When I laugh with my friends I called him Bill Cosby and by him I I mean “psycho boss”.
You know the type: charming, controlling freak, narcissists and masters of deception. One of my favorite explanation is the following
“Psychopaths operate from a warped moral code and experience little to no guilt or remorse over telling lies. These bosses are skilled at avoiding accountability and have a Teflon-like capability to deflect blame. They lie, omit information, rephrase the truth, and misrepresent facts. They take credit for ideas that they did not come up with.”
So, how many of you have this kind of experience every day in your life? And how do you deal with it?
For me I like to bake. Baking is the perfect escape from my cold reality. I can even create perfect little creatures in this fictional life and I can make them from anything I like…like ginger
and there you have it…perfect little ginger people with the big heart in the middle. (Reality, eat your heart out)
Ginger People
In this baking escape I like to make cake that my grandmother made for me every week when I was a child.
It is my favorite and the best cake ever – THE CARROT CAKE.
My grandmother used to make different version of her basic recipe. It can be with cheese or with chocolate icing.
There are so much memory connected to this cake and very often when I need something to “hold on” and forget “reality” I make this cake.
And it makes me smile. I love the color, I love the taste and I love to pretend that I am eating the healthiest cake ever made..The Carrot Cake.
And because of memory of my grandmother I like to share this recipe with you.
I know somewhere she is watching over me and saying: “Still your favorite cake…” Yes, grandma still my favorite cake.
Thank you for the recipe…and the memory.
Now, I need to start making carrot cake. The version that I selected today is carrot cake with cheese frosting.
My grandmother used to make very special frosting with secret ingredients.
Her secret ingredients was apple sauce and strawberries.
You will find yourself making this cake all the time.
Quick and easy, it will become your family favorite!
For this recipe you need the usual ingredients: flour, sugar, oil, eggs, cinnamon, walnuts, cheese, apple sauce, strawberries, vanilla, baking soda and salt.
So, let’s make magic …the Carrot Cake

I beg your pardon I never promised you a rose garden Along with the sunshine There’s gotta be a little rain some time When you take you gotta give so live and let live Or let go oh-whoa-whoa-whoa I beg your pardon I never promised you a rose garden
I could promise you things like big diamond rings But you don’t find roses growin’ on stalks of clover So you better think it over Well if sweet-talkin’ you could make it come true I would give you the world right now on a silver platter But what would it matter So smile for a while and let’s be jolly Love shouldn’t be so melancholy Come along and share the good times while we can
I beg your pardon I never promised you a rose garden Along with the sunshine There’s gotta be a little rain some time
I beg your pardon I never promised you a rose garden
I could sing you a tune and promise you the moon But if that’s what it takes to hold you I’d just as soon let you go But there’s one thing I want you to know You better look before you leap, still waters run deep And there won’t always be someone there to pull you out And you know what I’m talkin’ about So smile for a while and let’s be jolly Love shouldn’t be so melancholy Come along and share the good times while we can
I beg your pardon I never promised you a rose garden Along with the sunshine There’s gotta be a little rain some time, I beg your pardon I never promised you a rose garden

Let’s start making Coffee Crepe Cups. Before I start making them let’s talk about crepes. The word crepe is French for pancake and is derived from the Latin crispus meaning “curled”.
Crepes originated around the 12 century in Brittany, a region in the northwest of France. Crêpes are also common in other European nations, such as Italy, Poland, Romania, and Denmark, although they are known under different names.
In areas of Eastern Europe, the meal is called palacinka (Serbian,Czech, Slovenian). In Danish, it is Pandekage and in Dutch it is pannekoeken. There are two types of crepes:
Sweet
Savory
Now that we have a basic knowledge of crepes we can start making them.
This is my favorite recipe and it is the best one you can find on the Internet. I made million version of this recipe but today it is my coffee version.
(Does it look like Cappuccino?)
Coffee Crepes Start

Heat a 12-inch nonstick skillet over medium. Lightly coat with oil. Add 1/2 cup batter and swirl to completely cover bottom of skillet. Cook until underside of crepe is golden brown.
Loosen edge of crepe with a rubber spatula or knife, and quickly flip. Cook 1 minute more.
Turn crepe out onto plate.
Repeat with remaining batter, brushing skillet with oil and stacking crepes on plate.

Take a little time to enjoy the Dream Bars!
If you like to dream and bake I have another recipe for you:
8 ounces (226g) semi-sweet or bittersweet quality chocolate
Instructions
Line a large baking sheet with parchment paper. Set aside.
Place pitted dates, vanilla extract, rum, cocoa powder, almonds, sunflower seeds into your food processor.
Blend/pulse until a moist dough forms - 1 to 2 min. ( add 1-2 more soaked dates or even a teaspoon of pure maple syrup.)
Once dough is formed, scoop out 1 Tablespoon of dough. Roll into a smooth ball and place onto prepared baking sheet. Repeat with remaining dough.
Set aside as you melt the chocolate in the next step.
Melt the chocolate in a double boiler or the microwave.
Let the warm chocolate sit for 5 minutes to slightly cool before dipping.
Dip each ball completely into the chocolate.
When lifting it out of the chocolate, remember to tap the dipping tool gently on the side of the bowl to allow excess chocolate to drip off. Place each back on the baking sheet and refrigerate until the chocolate has set, about 30 minutes.
Now, let’s enjoy our little healthy, happy balls of joy…
Chocolate Almond Truffles
I am sending you love with all the angels singing behind and above me…
who just reminded me about Taylor Swift Grammy Acceptance Speech
“As the first woman to win Album of the Year at the Grammys twice, I want to say to all the young women out there, there are going to be people along the way who will try to undercut your success or take credit for your accomplishments or your fame.
But if you just focus on the work and you don’t let those people sidetrack you, someday, when you get where you are going, you will look around and you will know that it was you and the people who love you who put you there.
And that will be the greatest feeling in the world. Thank you for this moment”
I am in mood for …truffles. Healthy, chocolaty, full of almonds and sunflower seeds and very easy to make.
If you are plain Jane the picture below might be your piece of truffle …

My favorite song for today is “Little Romance” by Ingrid Michaelson. Just in time for Valentine’s Day, Hoda Kotb worked with The Knot to unveil an original video, “Little Romance,” featuring Ingrid Michaelson and a special group of couples married over 50 years. You can check the video for this song by clicking I am in the mood for love
“Little Romance”
You’re in the mood for love
You’re in the mood to dance
You’re in the mood for a little romance
You’re in the mood for love.I see you pressed those pants
I see you styled that hair
There doesn’t seem to be much of it there
You’re in the mood to dance. Can I have this chance
to be your little romance?
Can I have this dance?
I’m in the mood for love.
I’m all dressed up tonight
I’ve waited all night long
When will they finally play your song?
I’m in the mood to dance.
Can I have this chance
to be your little romance?
Can I have this dance?
I’m in the mood for love
I’m in the mood for love.
If it’s the only chance I get
(If it’s the only chance I get)
If it’s the only chance, then get
(If it’s the only chance, then get)
ready to throw your shoes away
(ready to throw your shoes away)
for I will sweep, sweep, sweep
you off your feet
I will sweep, sweep, sweep
you off your feet
to be your little romance
Can I have this chance
to be your little romance?
Can I have this dance?
I’m in the mood for you
You’re in the mood for me
We’re in the mood for love.
