So for this Friday I have homemade chocolate truffles.

Shopping List

  • semi-sweet chocolate
  • heavy cream
  • cocoa, coconut

ACTION LIST

Making….

CHOCOLATE TRUFFLES

Ingredients

3/4 cup heavy cream

8 oz semi-sweet chocolate

1 TBSP butter (room temperature)

Decoration: cocoa, coconut

Instructions

Pour 3/4 cup heavy cream into a saucepan and heat until it comes to a simmer.

Chop 8 oz chocolate and place into 4 cups measuring cup.

Pour hot, heavy cream over chopped chocolate and let it sit for 3 minutes.

After 3 minutes mix chocolate and cream until shiny and smooth.

Add butter and whisk until incorporate it.

Press a cling wrap on top of chocolate mixture. (see picture below)

Refrigerate it for about 2 hours or until firm enough to roll.

 

After 2 hours:

Roll each ball of chocolate in your hands to make 1 inch round ball or any size you like.

Next step is to roll in coconut, cocoa, nuts or sprinkles.

Keep in the fridge for 2 weeks.

Ingredients

Instructions

In food processor add 2 1/2 cups walnuts and blend into a fine meal. (about 2 minutes)

So, let’s make it happen 2017.

Ingredients

3/4 +1/8 cup AP flour

1/8 cup cocoa

1/2 tsp baking soda

1/2 tsp salt

1/4 tsp baking powder

1/2 cup butter

1/8 cup brown sugar

1/4 cup sugar

1 egg

1/2 tsp vanilla extract

3/4 cup coconut

1 cup walnuts

1/2 cup white chocolate chips

1/2 cup chocolate chips

INSTRUCTIONS

Preheat oven to 350 F.

Bowl 1:Sift flour,cocoa, baking soda,baking powder and salt into a bowl.

Mix butter and both sugars for about 2 minutes.

Mix in egg and vanilla.

Add flour mixture from the bowl 1 into butter mixture.

Mix until well combined.

Stir in walnuts, coconut and chocolate.

Using a 1 1/2 inch ice cream scoop, drop batter onto baking sheets lined with parchment paper.

Bake until set, about 11 minutes.

You can also freeze batter. Bake a little longer. (12 to 13 minutes.)

Remember when Marilyn Monroe was singing to the president Kennedy:”Happy birthday Mr. President.”

Do you remember her sexy voice full of promises traveling through the air, touching genitals of so many horny people.

People like Kevin Spacey, Harvey Weinstein and so on…

Do you see how quickly I connected today issue with our past!

Why?

Because it is so easy. Women were always objectified by large crowds.

Always!

“Always” as forever. And if you know women they do like to dream about that “forever”.

White fences, dogs and children.

Dreamy life in which the real reality can’t be accessed.

And why would we? Just ask Jacqueline Lee Kennedy?

How did she fell when Marilyn was singing “Happy Birthday Mr. President”?

So, I am wondering, past – present – future! Does it matter?

Can women build their own white fences and be happy?

I don’t know about that but what I do know is the following:

MATERIAL WE NEED

  • Coconut Chocolate
  • Caramel Chocolate
  • Kit Kat Chocolate
  • Cookie’s ‘n’ Cream Chocolate
  • Your Choice Chocolate (I did say you can have everything)
  • 1 cup melted chocolate chips
  • Nutella

INSTRUCTIONS:

Place 3 pcs of Kit Kat Bar on a baking sheet with waxed paper.

Spread the melted chocolate over the Kit Kat bar. (fill the spaces between the bars.You don’t want criminals to get in)

Place in the freezer for 15 minutes then remove.

Spread 1TBSP of  Nutella over the chocolate then spread more melted chocolate.

Add Caramel and Cookies ‘n’ Cream chocolate over the coated Kit Kat bars. (see the picture below)

Place in the freezer for 15 minutes then remove.

Again spread 1TBSP of  Nutella over the chocolate.Top with melted chocolate.

Add Coconut chocolate bar on top of the second layer .

Spread the melted chocolate over the coconut bars to make smooth layer.

Decorate with white chocolate, coconut or sprinkles.

Return to the fridge or freezer until set.

Raspberry Apricot Coconut Square!

To make this recipe you will make the following:

-yellow base + jam + coconut meringue.

Raspberry Apricot Coconut Square

INGREDIENTS

Yellow Base

4 egg yolks

1 cup butter (cold and diced)

1/2 cup sugar

2cups flour

2 tsp baking powder

Jam Layer

3/4 cup apricot jam

3/4 cup raspberry jam

Coconut Meringue

4 egg whites

3/4 cup sugar

1 cup desiccated coconut

2 TBSP vanilla instant pudding

Optional: Chocolate for decoration

INSTRUCTIONS

Preheat oven to 350 F.

In a food processor, process 2 cups flour, 2tsp baking powder,1/2 cup sugar and cold, diced butter. (about 5 min)

Then add 4 egg yolks.

Process again until you get a ball of dough.

Press the dough into 13×11 baking pan with parchment paper.

Bake for 15 min.

Take out of the oven and cool for about 15 minutes.

Then spread 3/4 cup of apricot jam and 3/4 cup raspberry over the baked yellow base.

Beat 4 egg whites at medium speed for about 1 min.

Gradually add 3/4 cup sugar and beat until shiny.

Add coconut and vanilla instant pudding and mix for only few seconds using spatula.

Be gentle when mixing. (The white mixture will lose some of its volume but it is OK.)

Spread the white magic over the jam layer, return to oven and bake from 20 to 25 minutes. (until golden)

Cool it. Cut into triangles or any shape you want to.

I discovered this recipe by accident… If you are reading this blog you might say:

“There are no accidents. Everything happen for a reason.”

The truth is, everything in our life is linked. From LinkedIn,Pinterest to Facebook.

Every single coincidence or accident we stumble upon is linked…so why are you reading this blog?

Well, they say “When the student is ready, the master appears.”

So, my students are you ready to make the White Chocolate Fruit and Nut Bars”?

We need the following:

almonds, walnuts, coconut, apricots, raisins, apricot jam, honey, chocolate, rice flour,almond flour

If you have all ingredients we can start making our White Chocolate Fruit and Nut Bars.

We start by mixing 1 cup silvered almonds, 2 cups chopped walnuts,1 2/3 cup desiccated coconut,3/4 cup apricots,

1 cup + 2 TBSP raisins, 2TBSP + 1 tsp flour and 1/4 cup ground almond together.

In a small saucepan, gently warm 1/2 cup apricot jam and 1/2 cup honey together over low heat until melted.

Pour the mixture into the fruit mixture, stir well to combine, then pour into the prepared pan.

Bake for 30 min at 325 F.

Remove from the oven and let the cake cool completely before spreading the melted white chocolate over the top.

  • 1 2/3 cups desiccated coconut
  • 3/4 cup dried apricots,chopped
  • 1 cup + 2 TBSP raisins
  • 2TBSP + 1 tsp rice flour
  • 1/4 cup ground almonds
  • 1/2 cup apricot jam
  • 1/2 cup honey
  • Optional: 9 oz white chocolate

Instructions

  1. Preheat oven to 325 F. Grease a shallow 8x12 inch pan with butter and line with baking paper.
  2. In a large bowl, mix the almonds, walnuts, coconut, apricots, raisins, flour and ground almond together.
  3. In a small saucepan, gently warm apricot jam and honey until melted.
  4. Pour the melted jam and honey mixture into the fruit mixture, stir well to combine, then pour into pan.
  5. Bake for 30 min.
  6. Remove from oven, cool completely.
  7. If you wish spread the melted chocolate over the top.

Lemon Bars.

Lemon bars are quite simple to make. The first part is a perfectly crumbly shortbread base followed by a gooey lemon topping.

The final special touch – magic sugar dust  …and the princess came to our blog.

Her book “Around the Table” is must have. For today and for this blog I am going to make “Lemon Coconut Bars”.

So, if you need some magic in your life…try this recipe.

PRINTING THE RECIPE

Prep Time: 20 minutes
Cook Time: 35 minutes
Total Time: 55 minutes

Ingredients

  • Crust:
  • 2 cups AP flour
  • 1/2 cup sugar
  • 1 1/2 cups sweetened flaked coconut
  • 1 1/2 sticks butter, chilled and cubed
  • Filling:
  • 1 1/2 cups sugar
  • 4 large eggs
  • 1/2 cup fresh lemon juice
  • 2 tsp AP flour
  • 1 tsp baking powder
  • 1/3 cup icing sugar

Instructions

  1. Heat oven to 350 F.
  2. Line 13x9 baking pan with aluminum.
  3. Combine flour, sugar and 1/2 tsp salt in processor. Add coconut and butter.
  4. Process until a fine meal forms, press into pan.
  5. Bake for 15 min.
  6. For the filling:
  7. Combine first 6 ingredients and a pinch of salt in processor,blend until smooth.
  8. Pour over hot crust.
  9. Bake for 20 min.
  10. Let it cool. Dust with magic and say

Ingredients
  • 1cups graham cracker crumbs
  • 1 cup coconut
  • 1 cup walnuts
  • 1/2 pound pitted dates
  • 1/2 pound miniature marshmallows
  • 1/2 cup heavy cream
  • 1 tsp vanilla
Instructions
  1. Place graham cracker crumbs, 1/2 cup coconut, walnuts,pitted dates,marshmallows, heavy cream and rum into your food processor.
  2. Blend/pulse until a moist dough forms – 3 to 5min. ( add more rum if it is dry).
  3. The dough will be sticky.
  4. Form the dough into log. (you can also form 2 logs, to make it easier to handle)
  5. Roll into coconut.
  6. Wrap in waxed paper and chill for 24 hrs.
  7. Slice into ¼ inch slices.
