ACTION TIME-Making Macarons

Ingredients

75 gr almonds (about 1/2 cup)

117 gr icing sugar (1 cup + 1/8 cup)

2 large egg whites, organic and room temperature

53 gr regular sugar (1/4 cup)

Instructions

Place almond in a food processor and process for about 1 minute.

Add icing sugar and process for about 2 minutes.

Then sift the mixture to remove any lumps.

If you have any large pieces, grind them using the electric coffee grinder.

Sift twice the almond mixture.

Mix 2 egg whites and regular sugar by hand to combine.

Using a KitchenAid mixer mix egg whites and sugar for 2 minutes using speed 4.

After 2 minutes, increase speed to 6 and mix 2 minutes.

Again, after 2 minutes, increase speed to 8 and mix for 2 minutes.

Add pink color and mix 30 seconds at high speed.

Next step is very, very important.

Add 1/2 almond flour mixture and mix using a spatula.

Folding: Cut through the meringue and then fold up and over.

Be sure to scrape the bottom and sides of the bowl.

Add second half of the almond flour mixture and fold using the method above.

Now, the most important question is:

HOW LONG DO I NEED TO FOLD?

You need to fold until batter flows like lava.

If this answer is confusing, just check the videos of lava or just check lava cakes.

Next step is to scoop batter into bag about 2/3 full.

Twist off the top and pipe macarons into desired size.

Slam or tap your pan 3 times against the counter to release air bubbles.

Let the macarons sit at room temperature for about 45 to 60 minutes.

Macarons will form top skin.

You will be able to touch them and they will not stick to your finger.

Preheat oven to 350 F.

Bake macarons for 11 minutes or just test them.

When you touch the top macarons and they are not moving, it is done.

Remove from the oven and cool.

Nutella Chocolate Filling

Ingredients

1/4 cup heavy cream

2 oz semi sweet chocolate

1 tsp butter

5 TBSP Nutella

1/2 tsp rum

Instructions

Finely chop chocolate. Set aside.

Heat the heavy cream until almost boiled and add chopped chocolate, butter.

Stir to combine.

Stir in 5 TBSP Nutella and rum.

Cool it.

Assembly Line

Take 2 cookies and sandwich them together with Nutella Chocolate Filling.

These cookies need to mature for a day or two.

Or you can eat them immediately.

These simple meringue cookies will melt in your mouth.

To make them you will use whipped egg whites and sugar.

Super easy and fast recipe.

Chocolate Meringue Cookies – Action Time

Shopping List

  • egg whites, cream of tartar, icing sugar
  • heavy cream, chocolate

Ingredients

3 egg whites (ROOM TEMPERATURE!)

3/4 cup icing sugar

1/2 tsp cream of tartar

Instructions

Preheat oven to 225 F.

Line baking sheet with parchment paper.

Be sure that mixing bowl is clean.

Place 3 egg whites into a mixing bowl and beat for about 1 min. (until frothy)

Add 1/2 tsp cream of tartar.

Beat until soft peaks form.

At this point start adding 3/4 cup icing sugar.

Please add very slowly.

This is important! Please add sugar very, very s-l-o-w.

Mix until sugar dissolved and stiff peaks form.

Pipe the rose on the parchment paper. ( I used a Wilton 1M open star or you can use 2D)

The size of rose is 2 inches.

Bake at 225 F for about 40 minutes.

Turn the oven off and don’t open the door.

Leave the meringues in the oven to finish drying for 1 hour.

After one hour, let cookies completely cool.

Chocolate Filling

300 gr Lindt chocolate with hazelnut (chopped into a small pieces)

3/4 cup heavy cream

Using a small sauce pan bring heavy cream to a simmer.

Pour over chopped chocolate.

Let stand for 5 minutes.

Stir until smooth.

Let cool in the fridge. (2 to 3 hours)

Assembly Line (think manufacturing)

Take the meringue cookie and pipe chocolate filling.

Place the second cookie on top.

Repeat until all cookies are done.

Hello my dear readers,

It is the Sunday, March 11th of 2018.

And are you missing that one hour?

You know the one that was stolen by Daylight saving.

Son of … the changing life.

In order to easier adjust to this day I am going to make light, very sweet pillows that will lighten your mood

and will help your delicate circadian clocks.

MARSHMALLOWS

For this recipe to be success you need to be organized and you need to do the following steps before you start making the recipe.

IMPORTANT

1.Find a candy thermometer

You will need a candy thermometer in order to make marshmallows.

If you don’t have one check the stores like Walmart, Winners, The Bay or

go to our safe place called AMAZON.

2.Prepare pan

Prepare 8×8 pan.

Use parchment paper to line.

Be sure that it comes up and over the side of 8×8 pan.

This is important because you will be able to easily “lift” marshmallows out of the pan.

Lightly grease the parchment paper with oil.

3. Sugar/cornstarch mixture

In a small bowl mix 3/4 cup icing sugar and 3/4 cup cornstarch. Set aside.

Now you are ready for baking show.

1 1/2 TBSP unflavored gelatine

3 egg whites

1 1/2 cup sugar

1/4 + 1 tsp water

1 TBSP vanilla extract

1 TBSP oil

Optional:

grounded Oreo, cinnamon, pumpkin spice, Lindt truffles

Instructions

Using a small bowl or 1 cup measuring cup add 1 1/2 TBSP gelatin powder.

Pour 1/4 +1/8 cup of cold water and stir. Set aside.

Using a large mixing bowl mix 3 eggs whites until foamy. (1 to 2 minutes)

Set aside.

In a small saucepan  add 1 1/2 cup sugar and 1/4 cup + 1 tsp water.

Bring to boil and boil until temperature reaches 240 F (115 C) which is soft ball.

Start beating eggs white again on high speed and add boiled sugar/water mixture.

Pour it down the side of the bowl to avoid splashing.

Then add softened gelatin and mix for another 5 minutes or until reaches the room temperature.

If you touch a mixing bowl it should not be hot.

Stir in 1 TBSP vanilla.

Pour the mixture into prepared 8×8 pan.

Sift a layer of the icing sugar and cornstarch over the top of marshmallows.

Cool for about 3 to 4 hours. (needs to be set)

Find a larger size of baking pan or a cutting board.

With a sieve, generously dust the icing sugar/cornstarch on your cutting board.

Important:

Slip the knife into cold water before cutting the marshmallows.

Repeat as many times as you need it.

If you want fancier marshmallows, (and I know, you do) you can follow the options below.

White Chocolate Sauce/Glaze

You will need to melt 1 cup white chocolate using a double boiler method.

Once the white chocolate is melted add 1 TBSP oil. Mix well.

The white chocolate and oil mixture needs to be smooth and shine.

Option 1 – Oreo option

Using a food processor ground 15 Oreos.

Dip each marshmallow into white chocolate mixture then into oreo crumbs.

Place the coated marshmallows into baking pan or tray to set.

Option 2 – Truffle option

Top each marshmallow with a 1 tsp white chocolate, add Lindt truffle.

It really looks like a sun in the middle of puffy white clouds. You will love this reach breakfast for your family or your friends.

Ingredients

  • 2 eggs (organic)
  • 1/8 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp oregano

Instructions

  1. Preheat oven to 450 F.
  2. Separate eggs, being careful to keep the egg yolks whole.
  3. Using a clean bowl whip 2 egg whites until stiff peaks form.
  4. Using a rubber spatula, add salt and black pepper. (be gently, you don't want to deflate the whites).
  5. Spoon into 2 mounds on parchment lined baking sheet.
  6. Using the back of a spoon, create a deep well in the center or each mound.
  7. Bake for 5 minutes at 450 F.
