Soft and fluffy or the perfect bread to make as soon as possible. Like NOW. Yes, ladies and gentlemen this is the best bread recipe you will ever make. And I really mean it.

It is a very popular in Serbia, Bosnia and Herzegovina, Croatia, Montenegro, Turkey and in Europe. This airy bread is the Balkan Flat bread. It exist under many names like lepinja bread, somun and it can be topped with sesame seeds, cumin, dry oregano and salt. This flatbread can be served with feta cheese, red peppers or if you like meat the choice is the obvious. The cevapi or the hamburger. Add to that fresh chopped onions and you have the winner. The winner for your perfect Friday night dinner or Sunday afternoon lunch.

BTW, if you don’t know what is the cevapi don’t worry…you will learn in this blog in next few weeks. Yes, the recipe is coming. But for now, let’s go back to our bread winner recipe.

-plastic bowl

-measuring cup

-small glass or cup (for the active yeast)

-baking sheet (12 by 16 or any size you used to bake your bread)

ACTION TIME

MAKING Easy FlatBread Recipe

Ingredients

1 3/4 cups flour

1/2 TBSP salt

2 1/2 teaspoons active yeast

1/2 tsp sugar

100 ml warm milk (about 6 and 1/2 TBSP)

6 TBSP plain yogurt

1/2 TBSP olive oil

INSTRUCTIONS FOR MAKING THE BEST FLATBREAD

Line your baking sheet with aluminum foil or parchment paper.

In a medium size bowl add flour, salt and stir it. Set aside.

Add the lukewarm water (100 to 115 F) to the small glass or cup.

Then add yeast and sugar into the water and stir briefly to combine.

Allow to rest for about 10 minutes or until frothy.

Meanwhile warm the milk. (it should not be too hot)

When your yeast is ready, add the yeast into the flour salt mixture.

Then add yogurt and start mixing it using the metal or wooden spoon.

Slowly start adding warm milk and keep mixing it.

At this point you can use your hands and mix until a soft dough forms. (for about 3 minutes)

Yes, the dough will be very soft. Don’t worry, it is not the mistake.

Sprinkle the olive oil over the dough, cover with plastic wrap and your kitchen towel.

Let it rise in a warm place for 90 minutes.

On a very well floured surface, divide the dough into 5 or 4 equal pieces. (or 2 if you want larger flat breads).

Your next step is to knead each dough and shape into the perfect ball.

BTW, the kneading is the quick process, just a minute.

Cover all your pieces with kitchen towel and allow to rest for 5 minutes.

BAKING EASY FLATBREAD RECIPE

PREHEAT OVEN TO 500 F. YOU WILL BE USING THE TOP RACK FOR THIS RECIPE.

After 5 minutes, flatten each dough gently with your finger tips into a circle.

Transfer into the prepared baking sheet.

Using the knife, press the lines across the dough.

You can create a diamond pattern on the top. (or any pattern you like)

Optional: Sprinkle each dough with just a few drops of water and top with sesame seeds.

Bake at 500 F for about 10 minutes using the top rack.

Then turn oven to broil for about 1 minute. (or until your desired golden color)

Remove from the oven. Sprinkle the tops with water.

Wrap into a kitchen towel in order to keep your flat bread soft.

Enjoy and share.

I love eating this bread while it is warm. (with feta cheese, sour cream and red peppers)

STORAGE: Keep it for a couple days at room temperature wrap into plastic wrap and then into the kitchen towel.

Quick Note

Flour – I used all purpose, unbleached flour. This recipe was tasted with Robin Hood flour, organic flour and NN all purpose flour.

Active yeast – for this recipe we use active and NOT instant yeast. The active yeast should be bubble after 10 minutes. If nothing is happening after 10 to 15 minutes, please check the best before date. Also, be sure that the water is not too hot.

Milk – I used organic, 3.25% milk.

Yogurt – I used Greek yogurt

The most important ingredient for this recipe is the flour. I made homemade focaccia with the following flours:

  • all purpose (no bleached flour)
  • organic all purpose flour

  • flour (all purpose and no bleached, organic all purpose)
  • instant yeast
  • salt
  • olive oil
  • water

EQUIPMENT NEEDED

-baking pan (your choices are: 9 by 9 inches, 9 by 13 or baking sheet)

-glass or plastic bowl (I like to use glass measuring cup, 8 cups capacity or 2 L)

ACTION TIME

MAKING Best Focaccia Recipe and Focaccia Toppings

Ingredients

3 cups flour

2 tsp instant yeast

1 1/2 cups water

2 tsp salt

3 TBSP olive oil

Focaccia toppings: sea salt, rosemary, Italian parsley, salt, oregano, garlic, onions, thyme, tomatoes, red peppers, mozzarella cheese and more…

INSTRUCTIONS FOR MAKING THE BEST FOCACCIA RECIPE

In your favorite bowl add flour, salt and instant yeast.

Then add the water (temperature about 110 F)

Mix with the metal spoon or rubber spatula until the ingredients are incorporated and water is absorbed. (it is about 1 to 2 minutes).

Rub the surface with olive oil. (just a little)

Cover with plastic wrap and tea towel.

Transfer to the fridge for 24 to 72 hours.

Line the pan of your choice with parchment paper or aluminum foil.

Coat with baking spray or grease with butter. (this is important step).

Pour 1 TBSP of olive oil in the center of pan.

Remove the dough from the fridge.

Use two forks, gather up edges of dough farthest from you and lift up and over into the center of bowl.

Rotate the bowl in quarter turns 2 more times or until you deflate dough and for a rough ball.

Transfer into prepared pan with olive oil.

Roll the dough in the oil or coat it in oil.

Let rise in a warm spot until doubled in size.

DO NOT COVER THE DOUGH. Yes, let rise, UNCOVERED.

Time for rise: about 3 to 4 hours.

How do you know the dough is ready? The secret is in your finger.

BAKING FOCACCIA AND FOCACCIA TOPPINGS

Poke with your finger. If it spring back slowly it is ready.

Preheat oven to 425 F.

Lightly oil your hands. Dimple focaccia with your fingers, all the way to the bottom of the pan.

Sprinkle with sea salt and focaccia toppings of your choice.

If using Italian parsley, rosemary be sure to pour olive oil over it.

Important: you can bake using 8 by 8 inch pan, 9 by 13 (if you want thin focaccia for sandwiches or 9 inc round pie and so on…). Just check the time. Bake until golden brown.

Bake for about 24 minutes at 425 F or until golden brown.

Let it cool for 15 minutes before serving. (if you can wait)

Enjoy with healthy Greek salad, homemade cheese or 5 Star Salad in a Jar – Office Lunch.

Quick Note

Flour – I tested this recipe with all purpose, unbleached flour. I tried Robin Hood, original all purpose flour. Also, the NO Name all purpose flour worked.

Organic Flour – This is the more expensive version if you want to make the best homemade focaccio recipe. I used organic flour from Saskatchewan, Canada. The name is ONE ORGANIC FARM. I LOVE, LOVE THIS FLOUR. It is amazing 100% grown, milled and packaged in Canada. If you have an opportunity, buy this product. It is worth it.

Instant yeast – buy your favorite brand.

Active yeast – If using the active dry yeast, add yeast, 1/4 tsp sugar and water and let it stand for about 10 to 15 minutes or until foamy. Then follow the recipe.

FOCACCIA TOPPINGS

If you are asking what goes well on focaccia the answer is: everything you like like…

  • sea salt
  • Italian parsley
  • rosemary
  • thyme
  • tomatoes
  • red peppers
  • garlic and more…

How do you not burn focaccia toppings?

This is super IMPORTANT: COAT ALL THE HERBS WITH A LAYER OF OLIVE OIL. (yes, you want to prevent the burning while you bake)

FREEZING FOCACCIA

You can freeze focaccia for up to one month. Slice it up, wrap very well and place in the freezer.

How can you keep focaccia Fresh?

Cut the focaccia bread into smaller pieces. Wrap into plastic wrap and then into a layer of aluminum foil. Store it in a plastic bag.

MAKING HOLES IN FOCACCIA

Oil your fingers with olive oil and use them to push holes all over the dough. Making holes in focaccia is important because it helps ensure an even bake.

How to make Moist Easy Walnut Banana Bread

Ingredients

1/2 cup olive oil

1 1/8 cups mashed banana (about 4 medium size bananas)

2 large eggs

1 tsp pure vanilla extract

1 1/2 cups flour, all purpose unbleached

1/2 cup white sugar

1 tsp baking soda

1/4 tsp salt

1/2 cup brown sugar

3/4 cup walnuts, chopped

1/2 cup regular chocolate chips

3/4 cup mini chocolate chips

Preheat oven to 350 F.

Flour – please use all purpose, unbleached flour.

Chocolate chips – I love the combo of mini chocolate chips and regular. If you don’t have mini chocolate chips use 1 1/4 cup regular chocolate chips

Bananas – use as ripe bananas. If you don’t have it, you can use your oven to make it happen. How? Place bananas on a baking sheet. Bake at 250 F for 15 minutes or until you achieve desired ripeness of the bananas.

OIL – I used organic, olive oil and this recipe was tested using it.

Vanilla Extract – if you can use pure vanilla extract. I used my homemade version. Check the recipe.

THIS IS HOW TO MAKE BANANA BREAD TODAY SHOW

2 cups flour (AP)

1 tsp baking soda

1/2 tsp cinnamon

1 tsp salt

1 1/4 cups ripe bananas (3 large bananas)

INSTRUCTIONS

Preheat oven to 350 F.

Line 9 by 5 loaf pan with aluminum foil or parchment paper. Set aside.

Your first step is to add all dry ingredients to the bowl: flour, baking soda, salt and cinnamon.

Then using your stand mixer with paddle attachment mix the following ingredients:

Butter and both sugars until light and fluffy. (about 5 minutes)

Then add eggs and mix until incorporated.

Next, add the sour cream and vanilla extract. Mix again.

BTW, you are almost done.

Your next step is to gradually add flour mixture and mix until combined.

Add mashed bananas and mix quickly.

Then pour the batter into prepared pan and bake at 350 for about 55 to 60 minutes.

About No Knead Bread

No knead bread was first published in the famous New York Times by food columnist Mark Bittman. The year was 2006.

His description of this amazing bread: “great crumb, lightness, incredible flavor and enviable, crackling crust.”

I don’t think so. Mark said it the best.

So, if you are interested in incredible flavor this bread recipe is yours to try.

Our first step is to get all ingredients.

Since this is an easy recipe, you will need only a four ingredients:

  • flour
  • salt
  • yeast (active dry yeast)
  • water

IMPORTANT: Be sure to check expiration date on your yeast.

4 cups AP flour

1/2 TBSP salt

1 tsp active yeast

2 1/3 cups warm water (110 F or 45 C)

Instructions

Add all 4 ingredients into a large bowl.

IMPORTANT: Please use a large bowl. This bread is not well in small spaces.

So, let me repeat the step 1: Add flour, salt, yeast and water into a large bowl.

Mix all ingredients by metal or wooden spoon.

Be sure there is no dry flour left on the bottom of the bowl.

If it needs a little more water, add by TBSP.

Cover with plastic wrap and kitchen towel and set at room temperature for about 24 hours. (no less than 10 hours and no more than 24 hours)

Find a larger size of baking pan or a cutting board. (whatever you have)

Dust it with a generous amount of flour. (I used 1 cup flour)

Turn dough out onto a flour rich cutting board.

It will be sticky. You will feel resistance as you touch the dough.

But don’t worry. Just be friendly and form the dough into a ball.

Remember: NO KNEAD!

Rest for 30 minutes. (no need to cover)

Meanwhile preheat oven to 450 F.

Oil and heat your baking dish.

After your dough rest for 30 minutes, create “X” on top of the bread and transfer into heated, oiled baking dish.

Cover and bake for 35 minutes.

After 35 minutes uncover and bake for additional 10 minutes or until the bread is golden brown.

Take it out of the oven and sprinkle the top of bread with 1/3 cup of cold water.

Important: My grandmother always did it. Never mind what kind of bread she baked, it was always

sprinkled with water and then covered with kitchen towel.
