Making Love Chocolate Bundt Cake

Ingredients

1 cup butter, unsalted

3/4 cup cocoa

1 cup brewed strong coffee

2 cups sugar

1 3/4 cup flour

1/2 cup walnuts, grounded

2 eggs, large size

1 tsp baking soda

1/2 tsp salt

1 tsp baking powder

1/2 cup sour cream

1 tsp pure vanilla extract

Nutella Ganache

1 cup Nutella

2 oz semi sweet chocolate, chopped

1/4 cup butter, room temperature

1 cup heavy cream

3 TBSP corn syrup

Instructions for making the best chocolate cake

First step is to make fresh coffee. (1 cup for the cake and 1 for you)

Preheat oven to 350 F.

Spray bundt pan with baking spray. Set aside.

Using a medium size saucepan add butter, coffee, cocoa.

Transfer to heat and stir until melted.

Remove from heat and let it cool.

Dry ingredients: Sift the flour and add to the bowl.

Then add sugar, baking soda, baking powder, salt and walnuts.

Mix all ingredients together and transfer into the mixing bowl.

Then add butter mixture and mix until all ingredients are incorporated.

Your next step is to add eggs.

Mix until combined and then add sour cream and vanilla extract.

Keep mixing until all ingredients are happy together.

Pour batter into prepared bundt pan and bake at 350 F for about 50 minutes.

Remove from the oven and let it cool for 15 minutes.

Then invert onto wire rack and let it cool.

Cover with Nutella ganache, the recipe is below.

Using a medium size cup or bowl add Nutella, chopped chocolate and butter. Set aside. (I like to use glass measuring cup)

Add heavy cream and corn syrup into medium size sauce pan and heat until it begins to simmer.

Remove from heat and pour over Nutella, chocolate and butter.

Cover the cup with aluminum foil for 5 minutes.

After 5 minutes whisk until smooth.

And you are done.

Decorate with white chocolate.

Eggs – please use large, organic eggs. This is the most important ingredient for the cake. If you see the most amazing yellow color of the cake base it is because of the eggs. (don’t use food coloring)

Flour – use all purpose, unbleached

Heavy Cream – use 33% or 35% . Please don’t use half and half. You need heavy cream with 33% or higher.

Coffee – use fresh, ground coffee. I used LavAzza, Italian coffee. You use what you have and what you like

Vanilla Extract – use pure vanilla extract. I am using my homemade for many years.
