  • yogurt, vanilla extract
  • white chocolate, whip cream
  • Nutella, Milk chocolate spread (Laura Secord)
  • raspberries, cheese

THE BEST PINK CHOCOLATE TORTE

Ingredients for cake

1 cup unsalted butter

1 cup brown sugar

1/2 cup white sugar

4 large eggs (room temperature)

1/2 cup yogurt

1 tsp rum

1 1/2 cups flour (AP)

1 tsp baking soda

1 tsp salt

1 1/2 cups boiling water

5 oz semisweet chocolate (chopped)

1/4 cup cocoa

Instructions

Bowl #1: Mix 1 1/2 cups flour, 1 tsp baking soda and salt.

Bowl #2 combine the following:

1 1/2 cup boiling water, 1/4 cocoa and 5 oz chopped chocolate.

Mix all ingredients until chocolate is melted.

Set aside to cool.

Beat 1 cup butter and both sugars until light. (about 5 min.)

Add 4 eggs (one at a time) and beat well after each addition.

Then add 1/2 cup yogurt, 1 tsp rum extract.

Mix it.

Alternate adding the flour mixture with chocolate mixture.

(3 addition flour, 2 addition chocolate or flour+chocolate+flour+chocolate+flour)

Be sure all ingredients are incorporated.

Pour the batter into the prepared baking sheet.

Bake from 20 to 25 minutes and 325 F.

Cool it.

When you are ready to assembly the torte, cut into 3 equal pieces. (width = 4 inch)

The size is 4 x 11 for each layer.

Chocolate Filling

In a bowl mix 8 oz of cheese (Philadelphia).

Add 2 cups Nutella, 1 cup milk chocolate spread (Laura Secord).

Mix all ingredients together until smooth. (about 1 minute)

In another bowl mix whip cream.

Add whipped cream into cheese/chocolate mixture and mix until incorporated. (don’t over mix)

Keep in the fridge.

Raspberry Filling

3/4 cup heavy cream

2 and 3/4 cups white chocolate chips

3/4 cup fresh raspberries

Add 3/4 cup of raspberries into a food processor.

Process until smooth, about 1 minute.

Strain through a fine-mesh sieve into a bowl.

Set aside.

Add 2 3/4 cups white chocolate chips into 4 cup measuring glass (or bowl).

Boil 3/4 cup heavy cream in a small saucepan.

Pour over white chocolate chips.

Leave it for 5 minutes. (don’t mix)

After 5 minutes, using a hand mixer mix white chocolate and cream.

The mixture should be smooth.

Cool it. (about 1 hour)

When you have your white chocolate mixture cooled add raspberry juice.

Mix using a spatula or wooden spoon.

Keep in the fridge until ready to be used.

Decorate and chill for five hours before serving.

These simple meringue cookies will melt in your mouth.

To make them you will use whipped egg whites and sugar.

Super easy and fast recipe.

So, let’s start our baking show.

Chocolate Meringue Cookies – Action Time

Shopping List

  • egg whites, cream of tartar, icing sugar
  • heavy cream, chocolate

Ingredients

3 egg whites (ROOM TEMPERATURE!)

3/4 cup icing sugar

1/2 tsp cream of tartar

Instructions

Preheat oven to 225 F.

Line baking sheet with parchment paper.

Be sure that mixing bowl is clean.

Place 3 egg whites into a mixing bowl and beat for about 1 min. (until frothy)

Add 1/2 tsp cream of tartar.

Beat until soft peaks form.

At this point start adding 3/4 cup icing sugar.

Please add very slowly.

This is important! Please add sugar very, very s-l-o-w.

Mix until sugar dissolved and stiff peaks form.

Pipe the rose on the parchment paper. ( I used a Wilton 1M open star or you can use 2D)

The size of rose is 2 inches.

Bake at 225 F for about 40 minutes.

Turn the oven off and don’t open the door.

Leave the meringues in the oven to finish drying for 1 hour.

After one hour, let cookies completely cool.

Chocolate Filling

300 gr Lindt chocolate with hazelnut (chopped into a small pieces)

3/4 cup heavy cream

Using a small sauce pan bring heavy cream to a simmer.

Pour over chopped chocolate.

Let stand for 5 minutes.

Stir until smooth.

Let cool in the fridge. (2 to 3 hours)

Assembly Line (think manufacturing)

Take the meringue cookie and pipe chocolate filling.

Place the second cookie on top.

Repeat until all cookies are done.

The Best Chocolate Walnut Torte – It is all about filling..

Yes, for this post it is all about fillings. However, out there in our real life it is all about feelings.

It is January 20, 2017. and in the USA it is the most important day – Inauguration Day!

Congratulations USA! Donald Trump is officially the 45th U.S. president!

For this special day full of feelings let me make the best chocolate walnut torte with so many fillings that will let you forget

reality and enjoy my chocolate drama. After all isn’t a democracy all about “the chocolates”? If you disagree with me I will respectfully call you “deplorable”.

Just kidding…or not…I am not sure how I feel about people who don’t like chocolate.

Now, we have work to do. Let’s make it happen.

So fare we made two 8-inch round cakes.

Now, let’s connect them together by making two different fillings.

FIRST MAIN FILLING:

2 + 1/2 CUP MILK

10 EGG YOLKS

7 TBSP SUGAR

6 TBSP FLOUR (AP)

2/3 CUP BUTTER

3/4 CUP ICING SUGAR

DIRECTIONS:

Place milk in a large saucepan over medium heat. (until almost boiled)

Whisk egg yolks, sugar and flour until well combined.

Pour hot milk mixture over egg yolk mixture, whisking constantly.

Return mixture to saucepan over low heat.

Cook, stirring constantly, for 15 to 20 minutes or until custard thickens and coats the back of a metal spoon.

Cool the mixture and then add butter and sugar mixture.(see note)

Note: In a separate bowl mix 2/3 cup butter and 3/4 icing sugar.

Now divide the fillings into 2 parts.

First filling: Yellow filling + 3/4 cup melted chocolate

Keep mixing the chocolate until you get the following …SEE THE PICTURE BELOW. So, this was your chocolate filling.

Now, let’s make the walnuts yellow filling.

Second filling: Yellow filling + 1 cup walnuts

The last part is just whip 1 cup whip cream.

Now, let’s build the torte.

First walnut cake + 1 cup whipped cream + Yellow Walnut Cream + Chocolate Cream + 2nd walnut cake + yellow walnut cream + chocolate cream

Add yellow walnut filling

and keep the best chocolate walnut torte in the fridge for at least 8 hours or longer. ( I usually just leave it overnight.)
