And good for me too…Come on, Rod help me…and Eureka, the answer is here. Let’s make the “Chocolate Puffed Bars”.

I need 2 ingredients: chocolate chips and puffed wheat cereal.

1 cup chocolate chips and 1 cup puffed wheat cereal
5starcookies 1 cup puffed wheat and 1 cup chocolate chips

Start the process by melting 1 cup of chocolate chips in a double boiler or saucepan on the stove top over low heat.

Add the cereal into the melted chocolate and mix thoroughly.

Line a baking sheet or any plate with parchment paper and set aside. Spread the mixture on the prepared baking sheet or the plate and place it in the fridge for at least 1 hour.

So, just for Michael I am going to make a very special “Oreo Chocolate”.

It is a combo of my two favorite colors, white and black.

You only need only a few ingredients, white chocolate, Oreos, sprinkles and color sugar.

Ingredients

  • 1 Package White Chocolate Chips (226 gr)
  • ¼ cup Oreo Crumbs
  • Sprinkles and Color Sugar

Instructions

  1. Line a small baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. In the food processor, whiz Oreo cookies until reduced to crumbs. Set aside.
  3. Melt the white chocolate chips using double boiler.
  4. Pour melted chocolate onto prepared baking sheet and spread out into a large rectangle or any shape you want to.
  5. Add ¼ cup of Oreo crumbs and press into chocolate.
  6. IMPORTANT!Keep pressing until Oreo crumbs are inside of the chocolate.
  7. Decorate with sprinkles and color sugar.
  8. Set in the refrigerator to chill for 30 minutes or until no longer wet-looking. It will look like the picture below.

Your product is a picture perfect, Oreo Chocolate.

Today, Novak Djokovic beat defending champion Andy Murray 6-2 3-6 6-3 in the Madrid Open final.

And since tennis is considered a white sport I wanted to make something special, easy and white.

It is called White Chocolate and Wafer Hazelnut Filling.

You need only 2 ingredients:

-white chocolate chips and wafer with hazelnut filling

In the food processor, whiz wafer cookies until reduced to crumbs. (Just think how Novak Djokovic whizzed Murray). Set aside.

Melt the white chocolate chips using double boiler.

Pour melted chocolate onto prepared baking sheet and spread out into a large rectangle or any shape you want to.

Add 1/4 cup of wafer crumbs and press into chocolate. Keep pressing until wafer are inside of the chocolate.

Be sure wafer crumbs are inside of white chocolate.

Set in the refrigerator to chill for 30 minutes or until no longer wet-looking. It will look like the picture below.

My Top 5 Tips for Making Cream Puffs

Have you ever had this problem when “cream puffs” collapse in front of your eyes and you have no idea why?

Well, I will give you 5 top tips to create successful cream puffs.

  1. DO NOT OPEN OVEN DOOR TO EARLY IN THE BAKING, when the structure of the puffs wasn’t yet solidified.
  2. DO NOT OVERLOAD YOUR BAKING SHEET.
  3. BE SURE TO HAVE AT LEAST 2 INCHES OF SPACE BETWEEN THE PUFFS WHEN YOU PIPE THEM.
  4. BAKE CREAM PUFFS USING TEMPERATURE OF 400F. THE HIGH HEAT PROVIDES A RAPID RISE WITH A HOLLOW CENTER.
  5. TURN THE OVEN OFF AND LET THEM COOL WITH THE DOOR AJAR FOR 10 MIN.

1.What is choux paste?

Choux paste is one of the foundational doughs of pastry making. It is used for eclairs, classic French cakes, profiteroles.

The preparation of the dough is unique and starts on top of the stove. Flour, butter and water are heated until the mixture resembles mashed potatoes.

Off the heat, eggs are stirred in until the mixture is enough soft to pipe through a pastry bag.

2. My cream puffs have points when I finish piping? What should I do?

Dampen your index finger into cold water and just smooth it. This step is important because if you don’t smooth them, little peaks will burn black before the puffs are baked through.

Also, you need to improve your piping technique. Hold the pastry bag about 1 inch from the parchment paper and squeeze out a round of pastry. When it is size you want , stop squeezing the bag before you lift it away.

3. How do I store cream puffs?

If you will be using them in 24 hrs you can store unfilled puffs in a resealable plastic bag at room temperature.

You can freeze them for up to 2 weeks.

Poor Kelly, she only makes 20 millions (apparently). And she is upset because her co-worker, Michael is leaving the show,  “Live with Kelly and Michael ” for Good Morning America.

Use 1 cup heavy cream and 1/2 teaspoon vanilla extract and mix on low, until combined.

Increase the speed and whisk until soft peaks form.

So, my post today is for Kelly and Michael. It is French, very light and easy to make.

The name is The Best Cream Puffs.

SHOPPING LIST

  • flour (all purpose, unbleached)
  • butter
  • eggs
  • heavy cream
  • vanilla extract
  • salt
  • Whip It (optional)

Equipment Needed for this recipe

Mixer (I used KitchenAid mixer)

Mixing bowl

baking sheet (12 by 16 inch)

ACTION TIME

MAKING The Best Cream Puffs Recipe

Ingredients

1/2 cup water

1/4 cup butter (unsalted)

1/4 tsp salt

1/2 cup flour

2 eggs (large size)

For the filling:

1 cup heavy cream

1/2 tsp vanilla extract

Whip It (optional)

INSTRUCTIONS for Cream Puffs

Preheat oven to 375 F.

Line baking sheet with parchment paper or silicone baking mat.

In a medium saucepan, on medium-high heat bring water,salt and butter to boil.

Quickly stir in the flour with a wooden spoon.

Continue to stir until mixture until mixture pull away from walls of the pan. (3 to 5 min)

Remove from heat and transfer into a bowl to cool slightly, about 5 min.

Add eggs, one at the time, stirring vigorously until well incorporate into batter.

Important: For this step you can use the mixer. (if you want to)

When you follow steps above you will see the following mixture:

Transfer dough into a pastry bag

Pipe puffs into prepared baking sheet. The size I used is 2 inch rounds (I was able to make 11)

Bake for 30 min at 375 F. Let puffs cool.

Making Filling

Add the heavy cream and Whip It into the mixing bowl.

Mix until done. (3 to 5 minutes).

Add pure vanilla extract and stir it.

To Assemble

Spoon or pipe the heavy cream filling into empty shells.

Cover with the top.

And you are almost done.

Cover the top of cream puffs with icing sugar.

Refrigerate until ready to eat.

I wanted to make something that is healthy, delicious and gluten free.

But do you know what is gluten?

Gluten is the protein component found in wheat, rye and barley. If our body can’t digest or break down the gluten protein we have a gluten allergy.

It can range from a mild sensitivity to full-blown celiac disease.

If you want complete control (even if you are not controlling freak), cooking from scratch is the easiest way to avoid gluten.

So, let’s start baking from scratch.

What ingredients do you need for Almond Bars?

-Apricot Jam

-Almond

-Sugar

-Rum

-Chocolate

Ingredients

  • 1/4 cup apricot jam
  • 2 1/2 cups almond
  • 1 cup sugar
  • 3 TBSP rum or gluten free vanilla
  • 150 gr chocolate (your choice)

Instructions

  1. Line 8x8 inch baking pan with parchment, waxed paper. (or Aluminum Foil)
  2. In a small saucepan warm the apricot jam until it is hot.
  3. In a food processor, grind together almond and sugar until the mixture is smooth.
  4. Add the jam and rum (or vanilla) and process until smooth.
  5. The dough is very thick and if it is hard to process add more rum or vanilla.
  6. Spread the dough into baking pan. Refrigerate for a few hours.
  7. Melt the chocolate and spread over the almond base.
  8. Refrigerate for an hour.
  9. Enjoy!

Welcome to my food porn experience. We are making 69-19=50 shades of grey Sandwich Threesome.

Until then I am making quick, no bake bread called “Oreo in Paris”.

Ingredients

  • Ingredients:
  • 3/4 cup sugar
  • 8 Tbsp water
  • 1/2 cup butter
  • 2 cups ground walnuts
  • 3 cups graham crumbs
  • Topping:
  • 4 oz chocolate
  • 1 Tbsp oil
  • 10 Oreo

Instructions

  1. Boil sugar and water until the sugar dissolve. Take saucepan off the heat.
  2. Add the butter and stir until is completely dissolved.
  3. Add mix of ground walnuts and graham crumbs. Mix well until homogeneous.
  4. Spread 1/3 of the mixture in 9- x 5-inch loaf pan, add Oreo, spread the second mixture add Oreo and finish with the last part of the mixture. Refrigerate at least 3 hours.
  5. Melt the chocolate and oil. Spread the melted chocolate evenly over the mixture.
  6. Refrigerate for a few hours. Now you are ready….

Coconut Chocolate Square

Coconut Chocolate Square

Rich, chewy and loaded with chocolate chips and coconut.

Ingredients

  • 2 squares or 56gr unsweetened chocolate
  • 2 squares or 56gr semisweet chocolate
  • 1 cup butter
  • 2 cups granulate sugar
  • 3 eggs
  • 1 1/4 cups AP flour
  • Filling:
  • 2 cups unsweetened coconut
  • 1 cup sweetened coconut
  • 1 can or 300 ml sweetened condensed milk
  • 1 tbs almond extract
  • Topping:
  • 1 3/4 cup chocolate chips
  • 1 TBSP oil
  • 1 cup sliced almond

Instructions

  1. Preheat oven to 350 F.
  2. Use 13 by 9 inch cake pan.
  3. Filling:
  4. Mix coconut and condensed milk together.
  5. Add almond extract.
  6. Filling is done. It is easy....
  7. For the base:
  8. Melt chocolate and butter until smooth.
  9. Remove from heat.
  10. Stir in sugar until blended.
  11. Add eggs, one at a time, mixing well.
  12. Stir in flour. Mix well.
  13. Spread half of the batter in prepared pan.
  14. Add the filling. Spread the coconut filling by small spoonfuls and spread it evenly.
  15. Do the best you can.
  16. Cover with second part of the batter.
  17. Bake for 40 min or until set.
  18. Cool it.
  19. Add topping. (melt chocolate chips and oil)
  20. Sprinkle almond on top and cut into squares.
