Description of Easy Broccoli Eggs Breakfast with Broccoli

This recipe is everything you want the healthy breakfast to be.

Easy to make and fun to eat. To make this recipe you need only a few ingredients: broccoli, cheese, eggs, red peppers…How easy is that?

Important: This is my favorite dish to bring to the office. Yes, instead of buying or ordering this is my office breakfast/lunch option.

Also, this is an ideal Sunday brunch recipe, Friday dinner option or just an Easter Breakfast. Like I said you can use this recipe from breakfast to dinner and from Sunday to Friday. Any day any time.

SHOPPING LIST FOR EASY BREAKFAST with Broccoli

  • broccoli
  • eggs
  • Mozzarella cheese
  • milk
  • red peppers
  • Feta Cheese
  • black pepper, salt
  • oregano
  • garlic/onions

EQUIPMENT NEEDED

-9 by 13 baking dish (I used glass baking dish)

-plastic or glass bowl (to mix all ingredients)

Action Time

Making Easy Broccoli Eggs Breakfast

Ingredients

2 cups broccoli

5 eggs

3 TBSP milk

3/4 cup Mozzarella cheese, grated

1 red pepper, chopped

1/2 tsp salt

1 TBSP oregano

1/2 tsp black pepper

1/3 cup feta cheese

3 clover of garlic or 1 onion

Instruction for broccoli breakfast

Preheat oven to 375 F.

Spray the glass pan with baking spray. Set aside.

Prepare the broccoli by cutting into small broccoli florets.

Put the prepared broccoli to the bottom of the glass pan.

Sprinkle with cheese and chopped red peppers over the broccoli.

Your next step is to add eggs, milk, salt, black pepper and oregano into the medium size bowl.

Beat all ingredients until incorporated.

Pour the eggs mixture over broccoli/cheese/pepper mixture.

Use the fork or spoon to gently stir so that all ingredients are mixed well together.

Bake at 375 F for 20 minutes, remove from the oven and sprinkle with feta cheese.

Return to the oven and bake for additional 7 minutes.

OPTIONAL: Remove from the oven and sprinkle with fresh minced garlic or onions.

Serve immediately with yogurt, sour cream and green salad.

If you have leftovers store in the fridge.

Quick Note

Broccoli – I used fresh, organic broccoli.

Eggs – for this recipe I used large eggs from my local farmers market. (organic if you can)

Cheese – for this recipe I used Mozzarella and Feta cheese.

Milk – I used 3.25% organic milk. You can use what you have. (2%…)

Baking pan – this recipe can be made in 9 by 13 inches pan. (glass or metal)
