When I laugh with my friends I called him Bill Cosby and by him I I mean “psycho boss”.

You know the type: charming, controlling  freak, narcissists and masters of deception. One of my favorite explanation is the following

 Psychopaths operate from a warped moral code and experience little to no guilt or remorse over telling lies. These bosses are skilled at avoiding accountability and have a Teflon-like capability to deflect blame. They lie, omit information, rephrase the truth, and misrepresent facts. They take credit for ideas that they did not come up with.”

So, how many of you have this kind of experience every day in your life? And how do you deal with it?

For me I like to bake. Baking is the perfect escape from my cold reality. I can even create perfect little creatures in this fictional life and I can make them from anything I like…like ginger

and there you have it…perfect little ginger people with the big heart in the middle. (Reality, eat your heart out)

In this baking escape I like to make cake that my grandmother made for me every week when I was a child.

It is my favorite and the best cake ever – THE CARROT CAKE.

My grandmother used to make different version of her basic recipe. It can be with cheese or with chocolate icing.

There are so much memory connected to this cake and very often when I need something to “hold on” and forget “reality” I make this cake.

And it makes me smile. I love the color, I love the taste and I love to pretend that I am eating the healthiest cake ever made..The Carrot Cake.

And because of memory of my grandmother I like to share this recipe with you.

I know somewhere she is watching over me and saying: “Still your favorite cake…” Yes, grandma still my favorite cake.

Thank you for the  recipe…and the memory.

Now, I need to start making carrot cake. The version that I selected today is carrot cake with cheese frosting.

My grandmother used to make very special frosting with secret ingredients.

Her secret ingredients was apple sauce and strawberries.

You will find yourself making this cake all the time.

Quick and easy, it will become your family favorite!

For this recipe you need the usual ingredients: flour, sugar, oil, eggs, cinnamon, walnuts, cheese, apple sauce, strawberries, vanilla, baking soda and salt.

Quick and easy with secret ingredients....

Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 1 cup oil
  • 2 cups AP flour
  • 1 TBS cinnamon
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 3 cups carrots
  • 1 1/2 cup walnuts
  • ---------------------------------------------------------
  • Cheese Frosting
  • 1 package (8oz) cream cheese
  • 1/4 cup unsweetened apple sauce
  • 1 tsp vanilla
  • 1 1/2 cup icing sugar
  • ---------------------------------------------------------

Instructions

  1. Heat oven to 350 F. Grease bottom and sides of pan (13x9)
  2. Mix sugar,oil and eggs.
  3. Add flour, cinnamon, baking soda, salt and vanilla extract.
  4. Stir in carrots and walnuts.
  5. Pour into pan.
  6. Bake until toothpick inserted in center comes out clean. (Mine was for 35 min).
  7. Cool it.
  8. Frost with Cream Cheese Frosting.
  9. Decorate with strawberries.

  11. Frosting:
  12. Beat cream cheese, add apple sauce, vanilla and icing sugar.

Lemon bars are quite simple to make. The first part is a perfectly crumbly shortbread base followed by a gooey lemon topping.

The final special touch – magic sugar dust  …and the princess came to our blog.

Her name is Martina McBride and she is a very famous country singer. She is also very famous for her cooking and baking.

Her book “Around the Table” is must have. For today and for this blog I am going to make “Lemon Coconut Bars”.

PRINTING THE RECIPE

Prep Time: 20 minutes
Cook Time: 35 minutes
Total Time: 55 minutes

Ingredients

  • Crust:
  • 2 cups AP flour
  • 1/2 cup sugar
  • 1 1/2 cups sweetened flaked coconut
  • 1 1/2 sticks butter, chilled and cubed
  • Filling:
  • 1 1/2 cups sugar
  • 4 large eggs
  • 1/2 cup fresh lemon juice
  • 2 tsp AP flour
  • 1 tsp baking powder
  • 1/3 cup icing sugar

Instructions

  1. Heat oven to 350 F.
  2. Line 13x9 baking pan with aluminum.
  3. Combine flour, sugar and 1/2 tsp salt in processor. Add coconut and butter.
  4. Process until a fine meal forms, press into pan.
  5. Bake for 15 min.
  6. For the filling:
  7. Combine first 6 ingredients and a pinch of salt in processor,blend until smooth.
  8. Pour over hot crust.
  9. Bake for 20 min.
  10. Let it cool. Dust with magic and say

Coffee Crepe Cups – Part 2

Hello,

Let’s start making Coffee Crepe Cups. Before I start making them let’s talk about crepes. The word crepe is French for pancake and is derived from the Latin crispus meaning “curled”.

Crepes originated around the 12 century in Brittany, a region in the northwest of France. Crêpes are also common in other European nations, such as Italy, Poland, Romania, and Denmark, although they are known under different names.

In areas of Eastern Europe, the meal is called palacinka (Serbian,Czech, Slovenian). In Danish, it is Pandekage and in Dutch it is pannekoeken. There are two types of crepes:

  • Sweet
  • Savory

Now that we have a basic knowledge of crepes we can start making them.

This is my favorite recipe and it is the best one you can find on the Internet. I made million version of this recipe but today it is my coffee version.

For this recipe we need the following ingredients: eggs, milk, coffee, flour, salt, oil, water.

Ingredients

  • 1 cup AP flour
  • 2 eggs
  • 3/4 cup coffee
  • 3/4 cup milk
  • 1/4 cup H20 (water)
  • 1/8 tbs salt
  • 1 tbsp oil

Instructions

  1. In a large mixing bowl, whisk the flour and the eggs.
  2. Add milk, coffee, water, salt and oil.
  3. Beat until smooth.
  4. Let batter sit at least 15 min at room temperature or if you are not in a hurry you can refrigerate in an airtight container up to 1 day, whisk before using.
  5. Heat a 12-inch nonstick skillet over medium. Lightly coat with oil. Add 1/2 cup batter and swirl to completely cover bottom of skillet. Cook until underside of crepe is golden brown.
  6. Loosen edge of crepe with a rubber spatula or knife, and quickly flip. Cook 1 minute more.
  7. Turn crepe out onto plate.
  8. Repeat with remaining batter, brushing skillet with oil and stacking crepes on plate.

Now, my friend you are ready for “Fancy Coffee Crepe Cup”.

Now, it is easy part. Let’s have fun. Start with the whipping cream. ( O, I know…..things we can do with whip cream…).

After the whip cream, add some Nutella and honey.

If you are in mood to do some baking I have perfect recipe for you.

It is called “Dream Bars”. Yes, I know dreams are hard to chase but this one will just come into your life

and stay like the best dream you ever had.

This dream looks like the following picture

For this recipe you will need the following:

flour, sugar, butter, graham wafer crumbs, chocolate chips, chocolate, walnuts, sweetened condensed milk, white chocolate, oil. And the most important ingredients –  LOVE AND PASSION.

Because baking is a science, and when you mix together ingredients, you are creating chemistry.

Proper measuring is critical to baking. So please follow my recipe below….

Dream Bars

Yes, if you want to dream and eat you need to make this bars.

Dream Bars - Enjoy and Share

Ingredients

  • 1 cup AP flour
  • 1/3 cup sugar
  • 1/3 cup butter
  • 1/2 cup Semisweet Chocolate Chips
  • 1/2 cup White Chocolate Chips
  • 1 cup Chopped Walnuts
  • 1 cup Graham Wafer Crumbs
  • 1 can (300 ml) Sweetened Condensed Milk
  • 1 1/3 cups White Chocolate Chips
  • 1 TBSP Oil

Instructions

  1. Preheat oven to 350 F. 
  2. Grease a 13 x 9 pan. Set aside.
  3. Crust:
  4. Combine sugar,flour and butter using an electric mixer until crumbly.
  5. Press into prepared pan and bake from 8 to 10 min.
  6. FILLING:Combine chocolate chips,walnuts, wafer crumbs and condensed milk.
  7. Mix until well blended.
  8. Drop mixture over warm base.
  9. Bake for 19 min until top is lightly browned.Cool.
  10. TOPPING:Melt white chocolate and oil until smooth.
  11. Spread evenly over bars.Cut into bars...any size you want it...

Ingredients
  • 1cups graham cracker crumbs
  • 1 cup coconut
  • 1 cup walnuts
  • 1/2 pound pitted dates
  • 1/2 pound miniature marshmallows
  • 1/2 cup heavy cream
  • 1 tsp vanilla
Instructions
  1. Place graham cracker crumbs, 1/2 cup coconut, walnuts,pitted dates,marshmallows, heavy cream and rum into your food processor.
  2. Blend/pulse until a moist dough forms – 3 to 5min. ( add more rum if it is dry).
  3. The dough will be sticky.
  4. Form the dough into log. (you can also form 2 logs, to make it easier to handle)
  5. Roll into coconut.
  6. Wrap in waxed paper and chill for 24 hrs.
  7. Slice into ¼ inch slices.

Hi,

On my menu today is very simple, very sweet and no bake

“Walnut Chocolate Roll”

 

Walnut Chocolate Roll

You need 1/2 hour of your time and the following ingredients:

chocolate, dates, walnuts,marshmallows, heavy cream, graham cracker crumbs, rum

Also, you need bigger Food Processor. If you have 7-Cup Food Processor cut the recipe below in half.

  • 2 cups graham cracker crumbs
  • 1 cup walnuts
  • 1 pound pitted dates
  • 1 pound miniature marshmallows
  • 1 cup heavy cream
  • 1TBSP rum

Instructions

  1. Place graham cracker crumbs, walnuts,pitted dates,marshmallows, heavy cream and rum into your food processor.
  2. Blend/pulse until a moist dough forms - 3 to 5min. ( add more rum if it is dry).
  3. The dough will be sticky.
  4. Form the dough into log. (you can also form 2 logs, to make it easier to handle)
  5. Roll into chopped walnuts.
  6. Wrap in waxed paper and chill for 24 hrs.
  7. Slice into 1/4 inch slices.

 

If you do not have food processor and you have 2 hands and knife do the following:

Chop 1 cup of walnuts

Finely chop pitted dates and marshmallows.

In large bowl combine graham cracker crumbs, walnuts, dates, marshmallows, heavy cream and rum.

Mix the best you can using your hands.

Then follow step 4 from the recipe above.

Chocolate Almond Truffles

Chocolate Almond Truffles

Ingredients

  • 15 dates, soaked in warm water for 10 minutes
  • 1 1/2 teaspoon vanilla extract
  • 1 teaspoon rum
  • 1/4 cup (21g) unsweetened cocoa powder
  • 1/2 cup (70g) whole almonds
  • 1/2 cup (70g) sunflower seeds
  • 8 ounces (226g) semi-sweet or bittersweet quality chocolate

Instructions

  1. Line a large baking sheet with parchment paper. Set aside.
  2. Place pitted dates, vanilla extract,rum, cocoa powder, almonds, sunflower seeds into your food processor.
  3. Blend/pulse until a moist dough forms - 1 to 2 min. ( add 1-2 more soaked dates or even a teaspoon of pure maple syrup.)
  4. Once dough is formed, scoop out 1 Tablespoon of dough. Roll into a smooth ball and place onto prepared baking sheet. Repeat with remaining dough.
  5. Set aside as you melt the chocolate in the next step.
  6. Melt the chocolate in a double boiler or the microwave.
  7. Let the warm chocolate sit for 5 minutes to slightly cool before dipping.
  8. Dip each ball completely into the chocolate.
  9. When lifting it out of the chocolate, remember to tap the dipping tool gently on the side of the bowl to allow excess chocolate to drip off. Place each back on the baking sheet and refrigerate until the chocolate has set, about 30 minutes.

I am in mood to eat something chocolaty, romantic … something that has story from the last century. In Europe
A famous Hungarian Gypsy is playing violin at a Paris restaurant, where husband and wife are having dinner.
The wife is Clara Ward, the only daughter of American millionaire E. B. Ward.
The husband is Prince Joseph. That is how the story started…Just a dinner with the music..
Of course at that time we did not have TMZ but I am happy to report to you what happened.
The wife, Clara Ware was seduced by this famous violinist player, Rigo Jancsi. And she left her husband Prince Joseph.
And married a famous Gipsy, Rigó Jancsi in Hungary.
In order to celebrate their romantic love story this cake was created. It is called Rigo Jancsi.
The cake has two layers of chocolate-sponge cake. Between the two chocolate sponge cake layers is a thick layer of very rich, chocolate and cream filling

Ingredients

  • Cake:
  • 4 eggs
  • 4 TBSP icing sugar
  • 4 TBSP flour
  • 2 TBSP cocoa powder
  • pinch of salt
  • Filling:
  • 3 cups heavy cream
  • 3 TBSP icing sugar
  • 1 TBSP cocoa powder
  • 9 oz semi-sweet chocolate (about 250gr)
  • 2 TBSP gelatine powder
  • Glaze:
  • 7 oz chocolate (200gr)
  • 1/2 cup butter

Instructions

  1. Heat oven to 350 F.
  2. Coat the 9x13 pan with butter.
  3. Cream egg yolks with icing sugar. Add cocoa and mix.
  4. Beat egg whites and pinch salt, add icing sugar and beat until stiff peaks form.
  5. Add to egg yolks mixture about 1/3 of the whites.Fold it in without decreasing the volume.
  6. Then, carefully, fold in the remaining whites. Sprinkle the flour and fold it ...very carefully.
  7. Pour into prepared pan and bake for 10 min or until cakes start to pull away from the sides.
  8. Do not over bake. Cut in half.
  9. FILLING:
  10. Pour gelatine powder into 1/2 cup water.
  11. Rest it for 10 min.
  12. Melt 250 gr chocolate and 1 TBSP cocoa powder.
  13. Mix 3 cups of heavy cream and 3 TBSP icing sugar.
  14. Mix melted chocolate and gelatine together. Add to mixed cream and mix it all together.
  15. Spread the filling over the cake and top with the other.
  16. GLAZE:
  17. Melt the chocolate and butter.
  18. Pour evenly and cover the sides.
  19. Refrigerate for 5 hours or longer.
