1 cup organic butter
1 cup brown sugar
2 egg whites
2 1/2 cups honey graham crumbs
2 cups flour (AP-unbleached)
1 TBSP baking powder (no Al)
1/2 tsp salt
8 oz cream cheese
1/2 cup sugar
2 eggs yolk
1 TBSP honey
1/2 tsp vanilla extract
Decoration: Heavy cream
Preheat oven to 350 F.
Prepare baking sheet with a parchment paper or aluminum foil.
In a bowl number 1 combine flour, honey graham crumbs, baking powder and salt. Set aside.
Add organic butter and sugar into the mixing bowl.
Mix until combined for about 3 minutes and then add egg whites.
Keep mixing until all ingredients are combined.
Add the flour mixture and mix for a minute. Set aside.
Mix cream cheese, sugar,honey and eggs yolk until well combined.
Add vanilla extract and mix again.
Using a ice cream scoop (2 oz), scoop out the cookie dough and place on a baking sheet.
Flatten slightly and using your fingers make a small ball-shape dent on the top.
Spoon the cream cheese filling into the indents in the cookies.
Repeat with the rest of the dough.
Bake at 350 F for 12 minutes. Cool it.
Top with heavy cream and decorate with honey graham crumbs.

1/8 cup unsalted butter, softened
1/4 cup vegetable shortening (Crisco)
1/3 white sugar
1 TBSP brown sugar
1 egg yolk
1 tsp pure vanilla extract
1 1/4 cups flour (all purpose and unbleached)
1 1/4 cups walnuts (finely grounded)
Icing sugar for magic dusting
In a large mixing bowl, add shortening and butter and beat until combined.Add both sugars and continue to beat until creamy.Then add egg yolk, pure vanilla extract and mix until combined.
Your final step is to add ground walnuts and flour and mix in a low speed until all ingredientsare happy together and you can see joyful and consistent dough almost ready for fridge.
Divide in 3, shape each into a cute, small ball, wrap into plastic wrap and refrigerate for 3 hours. (overnight)
After the dough has rested…Preheat oven to 325F.Roll out the dough to 1/4 inch thick.Using a 1 inch cookie cutter, cut out the cookies and place them on your baking sheet.
Bake at 325 for about 11 minutes. (until they start to golden around the edges)Remove them from the oven and let them cool.
FillingOnce the cookies are cooled you can start filling them.Take one cookie at the time, spread 1/2 tsp apricot jam on it, top with another cookie.Repeat until all your cookies are used.Dust the top of the cookies with a white magic called icing sugar.Say thank you and enjoy the cookies…sorry not yet.

3 cups flour
1/2 tspvanilla extract
1tsp baking powder
In a medium size bowl mix 3 cups flour and 1 tsp baking powder.Sift it. Set aside.
Cream shortening and sugar in a mixing bowl.Add egg yolk and whole egg, mix for a minute.
Add 3 TBSP sour cream, 1/2 tsp vanilla and mix until all ingredients are incorporated.Add sifted flour mixture and mix until dough forms.
Dough should be soft.Divide dough in half.Dust your counter top with flour and roll out the dough to 1/4 inch thick.
Using a square 1 1/2 inch cookie cutter, cut out the cookies and place them into baking sheet.Bake at 350 F for 10 minutes or until they just start to turn golden.Remove the cookies from the oven and cool them.
Once the cookies are cooled, put two cookies together with raspberry jam.Sprinkle with icing sugar.
Chocolate Glaze1 cup chocolate chips1/2 cup heavy creamUsing a double-boiler method melt chocolate chips and heavy cream until smooth.Set aside to cool.Top each cookie with 1/4 tsp of chocolate glaze and decorate as you wish.
MERCI – COFFEE AND CREAM!This new chocolate is not very heavy, 100 grams. It contains 4 individual bars.
Unwrap first one and place on your plate.Add 1/2 tsp of chocolate glaze and cover with cookie.Add another 1/2 tsp of chocolate glaze and cover with cookie.Continue until you used all chocolate you have.
