Big Carrot Walnut Ginger Cake Recipe

Ingredients

5 eggs (large eggs)

1 cup buttermilk

2 2/3 cups white sugar

1 cup olive oil

2 2/3 cups all purpose flour

1 1/2 TBSP cinnamon

1/2 TBSP ground ginger

1 TBSP baking soda

2 1/3 cups carrot (grated carrots)

1 can crushed pineapple (398 ml)

2 cups chopped walnuts

3TBSP crystallized ginger, finely chopped

1 1/8 cup shredded coconut

​Cream Cheese Maple Icing

10 oz cream cheese (Philadelphia cheese room temperature)

3/4 cup butter

1/2 cup heavy cream

3 TBSP maple syrup

8 cups icing sugar (powdered sugar)

Instructions for making the best Carrot Cake

Line baking sheet (16 by 12 inches) with aluminum foil or parchment paper.

Spray with baking spray. 

Your first step is to add dry ingredients to the separate bowl.

Add all purpose flour, baking soda, ground ginger and cinnamon.

Stir all dry ingredients and set aside.

Next step – wet ingredients

In a large mixing bowl add eggs, oil, butter milk and sugar.

Mix well all wet ingredients on high speed  or until all ingredients are incorporated.

Then add dry ingredients and mix.

After mixing dry ingredients with wet ingredients you are almost done.

You need to add the following to the mixture: pineapple, grated carrots, coconut and crystallized ginger.

Mix until incorporated.

Pour the best cake batter into prepared pan.

Bake at 325 F for about 35 to 40 minutes.

For me the best carrot cake was baked in 36 minutes.

Please use cake tester to check if cake is done.

Remove from the oven and let the cake cool.

How to make Cream Cheese Maple Icing

To make the best carrot cake recipe you need to make the best cream cheese icing.

Your first step is to add cream cheese to the bowl of a mixer.

Mix on a high speed until smooth.

Then add butter and continue beating until smooth.

In a separate large bowl mix heavy cream.

Add heavy cream to the cheese/butter mixture and mix until incorporated.

BTW, you are almost done.

Add maple syrup and 6 cups of icing sugar (powdered sugar) and mix until incorporated.

Keep adding icing sugar until you get consistency you like or spreadable consistency you like to work with. ( I added 8 cups of icing sugar)

IMPORTANT: You can add up to 10 cups of icing sugar.

Assembly of Big Carrot Cake

Take your cooled cake and cut into 6 by 12 inch size. (you will have some extra cake)

Spread cream cheese maple icing on the first layer of the carrot cake.

Add second layer and cover with remaining icing.

Decorate with walnut pieces, grated ginger and cinnamon.

Transfer to the fridge for a few hours or overnight.

You just made the best carrot cake recipe so prepare yourself for rave reviews.

Serve with maple syrup, heavy cream and walnut pieces.

Eggs – I used large, organic eggs.

Cream Cheese – for this recipe we used Philadelphia cream cheese. You can use your favorite brand.

Our recipe today is one of my favorite recipe. Why?

Because it is full of my 2 favorite ingredients: chocolate and coffee!

And who doesn’t like chocolate? From the milk chocolate or unsweetened chocolate to dark chocolate we have it all.

Yes, this is the most fun recipe and the perfect treat for your little happy soul.

So, let me start with…

Description of Easy Hot Chocolate Coffee Bombs

Hot chocolate bombs with coffee is the top of the bombs recipe you have ever tried or made.

I can’t say enough about this recipe. There are no words to describe this chocolate heaven dessert.

The base is made using simple ingredients and one star called … Coffee Powder. (no instant coffee)

On top of the coffee base we are adding the most chocolate flavor you can imagine. 

Yes, can I say … excess chocolate is here. Just kidding. We are having a little bit of unsweetened chocolate, milk chocolate, dark chocolate. (You can use semi-sweet chocolate chips too)

There is also hot cocoa mix … So, if you are looking for fun recipes please try this one. It is the WINNER

Equipment Needed

-baking sheet (16 by 12 inches)

-glass measuring cup (4 cups size)

-sauce pan

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

-mixing bowl (for the cake and the filling)

-2 silicone mold

Making Easy Hot Chocolate Coffee Bombs(Mocha Recipe Bomb)

Ingredients

6 large eggs (organic)

3/4 cup sugar

1 cup flour (AP)

1/2 tsp baking powder

1 tsp cornstarch

2 TBSP coffee powder

Chocolate Filling

3 cups milk 

4 TBSP sugar

3 Dr Chocolate Pudding

1 oz unsweetened chocolate (chopped)

3 oz milk chocolate (chopped)

2 oz dark chocolate (70% Cocoa Lindt Chocolate)

1/2 cup butter

1 3/4 cups Nutella

2 cups heavy cream

Chocolate Icing

​3/4 cup white chocolate chips

1 1/2 cup heavy cream

Instructions for Hot Chocolate Bombs with coffee

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

Sift the flour, cornstarch and baking powder.

Add coffee powder and stir so it is incorporated into flour mixture.

Add into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Bake at 350 for 15 minutes or until done.

Cool completely. 

Meanwhile make the best chocolate filling.

How to make the best chocolate filling

Add chocolate pudding, sugar and 1/2 cup of the milk into the mixing bowl. 

Mix until smooth.

Meanwhile, add 2 1/2 cup cold milk into large pot.

Bring the milk to a boil. Remove from heat and stir in the pudding mixture. (or hot cocoa mix)

Return to heat and stir non stop for about 3 minutes or until thickness.

Remove from heat and add remaining chocolate or chopped unsweetened chocolate, milk chocolate, dark chocolate

​Stir until chocolate is melted.

Cover bowl with plastic wrap and let it cool.

Be proud of yourself. You just made the best hot chocolate mix.

While the filling is cooling, mix the butter. Set aside.

When the best chocolate filling is cooled add  mixed butter. (1/2 cup butter).

Mix until incorporated. (2 to 3 minutes if using KitchenAid mixer)

Your next step is to add Nutella i mix for a minute or until incorporated.

Now, you are ready for assembly line. (so your coffee cake is cool and the chocolate filling is done)

Assembly Line for Mocha bombs 

(chocolate mocha coffee bombs)

Scoop 1/4 cup of the chocolate Nutella mixture into each mold of the silicone mold.

Make it even and pretty.

Optional: You can add 1 mini marshmallows into chocolate filling.

Then gently press the cake circles on top of the chocolate filling.

Cover with plastic wrap and freeze overnight.

I made 12 hot chocolate bombs with coffee base.

Next Day Icing and Chocolate Decoration

Add white chocolate chips to the small bowl.

Bring heavy cream to boil and pour over white chocolate.

Let it sit for a minute or until chocolate pieces starts to melt.

​Stir until chocolate is melted.

Important: You can use double-boiler method to make icing.

Pour the glaze over the hot chocolate bombs.

Optional: You can serve without chocolate icing too…

HOT Chocolate Coffee Bombs

Chocolate Decoration

Use your imagination. You can make second coat with dark chocolate.

Small amount of raspberry jam, chocolate, tablespoon of instant espresso powder and so on… 

Enjoy with ice cream, heavy cream, cup of coffee or any chocolate drink. 

What If you only have 1 silicone mold?

You can make hot chocolate bombs and chocolate roll cake.

Use your coffee cake base and cover with chocolate filling + whipped heavy cream.

Roll it into a log.
Wrap in plastic wrap and transfer into the freezer.

Decorate with more heavy cream and melted chocolate.

Quick Note

Eggs – please use large, organic eggs

Heavy Cream – use 33% or 35%

Chocolate – unsweetened chocolate, milk chocolate, dark chocolate. You can use semi-sweet chocolate chips. My favorite dark chocolate is 70% LIndt dark chocolate

Dr. Oetker Chocolate Pudding – If you can’t find chocolate pudding use Dr. Oetker vanilla pudding and mix with hot cocoa mix (3 TBSP cocoa and 1 TBSP sugar)

Important: It is not instant pudding.

Nobake Orange Chocolate Cake

Ingredients 

2 cups orange juice (fresh oranges or store bought orange juice)

5 TBSP sugar

2 vanilla puddings (Dr Oetker)

1 1/3 cups heavy cream (double cream)

1/2 tsp vanilla extract

Nutella (add as much as you want)

orange zest and orange extract (optional if you have it)

Nutella 

Lady Fingers (1 package)

Decoration:

1 1/2 heavy cream 

Whip It

1/8 cup icing sugar (optional)

INSTRUCTIONS FOR MAKING NO BAKE MOIST CAKE

Add Dr. Oetker vanilla puddings and sugar to the separate bowl. (small bowl)

Then add 5 TBSP of orange juice into it.

Stir with the wooden spoon until smooth.

Meanwhile add orange juice  and sugar to the sauce pan and bring to boil.

Then remove from the heat and add the pudding mixture.

Return to heat and stir non stop for about 3 minutes or until thickness.

Your next step is to remove from the heat, transfer to the mixing bowl, cover with the plastic wrap and let it cool.

Another Option: Use your favorite chocolate frosting for decoration.

Lady fingers – check Walmart, Superstore, Safeway or any food store.

Heavy Cream – please use 33% or higher

Icing sugar – if you don’t have the icing sugar, just make homemade version. Use coffee grinder or blender to make icing sugar from regular.

Chocolate – if you chose to use chocolate use dark chocolate (healthy option) or use the milk chocolate.

Orange Juice – I used combo of fresh orange juice for lady fingers and store bought orange juice for making vanilla pudding (organic orange juice)

Ingredients

  • 2 cups orange juice (fresh oranges or store bought orange juice)
  • 5 TBSP sugar
  • 2 vanilla puddings (Dr Oetker)
  • 1 1/3 cups heavy cream (double cream)
  • 1/2 tsp vanilla extract
  • Nutella (add as much as you want)
  • orange zest and orange extract (optional if you have it)
  • Nutella 
  • Lady Fingers (1 package)

Decoration:

  • 1 1/2 heavy cream 
  • Whip It
  • 1/8 cup icing sugar (optional)

Instructions

    INSTRUCTIONS FOR MAKING NO BAKE MOIST CAKE
    Add Dr. Oetker vanilla puddings and sugar to the separate bowl. (small bowl)
    Then add 5 TBSP of orange juice into it.
    Stir with the wooden spoon until smooth.
    Meanwhile add orange juice  and sugar to the sauce pan and bring to boil.
    Then remove from the heat and add the pudding mixture.
    Return to heat and stir non stop for about 3 minutes or until thickness.
    Your next step is to remove from the heat, transfer to the mixing bowl, cover with the plastic wrap and let it cool.

Because the summer is around the corner and we all need simple recipes. When I say simple recipes I mean no 3 hours baking at 350 … but we still want to make tasty desserts. So for today our recipe is so delicious and so easy to make. Yes, this easy tiramisu is the recipe for beginners. And for all of you who don’t want to spend hours in the kitchen. 5 star cookies is in love with this dessert. I have many version of tiramisu but my favorite version includes the tiramisu with eggs. Of course there is eggs free tiramisu recipes too. 

So, it is your choice. Make your favorite Italian recipe or one of the most popular Italian recipes. Dr. Tiramisu. With eggs or without eggs.

BTW, I still did not share my vegan tiramisu recipes or tiramisu cake. (it is coming…)

Now, let’s go back to describe this classic Italian Dessert.

Full of strong coffee, mascarpone cream cheese, egg yolks, heavy cream, lady fingers. Yes, this is the best tiramisu and one of my favorite dessert.

Not just from Italy but from the world. I love, love this classic tiramisu recipe. 

Not just for the summer but for any time of the year. From January to December and from Monday to Sunday I can eat this best tiramisu all the time.

As you know I love coffee so coffee mixture in this dessert + cheese is my choice of the perfect dessert!

SHOPPING LIST FOR Walnut ITALIAN TIRAMISU

  • Ladyfingers
  • mascarpone cheese or cream cheese of your choice
  • sugar
  • icing sugar (powdered sugar)
  • egg yolks (room temperature)
  • heavy cream
  • cocoa
  • pure vanilla extract
  • homemade, very strong coffee
  • walnuts
  • cinnamon 
  • maple syrup or honey 

Equipment Needed

– small plastic jars, glasses or small coffee cups

-KitchenAid mixer or electric mixer

-large bowl for mixing or bowl of a stand mixer

What else you will need: plastic wrap

Making Walnut Tiramisu Party of Five

Ingredients

2 egg yolks

1/4 cup regular white sugar

8 oz mascarpone cheese or cream cheese of your choice (you can use Philadelphia cheese)

1/3 cup icing sugar (powdered sugar)

1 cup heavy cream

2 tsp pure vanilla extract

package of ladyfingers (I used 15 ladyfingers)

1 1/2 cups strong coffee

​2 tsp dark room (this is optional)

cocoa for magical dusting

​Cinnamon Roasted Walnuts

1 cup walnuts

3 1/2 TBSP maple syrup or honey

1 tsp ground cinnamon 

MAKING Cinnamon Roasted Walnuts

The first step is to make cinnamon roasted walnuts.

In small bowl combine maple syrup (or honey) and ground cinnamon.

Add in walnuts and stir to combine.

Spread in foil-lined baking sheet. (you can use parchment paper)

Bake at 350 F for 9 minutes. 

Stir and bake for additional 6 minutes.

Remove from oven, let cool.

When cooled cut into small pieces. 

INSTRUCTIONS FOR MAKING Classic Italian Dessert

Important: Prepare mini glasses for mini tiramisu.

Your next step is to make very strong coffee.

For this recipe I used 1 and 1/4 cups homemade coffee. 

Then add pure vanilla into hot coffee.

Stir all ingredients together. Set aside to cool until you make the cheese filling.

MAKING Mascarpone Mixture

Add egg yolks and sugar to the mixing bowl.

Mix at high speed for about 6 minutes.

Then add 8 oz of mascarpone cheese (room temperature) and mix until combined.

Your next step is to add icing sugar and mix it in. (1 minute)

In another mixing bowl mix heavy cream.

Add whipped heavy cream to the mascarpone mixture and quickly mix. (until combined)

Then add pure vanilla extract and stir until combined

How to assemble the tiramisu?

First step is to cut lady fingers so it can fit your small glass.

Each lady finger I cut into 3 parts.

Dip ladyfingers into coffee mixture and place into glass.

Spread mascapone mixture on top of ladyfingers.

Then sprinkle with cinnamon roasted walnuts.

Repeat process with the second layer of ladyfingers, cream mixture and chopped roasted walnuts.

Dust with cocoa and maple syrup roasted walnuts. (or chocolate or nothing)

Yes, dusting of cocoa powder and chopped walnuts is a little bit of magic.

Maybe Merry Christmas magic in July…

Cover jars with lids or plastic wrap.

Refrigerate for 10 hours or overnight. (if you can)

Next day enjoy and share your delicious dessert with your family or friend … or maybe make it for dinner party (office party too)

OPTIONAL: You can decorate using the whipped cream and dust with espresso powder.

Quick Note

Mascarpone Cheese – yes, I know it is expensive but it does give a very special flavor to the best homemade tiramisu. If you can’t afford the mascarpone cheese use Philadelphia cream cheese. (original, don’t use light version)

Eggs or egg yolks – this recipe is using raw eggs. So be sure to use fresh, organic eggs. If you are afraid of raw egg yolks, you can cook egg yolks using double boiler method.

Ladyfingers – check Walmart, Superstore, Safeway or any food store. (you can use vegan ladyfingers if you want to)

Heavy Cream – please use 33% or higher

Powdered sugar – if you don’t have the icing sugar, just make homemade version. Use coffee grinder or blender to make icing sugar from regular.

Cocoa – I used organic from Costco. If you don’t like the taste of cocoa use shaved chocolate or ground coffee.

Small plastic glasses – You can buy in $ store. It is super cheap. I think it was $2.

From sugar to walnuts and chocolate. BTW, for this recipe you don’t need to use the brown sugar. You can use the white sugar. Yes, I know there is brown sugar shortage.

Shopping List for Coffee Crisp Walnut Squares

  • unsalted butter
  • sugar
  • chocolate
  • walnuts (you will use ground walnuts and chopped walnuts)

EQUIPMENT NEEDED

-prepared pan 9 by 13 inches (I used glass baking dish)

-2 medium bowl (or large bowl)

-large saucepan

-food processor

Important: you will need no electric mixer or large mixing bowl.

ACTION TIME

Making Easy Coffee Crisp Walnut Squares Recipe

Ingredients

100 ml water

3/4 cup sugar

1/2 cup unsalted butter

2 package coffee crisp chocolate (18 chocolate x 12 gr)

3 cups walnuts

1 TBSP ground coffee

Chocolate Glaze

3 oz chocolate bars

1 TBSP oil

Instruction for making NO-Bake Coffee Crisps Bars

Step 1: Prepare baking pan 9 by 13 inches by spraying with baking spray

You can also line with the aluminum foil or parchment paper. Set aside.

BTW, you can also use square pan 9 by 9 inches.

​For dry Ingredients you will need 2 medium bowl (or large bowl)

Step 2: Ground walnuts and coffee crisp chocolate

Add coffee crisp chocolate to the food processor and process until ground (smooth).

Transfer to medium bowl.

Your next step is to ground 3 cups of walnuts.

Transfer to another medium bowl. Set aside.

Step 3:

Add sugar and water to the saucepan.

Bring to boil and boil until sugar is dissolved. (about 3 minutes from the boiling point).

Remove from heat and add unsalted butter to the hot water.

Stir with the wooden spoon until the butter is melted.

Your next step is to add ground walnuts, coffee and ground coffee crisp chocolates.

Stir all ingredients with wooden spoon or spatula until incorporated.

Pour the mixture into prepared pan and let it cool for about 2 hours.

After 2 hours

Melt chocolate and oil using the double boiler method.

Pour the melted chocolate over the top of batter in an even layer.

Optional: Sprinkle with ground coffee crisp chocolate.

Transfer to the fridge for a few hours or overnight.

When ready cut into desired shapes and sizes.

Store in the fridge.

Making Love Chocolate Bundt Cake

Ingredients

1 cup butter, unsalted

3/4 cup cocoa

1 cup brewed strong coffee

2 cups sugar

1 3/4 cup flour

1/2 cup walnuts, grounded

2 eggs, large size

1 tsp baking soda

1/2 tsp salt

1 tsp baking powder

1/2 cup sour cream

1 tsp pure vanilla extract

Nutella Ganache

1 cup Nutella

2 oz semi sweet chocolate, chopped

1/4 cup butter, room temperature

1 cup heavy cream

3 TBSP corn syrup

Instructions for making the best chocolate cake

First step is to make fresh coffee. (1 cup for the cake and 1 for you)

Preheat oven to 350 F.

Spray bundt pan with baking spray. Set aside.

Using a medium size saucepan add butter, coffee, cocoa.

Transfer to heat and stir until melted.

Remove from heat and let it cool.

Dry ingredients: Sift the flour and add to the bowl.

Then add sugar, baking soda, baking powder, salt and walnuts.

Mix all ingredients together and transfer into the mixing bowl.

Then add butter mixture and mix until all ingredients are incorporated.

Your next step is to add eggs.

Mix until combined and then add sour cream and vanilla extract.

Keep mixing until all ingredients are happy together.

Pour batter into prepared bundt pan and bake at 350 F for about 50 minutes.

Remove from the oven and let it cool for 15 minutes.

Then invert onto wire rack and let it cool.

Cover with Nutella ganache, the recipe is below.

Using a medium size cup or bowl add Nutella, chopped chocolate and butter. Set aside. (I like to use glass measuring cup)

Add heavy cream and corn syrup into medium size sauce pan and heat until it begins to simmer.

Remove from heat and pour over Nutella, chocolate and butter.

Cover the cup with aluminum foil for 5 minutes.

After 5 minutes whisk until smooth.

And you are done.

Decorate with white chocolate.

Quick Note

Eggs – please use large, organic eggs. This is the most important ingredient for the cake. If you see the most amazing yellow color of the cake base it is because of the eggs. (don’t use food coloring)

Flour – use all purpose, unbleached

Heavy Cream – use 33% or 35% . Please don’t use half and half. You need heavy cream with 33% or higher.

Coffee – use fresh, ground coffee. I used LavAzza, Italian coffee. You use what you have and what you like

Vanilla Extract – use pure vanilla extract. I am using my homemade for many years.

Using a double boiler method melt the white chocolate and heavy cream.

Remove from the stove and grate marzipan into the heavy cream mixture.

Stir it and add butter.

Then add 1/2 cup of coconut and mix.

Place in the fridge until the paste thickens enough.

Then shape into balls and roll into coconut.

Another option is to roll into cinnamon.

ACTION TIME

My Best Raspberry Chocolate Torte

Ingredients

6 large eggs (organic)

3/4 cup sugar

1 cup flour (AP)

1/8 tsp salt

1 tsp baking powder

1/3 cup of walnuts, ground

1 tsp cornstarch

Chocolate Filling

4 cups milk

3 packages Dr. Oetker Vanilla pudding (can’t use instant)

1/2 cup sugar

1 TBSP cornstarch

5 oz chocolate (chopped)

3/4 cup Nutella (or other chocolate spread)

1 cup butter

Raspberry Filling

1 1/2 cup raspberry

1/2 cup sugar

1 package of raspberry pudding

1/4 cup raspberry jam

3 TBSP of water

1/4 cup of butter

How to make Nutella Ganache

1 cup Nutella

2 oz semi sweet chocolate, chopped

1/4 cup butter, room temperature

1 cup heavy cream

3 TBSP corn syrup

INSTRUCTIONS to make Best Raspberry Chocolate Torte

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

Sift the flour, cornstarch, baking powder and salt.

Then add ground walnuts. Stir all ingredients together.

Your next step is to add flour/walnut mixture into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Bake at 350 for 15 minutes.

Cool completely. (for about 2 hours)

I cut 2 rounded 6 inch cakes.

Leftovers can be used to make trifle recipes or just make mini cakes.

While cake is taking rest from the heat, let’s make the fillings.

How to Make Chocolate Filling

Add 3 Dr. Oetker Vanilla pudding, cornstarch, sugar and 1 cup milk into mixing bowl.

Mix until all ingredients are incorporated. (minute or two)

Be sure the mixture is smooth.

Important: You don’t have to use the mixer for the step above if you don’t want to. You can mix pudding, sugar, corn starch and milk by hand using the spatula or metal spoon.

The rest of the milk or 3 cups of cold milk add into large pot and bring to boil.

When milk boils remove from the heat and stir in the pudding mixture.

Return to heat and stir non stop for about 3 minutes or until thickness.

Remove from heat, transfer to the mixing bowl and add chopped chocolate.

Stir until chocolate is melted.

Cover with plastic wrap and let it cool.

Meanwhile mix the butter.

When filling is cooled add mixed butter and beat until butter and pudding mixture is incorporated.

Then add Nutella and quickly mix. Set aside.

Raspberry Filling

Transfer raspberry pudding into a small saucepan and add 3 TBSP cold water.

Stir until the mixture is smooth. Set aside.

Add raspberries and sugar into sauce pot and stir until it boils. (stir non stop)

When it boils remove from head and add raspberry/water mixture.

Stir all ingredients together and return to heat.

Keep stirring until desired thickness (only 2 to 3 minutes).

Remove from heat and add butter.

Stir until butter is melted.

Then add raspberry jam and stir all ingredients together.

Cover with plastic wrap and let it cool.

Assembly of the Best Raspberry Chocolate Torte

I used 6 inch removable pan in order to start building the cake.

Place first layer of the cake at the bottom.

Cover with chocolate filling then raspberry filling.

Add second layer of cake.

Cover with chocolate then raspberry filling.

Transfer the cake to the fridge for a few hours or overnight.

IMPORTANT

Let me repeat the steps. The formula is below:

cake + chocolate filling + raspberry filling + cake + chocolate filling + raspberry filling.

Next day cover with Nutella ganache and decorate chocolate, sprinkles…use your imagination.

NEXT DAY – NUTELLA GANACHE

Quick Note

Raspberries – I used fresh raspberries for this recipe.

Nutella – it is hazelnut spread. You can make homemade version if you want to. I like to buy Nutella from the Costco. (It is the best price.)

Vanilla pudding – YOU CAN’T USE INSTANT. It has to be Dr. Oetker.

Chocolate – semi-sweet is my choice for chocolate.

Milk – I used organic, 3.25% but you can use 2%. It doesn’t need to be organic.

Best Raspberry Chocolate Torte

My Best Raspberry Chocolate Torte

Yield: Serving 6 people
Prep Time: 45 minutes
Cook Time: 45 minutes
Total Time: 1 hour 30 minutes

Ingredients

Cake

  • 6 large eggs (organic)
  • 3/4 cup sugar
  • 1 cup flour (AP)
  • 1/8 tsp salt
  • 1 tsp baking powder
  • 1/3 cup of walnuts, ground
  • 1 tsp cornstarch

Chocolate Filling

  • 4 cups milk
  • 3 packages Dr. Oetker Vanilla pudding (can’t use instant)
  • 1/2 cup sugar
  • 1 TBSP cornstarch
  • 5 oz chocolate (chopped)
  • 3/4 cup Nutella (or other chocolate spread)
  • 1 cup butter

Raspberry Filling

  • 1 1/2 cup raspberry
  • 1/2 cup sugar
  • 1 package of raspberry pudding
  • 1/4 cup raspberry jam
  • 3 TBSP of water
  • 1/4 cup of butter

How to make Nutella Ganache

  • 1 cup Nutella
  • 2 oz semi sweet chocolate, chopped
  • 1/4 cup butter, room temperature
  • 1 cup heavy cream
  • 3 TBSP corn syrup

Instructions

    Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

    Spray with baking spray and set aside.

    Preheat oven to 350 F.

    In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

    Sift the flour, cornstarch, baking powder and salt.
    Then add ground walnuts.
    Stir all ingredients together.

    Your next step is to add flour/walnut mixture into eggs mixture and fold gently using a spatula.

    Important: Don’t use mixer when adding flour mixture.

    Fold using a spatula.

    Be sure that flour mixture is incorporated into eggs mixture.

    Spread the batter on the prepared jelly roll pan.

    Bake at 350 for 15 minutes.

    Cool completely. (for about 2 hours)

    I cut 2 rounded 6 inch cakes.

    Leftovers can be used to make trifle recipes or just make mini cakes.

    While cake is taking rest from the heat, let's make the fillings.

    How to Make Chocolate Filling

    Add 3 Dr. Oetker Vanilla pudding, cornstarch, sugar and 1 cup milk into mixing bowl.

    Mix until all ingredients are incorporated. (minute or two)

    Be sure the mixture is smooth.

    Important: You don't have to use the mixer for the step above if you don't want to. You can mix pudding, sugar, corn starch and milk by hand using the spatula or metal spoon.

    The rest of the milk or 3 cups of cold milk add into large pot and bring to boil.

    When milk boils remove from the heat and stir in the pudding mixture.

    Return to heat and stir non stop for about 3 minutes or until thickness.

    Remove from heat, transfer to the mixing bowl and add chopped chocolate.

    Stir until chocolate is melted.

    Cover with plastic wrap and let it cool.

    Meanwhile mix the butter.

    When filling is cooled add mixed butter and beat until butter and pudding mixture is incorporated.

    Then add Nutella and quickly mix. Set aside.

    Raspberry Filling

    Transfer raspberry pudding into a small saucepan and add 3 TBSP cold water.

    Stir until the mixture is smooth.
    Set aside.

    Add raspberries and sugar into sauce pot and stir until it boils. (stir non stop)

    When it boils remove from head and add raspberry/water mixture.

    Stir all ingredients together and return to heat.

    Keep stirring until desired thickness (only 2 to 3 minutes).

    Remove from heat and add butter.

    Stir until butter is melted.

    Then add raspberry jam and stir all ingredients together.

    Cover with plastic wrap and let it cool.

    Assembly of the Best Raspberry Chocolate Torte

    I used 6 inch removable pan in order to start building the cake.

    Place first layer of the cake at the bottom.

    Cover with chocolate filling then raspberry filling.

    Add second layer of cake.

    Cover with chocolate then raspberry filling.

    Transfer the cake to the fridge for a few hours or overnight.

    IMPORTANT
    Let me repeat the steps. The formula is below:
    cake + chocolate filling + raspberry filling + cake + chocolate filling + raspberry filling.


    Next day cover with Nutella ganache and decorate chocolate, sprinkles...use your imagination.

    NEXT DAY - Make NUTELLA GANACHE

    Using a medium size cup or bowl add Nutella, chopped chocolate and butter.
    Set aside. (I like to use glass measuring cup)

    Add heavy cream and corn syrup into medium size sauce pan and heat until it begins to simmer.

    Remove from heat and pour over Nutella, chocolate and butter.

    Cover the cup with aluminum foil for 5 minutes.

    After 5 minutes whisk until smooth.
