They are the perfect Christmas cookies. Did I say Christmas? Yes, I did. But you can also make them every day when your soul is searching for cookies. They are the perfect gifts for your friends and family and easy solution when you need to bring desserts to the office parties.

So, what ingredients do you need to buy?

SHOPPING LIST

  • flour
  • hazelnuts
  • sugar
  • butter (unsalted)
  • egg
  • pure vanilla extract
  • hazelnut extract
  • icing sugar
  • chocolate (optional)

EQUIPMENT NEEDED

-food processor ( I used KitchenAid)

-baking sheet

-medium size bowl

MAKING Easy Hazelnut Cookies Recipe From Italy

Ingredients

1 1/2 cups hazelnuts, toasted

2 cups flour

1/2 cup sugar

1 cup butter, cold and unsalted

1/8 tsp salt

1 egg yolk

3 tsp or 1 TBSP pure vanilla extract

1/4 tsp hazelnut extract

icing sugar for dusting

Optional:

1/2 cup chocolate chips, melted

INSTRUCTIONS FOR MAKING ITALIAN HAZELNUTS COOKIES

Your first step is to toast hazelnuts. If you don’t know how check this link – Caramelized Lazy Hazelnuts-100 Percent Easy

Place the toasted hazelnuts into food processor and process until hazelnuts are coarsely chopped. (just for a minute)

Then add the flour, sugar, salt and process until the hazelnuts are finely ground.

Cut the cold butter into small pieces and add to the flour mixture.

Process everything until the mixture looks like course meal.

Then add egg yolk, pure vanilla extract, hazelnut extract and process until the mixture comes together.

Transfer the mixture from the food processor into the bowl.

Shape the dough into balls using a small cookie scoop and place on a baking sheet.

Wrap in plastic and transfer to freezer overnight.

NEXT DAY

Preheat oven to 325 F.

Line baking sheet with parchment paper or silicone mats.

Place 10 cookies on baking sheet and bake for 21 minutes or until done.

Remove from the oven and cool.

Dust with icing sugar and decorate with melted chocolate.

Flour – please use all purpose, unbleached flour.

IMPORTANT NOTE: Don’t pack your flour. Again, please measure your flour correctly. Fluff your flour with a spoon, sprinkle it into cup and use a knife to level it off.

Egg yolk – from the large size egg

Hazelnut extract – you can find online or check any Italian supermarket near you.

Butter – use the best quality of the butter. Be sure the butter is COLD for this recipe.

Hazelnuts – this is the most expensive ingredient for this recipe. Check the Costco or Superstore for the best price.
