Making Best Chocolate Eclair Recipe

Ingredients

1/4 and 1/8 cup of water

1/4 cup and 1/8 cup of milk

6 TBSP of butter

1 tsp of sugar

3/4 cup flour, all purpose

1/8 tsp salt

3 large eggs

Chocolate Filling for Eclairs

2 egg yolks

2/3 cup sugar

2 Dr. Oetker Vanilla pudding

6 oz chocolate

2 and 2/3 cups milk + 1 TBSP of sugar

1/2 cup butter, unsalted and room temperature

CHOCOLATE GLAZE

3 oz chocolate (semi-sweet, dark or Lind chocolate)

1/3 cup heavy cream

INSTRUCTIONS FOR MAKING Chocolate Eclair

Line baking sheet with silicone. (parchment paper)

Preheat oven to 425 F.

In a medium saucepan add water, milk, butter, sugar and salt.

Bring to boil over medium heat and remove from heat.

Your next step is to add all flour and mix with a wooden spoon until the flour is incorporated.

Return back to the heat for about 2 minutes or until dough comes together into a smooth ball. (also there will be thin film at the bottom of the saucepan).

Remove from heat and let it sit for 3 minutes.

Then transfer to the mixing bowl and beat on the medium speed for 2 minutes until it is cooled slightly.

Start adding eggs, one by one.

Be sure when adding egg by egg to mix until fully incorporated.

Beat until the choux pastry dough is smooth and shiny.

Pipe eclairs using a 1/2” round tip. Pipe 4 inch long strips, keeping them 1 1/2 inch apart.

Bake at 425 F for 10 minutes.

Without opening oven, reduce heat to 325 F and bake for about 27 to 30 minutes. (until golden brown)

Remove from oven and cool.

Eclairs Chocolate Filling

Add egg yolks and sugar to the mixing bowl.

Mix for about 3 minutes.

Then add Dr. Oetker vanilla pudding and 1/3 cup milk.

Mix until all ingredients are incorporated and smooth.

Add the rest of the milk or 2 1/3 cups and 1 TBSP of sugar into the saucepan.

Bring milk to boil.

Remove from the heat and stir in pudding/egg mixture.

Return to heat and stir for about 3 minutes or until thickness.

Again remove from the heat and add chopped chocolate.

Stir with the spoon until chocolate is melted.

Cover with plastic wrap and let it cool.

While the filling is cooling mix the butter until smooth.

Add mixed butter to cool chocolate filling and mix until incorporated.

With a small pastry tip, poke 3 holes through the bottom of each cooled pastry.

Pipe cream inside.

Wipe off any excess chocolate filling. Repeat with all the eclair shells.

Refrigerate eclairs while making chocolate glaze.

How to make chocolate ganache

Heat heavy cream until it is at a simmer point.

Remove from heat and pour over chopped chocolate.

Let it rest for 3 minutes and then stir until it is smooth.

Dip the top of eclairs into the chocolate sauce, allowing excess to drip off.

Decorate with shaved chocolate.

Our recipe today is one of my favorite childhood cake recipes. As you can imagine I have many, many favorite cakes or desserts. And I can’t feel guilty. I already admit my addiction to chocolate, Nutella and so on. And so on is also addiction to the ice cream. Ok, let’s be quite for a moment. People have issue, people have problems. And we don’t want to talk about it. So, let’s keep tradition alive and keep going. Like nothing to see here. Yes, I know…but let the silence talk. Will you?

Of course not. And because of that let’s talk about our cake recipe post today. Homemade, easy and helps when everything or almost everything is not working for you. Hmmm…what do you think? Are you ready for the most amazing ice cream cake recipe you will ever try…

DESCRIPTION OF SUPER EASY ICE CREAM CAKE

First of all you won’t believe how easy is to make this ice cream cake at home. That’s why it is called Super Easy Ice Cream Cake. (just in case you have some kind of trust issue).

Like always let me start with 5 words to describe our recipe today:

  • smooth
  • refreshing
  • sweet
  • creamy
  • luscious

Also, this easy ice cream cake is the cake my grandmother used to make. It is not like the store bought version. Full of additives and words we don’t understand. This cake will bring back childhood memories when ice cream cake was made with tons of eggs, milk, flour, sugar and people were skinny.

So, time for our first task called shopping for ingredients. The list is under the title called…

SHOPPING LIST FOR ICE CREAM CAKE

  • eggs (large size)
  • icing sugar
  • white sugar
  • flour
  • milk
  • Dr. Oetker Vanilla pudding
  • heavy cream
  • butter
  • corn starch
  • baking powder

Equipment Needed

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

-mixing bowl

-glass or plastic bowl for dry ingredients

-2 round baking pans (6 inches)

Action Time

Super Easy Ice Cream Cake Recipe

Ingredients

6 egg whites

6 TBSP of sugar

1/2 tsp + 1/4 tsp baking powder

6 1/2 TBSP flour (all purpose)

1/2 cup milk

Ice Cream Homemade Filling

6 egg yolks

3/4 cup icing sugar

1 and 1/3 cups milk

2 TBSP sugar

1/2 TBSP corn starch

1 Dr. Oetker Vanilla pudding

1/2 cup butter, unsalted (room temperature)

Decoration: 1 cup of heavy cream, chocolate and so on…

Important: Eggs must be room temperature.

INSTRUCTIONS FOR MAKING HOMEMADE CAKE

Line bottoms of two 6 inch cake pans with parchment paper. (do not grease the sides or the bottom). Set aside.

First mix eggs whites and sugar until until firm peaks and sugar is incorporated.

Then add the flour and baking powder. You are not going to use mixer at this point.

Add the flour and fold with a spatula. Stop mixing when no streaks of flour remain.

Important: Be sure the flour is incorporated.

Pour the batter into 6 inch prepared pan.

I used 2 and 1/4 cups of batter for each baking 6 inch pan.

Bake at 375 F for about 14 to 15 minutes. (start checking after 10 minutes)

Remove from the oven and let is cool for 5 minutes.

Meanwhile, pour 1/2 cup milk into the glass or measuring cup.

After 5 minutes, remove the parchment paper from the cakes and soak each cake with 1/4 cup of milk.

Set aside.

How do you soak the cake?

Poke the cake with toothpick and use a pastry brush to coat it with milk.

Making Ice Cream Homemade Filling

Mix egg yolks and icing sugar well, until double in size.

In separate cup mix vanilla pudding, corn starch and 1/3 cup milk until smooth.

Your next step is to add milk mixture into the egg yolks and sugar.

Mix until all ingredients are incorporated.

Meanwhile, add 1 cup cold milk into large pot.

Bring the milk to a boil. Remove from heat and stir in the egg/pudding mixture.

Return to heat and stir non stop for about 3 minutes or until desired thickness.

Remove from the heat, cover with plastic wrap and let it cool.

While the filling is cooling, mix butter until smooth.

Add cooled yellow filling to the mixed butter.

Mix all ingredients until incorporated.

ASSEMBLY OF Super Easy Ice Cream Cake Recipe

Place 1 layer cake on your cake stand (or at the bottom of the pan, cake plate or whatever you are using.)

Add ice cream yellow filling.

Cover with second layer cake.

Transfer to the freezer for about 30 minutes.

Remove from the freezer and starting at the top and working your way down, apply the yellow filling.

Smooth out with a scraper. This step takes practice. So, don’t be hard your yourself if it is not perfect.

Just keep practicing until you like the way your cake looks.

 Transfer to the fridge for a few hours or overnight.

Next Day: Mix heavy cream and cover the top of the cake.

Decorate with shaved chocolate, ground walnuts, hazelnuts, pecans or sprinkles.

Quick Note

Butter – use unsalted, room temperature butter for this recipe.

Eggs – the eggs are the star of the recipe. So, be sure you are using large, organic eggs. Also, don’t forget to bring eggs to the room temperature for this recipe.

Chocolate – this is optional for this recipe. I used for decoration and I used Lindt chocolate, 70% cocoa.

Flour – I used all purpose, unbleached flour.

Milk – for this recipe I used organic milk, 3.25%. You can use your favorite milk. (2% or 3.25% and it does not need to be organic)

Ingredients

1 cup chilled unsalted butter (COLD BUTTER)

1/2 cup white sugar

1 cup dark brown sugar

2 large cold eggs

1 tsp vanilla

2 cups AP flour

1 cup cake flour

1/4 tsp baking soda

1/2 tsp salt

1 tsp baking powder

1 TBSP corn starch

3/4 cup mini chocolate chips

Lind Mint Chocolate, chopped ( I used 100 gr)

1 1/2 cups of Toblerone chocolate, chopped

3/4 cup toasted hazelnuts, chopped

1/2 cup pecans, chopped

Instructions for making chocolate cookies with Toblerone

First step is to add to the bowl all purpose flour, cake flour, salt, baking powder, baking soda and corn starch.

Stir until all dry ingredients are combined. Set aside.

Your next step is super important.

Cube 1 cup of chilled butter into 1″ pieces.

Put white and brown sugar in stand mixer bowl and mix until well combined.

Then add cold cubed butter and continue mixing for about 5 min.

Your next step is to add eggs, one at a time until well incorporated. (eggs are from the fridge, no room temperature)

Add 1 tsp vanilla and mix.

Then add flour mixture to batter mixture and mix until fully incorporated.

Add all chocolates, hazelnuts and pecans and mix by hand. (or by mixer on low speed)

Refrigerate cookie dough from 2 hrs to overnight (12 hrs).

Preheat oven to 375 F.

Using ice cream scoop, form cookie dough balls. (4oz)

Bake for 12 to 13 minutes.

How to Freeze Chocolate Chip Cookies

If you want to freeze the cookies the steps are following:

Using ice cream scoop, form cookie dough balls. (4oz)

Make each of them into round smooth ball.

Then individually wrap each cookie and place in a freezer safe bag.

Freeze for up to 3 months.

When baking frozen cookies, bake at 375 F for about 15 minutes or until golden color. (do not overbake)

Quick Note

Butter – use unsalted, cold butter. No room temperature butter for this recipe. Yes, you are using cold from the fridge butter.

Important: be sure you cut the butter into 1 inch cubes

Chocolate chips– I use mini chocolate chips but you can use the regular one (Guittard brand, Ghirardelli or your favorite brand)

Lindt Chocolate – I love, love Lindt chocolate. For this recipe I used about Mint Lindt chocolate. The amount is 100 gr.

Eggs – be sure you are using large, organic and COLD EGGS. (eggs from the fridge). Yes, for this recipe you don’t need to bring eggs to the room temperature.

Hazelnuts and Pecans – I love combo of hazelnuts and pecans with Toblerone chocolate. If you don’t like pecans just use hazelnuts.

Toblerone chocolate – you can buy the Toblerone 360g or Toblerone 100g. The best place to buy it Costco or Dollar store. In Dollar store you can find Toblerone 100g for $1.25

Ingredients

  • 1 cup chilled unsalted butter (COLD BUTTER)
  • 1/2 cup white sugar
  • 1 cup dark brown sugar
  • 2 large cold eggs
  • 1 tsp vanilla
  • 2 cups AP flour
  • 1 cup cake flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 TBSP corn starch
  • 3/4 cup mini chocolate chips
  • Lind Mint Chocolate, chopped ( I used 100 gr)
  • 1 1/2 cups of Toblerone chocolate, chopped
  • 3/4 cup toasted hazelnuts, chopped
  • 1/2 cup pecans, chopped

Instructions

    First step is to add to the bowl all purpose flour, cake flour, salt, baking powder, baking soda and corn starch.

    Stir until all dry ingredients are combined. Set aside.

    Your next step is super important.

    Cube 1 cup of chilled butter into 1″ pieces.

    Put white and brown sugar in stand mixer bowl and mix until well combined.

    Then add cold cubed butter and continue mixing for about 5 min.

    Your next step is to add eggs, one at a time until well incorporated. (eggs are from the fridge, no room temperature)

    Add 1 tsp vanilla and mix.

    Then add flour mixture to batter mixture and mix until fully incorporated.

    Add all chocolates, hazelnuts and pecans and mix by hand. (or by mixer on low speed)

    Refrigerate cookie dough from 2 hrs to overnight (12 hrs).

    Preheat oven to 375 F.

    Using ice cream scoop, form cookie dough balls. (4oz)

    Bake for 12 to 13 minutes.

    How to Freeze Chocolate Chip Cookies

    If you want to freeze the cookies the steps are following:

    Using ice cream scoop, form cookie dough balls. (4oz)

    Make each of them into round smooth ball.

    Then individually wrap each cookie and place in a freezer safe bag.

    Freeze for up to 3 months.

    When baking frozen cookies, bake at 375 F for about 15 minutes or until golden color. (do not overbake)

-Food processor (I used KitchenAid food processor and I love it)

-Baking sheet (if you want to toast hazelnuts)

Making Kinder Bueno Spread Recipe Joy

Ingredients

3 cups of hazelnuts

1 cup white chocolate chips (melted

3 TBSP coconut oil

INSTRUCTION FOR MAKING KINDER BUENO SPREAD

Using the double boiler method melt white chocolate chips. Set aside to cool.

Add white hazelnuts (no skins) to the powerful blender or food processor.

Blend it for about 15 minutes.

IMPORTANT: Blend for 3 minutes, scrape the sides down then take break for 2 minutes and keep going until you get nut butter consistency.

When you get nut consistency start adding the melted white chocolate and coconut oil.

Blend until all ingredients are combined.

Important: Add more coconut oil if you want bueno spread to be runnier.

Transfer to glass jar.

Cover with lid and keep on room temperature for about 7 days.

Scrape the sides down

Quick Note

Hazelnuts – the best place to buy is Costco or online. 1 kg is about $30 in Canada.

Optional: you can add pure vanilla extract to this recipe. (1 tsp)

White Chocolate chips– use the best quality you can afford.

Coconut oil – it should be liquid coconut oil. For this recipe I used MCT coconut oil because of the benefits. You can use your favorite coconut oil.

1/4 cup water

1 tsp pure vanilla extract

1/2 cup olive oil

1 3/4 cups flour (all purpose, unbleached)

3/4 cup cocoa powder

1 1/2 cups sugar

1 tsp baking powder

1/2 TBSP baking soda

Oreo Cream Cheese Filling

8 oz cream cheese

3/4 cup icing sugar

1/2 cup heavy cream

9 Oreo Cookies (very fine crumbs)

6 Oreo Cookies (roughly chopped)

1/2 tsp vanilla extract

Optional: Use 1/2 cup of Nutella

Also optional ( I did it)

1 1/2 cups heavy cream

Dr. Oetker Whip It (if you don’t have it, don’t use it)

INSTRUCTIONS FOR MAKING Oreo Cheesecake

Preheat oven to 350 F.

Line baking sheet with parchment paper or aluminum foil.

Spray with baking spray and set aside.

To the plastic bowl add flour, sugar, cocoa, baking powder, baking soda. Set aside.

Add to the mixing bowl the following ingredients: eggs, yogurt, coffee, water, oil, vanilla extract.

Mix all ingredients until well combined. (3 to 5 minutes)

Then add dry ingredients and mix until all ingredient are incorporated.

Pour the batter into prepared baking sheet.

Bake at 350 F for 17 minutes or until done.

Use toothpick to check if the cake is done.

Remove the cake from the oven and let it cool.

MAKING Oreo Cream Cheese Filling for the Best Cheesecake

In a mixing bowl mix cream cheese, icing sugar and vanilla extract until smooth.

Then add heavy cream and mix until incorporated.

Your next step is to add Oreo cookies. (9 Oreo cookies as fine crumbs and 6 Oreo cookies roughly chopped)

Just stir Oreo cookies in using the wooden spoon or spatula.

ASSEMBLE OF Kinder Oreo Cheesecake Recipe

Place 7 by 7 inch on serving plate (or baking pan)

Optional: Cover 7 by 7 inch cake with Nutella. (about 1/2 cup or more if you want to)

Then top Nutella with with Oreo Cream Cheese Filling. (all of it)

Chill in refrigerator for about 3 hours or overnight.

The next step is optional.

Mix heavy cream and Whip it.

Cover the Oreo frosting with heavy cream.

Decorate with crushed Oreo, Oreo cookies and chopped chocolate.

Heavy Cream – I used 35%

How to make Nutella ganache?

Using a medium size cup or bowl add Nutella, chopped chocolate and butter. Set aside. (I like to use glass measuring cup)

Add heavy cream and corn syrup into medium size sauce pan and heat until it begins to simmer.

Remove from heat and pour over Nutella, chocolate and butter.

Cover the cup with aluminum foil for 5 minutes.

After 5 minutes whisk until smooth.

A sure way to put smile on my face or any human being is to make this chocolate. Yes, kinder chocolate are using kinder chocolate ingredients that will make you happy. From the white chocolate to the rice cereal this is your winner recipe.

So, what do you need to have in order to bring happiness into your house?

SHOPPING LIST FOR KINDER CHOCOLATE

  • white chocolate or chocolate chips
  • condensed milk
  • delicious whole grain brown rice crisps

EQUIPMENT NEEDED

-medium size sauce pot

-baking sheet or baking pan (9 by 13)

ACTION TIME

MAKING Kinder Chocolate with Cereals

Ingredients

2 cups white chocolate chips (or chocolate)

1 can of condensed milk (300 ml)

2 3/4 cups brown rice cereal

Optional: dark chocolate for icing

INSTRUCTIONS FOR MAKING KINDER CHOCOLATE

Line baking sheet with parchment paper or aluminum foil. Set aside.

Using a double boiler method melt white chocolate and condensed milk until smooth.

Remove from heat and add rice cereal.

Stir until all ingredients are combined.

Spread the mixture into prepared baking pan or baking sheet.

Transfer to the fridge until set. (about 60 minutes)

OPTIONAL: Melt dark chocolate and pour over the white chocolate mixture.

Decorate as you wish. Return to fridge for 30 minutes or until set.

Slice into squares or your favorite size.

Quick Note

White chocolate chips – you can use white chocolate or chocolate chips. I used Hershey white chocolate chips.

Condensed milk – I Eagle Brand 300 ml.

Crispy Rice – I used organic, delicious whole grain brown rice crisps.

OPTIONAL: Dark Chocolate – I used dark Lindt chocolate. (70% Cocoa)

This is my new summer recipe. Easy, no bake and made in 15 minutes. (Yes, yes and yes)

Cream cheese, chocolate, fresh raspberries, Nutella, Nutella frosting and more. It is the love actually. Not the movie, but the baking dessert. So, let me tell you a little story about this cake beaty.

The cake recipe was one of the most printed recipe from the 5 star cookies. It is light, cheesy and so flavorful. You feel like eating a white chocolate cheese dream cloud creation. BTW, who doesn’t like to eat clouds made of chocolate and cheese…

For me eating clouds requires Nutella. Always. As you know the life without Nutella is not the life I want to experience. So, what do I do? I decide to make another version of this recipe. I called it Raspberry Cake Nutella Frosting. This recipe is using different cake base. The cheese filling is the same and there is an addition called Nutella frosting.

And the Nutella frosting is something you want to try and share. In order to make sharing possible we need to start with shopping which requires…

SHOPPING LIST FOR THE DREAM CAKE

  • flour
  • sugar
  • eggs
  • vanilla extract
  • baking powder
  • cream cheese
  • heavy cream
  • icing sugar
  • fresh raspberries

EQUIPMENT NEEDED

-stand-up mixer or hand mixer

-mixing bowl

-saucepan (medium size)

-baking sheet (12 by 16 inches)

-loaf pan ( (11-5/8″ L x 5-1/8″ W x 2-3/4″ H)

ACTION TIME

Raspberry Cake Nutella Frosting

Ingredients

6 large eggs (organic if you can)

3/4 cup sugar

1 cup flour (AP)

1 tsp baking powder

1/8 tsp salt

Raspberry Cheese Cream Filling

8 oz cheese

2 cups icing sugar

1 pouch Knox gelatine

1 1/4 cups heavy cream

3/4 cup fresh raspberries

NUTELLA FROSTING

1/2 cup butter, unsalted

2 cups icing sugar

3/4 cup Nutella

1/4 cup heavy cram

1/2 tsp pure vanilla extract

INSTRUCTIONS

Making Base Cake

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (8 to 9 minutes)

Sift the flour, baking powder and salt.

Add into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Super Important: Be sure the flour mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Bake at 350 for 15 minutes.

Cool completely. (for about 2 hours)

MAKING RASPBERRY CHEESE FILLING

Mix 8 oz cheese and icing sugar. (for about 2 minutes)

In another bowl mix heavy cream.

Add into cheese mixture and mix until incorporated. (for about 1 minute)

Add 1/2 cup raspberries (cut into small pieces) and mix all ingredients.

Next step is to add the prepared gelatine. (see instructions below)

Quickly mix all ingredients.

In a small cup sprinkle 1 pouch Knox unflavoured gelatine over 1/4 cup (50 ml) cold water.

Let stand for 1 minute.

Add 1/4 cup (50 ml) boiling water and stir until granules are completely dissolved.

HOW TO MAKE NUTELLA FROSTING

Beat the butter until smooth. (1 to 2 minutes)

Then add the icing sugar and mix in.

Your next step is to add heavy cream, Nutella and vanilla.

Beat for about minute or until you get desired thickness.

The Nutella frosting can be use immediately or it can be store in the fridge.

ASSEMBLE OF THE Raspberry Cake Nutella Frosting

You will need loaf pan (11-5/8″ L x 5-1/8″ W x 2-3/4″ H)

Line your loaf pan with plastic wrap.

Now take your cool cake and cut into 2 pieces.

One is 11×10 size and the other is 11×7

Now take your bigger pieces (11×10) and place inside of loaf pan.

Pour your raspberry filing into it and close the top with your second cut part 11×7.

Cover everything with plastic wrap and leave in the freezer for at least 4 hours or overnight.

Next Day

Free cake from the loaf pan.

Cover with Nutella frosting and decorate.

Return to the fridge for an hour.

Enjoy and share.

Quick Note

Butter – use unsalted butter.

Cream Cheese – use your favorite cream cheese. It can be Philadelphia, mascarpone or no name cheese for baking.

Heavy Cream – Use the real heavy cream, 33% or higher.

Raspberries – for this recipe I used fresh raspberries. You can also use strawberries or blueberries.

Nutella – my favorite place to buy is Costco. You get the package of 2 kg for $14 in Canada.

Also, it will make you believe in people again…Because we suppose to share just love. So, let’s share love. Love for food or no bake dessert made with my favorite ingredient called Nutella.

SHOPPING LIST FOR NO BAKE RECIPE

  • Nutella
  • Philadelphia Cheese
  • Heavy cream
  • Icing sugar
  • Whip It
  • Lady Fingers
  • Homemade coffee
  • Milk

Equipment Needed

-KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

-mixing bowl

-glass or plastic bowl for coffee/milk mixture

Making Nutella No Bake Desserts – What Love Means

Ingredients

1 package of ladyfingers (36 EA)

coffee/milk mixture (about 1 3/4 cups)

Nutella Filling

1 cup heavy cream

2 cups Nutella

1 Dr Oetker Whip It

Cream Cheese Filling for Cake

12 oz cream cheese (Philadelphia)

1 1/2 cups icing sugar

1 cup heavy cream

1/2 tsp pure vanilla extract

Instructions for making no bake dessert

Our first step is to prepare Nutella filling.

To the mixing bowl add heavy cream and Whip It.

Mix until soft peaks (almost like softer sour cream)

Then add Nutella and mix until desired thickness.

Transfer to the fridge or until ready to use.

Your next step is to make cream cheese filling and the question is how? Check below.

How to make cream cheese filling?

In a large bowl mix cream cheese and sugar until smooth.

Then add pure vanilla extract. Set aside.

In another bowl whip heavy cream.

Fold the whipped cream into cheese/sugar mixture.

Keep it in the fridge until ready for use.

BEFORE ASSEMBLE OF THE CAKE BE SURE TO HAVE COFFEE READY!

I made about 1 1/4 cup of coffee. Add to that about 1/2 cup cold milk.

Now do you have the following:

  • coffee/milk mixture
  • Nutella filling
  • Cream cheese filling

If the answer is yes, check below.

ASSEMBLE OF NUTELLA NO BAKE DESSERT

Lay aluminum foil or parchment paper on top of flat surface.

Dip ladyfinger into coffee mixture and arrange them in 3 columns (8 ladyfingers for each column)

Be sure that long side of ladyfingers is facing you.

Spread Nutella filling evenly on top of the ladyfingers.

Your next step is important.

Gently roll up the cake from the long side.

Don’t be afraid, just do it.

Transfer to the freezer for about 3 hours.

Remove from the freezer and cover with cream cheese filling.

Decorate with ground walnuts, hazelnuts or shaved chocolate.

Another option is to use your favorite fruits like strawberries, raspberries and so on.

ANOTHER NUTELLA OPTION FROM THIS RECIPE

You will have extra filling left. So what to do?

Lay aluminum foil or parchment paper on top of flat surface

Dip ladyfinger into coffee mixture and arrange them in 1 column (I used 12 ladyfingers for this recipe)

Spread cream cheese filling evenly on top of the ladyfingers.

Gently roll up the cake. It will look very FAT. Don’t worry.

Just do it.

Transfer to the freezer for a few hours. (at least 1 hour)

Then remove from the freezer and cover with Nutella filling.

Decorate as you wish.

Also, you can cover with melted chocolate, Nutella ganache – check the link

So, you just made your second roll cake.

And this one, don’t share. Just enjoy by yourself. (after all what love is if not being kind to yourself…I hope)
