5 STAR HOT CHOCOLATE

Ingredients

1 cup milk (2%)

1/3 cup heavy cream

50 gr Lindt Orange Intense chocolate (or 1/2 chocolate)

3 oz semi-sweet chocolate

1 TBSP Nutella

Instructions

Chop the semi-sweet chocolate and Lindt chocolate.

Set aside.

Combine milk and heavy cream in a small saucepan.

Heat over medium heat until almost boiled.

Turn off the heat, add chopped chocolate and Nutella.

Whisk until combined and silky smooth.

Pour into your favorite cup, top with whipped cream and decorate as you wish.

I used chocolate and caramel sauce.

Nutella Valentines Cookies

Ingredients

1/3 cup butter

1/3 cup sugar

1 egg yolk

1 large egg

1/2 cup + 2 TBSP flour

2/3 cup cornstarch

1/2 tsp baking powder

1/2 tsp vanilla extract

Nutella Filling

1 1/2 cups Nutella

4 oz Philadelphia Cheese

1/2 cup whip cream

Instructions

In a bowl #1 mix flour, cornstarch and baking powder. Set aside.

Mix butter and sugar.

Add egg yolk and 1 large egg and vanilla extract.

Mix all ingredients well and then add the flour mixture.

Keep in the fridge for 2 hours.

Preheat oven to 350 F.

Roll out dough on a lightly floured surface to 3 mm (1/8 inches) thick, then using a cookie cutter, cut in shapes.

Bake at 350 F for 6 1/2 minutes. (about 7 minutes)

Remove from oven and cool.

Nutella Filling

 

In a bowl mix 4 oz of cheese (Philadelphia).

Add 1 and 1/2 cups Nutella and mix again.

In another bowl mix whip cream.

Add whipped cream into cheese/Nutella mixture and mix until incorporated. (don’t over mix)

Keep in the fridge until ready to be used.

Spread bottom of half the cookies with Nutella filling.

Top with remaining cookies.

Shopping List

-eggs,brown sugar, sugar,oil

-cheese,icing sugar,whip cream,vanilla extract

Ingredients

3 eggs

1 cup brown sugar

1/3 sugar

3/4 oil

1/2 TBSP vanilla extract

2 cups flour (AP)

2 tsp baking powder

1/2 TBSP cinnamon

1/2 tsp baking soda

1/4 ground cloves

1/4 salt

2 cups finely grated carrots

1 cup walnuts

Cream Cheese Frosting

8 oz cheese

1 3/4 cups heavy cream

1 1/3 cup icing sugar

1 tsp vanilla extract

Instructions

Preheat oven to 350 F.

Line 9×13 with aluminum foil.

Whisk 3 eggs, 1 cup brow sugar, 1/3 cup sugar and 3/4 cup oil.

Add 1/2 TBSP vanilla and mix it.

In a separate bowl, sift 2 cup AP flour, 2 tsp baking powder, 1/2 TBSP cinnamon, 1/4 salt, 1/4 cloves, 1/2 tsp baking soda.

Add flour mixture to the eggs/oil/sugar mixture.

Mix everything together.

Add 2 cups grated carrot and 1 cup walnut.

In a bowl  #2 whip 1 3/4 cups heavy cream until thick and fluffy.

Fold whipped cream into cheese mixture.

Hello my dear readers,

This post is about a very special love from my past. And the name is…

HAVANA TORTE!

If you never heard about this torte, please keep reading.

It is a very special and unique torte and you will love it.

So,let’s not waste our time, let’s start our baking show.

3-2-1 Havana Torte starts right now.

INGREDIENTS

3 eggs

1/2 cup sugar

1/2 cup flour

Filling:

4 cups milk (1L)

1 1/2 cups sugar

4 pouches gelatine (small bags – 7gr each or 28 gr for 4)

2 cups whip cream

Candied Hazelnuts

1 1/2 cup blanched hazelnuts (toasted)

1 1/8 cup sugar

1/4 cup water

DIRECTIONS

Preheat oven to 350 F.

Line 9 inch cake pan with parchment paper.

Using a bowl of a stand mixer beat 3 eggs for a minute. Add 1/2 cup sugar and beat for about 8 minutes on high speed. (use whisk attachment)

Sift 1/2 cup flour and add to eggs mixture.

Important: Do not use mixer at this point. Use a spatula to mix flour into eggs mixture.

Be sure that no streaks of flour remain.

Bake at 350 F for about 17 to 20 minutes.

Cool it.

Make filling

Boil 4 cups of milk and 1 1/2 cups sugar. Set aside for 2 minutes or until you make gelatine.

4 pouches of gelatine and 1/2 cup boiling water mix until gelatine completely dissolved.

Add gelatine to milk /sugar mixture and keep mixing together on medium heat for about 5 minutes.

The mixture will set. Cool it.

IMPORTANT: You don’t want milk to boil, so be careful!

Whip  2 cups of whip cream.

Add whipped cream to cool gelating mixture.

Mix everything together.

Candied Hazelnuts

Heat sugar and water over high heat, swirling, until sugar dissolves.

Bring to a simmer and cook until medium amber.

Add hazelnuts and stir.

Pour mixture onto a baking sheet with parchment paper.

Be sure to separate hazelnuts.

Let cool.

Break apart and put in bowl of a food processor.

Pulse for a few seconds until you get a fine ground.

Assembly

Yellow Cake + Half Filling + 3/4 cup groundHazelnut Mixture+Second part of filling+Hazelnut Mixture

Optional:You can top with whipping cream.

Refrigerate over night.

Since today is the day of the celebration in my house let’s make something special.

Yes, ladies and gentlemen let’s make ….

Cinnamon Cheese Roulade

To make the Cinnamon Cheese Roulade you will need to make two things:

-roll cake

-cheese filling

Like always before we start we need to be sure that we have all ingredients that this cake is asking for!

Shopping List

-CAKE – eggs,sugar,flour,baking powder,cinnamon

-Filling – cheese,whip cream, sugar,vanilla extract

Now, let’s start our baking show!

BAKING SHOW STARTS RIGHT NOW!

3-2-1 READY?

Before you start preheat oven to 350 F. (please)

Line the bottom of an 18×13 baking sheet with parchment paper or Al foil.

Equipment: KitchenAid Mixer, whisk attachment

MAKING CAKE

Ingredients

5 eggs (organic is the best)

3/4 cup sugar

3/4 cup flour (AP – all purpose)

2 tsp cinnamon

1/2 tsp baking powder

Instructions:

Using the KitchenAid stand mixer fitted with whisk attachment beat 5 eggs on high speed for 1 minute.

After eggs get foamy add 3/4 cup sugar very slowly. (use tablespoon to add sugar, it has to be done gradually).

Beat for about 9 minutes on high speed or until tripled in volume.

In another bowl mix 3/4 cup flour, 2tsp cinnamon and 1/2 tsp baking powder.

Sift flour mixture into egg batter 1/3 at a time, folding to incorporate between each addition.

Be sure that the flour mixture is incorporate into eggs/sugar batter.

Then transfer mixture into lined baking sheet and bake for 15 minutes at 350 F.

(Use fork or toothpick to check if cake is done).

While cake is baking prepare 2 large linen or cotton towels.

Wet two towels with cold water and wring it out.

When cake is baked run a thin edged knife around edges of your cake to loosen from the pan.

Invert cake face down onto a wet towel, remove parchment paper, cover with second wet towel.

Let to cool for about 35 to 45 minutes.

Meanwhile, make the filling.

Filling:

6 oz cheese, room temperature

1 1/4 cup icing sugar

1 1/2 cup heavy cream

1 tsp vanilla extract

In a large bowl mix cheese and sugar.

Add 1 tsp vanilla.

In another bowl whip 1 1/2 cup whip cream.

Fold the whipped cream into cheese/sugar mixture.

Keep it in the fridge until ready for use.

Now, let’s go back to our cake.

Remove the top towel and try to roll the cake.

(If not, wet the top towel again with cold water and cool it for another 10 minutes.)

If you are successful the cake is ready for your cheese filling.

Place the cheese filling by large spoonfuls all over it.

Spread the cheese filling evenly.

Using the bottom towel roll the cake into a log and place into a long serving platter.

Refrigerate the cake until set.

  17. -1/4 cup icing sugar
  18. -1/2 cup heavy cream
  19. -1tsp vanilla extract
  20. In a large bowl mix cheese and sugar.
  21. Add 1 tsp vanilla.
  22. In another bowl whip 1 1/2 cup whip cream.
  23. Fold the whipped cream into cheese/sugar mixture.
  24. Keep it in the fridge until ready for use.
  25. Now, let's go back to our cake.
  26. Remove the top towel and try to roll the cake.
  27. (If not, wet the top towel again with cold water and cool it for another 10 minutes.)
  28. If you are successful the cake is ready for your cheese filling.
  29. Place the cheese filling by large spoonfuls all over it.
  30. Spread the cheese filling evenly.
  31. Using the bottom towel roll the cake into a log and place into a long serving platter.
  32. Refrigerate the cake until set.

This torte doesn’t need an introduction.The formula is:

Chocolate + Hazelnuts + Nutella = Fererro Rocher Torte!

Now, let’s start our baking show.

Shopping List

-eggs (organic), sugar, hazelnuts, cocoa, Nutella, Mascarpone cheese, whip cream, flour, baking powder, wafers

BAKING TIME – VISUAL INSTRUCTOR

Ingredients

5 large eggs

6 TBSP sugar

2 cups ground Hazelnuts

2 TBSP flour

2 TBSP cocoa powder

2 tsp baking powder (no aluminum)

FILLING

1 cup mascarpone cheese

2 cups Nutella

1 cup whip cream

1 1/2 cup crushed Wafers

1/2 cup Hazelnuts

INSTRUCTIONS

Line 8 inch round pan with foil.

Whisk 5 eggs and 6 TBSP sugar on high speed for about 7 minutes.

Mix until tripled in volume!

In another bowl (bowl #2) sift 2 TBSP flour, 2 TBSP cocoa and 2 tsp baking powder.

Then add 2 cups ground hazelnuts and mix all dry ingredients together.

Using spatula fold dry ingredients into the eggs, in 3 additions. (slowly)

IMPORTANT: Be very gently when mixing with a spatula.

I will repeat, be very gently because you don’t want to upset the dough.

You want the dough to have the fluffiness. Even if you are a jerk you will have to control your anger and be gentle.

Pour batter into prepared pan and bake at 350 F for about 30 minutes.

Use a toothpick to check if the cake is done.

Just stick a toothpick into the center of cake. If it comes out clean, your cake is done!

Once baked, leave in the pan for 10 minutes, then transfer to a cooling rack.

Once the cake is cool, slice it into two layers.

Making Filling

Mix 1 cup Mascarpone and 2 cups Nutella.

In another bowl mix 1 cup of whip cream.

Now add whipped cream to Nutella Mascarpone mixture.

Mix all ingredients together for about 1 minute until colour is dark brown.

Using your food processor ground 1 cup wafers and 1/2 cup hazelnuts together.

Now, you have everything: Cake, Filling and ground hazelnut/wafers mixture.

The Final Steps – ASSEMBLY LINE

Dream Chocolate Torte

Ingredients

-Spray them with baking spray and dust with cocoa powder. (be generous)

100 gr Lindt Hazelnut Chocolate

1/4 cup unsalted butter

1 large egg + 1 egg yolk

1/4 cup icing sugar

1/8 cup all purpose flour

1/4 tsp salt

1/2 TBSP rum

Optional: 1/4 cup chopped hazelnuts

Place the chopped chocolate and 1/4 cup unsalted butter in a bowl set over a pan of gently simmering water, ensuring the bowl doesn’t touch the water.

Kitchen towels must be bigger than your baking pan.

So, you will have the following situation:

Bottom wet towel + Your CAKE + Top wet towel

It is Friday, my favorite day of the week. Day of freedom and day of baking.

So, what else do you need out there you lovely human creatures called people.

How about something pink…like 5 star pinky love cake. God knows we need more fun in our life.

So, lets make 5 star cake in pinky color that I called – 5 Star Pinky Love Cake.

You will need the following ingredients:

3 cups AP flour

1 tsp salt

1 TBSP baking powder (no Al)

2 cups sugar

4 eggs

3/4 cup oil

1 1/4 cup milk (2%)

1 Tbsp vanilla extract

Now let’s make it happen. Follow instruction using the picture below or ….

Directions:

Preheat oven to 350 F. Butter aluminum sheet pan (12inch by 17 inch) and line with parchment paper.

Mix 4 eggs, 2 cups sugar and 1 TBSP vanilla for about 7 min. until thick and double in volume.

Add oil. Keep mixing.

At very low speed, add mix of flour (3 cups flour, 1tsp salt and 1TBSP baking powder) alternately with the milk until the batter is smooth.

Bake for about 20 min or until a toothpick inserted comes out clean.

Set aside to cool.

Filling:

1 cup Mascarpone Cheese

2 cups Nutella

3/4 cup Heavy Cream

Mix mascarpone and Nutella.

In a separate bowl mix heavy cream.

Add mixed heavy cream to mascarpone and nutella. Mix all ingredients together.(just a few seconds).

Assembly Line: L(just kidding)

When the cake is cool cut them into 3 of 5×12 inch.

After the strips are cut, spread the Nutella filling on the cake layer, put another strip on, spread the filling …until you have a stack of 3.

Spread the Nutella filling on the top of cake layer 3.

Decorate with pieces of chocolate, icing sugar and lots of love.

  8. Spread yellow mixture into 2/3 part of the baking sheet and then add pink mixture.
  9. Bake for about 20 min or until a toothpick inserted comes out clean.
  10. Set aside to cool.
  11. Filling:
  12. Mix 1 cup of mascarpone and 2 cups Nutella.
  13. In a separate bowl mix 3/4 cup heavy cream.
  14. Add mixed heavy cream to mascarpone and nutella. Mix all ingredients together.(just a few seconds).
  15. Assembly:
  16. When the cake is cool cut them into 3 of 5x12 inch.
  17. After the strips are cut, spread the Nutella filling on the cake layer, put another strip on, spread the filling ...until you have a stack of 3.
  18. Spread the Nutella filling on the top of cake layer 3.
  19. Decorate with pieces of chocolate, icing sugar and lots of love.

Farmers Market and Strawberry Sunshine Drink

It is Monday morning (my day off), the sun is shining outside and I am ready for the Strawberry Sunshine Drink.

Ingredients:

1 cup fresh strawberries (they came from the Local Farmers Market and they are full of sunshine)

1 banana (organic)

1/2 cup water

Optional for decoration: blueberries, whip cream

Just for a moment stop your life and enjoy strawberries full of sunshine…don’t you love your Local Farmers Market…

Find your blender….(it does not need to be expensive one)

Put all ingredients into blender and blend.

Fill your glass with Strawberry Sunshine Drink and enjoy…
