MAKING EMPIRE COOKIES

Ingredients

1 cup butter

3/4 cup icing sugar

3 egg yolks

1/2 TBSP vanilla extract

2 +1/2+ 1/8 cups flour (AP)

Raspberry jam

Icing for Empire Cookies

1 1/2 cups icing sugar

3 TBSP warm water

1/2 TBSP almond extract

Instructions for making Imperial Cookies

Line 3 baking trays with parchment paper.

Set aside.

Beat 1 cup butter and 3/4 cup icing sugar until smooth. (about 2 minutes)

Add egg yolks and vanilla extract and mix for about 1 minute.

Add sifted flour and stir until blended.

Shape into a disc and wrap in plastic wrap.

Chill for about 3 hours.

After chilling….

Time to play with your dough…

Roll it out to 1/4 inch thick.

Cut out the cookies using any cookie cutter you like.

Place the cookies on the baking tray with 1 inch space between them.

Bake cookies at 350 F for 10 minutes.

(it should be lightly browned around the edges)

Cool the cookies.

Spread half of the cookies with 1/2 TBSP raspberry jam and top with remaining cookies.

Repeat with the remaining cookies.

Icing for the Empire Cookies

Combine icing sugar, almond extract and enough hot water to make a thin icing.

 

Frost tops of cookies and decorate with a small piece of candied cherry.

Say thank you.

Allow icing to dry. (about 1 hour)

Keep them in airtight container. (3 days)

Nutella Cheese Carrot Cake – Hello Happy

Hello my dear readers,

Another day and another cake.

Nutella Cheese Carrot Cake

Ingredients

3 eggs

1½ cups sugar

1 cup oil

2 cups AP flour

1 TBS cinnamon

¼ tsp salt

1 tsp baking soda

1 tsp vanilla extract

3 cups carrots

1½ cup walnuts

Nutella Filling

1 1/2 cups Nutella

1/8 cup heavy cream

Cheese Filling

1 and 1/2 package (12 oz) cream cheese

1 1/4 cup heavy cream

1 and 3/4 cups icing sugar

1/2 TBSP vanilla extract

Instructions

Heat oven to 350 F.
Line baking sheet 16 x 11 with aluminum foil.
Mix sugar,oil and eggs.
Add flour, cinnamon, baking soda, salt and vanilla extract.
Stir in carrots and walnuts.
Pour into pan.

Bake until toothpick inserted in center comes out clean. (Mine was for about 25 min).
Cool it.

Make Nutella Filling

Mix heavy cream until firm.
Add Nutella and mix until incorporated for about 1 minute.
Keep in the fridge.

Make Cheese Filling

Mix cream cheese for about 3 minutes.
Add icing sugar, vanilla extract and mix until incorporated.
Set aside.
In another bowl mix heavy cream until firm.
Add heavy cream into cheese mixture and mix all ingredients together for about 1 minutes.
Keep in the fridge.
Now, you have everything:
-baked cake
-Nutella filling
-Cheese filling
Our next step is to cut the cake into 3 equal strips, size 4.5 x 11. ( you will have extra cake strip 2.5×11)

ASSEMBLING TIME

Begin assembling by placing 1 of the 3 cake pieces on parchment paper.
Spread the Nutella filling on top of the first layer.
Place the second layer on top and spread cheese frosting.
Place third layer and spread cheese frosting.
Decorate as you wish.

Keep the cake in the fridge for about 8 hours before … the best part.

Shopping List

  • Peanut Butter
  • icing sugar
  • graham crumbs
  • butter
  • semi-sweet chocolate
  • heavy cream

Action Time

-Make chocolate truffle in advance.

STEP 1

Making truffles

Ingredients

-6 oz finely chopped semi-sweet chocolate

-1/2 cup heavy cream

-1/2 TBSP butter softened to room temperature

Instructions

Pour 1/2 cup of heavy cream into a small saucepan and heat until it comes to a simmer.

Pour the hot cream over chopped chocolate.

Let it sit for 3 minutes.

Gently whisk the cream and chocolate together until your ganache is shine and smooth.

Add 1/2 TBSP butter and whisk until incorporate.

Press a layer of cling wrap on top of the ganache and keep in the fridge for about 2 hours.

Use a small 1 inch teaspoon to form small balls.

Roll them between your palms to create perfect, round chocolate truffle.

Keep in the fridge until firm and ready for next stage in their life.

Peanut Butter Life

Now, let’s make the peanut butter supporter.

STEP 2-Peanut Butter Bubble

Ingredients 

2/3 cup peanut butter (smooth)

2 /3 cup icing sugar

1/3 cup graham crumbs

1/8 cup butter (salted)

muffin/cupcake papers (you can use miniature size muffin cups or the regular one)

Instructions

Combine icing sugar and graham crumbs in a small bowl. Set aside.

Melt peanut butter and butter.

Add icing sugar/graham crumbs into melted butter and stir until all ingredients are incorporated.

Let it cool for about 45 minutes or until you can handle the mixture to roll into the ball.

Take 2 TBSP sized balls of mixture.

Flatten each ball and place one of chocolate truffle inside.

Wrap the peanut butter mixture around the chocolate truffle and roll into ball.

Place into the cupcake liner.

Repeat the process until you used all peanut butter mixture.

Cover with chocolate icing.

Store in the fridge.

Instructions

Place all leftovers into the food processor.

Process until it resemble fine crumbs.

Add in raspberry syrup a little bit at a time until the mixture is moist and can hold a shape.

Next step is to form a long log using your hands.

Store in a freezer for a few hours or overnight.

FONDANT

Roll out the fondant to the size of your log.

Return to the freezer for another hour or as long as you want to.

Before serving

Using a knife cut off the excess fondant.

Cut the roll into any size you like.

Ingredients

-CAKE

5 oz semisweet chocolate, (chopped)

1/4 cup cocoa

1 1/2 cups boiling water

4 large eggs

1 cup butter

1 1/4 cups brown sugar

1/4 cup white sugar

1/2 cup Greek yogurt

1 tsp rum

1 1/2 cups flour (AP)

1 tsp baking soda

1/2 tsp salt

Chocolate Mousse

5 oz semisweet chocolate (chopped)

7 TBSP butter

2 large eggs, separated

1 TBSP sugar

3/4 cup heavy cream

1/4 tsp rum

Coconut – Almond Filling

6 large egg yolks

2/3 cup sugar

1/4 cup butter, unsalted

150 ml evaporated milk

1/2 cup coconut

1 cup almonds, ground

Glaze

5 oz semisweet chocolate, chopped

1 and 1/2 TBSP corn syrup

1 cup heavy cream

Instructions

-for the cake

Coat 13×18 baking sheet with baking spray. (or do line with aluminum foil and spray)

Preheat oven to 325 F.

In a bowl mix 1 1/2 cups flour, 1 tsp baking soda, 1/2 tsp salt.

Set aside.

Put 5 oz chopped chocolate and 1/4 cup cocoa in a saucepan.

Add 1 1/2 cups boiling water and mix until all ingredients are combined and melted.

Set aside to cool.

Meanwhile, beat 1 1/4 cups brown, 1/4 cup white sugar and 1 cup unsalted butter. (about 5 minutes)

Add 4 eggs, one at a time, beating well after each addition.

Then add 1/2 cup Greek yogurt and 1 tsp rum.

Mix everything together.

Reduce mixer speed to low.

You will add flour and chocolate mixture this way:

1/3 flour mix, add 1/2 chocolate mixture,mix, add 1/3 flour mix, add 1/2 chocolate mixture.

Mix. Finish with the flour mixture.

Pour the mixture into 13×18 prepared baking sheet.

Bake at 325 for about 20 to 25 minutes.

Cool it.

Chocolate Mousse

Melt the chocolate and butter using a double boiler method.

Set aside to cool.

Whip 2 egg whites using a whisk attachment for 1 minute.

Add 1 TBSP sugar and whip until to soft peaks. Set aside.

In another bowl mix 3/4 cup heavy cream.

Using a small bowl combine 2 egg yolks and rum.

Add egg yolks mixture to cooled melted chocolate.

Mix everything together by spatula.

Fold in the whipped egg whites.

Then fold in whipped cream.

Be kind when folding.

Coconut-Almond Filling

Combine 6 large egg yolks, 1/4 cup butter, 2/3 cup sugar and

150 ml evaporated milk in a larger saucepan.

Cook over medium heat, stirring constantly until the mixture is thick.

For me it was 17 minutes.

!!!So, be prepared to stir non-stop for about 15 to 20 minutes.

After the filling is cooked transfer to a stand mixer and whip until cooled and fluffy.

Used whisk attachment.

Add coconut and ground almonds.

Mix all ingredients until combined.

Cover and keep in the fridge until ready to use. (up to 5 days)

Glaze

Heat 1 cup heavy cream until almost boiling.

Pour it over chopped chocolate and corn syrup mixture.

Let sit for 5 minutes.

Gently mix until smooth.

Pour the glaze over the bombes.

ALMOST DONE

Assemble the chocolate bombes

Scoop ¼ cup of the chocolate mousse into each mold.

Make it even and pretty. Freeze for ½ hour.

Using a round cookie cutter, cut 15 circles from your chocolate cake.

The remaining cake give to your kids or just eat it.

Now, take your mold out of freezer.

Add 2 TBSP of coconut/almond filling to each mold.

Make it even and pretty. (I didn’t)

Then gently press the cake circles on top of Coconut-Almond filling.

Cover with plastic wrap and freeze overnight.

NEXT DAY

Unmold the frozen bombes onto a wire rack.

Pour the chocolate glaze over bombes and refrigerate for a few hours or

until the glaze is set.

These simple meringue cookies will melt in your mouth.

To make them you will use whipped egg whites and sugar.

Super easy and fast recipe.

Chocolate Meringue Cookies – Action Time

Shopping List

  • egg whites, cream of tartar, icing sugar
  • heavy cream, chocolate

Ingredients

3 egg whites (ROOM TEMPERATURE!)

3/4 cup icing sugar

1/2 tsp cream of tartar

Instructions

Preheat oven to 225 F.

Line baking sheet with parchment paper.

Be sure that mixing bowl is clean.

Place 3 egg whites into a mixing bowl and beat for about 1 min. (until frothy)

Add 1/2 tsp cream of tartar.

Beat until soft peaks form.

At this point start adding 3/4 cup icing sugar.

Please add very slowly.

This is important! Please add sugar very, very s-l-o-w.

Mix until sugar dissolved and stiff peaks form.

Pipe the rose on the parchment paper. ( I used a Wilton 1M open star or you can use 2D)

The size of rose is 2 inches.

Bake at 225 F for about 40 minutes.

Turn the oven off and don’t open the door.

Leave the meringues in the oven to finish drying for 1 hour.

After one hour, let cookies completely cool.

Chocolate Filling

300 gr Lindt chocolate with hazelnut (chopped into a small pieces)

3/4 cup heavy cream

Using a small sauce pan bring heavy cream to a simmer.

Pour over chopped chocolate.

Let stand for 5 minutes.

Stir until smooth.

Let cool in the fridge. (2 to 3 hours)

Assembly Line (think manufacturing)

Take the meringue cookie and pipe chocolate filling.

Place the second cookie on top.

Repeat until all cookies are done.

So, let’s find the hidden treasure in my kitchen.

Ok, I will show you. (but you need to work on your trust issues…)

You need to find or discover the following ingredients

  • eggs, flour, milk, water,salt
  • Nutella

Crepes Mini Treasure Bundle

Ingredients

1 cup all purpose flour

1 cup water

1 cup milk (2%)

3 eggs

1/8 tsp salt

Filling

marshmallow cookies

Nutella

Whip Cream

Instructions 

Using a kitchen-aid mixer mix 1 cup flour, 1 cup milk, 1 cup water, 3 eggs and 1/8 tsp salt together.

You can use blender if you want to.

Be sure that all ingredients are mixed well.

I will repeat again!

IMPORTANT! The batter must be smooth.

You can refrigerate batter if you want for up to 3 days.

Next step is to heat and grease the pan. ( I used large one, 9 inches.)

Grease the pan using 1/2 TBSP of oil.

Heat 9 inch pan until hot.

Pour 1/2 cup of batter into the center of the pan.

Swirl it to spread the batter evenly over the bottom.

Cook for 1 to 2 minutes, until the crepe is golden on the bottom.

Cook the second side for about 1 minute or until golden.

Slide the finished crepe onto a plate.

1/4 + 1/8 cup red wine

1/4 cup Nutella

Repeat this process until you have used all chocolate mixture.

Then stir in 1 tsp vanilla.

Be sure all ingredients are mixed together and they love each other.

You will get about 2 and 1/2 cup chocolate heaven.

Once you have them in a perfect harmony,  divide them between 5 ramekins.

Place the ramekins in a deep baking pan and fill with hot water, halfway up the side of ramekins.

.Bake it for 30 min at 350 F.

Allow to cool and add topping.

Keep in the fridge.

Topping

1 cup Nutella

1/2 cup heavy cream

Mix 1/2 cup heavy cream for about 3 minutes on high speed.

Add Nutella and mix until all ingredients are incorporated together.

  • 1/4 + 1/8 cup red wine
  • 3 oz semi-sweet chocolate
  • 1/4 cup Nutella
  • 3 egg yolks
  • 1 1/2 TBSP sugar

  • 1 cup Nutella
  • 1/2 cup heavy cream

It is Sunday, May 15, 2016. and I am listening The Bangles – Manic Monday!

My kitchen is having the Oreo Day. I know the Oreo Day does not exist but I am making one.

The recipe is the Oreo Nutella Cream Puffs.

Filling:

20 Oreos

1/4 coconut oil

Nutella

Using food processor, pulse Oreos and coconut oil for about 1 to 2 min.

Turn on the food processor and let it run (roughly 3 to 5 min) or until you are left with the consistency you’d like.

Cut puff horizontally, spoon some Nutella, add Oreo filling,and top with more Nutella.

Place the top of the pastry shell on the Nutella, drizzle with Oreo filling and Oreo crumbs.

SERVE AND ENJOY!
