or the stand mixer you are using. Can be hand mixer too)

-mixing bowl (large bowl)

-measuring cup

-separate bowl 

-sauce pan

-8-inch cake pans or 9 by 5 inch pan

Action Time

Nobake Orange Chocolate Cake

Ingredients 

2 cups orange juice (fresh oranges or store bought orange juice)

5 TBSP sugar

2 vanilla puddings (Dr Oetker)

1 1/3 cups heavy cream (double cream)

1/2 tsp vanilla extract

Nutella (add as much as you want)

orange zest and orange extract (optional if you have it)

Nutella 

Lady Fingers (1 package)

Decoration:

1 1/2 heavy cream 

Whip It

1/8 cup icing sugar (optional)

INSTRUCTIONS FOR MAKING NO BAKE MOIST CAKE

Add Dr. Oetker vanilla puddings and sugar to the separate bowl. (small bowl)

Then add 5 TBSP of orange juice into it.

Stir with the wooden spoon until smooth.

Meanwhile add orange juice  and sugar to the sauce pan and bring to boil.

Then remove from the heat and add the pudding mixture.

Return to heat and stir non stop for about 3 minutes or until thickness.

Your next step is to remove from the heat, transfer to the mixing bowl, cover with the plastic wrap and let it cool.

In another mixing bowl mix heavy cream until soft pick. 

Optional: Add Whip it to the heavy cream.

Your next step is to add cooled vanilla pudding and mix until incorporated.

Then add pure vanilla extract, orange zest and stir until combined.

You are almost ready. 

Add orange juice to the medium size bowl. (or glass bowl, plate or whatever you have)

How to assemble No Bake Orange Chocolate Cake

Dip ladyfingers into fresh orange juice and place into 9 by 5 pan or 8-inch cake pans.

(I used 3 whole + 3 trimmed ladyfingers for the bottom)

Spread half of the orange mixture on top of ladyfingers.

Repeat process with the second layer of ladyfingers and cover with Nutella.

Then cover Nutella with vanilla pudding mixture.

To finish this orange moist cake you will need heavy cream as your final touch.

So mix heavy cream, whip it and icing sugar.(if using it. If not just mix the heavy cream)

Cover vanilla layer with heavy cream.

Then decorate the top of the cake with orange slices and creamy chocolate. (melt chocolate)

Another Option: Use your favorite chocolate frosting for decoration.

As you know orange and chocolate love each other. 

So, use your imagination for the top of the cake.

Transfer to the fridge for a few hours.

Enjoy this amazing summer recipe or the most decadent chocolate cake.

Quick Note

Lady fingers – check Walmart, Superstore, Safeway or any food store.

Heavy Cream – please use 33% or higher

Icing sugar – if you don’t have the icing sugar, just make homemade version. Use coffee grinder or blender to make icing sugar from regular.

Chocolate – if you chose to use chocolate use dark chocolate (healthy option) or use the milk chocolate.

Orange Juice – I used combo of fresh orange juice for lady fingers and store bought orange juice for making vanilla pudding (organic orange juice)

    So mix heavy cream, whip it and icing sugar.(if using it. If not just mix the heavy cream)
    Cover vanilla layer with heavy cream.
    Then decorate the top of the cake with orange slices and creamy chocolate. (melt chocolate)
    Another Option: Use your favorite chocolate frosting for decoration.
    As you know orange and chocolate love each other. 
    So, use your imagination for the top of the cake.
    Transfer to the fridge for a few hours.
