  • 4 eggs (large, organic and room temperature)
  • 1 and 1/3 cups sugar
  • 1 cup water
  • 2 cups flour (all purpose)
  • 3 TBSP cocoa powder
  • 1/2 tsp baking powder

Chocolate Filling with Walnuts

  • 3 cups milk
  • 3/4 cups sugar
  • 8 oz dark chocolate
  • 6 oz semi sweet chocolate
  • 3 cups walnuts (ground)

Chocolate Icing

8 oz chocolate (use your favorite dark chocolate or semi sweet chocolate)

1/2 cup heavy cream

Optional Nutella ganache or white chocolate ganache

3/4 cup Nutella

1 oz semi sweet chocolate, chopped

1/8 cup butter, room temperature

3/4 cup heavy cream

2 TBSP corn syrup

Instructions for Making Saucepan Chocolate Torte

Prepare the pan

  1. Line a baking sheet with parchment paper or aluminum foil. Spray with baking spray and set aside.
  2. Make the cake batter
    1. In the bowl of a stand mixer, add eggs and sugar. Using the whisk attachment, mix on high speed until the sugar is fully incorporated (about 6 minutes).
    2. Add water, sifted flour, cocoa powder, and baking powder. Mix on low speed until all ingredients are evenly combined.

Bake the cake

  1. Pour the chocolate cake batter into the prepared pan.
  2. Bake at 360°F for about 17 minutes.
  3. Remove from the oven and let cool for 5 minutes.
  4. Cut the cake layers
    1. Using a 6-inch cake cutter, cut the cake into four round layers. (if you want smaller size, use cookie cutters)
  1. Prepare the chocolate filling while cake is baking.
    1. In a large bowl or saucepan, combine milk, sugar, unsalted butter, and chocolate.
    2. Heat over medium heat, stirring constantly, until the mixture is smooth.
    3. Important: Stir continuously to prevent burning of chocolate
    4. Remove from heat and stir in the ground walnuts.
    5. The filling will be thin; this is expected. Set aside.

Assembling the Chocolate Torte (Serpica Torta)

I assembled the cake using a saucepan, but you can also use a cake pan with cake collars or any pan that works best for you.

  1. Line the saucepan with plastic wrap.
  2. Place the first cake layer on the bottom.
  3. Cover with about 1½ cups of chocolate filling.
  4. Add the second cake layer and cover again with chocolate filling.
  5. Add the third cake layer and spread the remaining chocolate filling.
  6. Top with the fourth cake layer. Do not add filling on top.

Cover the entire cake with plastic wrap and refrigerate for at least 8 hours or overnight.

Chocolate Icing

Using a double boiler, melt the dark chocolate and heavy cream together until smooth.

Remove the cake from the fridge and unmold it from the saucepan. Cover the cake with the chocolate icing (or Nutella icing, if using).

Nutella Ganache

  1. In a medium bowl or measuring cup, add the Nutella, chopped chocolate, and butter. Set aside.
  2. In a medium saucepan, combine the heavy cream and corn syrup. Heat until it just begins to simmer.
  3. Remove from heat and pour the hot cream mixture over the Nutella, chocolate, and butter.
  4. Cover with aluminum foil and let sit for 5 minutes.
  5. After 5 minutes, whisk until smooth.

Decoration and Serving

  • Decorate as desired.
  • Transfer to the fridge for 1 hour.
  • When ready to serve, remove the cake from the fridge and cut to your preferred size.

    And for this great, amazing life we are making one of the most amazing and dare I say very, very hot recipe from 5 star cookies. So, let’s start working.

    Description of Easy Raspberry Chocolate Bombes

    How do you describe the heavenly dessert? Can you?

    Well…let’s start with the following:

    It is layered masterpiece combining yellow cake with rich, creamy filling with contrasting elements like fresh raspberry fruit and chocolate icing.

    Yes, it is dreamy bite that melts in the mouth!

    So, to make this happen you you will need to make the following:

    – yellow cake or sunshine bottom

    – White cheese Raspberry filling (we will be using the fresh raspberries)

    -Chocolate Glaze or my favorite Nutella Ganache (I tried both and you will see pictures. With chocolate glaze the bombes are darker. Nutella glaze is like ligher version)

    Important: This beautiful and impressive dessert will require bomb mold halves (bomb molds, silicone hot cocoa bombs, silicone molds or just check amazon web site)

    • 1 tsp cornstarch

    Cheese Filling

    • 1 pouch Knox gelatine
    • 3/4 cup fresh raspberry

    Chocolate Glaze

    6 oz dark chocolate, chopped (Lindt 70% cocoa)

    2 TBSP corn syrup

    1 cup heavy cream

    Nutella Ganache – check the link for step by step instructions

    3/4 cup Nutella

    1 oz semi sweet chocolate, chopped

    1/8 cup butter, room temperature

    3/4 cup heavy cream

    2 TBSP corn syrup

    Decoration: white chocolate curls, any kind of chocolate you like, raspberry powder, mini marshmallows, fresh raspberries, pink candy melts,,,

    Instructions

    1. Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).
    2. Spray with baking spray and set aside.
    3. Preheat oven to 350 F.
    4. In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)
    5. Sift the flour, cornstarch, baking powder and salt.
    6. Add into eggs mixture and fold gently using a spatula.
    7. Important: Don’t use mixer when adding flour mixture.
    8. Be sure that flour mixture is incorporated into eggs mixture. (be sure no excess flour is used)
    9. Spread the batter on the prepared jelly roll pan.
    10. Bake at 350 for 14 to 15 minutes.
    11. Cool completely. (for about 2 hours)       

    Making Easy White Cheese Filling

    Mix cheese and icing sugar. (for about 2 minutes)

    In another bowl mix heavy cream.

    Transfer heavy cream into mixture of cheese and icing sugar.

    Fold gently using the spatula.

    Add 1/2 cup raspberries (cut into small pieces) and mix all ingredients.

    Next step is to add the prepared gelatine. (if you don’t know how to prepare gelatine see instructions below)

    Quickly mix all ingredients.

    How to Prepare gelatine

    In a small cup sprinkle 1 pouch Knox unflavoured gelatine over 1/4 cup (50 ml) cold water.

    Let stand for 1 minute.

    Add 1/4 cup (50 ml) boiling water and stir until granules are completely dissolved.

    Chocolate Glaze

    Add chopped chocolate and corn syrup to the bowl.

    Then heat the cream until almost boiling.

    Pour it over chocolate and corn syrup mixture.

    Let sit for 5 minutes.

    Gently mix until smooth.

    And yes, you just made the best chocolate glaze.

    If you like Nutella you can make Nutella Ganache instead of the chocolate glaze.

    ​Or you can make both and enjoy.

    Nutella Ganache

    Using a medium size cup or bowl add Nutella, chopped chocolate and butter. Set aside. (I like to use glass measuring cup)

    Add heavy cream and corn syrup into medium size sauce pan and heat until it begins to simmer.

    Remove from heat and pour over Nutella, chocolate and butter.

    Cover the cup with aluminum foil for 5 minutes.

    After 5 minutes whisk until smooth.

    And you are done.

    Now you are ready to do assembly of the best chocolate 

    Assembly of Easy Raspberry Chocolate Bombes

    Using the cookie cutter, cut 12 cake rounds. Set aside.

    Fill silicone dome with about 3/4 full with the White cheese raspberry flavor filling.

    For this I used ice cream scoop. You can use piping bag or metal spoon.

    Place the fresh raspberries into each mold. (1 to 2 fresh raspberries)

    Top or press one cake round into each mold.

    Take a moment and enjoy your best work.

    Cover with the plastic wrap and move to the freezer for a few hours or overnight.

    Next day or few hours after or couple of days after you are ready to enjoy your dreamy bite …

    Serving plate

    Unmold the frozen bombes and place them yellow cake down on the serving plate. (yellow biscuit is on the bottom of the plate, then white cheese with raspberry flavor (including fresh raspberries).

    Glaze with chocolate glaze or Nutella glaze. (you can do both if you are chocolate greedy)

    And if you wish decorate with white chocolate curls, dark chocolate or any kind of chocolate you like, raspberry powder, mini marshmallows, fresh raspberries, pink candy melts and so on. 

    Use your imagination.

    Important: You can use wire rack to cover each bombes or domes with magical and melted chocolate glaze.

    Gelatin Powder – I used GoBio organic gelatin. It is my favorite. You can use your favorite brand.

    Dark Chocolate – I used Lindt 70 % cocoa. You can use your favorite dark chocolate or any kind of chocolate you like.

    Fresh Raspberries – for this recipe I used fresh raspberries from Super Store. If you don’t like raspberries you can use whole berries like blueberries, blackberries.

    So, if you are ready as I am let’s make the 2 of the best gingerbread coffee cake.

    Since I need to describe 2 in one recipe …let me start with the following:

    -layered mousse cake with a mirror glaze

    -super tasty

    -and elegant dessert for Christmas party, family celebration or just every day dessert when you need “special chocolate mixture” magic.

    -eggs (large eggs)

    -white sugar

    -brown sugar

    -flour (all purpose flour)

    -baking powder

    -cream cheese

    ACTION TIME

    Making Ginger Coffee Chocolate Cakes

    Ingredients

    6 eggs (large eggs size)

    3/4 cup white sugar

    1 cup flour (all purpose, unbleached)

    2 tsp grounded cinnamon

    1 tsp baking powder

    1/2 tsp cornstarch

    Gingerbread Coffee Mousse

    2 cup heavy cream

    1/3 cup cream cheese (Philadelphia cream cheese)

    3/4 cup white chocolate chips, melted

    1/4 cup brown sugar

    2 tsp powdered gelatin

    1/4 cup of cold water

    1/2 cup of coffee (cooled)

    1 tsp cinnamon

    1/2 tsp ground ginger

    1 tsp of pure vanilla extract

    1/8 tsp of nutmeg

    Nutella Ganache

    1/2 cup Nutella

    2 oz dark chocolate, chopped

    2 TBSP unsalted butter, room temperature

    1/2 cup heavy cream

    1 TBSP corn syrup

    Instructions for making 2 Gingerbread coffee cake

    Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

    Spray with baking spray and set aside.

    Preheat oven to 350 F.

    In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes high speed)

    Dry ingredients: In another bowl sift the flour, baking powder. Then add corn starch and cinnamon.

    Add the flour mixture into the eggs mixture and fold gently using a spatula.

    Important: Don’t use mixer when adding flour mixture.

    Fold using a spatula.

    Be sure that flour mixture or dry ingredients are incorporated into eggs mixture.

    Spread the batter on the prepared jelly roll pan.

    Bake at 350 for 15 minutes. (start checking after 12 minutes)

    Cool completely. (for about 2 hours)

    How to make Gingerbread Coffee Mousse

    Using small bowl or small cup bloom the gelatin by sprinkling it over cold water.

    Let it sit for 5 minutes.

    In a small saucepan, gently heat the coffee, brown sugar, cinnamon, ginger, and nutmeg until warm but not 

    boiling. 

    Add the bloomed gelatin and stir until fully dissolved.

    Be sure that gelatin is not mixed with boiling liquid.

    When gelatin is fully dissolved remove from heat.

    Add melted white chocolate and pure vanilla extract. 

    Coll the mixture. (image 1 below)

    In a separate bowl, small bowl, mix cream cheese until smooth. 

    In another large bowl, whip the heavy cream.

    Add mixed cheese into whipped heavy cream and mix just for a second. (image 2)

    Your next step is to add cooled coffee/gelatin mixture into heavy cream/cheese mixture.

    Gently fold until incorporated. (image 3)

    Recipe 1 – Ginger coffee chocolate domes

    Assemble:

    Using the cookie cutter, cut 6 cake rounds. Set aside.

    Fill silicone dome with about 3/4 full with the Gingerbread Coffee Mousse.

    Press one cake round into each mold.

    Take a moment and enjoy your best work.

    Cover with plastic wrap and freeze overnight.(or for a few hours)

    Easy Ginger Coffee Chocolate

    Perfect Chocolate Gingerbread Cake or roll cake – Recipe 2

    Add 3/4 cup of Nutella to leftover of Gingerbread Coffee Mousse.

    Mix quickly until it is incorporated.

    You just made Nutella Gingerbread Coffee Mousse. 

    Cut aluminum foil to 16 by 12 inches.

    Transfer second half of your cinnamon base cake to the aluminum foil..

    Spread the cake with the best Nutella Gingerbread Coffee Mousse and roll roll it using aluminum foil for the perfect roll.

    Transfer to the freezer for a few hours of over night.

    Meanwhile make large cup of hot coffee.

    Take a moment and enjoy your life.

    You do have 2 cakes in the freezer and you are ready for Christmas party/

    NEXT Day 

    MAKING NUTELLA GANACHE

    Using a medium size cup or bowl add Nutella, chopped dark chocolate and butter. Set aside.

    Add heavy cream and corn syrup into small sauce pan and heat until it begins to simmer.

    Remove from heat and pour over Nutella, dark chocolate and butter.

    Cover the cup with aluminum foil for 5 minutes.

    After 5 minutes whisk until smooth.

    Remove your cakes from the freezer and cover with the best Nutella ganache.

    Decorate the top of the cake with ground ginger, cinnamon, sprinkles, ground walnuts or use anything which makes you happy.

    Enjoy and share.

    Quick Note

    Eggs – please use large eggs. Organic if you can. This is the most important ingredient for the cake.

    Heavy Cream – use 33% or 35% . Please don’t use half and half. You need heavy cream with 33% or higher.

    Coffee – use fresh, homemade hot coffee.

    Ginger – I used ground organic ginger (see picture).

    Gelatin Powder – I used GoBio organic gelatin. It is my favorite. You can use your favorite brand.

    Dark Chocolate – I used Lindt 70 % cocoa. You can use your favorite dark chocolate, bittersweet chocolate or semi-sweet chocolate.

    Base Cake

    Gingerbread Coffee Mousse

    • 2 cup heavy cream
    • 1/3 cup cream cheese (Philadelphia cream cheese)

    • 1/4 cup brown sugar
    • 2 tsp powdered gelatin
    • 1/4 cup of cold water
    • 1/2 cup of coffee (cooled)

    • 1/8 tsp of nutmeg

    Nutella Ganache

    Instructions

    1/2 and 1/4 tsp baking powder

    1 tsp baking soda

    1/4 tsp salt

    1 tsp ground cinnamon

    1/4 tsp nutmeg

    1/2 cup brown sugar

    2 eggs (room temperature)

    1/2 cup white sugar

    1/4 tsp vanilla extract

    1/2 cup vegetable oil

    1 1/4 cups carrots (finely grated carrots)

    1/3 cup raisins

    1 1/2 tsp rum

    Cream Cheese Frosting

    12 oz cream cheese, softened

    1/4 cup heavy cream

    1 tsp vanilla extract

    3 to 4 cup of icing sugar (powdered sugar)

    Chocolate Icing

    1/3 cup heavy cream

    1 1/4 cup chocolate chips

    Instructions for Gordon Ramsay Carrot Cake

    Preheat oven to 350 F.

    Line one cake pan with parchment paper. (I used 9 inch round cake pan). Set aside.

    Bowl 1 – Dry ingredients

    Add dry ingredients to the bowl: all purpose flour, white sugar, brown sugar, baking soda, baking powder, salt, cinnamon and nutmeg.

    Prep carrots and raisins

    Cover raisins with rum. Set aside.

    Grate carrots.

    Mixing Bowl (using paddle attachment)

    Add the wet ingredients to the mixing bowl: oil, white sugar and brown sugar.

    Beat together until smooth and then add eggs, one at time. Mix well after each addition.

    Stir in pure vanilla extract.

    Your next step is to add the finely grated carrots, raisins with rum and mix until all ingredients are incorporated.

    Then add all dry ingredients and mix on low speed until no streaks of flour remain. (this is just for a minute)

    Pour the best carrot cake into prepared cake pan.

    Bake at 350 F until a toothpick inserted into center comes out clean. (for my oven it was 30 minutes)

    Remove from the oven and let it cool.

    ​Meanwhile prepare the best fluffy cream cheese frosting

    How to make fluffy cream cheese frosting

    In a large bowl add cream cheese, milk and vanilla. Mix until smooth.

    Then gradually beat in icing sugar until you get the frosting for the carrot cake spreadable.

    Transfer to the fridge for an hour.

    Chocolate Icing

    Heat the heavy cream until almost boiled and pour over chocolate chips.

    Let it sit for 3 minutes and then stir with the spatula until smooth.

    Next day or when your cake is cooled

    Half of the cake cover with fluffy cream cheese frosting and half with the chocolate icing.

    ​Transfer to fridge and when ready enjoy and share.

    Ingredients

    6 large eggs (organic and  room temperature)

    3/4 cup sugar

    1 cup flour (AP)

    1 tsp baking powder

    1/8 tsp salt

    1/2 tsp cornstarch

    Filling

    Raspberry Jam

    Cream Cheese Mixture

    12 oz cream cheese (Philadelphia)

    1 1/2 cup heavy cream

    1 cup icing sugar

    1/2 cup sour cream

    1 tsp pure vanilla extract

    1/2 cup of Nutella or melted chocolate

    INSTRUCTIONS

    Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

    Spray with baking spray and set aside.

    Preheat oven to 350 F.

    In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

    Sift the flour, cornstarch, baking powder and salt.

    Add into eggs mixture and fold gently using a spatula.

    Important: Don’t use mixer when adding flour mixture.

    Fold using a spatula.

    Be sure that flour mixture is incorporated into eggs mixture.

    Spread the batter on the prepared jelly roll pan.

    Baking time is about 15 minutes at 350. (this is for my oven so please check your oven temps) 

    Important: Check the center of the cake using the fork or a toothpick. Insert a toothpick into the center of the cake; if it comes out clean, the cake is done,

    Cool completely.

    When cooled cut the cake with a sharp knife into 3 equal pieces ( I used size 10 by 5 inches)

    While cake cools or while cake is baking/cooling you can make cream cheese mixture or cheese filling.

    How to make Cream Cheese Mixture

    Add cream cheese to the large mixing bowl and mix using the paddle attachment. (just for a minute)

    Then add icing sugar and continue mixing until ingredients are happy together.

    In a separate small bowl mix the heavy cream until soft peaks.

    Then transfer the mixed heavy cream into cheese mixture and mix until incorporated. ( 1 to 2 minutes on medium speed)

    Your next step is to add sour cream and pure vanilla extract.

    Mix on a low speed until incorporated.

    Now take 1/3 of the filling and transfer to the small bowl.

    Add Nutella and mix until ingredients are blended and happy together.

    Transfer cream cheese mixture to the fridge for an hour.

    Assemble of the Simple Yellow Cheese Cake

    Place 1 cake layer on your cake stand (or use baking sheet as the assembly station)

    Cover with half of white cream cheese mixture

    Then add second layer of the yellow cake.

    Cover with white cream cheese mixture and using your artistic personality add about 1/2 cup of your favorite jam (blueberry jam, raspberry or any flavor you like)

    Top with the third cake layer and transfer to the fridge for a few hours. (if you want fast just transfer to the freezer for about 45 minutes)

    Remove from the fridge and spread the chocolate filling all over the top and sides.

    Decorate as you wish. 

    The top of the cake can be decorate using chocolate shavings, sprinkles, Lindt chocolate…

    Let’s start with the most important.

    EGGS – use large, organic eggs. (room temperature). 

    Flour – I used all purpose flour, unbleached flour. 

    Cream Cheese – I used Philadelphia cream cheese. You can use your favorite cream cheese.

    Sour Cream – for this yellow cake I used sour cream 14 %.

    Heavy Cream – this recipe was made with 33% heavy cream. You can buy in Safeway, Walmart, Super Store…

    Coffee Espresso Vodka Whipped Cream

    2 cups heavy cream

    Remove from the oven and cool the cake.

    Now it is perfect time to make best chocolate frosting. So, the question is …

    How to make the best Chocolate Frosting

    Add chocolate pudding, sugar and 1/3 cup of the milk into the mixing bowl. 

    Mix until smooth.

    Meanwhile, add 1 2/3 cup cold milk into large or medium pot.

    Bring the milk to a boil. Remove from heat and stir in the pudding mixture. 

    Return to heat and stir non stop for about 3 minutes or until thickness.

    Remove from heat and add chopped dark chocolate or semi sweet chopped chocolate.

    Stir until chocolate is melted.

    Cover bowl with plastic wrap and let it cool.

    While the filling is cooling, mix the unsalted butter. Set aside.

    When the best chocolate filling is cooled add  mixed butter. (1/2 cup unsalted butter).

    Mix until incorporated. (2 to 3 minutes if using KitchenAid mixer)

    Your next step is to add Nutella i mix for a minute or until incorporated.

    Then add rum and stir with wooden spoon until incorporated.

    Yes, you just made the best boozy chocolate frosting.

    Making Coffee Espresso Vodka Whipped Cream

    Add Espresso vodka into a small cup.

    Then add instant coffee into vodka.

    Stir until smooth.

    In a separate bowl mix heavy whipping cream, powdered sugar and Whip it (if using).

    Mix until medium peaks form.

    Stop the mixer and add coffee vodka mixture.

    Mix for a few seconds or until all ingredients are incorporated.

    Now, you are ready for assembly line.

    Place 8 inch cake cutter inside of baking sheet and cut 2 cakes.

    Transfer one layer to cake plate and spread 1/2 filling of the coffee espresso vodka whipped cream.

    Top with second cake layer.

    Transfer to the fridge.

    Easy recipe for the best carrot cake made with chopped walnuts, grated carrot, ground ginger and more.

    -large bowl 

    -KitchenAid mixer or hand mixer (using paddle attachment)

    -medium bowl for flour mixture

    -baking sheet (16 by 12 inches)

    -large rubber spatula

    -measuring cup

    -plastic wrap

    Big Carrot Walnut Ginger Cake Recipe

    Ingredients

    5 eggs (large eggs)

    1 cup buttermilk

    2 2/3 cups white sugar

    1 cup olive oil

    2 2/3 cups all purpose flour

    1 1/2 TBSP cinnamon

    1/2 TBSP ground ginger

    1 TBSP baking soda

    2 1/3 cups carrot (grated carrots)

    1 can crushed pineapple (398 ml)

    2 cups chopped walnuts

    3TBSP crystallized ginger, finely chopped

    1 1/8 cup shredded coconut

    ​Cream Cheese Maple Icing

    10 oz cream cheese (Philadelphia cheese room temperature)

    3/4 cup butter

    1/2 cup heavy cream

    3 TBSP maple syrup

    8 cups icing sugar (powdered sugar)

    Instructions for making the best Carrot Cake

    Line baking sheet (16 by 12 inches) with aluminum foil or parchment paper.

    Spray with baking spray. 

    Your first step is to add dry ingredients to the separate bowl.

    Add all purpose flour, baking soda, ground ginger and cinnamon.

    Stir all dry ingredients and set aside.

    Next step – wet ingredients

    In a large mixing bowl add eggs, oil, butter milk and sugar.

    Mix well all wet ingredients on high speed  or until all ingredients are incorporated.

    Then add dry ingredients and mix.

    After mixing dry ingredients with wet ingredients you are almost done.

    You need to add the following to the mixture: pineapple, grated carrots, coconut and crystallized ginger.

    Mix until incorporated.

    Pour the best cake batter into prepared pan.

    Bake at 325 F for about 35 to 40 minutes.

    For me the best carrot cake was baked in 36 minutes.

    Please use cake tester to check if cake is done.

    Remove from the oven and let the cake cool.

    How to make Cream Cheese Maple Icing

    To make the best carrot cake recipe you need to make the best cream cheese icing.

    Your first step is to add cream cheese to the bowl of a mixer.

    Mix on a high speed until smooth.

    Then add butter and continue beating until smooth.

    In a separate large bowl mix heavy cream.

    Add heavy cream to the cheese/butter mixture and mix until incorporated.

    BTW, you are almost done.

    Add maple syrup and 6 cups of icing sugar (powdered sugar) and mix until incorporated.

    Keep adding icing sugar until you get consistency you like or spreadable consistency you like to work with. ( I added 8 cups of icing sugar)

    IMPORTANT: You can add up to 10 cups of icing sugar.

    Assembly of Big Carrot Cake

    Take your cooled cake and cut into 6 by 12 inch size. (you will have some extra cake)

    Spread cream cheese maple icing on the first layer of the carrot cake.

    Add second layer and cover with remaining icing.

    Decorate with walnut pieces, grated ginger and cinnamon.

    Transfer to the fridge for a few hours or overnight.

    You just made the best carrot cake recipe so prepare yourself for rave reviews.

    Serve with maple syrup, heavy cream and walnut pieces.

    Eggs – I used large, organic eggs.

    Cream Cheese – for this recipe we used Philadelphia cream cheese. You can use your favorite brand.

    Pineapple – 1 can of crushed pineapple. (I did not use juice)

    Very simple no-bake dessert.

    How is it made? Layer of wafer, chocolate filling, cookies, chocolate filling and another layer of wafer. Easy, don’t you think? Even if you are a student and you don’t have an oven you can make this recipe.

    Also, this recipe is great recipe for Christmas, Easter or dessert at any time or any place during the year. Yes, you can enjoy this recipe from Monday to Sunday. (as you should)

    Of course to make this recipe you need to buy the following ingredients listed under the title called

    SHOPPING LIST FOR Chocolate Wafer Cake

    • milk
    • sugar
    • butter
    • walnuts
    • chocolate
    • Plazma Lane Ground Biscuits (or use Oreos crumbs)
    • Orange Jaffa Cookies (Jaffa cakes)
    • wafer cake or tort wafers

    Equipment Needed

    -large saucepan

    Making Happy Chocolate Wafer Cake

    Ingredients

    1 cup sugar

    3/4 cup + 1/8 cup (200 ml) milk

    1 cup butter

    3 cups Plazma ground biscuits (Oreo works too)

    2 cups ground walnuts

    5 oz chocolate

    2 package of Jaffa cakes (about 300 gr)

    1/2 TBSP pure vanilla extract

    2 sheets of tort wafers (11 by 11 inches)

    INSTRUCTIONS FOR MAKING WAFER CAKE

    Wafer Cake

    In a large sauce pan add milk and sugar.

    Bring to boil. Be sure to stir frequently until the sugar is dissolved.

    Add butter and stir until the butter is melted.

    Then remove from heat and add chopped chocolate.

    Stir until chocolate is completed melted.

    Your next step is to add ground biscuit, walnuts, vanilla extract and stir until all ingredients are incorporated.

    Cool it for 10 minutes.

    ASSEMBLY OF THE BEST CAKE

    Unwrap the wafer sheets. Remove 2 from the package.

    Place first wafer sheet on a hard surface.

    Pour half of the chocolate filling and evenly distribute the filling to all sides. (use knife, spoon or whatever you have)

    Then add Jaffa cakes until you cover the whole sheet.

    Pour the rest of chocolate filling over the jaffa cookies.

    Top everything with second wafer sheet.

    Then cover the cake with aluminum foil and place heavy object on top of it.

    I placed 2 very heavy books. (I used Baking Day with Anna Olson)

    Leave it overnight or 6 to 8 hours.

    NEXT DAY – CUT THE Chocolate Wafer Cake

    Use sharp knife and cut the cake into desired sizes and shapes.

    Keep cake in the fridge for about 5 days. (be sure it is wrap in plastic wrap or aluminum foil)

    Quick Note

    Tort Wafers – you can buy in any Euro store near you. In Canada FreshCo Ltd is selling it. Also you can buy online. Amazon website has it. Check this LINK

    Butter – use unsalted, room temperature butter for this recipe.

    Milk – I used organic, 3.25%.

    Chocolate – use the best quality you can afford. (you can use dark, semi-sweet chocolate. It is your choice, really)

    Plazma ground biscuits – if you can’t find Plazma you can use Oreo crumbs (honey graham crumbs and so on)

    Sugar – white, regular sugar

    Hello my dear readers,

    Our recipe today is one of my favorite childhood cake recipes. As you can imagine I have many, many favorite cakes or desserts. And I can’t feel guilty. I already admit my addiction to chocolate, Nutella and so on. And so on is also addiction to the ice cream. Ok, let’s be quite for a moment. People have issue, people have problems. And we don’t want to talk about it. So, let’s keep tradition alive and keep going. Like nothing to see here. Yes, I know…but let the silence talk. Will you?

    Of course not. And because of that let’s talk about our cake recipe post today. Homemade, easy and helps when everything or almost everything is not working for you. Hmmm…what do you think? Are you ready for the most amazing ice cream cake recipe you will ever try…

    DESCRIPTION OF SUPER EASY ICE CREAM CAKE

    First of all you won’t believe how easy is to make this ice cream cake at home. That’s why it is called Super Easy Ice Cream Cake. (just in case you have some kind of trust issue).

    Like always let me start with 5 words to describe our recipe today:

    • smooth
    • refreshing
    • sweet
    • creamy
    • luscious

    Also, this easy ice cream cake is the cake my grandmother used to make. It is not like the store bought version. Full of additives and words we don’t understand. This cake will bring back childhood memories when ice cream cake was made with tons of eggs, milk, flour, sugar and people were skinny.

    So, time for our first task called shopping for ingredients. The list is under the title called…

    SHOPPING LIST FOR ICE CREAM CAKE

    • eggs (large size)
    • icing sugar
    • white sugar
    • flour
    • milk
    • Dr. Oetker Vanilla pudding
    • heavy cream
    • butter
    • corn starch
    • baking powder

    Equipment Needed

    -KitchenAid mixer (or the mixer you are using. Can be hand mixer too)

    -mixing bowl

    -glass or plastic bowl for dry ingredients

    -2 round baking pans (6 inches)

    Action Time

    Super Easy Ice Cream Cake Recipe

    Ingredients

    6 egg whites

    6 TBSP of sugar

    1/2 tsp + 1/4 tsp baking powder

    6 1/2 TBSP flour (all purpose)

    1/2 cup milk

    Ice Cream Homemade Filling

    6 egg yolks

    3/4 cup icing sugar

    1 and 1/3 cups milk

    2 TBSP sugar

    1/2 TBSP corn starch

    1 Dr. Oetker Vanilla pudding

    1/2 cup butter, unsalted (room temperature)

    Decoration: 1 cup of heavy cream, chocolate and so on…

    Important: Eggs must be room temperature.

    INSTRUCTIONS FOR MAKING HOMEMADE CAKE

    Line bottoms of two 6 inch cake pans with parchment paper. (do not grease the sides or the bottom). Set aside.

    First mix eggs whites and sugar until until firm peaks and sugar is incorporated.

    Then add the flour and baking powder. You are not going to use mixer at this point.

    Add the flour and fold with a spatula. Stop mixing when no streaks of flour remain.

    Important: Be sure the flour is incorporated.

    Pour the batter into 6 inch prepared pan.

    I used 2 and 1/4 cups of batter for each baking 6 inch pan.

    Bake at 375 F for about 14 to 15 minutes. (start checking after 10 minutes)

    Remove from the oven and let is cool for 5 minutes.

    Meanwhile, pour 1/2 cup milk into the glass or measuring cup.

    After 5 minutes, remove the parchment paper from the cakes and soak each cake with 1/4 cup of milk.

    Set aside.

    How do you soak the cake?

    Poke the cake with toothpick and use a pastry brush to coat it with milk.

    Making Ice Cream Homemade Filling

    Mix egg yolks and icing sugar well, until double in size.

    In separate cup mix vanilla pudding, corn starch and 1/3 cup milk until smooth.

    Your next step is to add milk mixture into the egg yolks and sugar.

    Mix until all ingredients are incorporated.

    Meanwhile, add 1 cup cold milk into large pot.

    Bring the milk to a boil. Remove from heat and stir in the egg/pudding mixture.

    Return to heat and stir non stop for about 3 minutes or until desired thickness.

    Remove from the heat, cover with plastic wrap and let it cool.

    While the filling is cooling, mix butter until smooth.

    Add cooled yellow filling to the mixed butter.

    Mix all ingredients until incorporated.

    ASSEMBLY OF Super Easy Ice Cream Cake Recipe

    Place 1 layer cake on your cake stand (or at the bottom of the pan, cake plate or whatever you are using.)

    Add ice cream yellow filling.

    Cover with second layer cake.

    Transfer to the freezer for about 30 minutes.

    Remove from the freezer and starting at the top and working your way down, apply the yellow filling.

    Smooth out with a scraper. This step takes practice. So, don’t be hard your yourself if it is not perfect.

    Just keep practicing until you like the way your cake looks.

     Transfer to the fridge for a few hours or overnight.

    Next Day: Mix heavy cream and cover the top of the cake.

    Decorate with shaved chocolate, ground walnuts, hazelnuts, pecans or sprinkles.

    Quick Note

    Butter – use unsalted, room temperature butter for this recipe.

    Eggs – the eggs are the star of the recipe. So, be sure you are using large, organic eggs. Also, don’t forget to bring eggs to the room temperature for this recipe.

    Chocolate – this is optional for this recipe. I used for decoration and I used Lindt chocolate, 70% cocoa.

    Flour – I used all purpose, unbleached flour.

    Milk – for this recipe I used organic milk, 3.25%. You can use your favorite milk. (2% or 3.25% and it does not need to be organic)

    Super Easy Ice Cream Cake is the best homemade cake using simple ingredients or just a few ingredients.

    • 1/2 tsp + 1/4 tsp baking powder
    • 1/2 cup milk

    Ice Cream Cake Filling

    • 6 egg yolks
    • 3/4 cup icing sugar
    • 1 and 1/3 cups milk
    • 2 TBSP sugar
    • 1/2 TBSP corn starch
    • 1 Dr. Oetker Vanilla pudding
    • 1/2 cup butter, unsalted (room temperature)
    • Decoration: 1 cup of heavy cream, chocolate and so on...
    • Important: Eggs must be room temperature.

    Instructions

      INSTRUCTIONS FOR MAKING HOMEMADE CAKE

      Line bottoms of two 6 inch cake pans with parchment paper. (do not grease the sides or the bottom). Set aside.

      First mix eggs whites and sugar until until firm peaks and sugar is incorporated.

      Then add the flour and baking powder. You are not going to use mixer at this point.

      Add the flour and fold with a spatula. Stop mixing when no streaks of flour remain.

      Important: Be sure the flour is incorporated.

      Pour the batter into 6 inch prepared pan.

      I used 2 and 1/4 cups of batter into each baking 6 inch pan.

      Bake at 375 F for about 14 to 15 minutes. (start checking after 10 minutes)

      Remove from the oven and let is cool for 5 minutes.

      Meanwhile, pour 1/2 cup milk into the glass or measuring cup.

      After 5 minutes, remove the parchment paper from the cakes and soak each cake with 1/4 cup of milk.

      Set aside.

      How do you soak the cake?

      Poke the cake with toothpick and use a pastry brush to coat it with milk.

      Making Ice Cream Homemade Filling

      Mix egg yolks and icing sugar well, until double in size.

      In separate cup mix vanilla pudding, corn starch and 1/3 cup milk until smooth.

      Your next step is to pour add milk mixture into the egg yolks and sugar.

      Mix until all ingredients are incorporated.

      Meanwhile, add 1 cup cold milk into large pot.

      Bring the milk to a boil. Remove from heat and stir in the egg/pudding mixture.

      Return to heat and stir non stop for about 3 minutes or until desired thickness.

      Remove from the heat, cover with plastic wrap and let it cool.

      While the filling is cooling, mix butter until smooth.

      Add cooled yellow filling to the mixed butter.

      Mix all ingredients until incorporated.

      ASSEMBLY OF Super Easy Ice Cream Cake Recipe

      Place 1 layer cake on your cake stand (or at the bottom of the pan, cake plate or whatever you are using.)

      Add ice cream yellow filling.

      Cover with second layer cake.

      Transfer to the freezer for about 30 minutes.

      Remove from the freezer and starting at the top and working your way down, apply the yellow filling.

      Smooth out with a scraper. This step takes practice. So, don't be hard your yourself if it is not perfect.

      Just keep practicing until you like the way your cake looks.

       Transfer to the fridge for a few hours or overnight.

      Next Day: Mix heavy cream and cover the top of the cake.

      Decorate with shaved chocolate, ground walnuts, hazelnuts, pecans or sprinkles.

    1 tsp baking powder

    1/2 TBSP baking soda

    White Cream Filling

    8 oz cream cheese

    3/4 cup icing sugar

    1/2 cup heavy cream

    1/2 tsp vanilla extract

    NUTELLA GANACHE

    3/4 cup Nutella

    2 oz semi sweet chocolate, chopped

    1/4 cup butter, room temperature

    3/4 cup heavy cream

    2 TBSP corn syrup

    INSTRUCTIONS FOR MAKING CHOCOLATE CAKE

    Preheat oven to 350 F.

    Line baking sheet with parchment paper or aluminum foil.

    Spray with baking spray and set aside.

    To the plastic bowl add flour, sugar, cocoa, baking powder, baking soda. Set aside.

    Add to the mixing bowl the following ingredients: eggs, yogurt, coffee, water, oil, vanilla extract.

    Mix all ingredients until well combined. (3 to 5 minutes)

    Then add dry ingredients and mix until all ingredient are incorporated.

    Pour the batter into prepared baking sheet.

    Bake at 350 F for 17 minutes or until done.

    Use toothpick to check if the cake is done.

    Remove the cake from the oven and let it cool.

    MAKING WHITE FILLING FOR Best Kinder Chocolate Cake

    In a mixing bowl mix cream cheese, icing sugar and vanilla extract until smooth.

    Then add heavy cream and mix until incorporated.

    ASSEMBLE OF THE CAKE

    Cut the cake into the following size: 4 and 1/2 inches by 15 inches. (cut 2 of them)

    You will have extra or another layer of 7 by 15 inches. This will be used for another recipe.

    Place the first layer of the cake, cover with white filling and place the second cake on top of it.

    Transfer to the fridge for a few hours or overnight.

    Next day make Nutella ganache and cover the cake.

    Decorate as you wish.

    How to make Nutella ganache?

    Using a medium size cup or bowl add Nutella, chopped chocolate and butter. Set aside. (I like to use glass measuring cup)

    Add heavy cream and corn syrup into medium size sauce pan and heat until it begins to simmer.

    Remove from heat and pour over Nutella, chocolate and butter.

    Cover the cup with aluminum foil for 5 minutes.

    After 5 minutes whisk until smooth.

    Quick Note

    Cheese – for this recipe I used the Philadelphia cheese. You can use mascarpone cheese or any cream cheese you used for the recipe.

    Chocolate – I used semi sweet but you can use dark or unsweetened. It is your choice.

    Flour – use all purpose, unbleached flour.

    Eggs – use large, organic eggs (say hello to your local farmers market)

    Yogurt – I used Greek, organic yogurt. (2%)

    Heavy Cream – I used 35%
