Ingredients

3/4 cup unsalted butter

6 oz semi-sweet chocolate (chopped)

100 gr Lindt Orange chocolate (chopped)

100 gr Lindt Hazelnut chocolate (chopped)

3 egg (organic and room temperature)

3 egg yolks

1/4 cup sugar

1 1/2 TBSP flour (AP)

orange oil

8 Hazelnut truffles (Lindor)

Instructions

Spray 8 ramekins with baking spray and dust with cocoa powder. Set aside.

Using a double boiler method melt 3/4 cup butter with 6 oz chocolate,

100 gr Lindt Hazelnut and Orange until smooth. Add orange oil(few drops). Set aside.

Using a large bowl, whisk 3 large eggs, 3 yolks and 1/4 cup sugar until foamy.

Whisk in melted chocolate and 1 1/2 TBSP flour.

Stir everything together until all ingredients are incorporated.

Spoon chocolate batter into prepared ramekins.

Place each truffles into the center of each cake. Cover the truffle with 1 TBSP of chocolate batter.

Bake at 425 F for 12 minutes.

Cool for 3 minutes.

Cover each ramekin with an inverted plate and turn over.

Decorate with icing sugar, whip cream or ice cream.

1 tsp baking powder

1/8 tsp salt

1 tsp cornstarch

Raspberry Jam

INSTRUCTIONS

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

Sift the flour, cornstarch, baking powder and salt.

Add into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Bake at 350 for 15 minutes.

Cool completely. (for about 2 hours)

Cut the cake with a knife into five equal pieces.

The size is 3×12 inches.

Important:

Cut through the underlying foil so you can each move independently. (don’t worry)

Use your first piece (3×12 inch) and spread with raspberry jam.

You can use as much as you want.

Roll the first cake. Don’t be afraid, just do it.

You have to be sure that your cake is aware who the boss is.

In case you feel just a little insecure regarding the rolling,

please use the aluminum foil as the cake support.

Begin to roll the cake into a roll and continue tucking cake

as you peeling away the aluminum foil.

Repeat this process until all 5 pieces are rolled.

Cover with plastic wrap or aluminum foil.

Filling

Melt the chocolate using a double boiler method.

Cool it.

In a mixing bowl mix 1 1/2 cups of heavy cream for about 3 minutes.

Add Nutella and chocolate and mix until incorporated. (1 minute)

Keep in the fridge until your cake is ready.

Now, if your cake is cool we can start my favorite part…

ASSEMBLY

Cut the cake with a knife into five equal pieces.

The size is 3×12 inches.

Cut through the underlying foil so you can each move independently. (don’t worry)

Use your first piece (3×12 inch) and spread with Nutella filling.

Roll the first cake.

Use the aluminum foil as the cake support, begin to roll the cake

into a roll and continue tucking cake as you peeling away the aluminum foil.

Place the rolled cake upright on a plate. (or what you have for your cake)

Then back to jelly pan where you have 4 strips of cake left.

Spread raspberry jam on second strip/cake and lift it from the foil.

Wrap the second cake around the roll on the serving plate.

Don’t be afraid, just do it.

Now use the third cake strip and cover with Nutella filling.

Lift from the aluminum foil and wrap around the roll on the serving plate.

Continue with the next 2 strips or until done.

Then…

Wrap the whole cake in plastic wrap and keep in the fridge for 3 hours.

DECORATE

Top the cake with Nutella filling and decorate with chocolate.

Keep in the fridge for about 5 hours before you start serving.

White Raspberry Dream Cake

Shopping List

  • flour, sugar,eggs, oil, milk
  • vanilla extract, baking powder
  • cheese, heavy cream, icing sugar, raspberries, gelatine

Important:

Please use ROOM TEMPERATURE EGGS AND MILK.

Line the bottom of a jelly roll pan (11×17) with aluminum foil and lightly spray with baking spray.

Set aside.

Wash one cup of raspberries.

Dry it.  Use 1/2 cup of raspberries and break into smaller pieces.

Preheat oven to 350 F.

Making WHITE RASPBERRY DREAM CAKE


Ingredients

5 egg yolks

4 egg whites

3 TBSP milk

2 TBSP olive oil

1 cup sugar

1/2 tsp vanilla extract

3/4 cup flour (AP)

2 TBSP cornstarch

1 tsp baking powder (no AL)

Filling

8 oz cheese

1 3/4 cups icing sugar

1 1/4 cups heavy cream

1 pouch Knox gelatine

1 cup fresh raspberries

Instructions

Using the whisk attachment mix 5 eggs yolks, 3 TBSP milk, 2 TBSP olive oil, 2/3 cup of sugar and 1/2 tsp vanilla extract for about 5 minutes.

Sift together 3/4 cup flour. Add 1 tsp baking powder,, 2 TBSP cornstarch and mix into the yolk mixture until well blended.

In a large bowl, mix 4 egg whites for about 1 minutes and add 1/3 cup sugar.

Please add sugar slowly and mix for another 2 minutes or until 3 times in volume.

Use a spatula to fold the egg whites into yellow/eggs mixture until fully incorporated.

Pour into prepared baking sheet and bake for 15 minutes at 350 F.

Cool completely.

While cake is cooling let’s make the filling.

Mix 8 oz cheese and 1 3/4 cups icing sugar. (for about 2 minutes)

In another bowl mix 1 1/4 cups heavy cream.

Add into cheese mixture and mix until incorporated. (for about 1 minute)

Add 1/2 cup raspberries (cut into small pieces) and mix all ingredients.

Next step is to add the prepared gelatine. (see instructions below)

Quickly mix all ingredients.

Prepare gelatine

In a small cup sprinkle 1 pouch Knox unflavoured gelatine over 1/4 cup (50 ml) cold water.

Let stand for 1 minute.

Add 1/4 cup (50 ml) boiling water and stir until granules are completely dissolved.

Now your cake is cool and your filling is done.

You are ready for assemble.

YOU ARE. Trust me.

White Raspberry Dream Cake Assembly

You will need loaf pan (11-5/8″ L x 5-1/8″ W x 2-3/4″ H)

Line your loaf pan with plastic wrap.

Now take your cool cake and cut into 2 pieces.

One is 11×10 size and the other is 11×7

Now take your bigger pieces (11×10) and place inside of loaf pan.

Pour your raspberry filing into it and close the top with your second cut part 11×7.

Cover everything with plastic wrap and leave in the freezer for at least 4 hours or overnight.

Next Day

Free cake from the loaf pan.

Decorate as you wish, share and enjoy.

Nutella Cheese Carrot Cake – Hello Happy

Hello my dear readers,

Another day and another cake.

The best cake. For YOU!

Nutella Cheese Carrot Cake

Ingredients

3 eggs

1½ cups sugar

1 cup oil

2 cups AP flour

1 TBS cinnamon

¼ tsp salt

1 tsp baking soda

1 tsp vanilla extract

3 cups carrots

1½ cup walnuts

Nutella Filling

1 1/2 cups Nutella

1/8 cup heavy cream

Cheese Filling

1 and 1/2 package (12 oz) cream cheese

1 1/4 cup heavy cream

1 and 3/4 cups icing sugar

1/2 TBSP vanilla extract

Instructions

Heat oven to 350 F.
Line baking sheet 16 x 11 with aluminum foil.
Mix sugar,oil and eggs.
Add flour, cinnamon, baking soda, salt and vanilla extract.
Stir in carrots and walnuts.
Pour into pan.

Bake until toothpick inserted in center comes out clean. (Mine was for about 25 min).
Cool it.

Make Nutella Filling

Mix heavy cream until firm.
Add Nutella and mix until incorporated for about 1 minute.
Keep in the fridge.

Make Cheese Filling

Mix cream cheese for about 3 minutes.
Add icing sugar, vanilla extract and mix until incorporated.
Set aside.
In another bowl mix heavy cream until firm.
Add heavy cream into cheese mixture and mix all ingredients together for about 1 minutes.
Keep in the fridge.
Now, you have everything:
-baked cake
-Nutella filling
-Cheese filling
Our next step is to cut the cake into 3 equal strips, size 4.5 x 11. ( you will have extra cake strip 2.5×11)

ASSEMBLING TIME

Begin assembling by placing 1 of the 3 cake pieces on parchment paper.
Spread the Nutella filling on top of the first layer.
Place the second layer on top and spread cheese frosting.
Place third layer and spread cheese frosting.
Decorate as you wish.

Keep the cake in the fridge for about 8 hours before … the best part.

Now, let’s start our baking show.

Shopping List

  • butter, sugar, eggs
  • walnuts, flour, baking powder
  • milk

ACTION TIME – MAKING “Blast from the past”

SPECTACULAR WALNUT CAKE

————————————————————————

Ingredients

1/2 + 1/8 cup butter (unsalted)

2/3 cup regular sugar

5 egg whites

3 TBSP flour (AP)

1 and 1/4 cups ground walnuts

1 tsp baking powder (aluminum free)

Filling

5 egg yolks

5 TBSP regular sugar

Walnut Topping

1/4 cup butter

1/4 cup sugar

1/4 cup milk

3 cup grated walnuts

Instructions

Prepare 9×13 baking pan with aluminum foil.

Preheat oven to 350 F.

Bowl 1:

Mix flour and baking powder. Set aside.

Bowl 2:

Using a large bowl beat 5 egg whites to stiff peaks. Set aside.

Bowl 3:

In another bowl mix butter and sugar until light and fluffy.

Add egg whites from bowl 2 and mix all ingredients in a very low speed.

Add flour mixture and walnuts.

Mix all ingredients until incorporated.

Pour batter into the prepared 9×13 baking pan.

Bake at 350 F for about 12 minutes.

While your cake is baking, mix 5 egg yolks and 5 TBSP sugar

until the mixture becomes thick and triples in volume. (about 5 minutes)

Set aside.

After 12 minutes remove cake from the oven.

Spread egg yolks mixture on top of the cake.

Return cake to oven and bake for additional 12 to 14 minutes.

Use toothpick to test if cake is done.

Remove from the oven.

Spread walnut topping. (recipe is below)

Sprinkle with additional walnuts.

Cool it.

Walnuts Topping Recipe

Using a small bowl add 1/4 cup butter, 1/4 cup sugar and 1/4 cup milk.

Heat on a medium temperature until boils.

Add 3 cups grounded walnuts and mix all ingredients together.

For this cake you need only a few ingredients:

eggs, sugar, flour, baking powder.

NOTICE: Buy organic eggs if you want your cake to be in gorgeous, yellow color.

(Visit your local Farmers Market and support your community)

Now, let’s make it happen.

Follow the recipe below.

Strawberry Buttercream Roulade

Ingredients

6 eggs, separated

6 TBSP sugar

6 TBSP flour (AP)

1/8 tsp baking powder

Directions:

Separate egg whites from yolks.

Whisk the egg whites in a bowl to form stiff peaks.

Gradually add the sugar. (S-L- O-W-L-Y!!!)

Then add egg yolks. Mix.

Gently fold in the flour and baking powder, so that you lose as little air as possible.

Pour the mixture evenly into the pan.

Bake from 10 to 15 min at 375 F.

How do you know if your cake is done?

Insert toothpick into your cake. If comes out clean – cake is baked.

Now, if you finish baking the cake prepare yourself for the next step! It is very, very important step.

Prepare two wet kitchen towel. (Kitchen towels must be wet with warm water).

So, you will have the following situation:

Bottom wet towel + Your CAKE + Top wet towel

Unroll the cake, then spread the Strawberry Buttercream filling, leaving a 1 inch border all around the edges.

Using both hands, roll the cake up.

Then wrap in cling wrap or wet towel and refrigerate. (Also, you can keep it in the freezer)

Strawberry Buttercream Frosting

Made from fresh strawberries – Yes, it it homemade!

Ingredients:

1 lbs strawberries (454 gr)

1 cup unsalted butter

4 1/2 cups icing sugar (you can use less, it is your choice)

1/4 tsp vanilla extract

1/8 tsp salt

1 TBSP whip cream (optional)

Instructions:

Core the strawberries to remove the white center.

Place cleaned strawberries in a food processor and pulse until smooth.

You will have about 1 and 1/4 cup of puree.

Then put the pureed through a sieve to remove the seed. You don’t need to do this step if you like seeds .(Weirdo! I am not judging you…)

Place strawberry puree in a small saucepan over a medium heat.

Bring mixture to a simmer, stirring often. Simmer for about 30 min or until the mixture is reduced to 1/3 of the original volume.

Place the reduced puree into the fridge to allow to cool.

Beat the butter. Be sure that there is no lumps.

Then add 2 1/2 cups of  icing sugar and mix until butter and sugar are combined.

Add your strawberry puree, vanilla and salt.

Beat together until combined.

Then add 2 cups of icing sugar and mix well until well combined.

Add 1 TBSP of whip cream if needed and wanted.

And you have it, your homemade Strawberry Buttercream Frosting made from fresh strawberries.Enjoy.

If you want to add chocolate ganache because they say “Life is short eat chocolate” who am I to say “NO”!

To make chocolate ganache you need only 2 ingredients: heavy cream, chocolate chips.

Chocolate Ganache

1 cup heavy cream

1 1/2 chocolate chips

Bring 1 cup of the heavy cream to a simmer.

Remove from heat and pour over 1 and 1/2 cup chocolate chips.

Let stand until chocolate has softened. (5 min)

After 5 min. stir with a whisk until smooth and shiny.

Cover any surfaces you want to…even your body! For this post I suggest you cover your cake and enjoy your chocolate moment.

  • 6 eggs, separated
  • 6 TBSP sugar
  • 6 TBSP flour (AP)
  • ⅛ tsp baking powder
  • Strawberry Buttercream Frosting

Instructions
  1. Separate egg whites from yolks.
  2. Whisk the egg whites in a bowl to form stiff peaks.
  3. Gradually add the sugar. (S-L- O-W-L-Y!!!)
  4. Then add egg yolks. Mix.
  5. Gently fold in the flour and baking powder, so that you lose as little air as possible.
  6. Pour the mixture evenly into the pan.
  7. Bake from 10 to 15 min at 375 F.
  8. How do you know if your cake is done?
  9. Insert toothpick into your cake. If comes out clean – cake is baked.
  10. Now, if you finish baking the cake prepare yourself for the next step! It is very, very important step.
  11. Prepare two wet kitchen towel. (Kitchen towels must be wet with warm water).
  12. So, you will have the following situation:
  13. Bottom wet towel + Your CAKE + Top wet towel

Today, I am going to make “Raspberry Chocolate Truffle Cake”. The perfect song for this cake is “Lady in Red” by Chris De Burgh. If you never heard this song please check the link below

WHAT DO YOU NEED TO MAKE THIS CAKE?

5 STAR COOKIES - INGREDIENTS
5 star cookies ingredients: chocolate,sugar,butter,raspberry jam,flour,vanilla

Now we need recipe.

Recipe type: Dessert
Ingredients
  • Chocolate Base
  • 3oz. unsweetened chocolate
  • ⅓ cup of butter
  • ¼ cup raspberry jam
  • 2 eggs
  • 1 cup sugar
  • ½ cup flour
  • Topping
  • 2 Tbsp. light cream
  • 2 Tbsp. raspberry jam
  • 1 Tbsp. butter
  • 4 oz. semi-sweet chocolate chopped
  • 1 cup raspberries
Instructions
  1. Chocolate Base
  2. Preheat oven to 300 F.
  3. Line an 9 inch square pan with foil-set aside.
  4. Combine chocolate, butter and jam in a small saucepan. Stir over low heat until smooth. Remove from heat.
  5. Beat eggs in a large bowl until foamy. Mix in sugar, vanilla and chocolate mixture. Stir in flour just until incorporated.
  6. Spread batter evenly in pan and bake for 30 minutes, or until set. Cool completely in pan on rack.
  7. Make the topping
  8. Combine cream, jam and butter in a saucepan.
  9. Heat to a simmer stirring constantly until melted. Remove from heat and add chocolate, stirring until smooth.
  10. Let stand until cool about 20 minutes then spread over chocolate base.
  11. Immediately top with raspberries and chill until cold. Cut into small squares.
