THE BEST PINK CHOCOLATE TORTE

Ingredients for cake

1 cup unsalted butter

1 cup brown sugar

1/2 cup white sugar

4 large eggs (room temperature)

1/2 cup yogurt

1 tsp rum

1 1/2 cups flour (AP)

1 tsp baking soda

1 tsp salt

1 1/2 cups boiling water

5 oz semisweet chocolate (chopped)

1/4 cup cocoa

Instructions

Bowl #1: Mix 1 1/2 cups flour, 1 tsp baking soda and salt.

Bowl #2 combine the following:

1 1/2 cup boiling water, 1/4 cocoa and 5 oz chopped chocolate.

Mix all ingredients until chocolate is melted.

Set aside to cool.

Beat 1 cup butter and both sugars until light. (about 5 min.)

Add 4 eggs (one at a time) and beat well after each addition.

Then add 1/2 cup yogurt, 1 tsp rum extract.

Mix it.

Alternate adding the flour mixture with chocolate mixture.

(3 addition flour, 2 addition chocolate or flour+chocolate+flour+chocolate+flour)

Be sure all ingredients are incorporated.

Pour the batter into the prepared baking sheet.

Bake from 20 to 25 minutes and 325 F.

Cool it.

When you are ready to assembly the torte, cut into 3 equal pieces. (width = 4 inch)

The size is 4 x 11 for each layer.

Chocolate Filling

In a bowl mix 8 oz of cheese (Philadelphia).

Add 2 cups Nutella, 1 cup milk chocolate spread (Laura Secord).

Mix all ingredients together until smooth. (about 1 minute)

In another bowl mix whip cream.

Add whipped cream into cheese/chocolate mixture and mix until incorporated. (don’t over mix)

Keep in the fridge.

Raspberry Filling

3/4 cup heavy cream

2 and 3/4 cups white chocolate chips

3/4 cup fresh raspberries

Add 3/4 cup of raspberries into a food processor.

Process until smooth, about 1 minute.

Strain through a fine-mesh sieve into a bowl.

Set aside.

Add 2 3/4 cups white chocolate chips into 4 cup measuring glass (or bowl).

Boil 3/4 cup heavy cream in a small saucepan.

Pour over white chocolate chips.

Leave it for 5 minutes. (don’t mix)

After 5 minutes, using a hand mixer mix white chocolate and cream.

The mixture should be smooth.

Cool it. (about 1 hour)

When you have your white chocolate mixture cooled add raspberry juice.

Mix using a spatula or wooden spoon.

Keep in the fridge until ready to be used.

Ingredients

-CAKE

5 oz semisweet chocolate, (chopped)

1/4 cup cocoa

1 1/2 cups boiling water

4 large eggs

1 cup butter

1 1/4 cups brown sugar

1/4 cup white sugar

1/2 cup Greek yogurt

1 tsp rum

1 1/2 cups flour (AP)

1 tsp baking soda

1/2 tsp salt

Chocolate Mousse

5 oz semisweet chocolate (chopped)

7 TBSP butter

2 large eggs, separated

1 TBSP sugar

3/4 cup heavy cream

1/4 tsp rum

Coconut – Almond Filling

6 large egg yolks

2/3 cup sugar

1/4 cup butter, unsalted

150 ml evaporated milk

1/2 cup coconut

1 cup almonds, ground

Glaze

5 oz semisweet chocolate, chopped

1 and 1/2 TBSP corn syrup

1 cup heavy cream

Instructions

-for the cake

Coat 13×18 baking sheet with baking spray. (or do line with aluminum foil and spray)

Preheat oven to 325 F.

In a bowl mix 1 1/2 cups flour, 1 tsp baking soda, 1/2 tsp salt.

Set aside.

Put 5 oz chopped chocolate and 1/4 cup cocoa in a saucepan.

Add 1 1/2 cups boiling water and mix until all ingredients are combined and melted.

Set aside to cool.

Meanwhile, beat 1 1/4 cups brown, 1/4 cup white sugar and 1 cup unsalted butter. (about 5 minutes)

Add 4 eggs, one at a time, beating well after each addition.

Then add 1/2 cup Greek yogurt and 1 tsp rum.

Mix everything together.

Reduce mixer speed to low.

You will add flour and chocolate mixture this way:

1/3 flour mix, add 1/2 chocolate mixture,mix, add 1/3 flour mix, add 1/2 chocolate mixture.

Mix. Finish with the flour mixture.

Pour the mixture into 13×18 prepared baking sheet.

Bake at 325 for about 20 to 25 minutes.

Cool it.

Chocolate Mousse

Melt the chocolate and butter using a double boiler method.

Set aside to cool.

Whip 2 egg whites using a whisk attachment for 1 minute.

Add 1 TBSP sugar and whip until to soft peaks. Set aside.

In another bowl mix 3/4 cup heavy cream.

Using a small bowl combine 2 egg yolks and rum.

Add egg yolks mixture to cooled melted chocolate.

Mix everything together by spatula.

Fold in the whipped egg whites.

Then fold in whipped cream.

Be kind when folding.

Coconut-Almond Filling

Combine 6 large egg yolks, 1/4 cup butter, 2/3 cup sugar and

150 ml evaporated milk in a larger saucepan.

Cook over medium heat, stirring constantly until the mixture is thick.

For me it was 17 minutes.

!!!So, be prepared to stir non-stop for about 15 to 20 minutes.

After the filling is cooked transfer to a stand mixer and whip until cooled and fluffy.

Used whisk attachment.

Add coconut and ground almonds.

Cover and keep in the fridge until ready to use. (up to 5 days)

Glaze

Heat 1 cup heavy cream until almost boiling.

Pour it over chopped chocolate and corn syrup mixture.

Let sit for 5 minutes.

Gently mix until smooth.

Pour the glaze over the bombes.

ALMOST DONE

Assemble the chocolate bombes

Scoop ¼ cup of the chocolate mousse into each mold.

Make it even and pretty. Freeze for ½ hour.

Using a round cookie cutter, cut 15 circles from your chocolate cake.

The remaining cake give to your kids or just eat it.

Now, take your mold out of freezer.

Add 2 TBSP of coconut/almond filling to each mold.

Make it even and pretty. (I didn’t)

Then gently press the cake circles on top of Coconut-Almond filling.

Cover with plastic wrap and freeze overnight.

NEXT DAY

Unmold the frozen bombes onto a wire rack.

Pour the chocolate glaze over bombes and refrigerate for a few hours or

until the glaze is set.

3/4 cup boiling water

1/4 cup sour cream

1/2 tsp vanilla extract

3/4 cup flour (AP)

1/2 tsp baking soda

1/4 tsp salt


Filling

1 package cream cheese (8 oz)

1/2 +1/8 cup heavy cream

1 1/8 cup icing sugar

1/4 tsp vanilla extract

Icing

5 oz chocolate (chopped)

1 TBSP oil

INSTRUCTIONS

Coat 9 inch round cake pan with baking spray.

Put 3 oz chopped chocolate and 1/8 cup cocoa in a heatproof bowl.

Add 3/4 cup boiling water and whisk until chocolate is melted.

Set aside.

Using a small bowl add 3/4 cup AP flour, 1/2 tsp baking soda and 1/4 tsp salt. Set aside.

Using a stand mixer with the paddle attachment mix butter and both sugars until light and fluffy.

Add 2 eggs, one at a time, beating well after each addition.

Slowly add sour cream and vanilla.

The butter will look curdled at this point. Don’t worry.

Keep going….

First add 1/3 flour mixture, mix, then add..

1/2 chocolate mixture…mix…add

1/3 flour mixture, mix…add

  • 1 package cream cheese (8 oz)
  • 1/2 +1/8 cup heavy cream
  • 1 1/8 cup icing sugar
  • 1/4 tsp vanilla extract
  • Icing
  • 5 oz chocolate (chopped)
  • 1 TBSP oil

Instructions

  1. Coat 9 inch round cake pan with baking spray.
  2. Put 3 oz chopped chocolate and 1/8 cup cocoa in a heatproof bowl.
  3. Add 3/4 cup boiling water and whisk until chocolate is melted.
  4. Set aside.
  5. Using a small bowl add 3/4 cup AP flour, 1/2 tsp baking soda and 1/4 tsp salt. Set aside.
  6. Using a stand mixer with the paddle attachment mix butter and both sugars until light and fluffy.
  7. Add 2 eggs, one at a time, beating well after each addition.
  8. Slowly add sour cream and vanilla.
  9. The butter will look curdled at this point. Don't worry.

1/2 tsp salt

5 oz semisweet chocolate (chopped)

7 TBSP butter

2 large eggs, separated

1/4 tsp vanilla

1 TBSP sugar

3/4 cup heavy cream

Glaze

5 oz semisweet chocolate, chopped

1 and 1/2 TBSP corn syrup

1 cup heavy cream

Instructions

Coat 13×18 baking sheet with baking spray. (or do line with aluminum foil and spray)

Preheat oven to 325 F.

In a bowl mix 1 1/2 cups flour, 1 tsp baking soda, 1/2 tsp salt.

Set aside.

Put 5 oz chopped chocolate and 1/4 cup cocoa in a saucepan.

5 oz baking chocolate

1/2 cup butter

2 eggs

2 egg yolks

3 TBSP sugar

2 TBSP cocoa powder

Instructions

Spray 5 ramekins with baking spray and dust with cocoa powder.

Make chocolate ganache. (the recipe is below)

Melt the butter and chocolate in a heatproof bowl over a saucepan with simmering water.

Remove from heat.

In a bowl #1 whip 2 eggs, 2 egg yolks and 3 TBSP sugar using whip attachment on high speed.

Mix for about 4 minutes or until eggs mixture doubled in size.

Fold the melted chocolate.

Sift 2 TBSP cocoa and fold in. (be sure the cocoa is incorporated)

Divide the batter between the 5 ramekins and chill for 15 minutes or longer.

Chocolate Ganache for chocolate lava cake

1/2 cup whipping cream

4 oz baking chocolate

Chop 4 oz baking chocolate.

Heat the cream until almost boil.

Pour over chopped chocolate and let it sit for 3 minutes.

After 3 minutes stir with a spatula until the chocolate has fully melted.

Chill until firm.

Spoon the chilled ganache into 5 truffles.

Place each truffles into the center of each cake, press slightly but not to the bottom.

Hazelnut Chocolate Rum Cake - Masterful Mix of Texture

Cook Time: 12 minutes
Total Time: 22 minutes

Ingredients

  • 100 gr Lindt Hazelnut Chocolate
  • 1/4 cup unsalted butter
  • 1 large egg + 1 egg yolk
  • 1/4 cup icing sugar
  • 1/8 cup all purpose flour
  • 1/4 tsp salt
  • 1/2 TBSP rum
  • Optional: 1/4 cup chopped hazelnuts

Instructions

  1. Preheat oven to 425 F.
  2. Place the chopped chocolate and 1/4 cup unsalted butter in a bowl set over a pan of gently simmering water,
  3. ensuring the bowl doesn’t touch the water.
  4. Stir it gently until the last lumps have disappeared.
  5. Add 1/2 TBSP rum and stir. Set aside.
  6. Mix 1/8 cup AP flour, 1/4 cup icing sugar and 1/4 tsp salt. Set aside.
  7. Whisk 1 large egg and 1 egg yolk in another bowl.
  8. Now add flour and egg mixture into melted chocolate and butter.
  9. Slowly stir everything together.
  10. Add 1/4 cup chopped hazelnut and mix all ingredients together. (THIS STEP IS OPTIONAL)
  11. Spoon chocolate batter into prepared ramekins.
  12. Bake at 425 F for 12 minutes.
  13. Allow to cool for 1 minute.
  14. Cover each ramekin with an inverted plate and turn over.

Chocolate Lava Cake – I accept the baking challenge

As I took the escalator in my building to the fictional podium I made my own baking announcement.

“Yes, ladies and gentlemen I am accepting the monthly baking challenge by Sally’s baking addiction blog.

And the challenge is the  – CHOCOLATE LAVA CAKE!”

For this cake you will need just a little of your time, a few ingredients and love for baking. Actually a lots of LOVE!

LOVE = BAKING!

So, let’s start NOW!

1.Coarsely chop 3 oz of chocolate. Place 1/4 of unsalted butter and chopped chocolate into a medium heat-proof bowl.

2.Place bowl over a saucepan of simmering water. Stir butter and chocolate occasionally as it softens. Set aside.

3.Mix 1/8 cup AP flour, 1/4 cup icing sugar and 1/8 tsp salt.

4.Whisk 1 large egg and 1 egg yolk in another bowl.

5. now mix flour and egg mixture into chocolate mixture.  Used a rubber spatula or wooden spoon to mix it. (be sure that there is no lumps).

The mixture will be about 1 cup.

Next Step:

Spray 2 ramekin with baking spray and dust with cocoa powder. Spoon chocolate batter into prepared ramekin.

Place ramekins into baking sheet and bake for 14 min.

Cool for 1 min., cover each with inverted plate and turn over.

Add topping.  Whip Cream, shaved chocolate ….

Add some icing sugar…Serve immediately…NOW!

Happy Chinese New Year, Lady in Red or Raspberry Truffle Cake

Ingredients

  • Chocolate Base
  • 3oz. unsweetened chocolate
  • 1/3 cup of butter
  • 1/4 cup raspberry jam
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup flour
  • Topping
  • 2 Tbsp. light cream
  • 2 Tbsp. raspberry jam
  • 1 Tbsp. butter
  • 4 oz. semi-sweet chocolate chopped
  • 1 cup raspberries

Instructions

  1. Chocolate Base
  2. Preheat oven to 300 F.
  3. Line an 9 inch square pan with foil-set aside.
  4. Combine chocolate, butter and jam in a small saucepan. Stir over low heat until smooth. Remove from heat.
  5. Beat eggs in a large bowl until foamy. Mix in sugar, vanilla and chocolate mixture. Stir in flour just until incorporated.
  6. Spread batter evenly in pan and bake for 30 minutes, or until set. Cool completely in pan on rack.
  7. Make the topping
  8. Combine cream, jam and butter in a saucepan.
  9. Heat to a simmer stirring constantly until melted. Remove from heat and add chocolate, stirring until smooth.
  10. Let stand until cool about 20 minutes then spread over chocolate base.
  11. Immediately top with raspberries and chill until cold. Cut into small squares.
