Hello my dear readers,

Today is Monday, May 22, the year is 2017.

Don’t you think it is scary how times flies? Very soon will be the Christmas and a New Year.

But, let’s not think about it.

Let’s not think how quickly life goes by. For now I want us to appreciate the moments.

And the moment is my favorite cake – The Raspberry White Chocolate Roulade.

It is one of my favorite, especially for the spring season.

This rolled sponge cake is filled with a rich raspberry white chocolate filling. It looks and tastes superb.

Please check your shipping list before you start making this cake.

Shopping List

-eggs

-sugar

-AP flour

-baking Powder

-white chocolate

-heavy cream

-raspberries

Now, if you have all ingredients we can start baking process.

Be sure that you make the white raspberry filling first and then make the sponge roll.

IMPORTANT!!! – Make the raspberry filling first. (STEP 2)

Action Mode

1.Making the Batter

Ingredients

5 large eggs, room temperature

¾ cup granulated sugar

¾ cup all-purpose flour

½ tsp baking powder

Preheat oven to 350ËšF.

Line the bottom of an 16×11 baking sheet with parchment paper.

Mix 5 eggs for 1 minute using a stand mixer. (fitted with whisk attachment).

Gradually add 3/4 cup of sugar. Slowly. Beat eggs and sugar for about 6 minutes on high.

It will be thick and fluffy.

In another bowl whisk 3/4 cup all purpose flour and 1/2 tsp baking powder.

Next step is to sift into eggs and sugar 1/3 at a time.

Fold using spatula after each addition.(fold very carefully, you don’t want to upset egg and sugar mixture.)

The whole idea is to create a light and airy batter.

One more time. Important!

Be sure that flour is mixed well into egg/sugar batter.

If you have all your ingredients mixed and happy together transfer batter to lined baking sheet and bake for 12 to 15 minutes.

You need to test to be sure it is baked.

When cake is baked, run a knife around edges of your cake to loosen from the pan.

Invert cake onto a clean kitchen towel, remove parchment paper and roll cake into the towel.

Let cool for about 60 minutes.

Unroll the cake. Spread the white chocolate filling using the metal spatula or knife.

Carefully roll up the filled cake as tightly as possible.

Optional: Cut each end of cake on the diagonal. Transfer the cake to a serving plate for decoration.

You can decorate with whip cream or chocolate.

STEP 2

Now let’s make the White Chocolate Raspberry Cream

Ingredients:

3/4 cup heavy cream

2  and 1/2 cup of white chocolate chips

6 oz or 170 gr fresh Raspberries

Puree raspberries using food processor.

Pour the raspberry mixture through a fine sieve to get rid of seeds. Set aside.

Bring the heavy cream to a boil.

Pour over 2 and 1/2 cup of white chocolate.

Let sit for 5 min.

Then use the mixer and mix for about 3 minutes. It will be smooth.

Allow to cool for a few minutes (if it is not already) and add the raspberry juice.

Mix well.

Refrigerate until cold, at least 4 hours or overnight.

Superb Dessert! Easy and simple, spring favorite cake for your family and friends.

If you are ready as I am we can start our cooking show.

The first thing we need are ingredients.

Ingredients

1/2 cup butter

Intense Mint Lindt Chocolate (100 gr)

1 oz semi-sweet chocolate

1/3 cup sugar

3 eggs

1 tsp vanilla

1/2 tsp organic peppermint extract

For decoration vanilla caramel cone, chocolate, whip cream

Instructions

Preheat oven to 425 F.

Spray 4 ramekins with baking spray and dust with cocoa powder.

Coarsely chop Lindt Intense Mint chocolate and 1 oz semi-sweet chocolate.

Place 1/2 cup butter (1 stick) and chopped chocolates into a medium heat-proof bowl.

Place the bowl over a saucepan of simmering water.

Stir butter and chocolate occasionally as it softens.

Add 1/2 tsp organic peppermint extract and stir.

Set aside.

Using another a medium bowl whisk 3 eggs, 1/3 cup sugar and 1 tsp vanilla extract.

Next step is to pour egg/sugar/vanilla mixture into chocolate mixture.

Mix all ingredients together with a wooden spoon or a spatula.

The whole mixture will be about 2 cups.

Using a 1/4 measuring cup, place one scoop of batter into each ramekin.

Add 1 TBSP of Nutella in the center of each ramekin.

Decorate with icing sugar, chocolate, whip cream, ice cream…or simple use nothing.

The cake is perfect on its own!

For this cake you need only a few ingredients:

eggs, sugar, flour, baking powder.

NOTICE: Buy organic eggs if you want your cake to be in gorgeous, yellow color.

(Visit your local Farmers Market and support your community)

Now, let’s make it happen.

Follow the recipe below.

Strawberry Buttercream Roulade

Ingredients

6 eggs, separated

6 TBSP sugar

6 TBSP flour (AP)

1/8 tsp baking powder

Directions:

Separate egg whites from yolks.

Whisk the egg whites in a bowl to form stiff peaks.

Gradually add the sugar. (S-L- O-W-L-Y!!!)

Then add egg yolks. Mix.

Gently fold in the flour and baking powder, so that you lose as little air as possible.

Pour the mixture evenly into the pan.

Bake from 10 to 15 min at 375 F.

How do you know if your cake is done?

Insert toothpick into your cake. If comes out clean – cake is baked.

Now, if you finish baking the cake prepare yourself for the next step! It is very, very important step.

Prepare two wet kitchen towel. (Kitchen towels must be wet with warm water).

So, you will have the following situation:

Bottom wet towel + Your CAKE + Top wet towel

After 30 min. check if you can roll up the cake. Please start with a short side of the cake.

If cake refuses to cooperate and still wants to stay straight, please wet the top kitchen towel again.

Unroll the cake, then spread the Strawberry Buttercream filling, leaving a 1 inch border all around the edges.

Using both hands, roll the cake up.

Then wrap in cling wrap or wet towel and refrigerate. (Also, you can keep it in the freezer)

Strawberry Buttercream Frosting

Made from fresh strawberries – Yes, it it homemade!

Ingredients:

1 lbs strawberries (454 gr)

1 cup unsalted butter

4 1/2 cups icing sugar (you can use less, it is your choice)

1/4 tsp vanilla extract

1/8 tsp salt

1 TBSP whip cream (optional)

Instructions:

Core the strawberries to remove the white center.

Place cleaned strawberries in a food processor and pulse until smooth.

You will have about 1 and 1/4 cup of puree.

Then put the pureed through a sieve to remove the seed. You don’t need to do this step if you like seeds .(Weirdo! I am not judging you…)

Place strawberry puree in a small saucepan over a medium heat.

Bring mixture to a simmer, stirring often. Simmer for about 30 min or until the mixture is reduced to 1/3 of the original volume.

Place the reduced puree into the fridge to allow to cool.

Beat the butter. Be sure that there is no lumps.

Then add 2 1/2 cups of  icing sugar and mix until butter and sugar are combined.

Add your strawberry puree, vanilla and salt.

Beat together until combined.

Then add 2 cups of icing sugar and mix well until well combined.

Add 1 TBSP of whip cream if needed and wanted.

And you have it, your homemade Strawberry Buttercream Frosting made from fresh strawberries.Enjoy.

If you want to add chocolate ganache because they say “Life is short eat chocolate” who am I to say “NO”!

To make chocolate ganache you need only 2 ingredients: heavy cream, chocolate chips.

Chocolate Ganache

1 cup heavy cream

1 1/2 chocolate chips

Bring 1 cup of the heavy cream to a simmer.

Remove from heat and pour over 1 and 1/2 cup chocolate chips.

Let stand until chocolate has softened. (5 min)

After 5 min. stir with a whisk until smooth and shiny.

Cover any surfaces you want to…even your body! For this post I suggest you cover your cake and enjoy your chocolate moment.

And in this moment of perfection I am going to make for you the best Peanut Butter and Chocolate Torte.

PEANUT BUTTER AND CHOCOLATE TORTE

Ingredients:

3 cups semi-sweet chocolate chips

3/4 cup unsalted butter

2 cups smooth butter

1 1/4 cup salted peanuts (roughly crushed)

1/2 cup graham crumbs

1 cup icing sugar

Now, let’s take a little break!

Directions:

Prepare round springform pan (8 inch) and spray with baking spray.

Melt chocolate chips and 1/2 cup peanut butter in a bowl over a pan of simmering water making sure the bowl doesn’t touch the water.

Divide in half. Pour one half into springform pan. Freeze for 15 min.

Take 1 and 1/2 cup peanut butter and 3/4 cup unsalted butter and place over double boiler.

Stir until is melted.

Remove from heat and add graham crumbs, peanuts and icing sugar.

Mix until all ingredients are incorporated.

Pour peanut butter mixture over frozen chocolate layer.

Return to freezer for 15 min.

Take melted chocolate (the second half) and pour over peanut butter layer.

Return pan to freezer and leave for a few hours or  overnight.

Optional: Decorate with chocolate, whip cream, peanut butter, peanuts….

Now, if you have the top and the bottom let’s create the middle – peanut butter mixture.

1 and 1/2 cup peanut butter + 3/4 cup unsalted butter melt over double boiler.

Remove from heat and add graham crumbs, peanuts and icing sugar.

Mix until all ingredients are incorporated.

Pour peanut butter mixture over frozen chocolate layer.

Hello sunshine – sings my plate. Let’s grab life by the balls. CAKE BALLS! Ready?

Of course I am!  I am ready to make the best chocolate cake balls.

So, all my ballsy friends let’s start with the ingredients.

You will need:

1 cup of cake crumbs

2 Tbsp melted chocolate

1/2 TBSP rum

1/2 tsp orange oil

Directions:

Prepare the cake. I used the cake recipe from Nutella Chocolate Love Cake. Follow the link:Cake Recipe

Crumb small part of the cake in order to have 1 cup cake crumbs. ( What to do with the rest of the cake? I will explain soon….)

Melt chocolate in a small bowl over a pan of simmering water making sure the bowl doesn’t touch the water,

then leave to cool.

When chocolate is cool, add 1 cup of cake crumbs, 1/2 Tbsp rum and mix. You will need to use your muscle.

Keep mixing until the mixture looks happy to you. Trust me you will know. Extreme mixing is important.

Then, add orange oil and mix again.

Now, roll the mixture into 1-inch balls. You will get  10 balls.

Chill 3 to 4 hr.

TIME FOR A BREAK…CHOCOLATE BREAK!

Now, you are ready to coat.

1 cup chocolate chips

1 tsp oil

Melt chocolate and oil in a bowl over a pan of simmering water making sure the bowl doesn’t touch the water,

then leave to cool.

Drop chocolate cake balls in melted chocolate to coat.

Lift ball from chocolate, tapping off excess and place on cookie sheet lined with wax paper.

Repeat with remaining balls. Store, loosely covered, in refrigerator.

Chocolate Lava Cake – I accept the baking challenge

As I took the escalator in my building to the fictional podium I made my own baking announcement.

“Yes, ladies and gentlemen I am accepting the monthly baking challenge by Sally’s baking addiction blog.

And the challenge is the  – CHOCOLATE LAVA CAKE!”

For this cake you will need just a little of your time, a few ingredients and love for baking. Actually a lots of LOVE!

LOVE = BAKING!

So, let’s start NOW!

1.Coarsely chop 3 oz of chocolate. Place 1/4 of unsalted butter and chopped chocolate into a medium heat-proof bowl.

2.Place bowl over a saucepan of simmering water. Stir butter and chocolate occasionally as it softens. Set aside.

3.Mix 1/8 cup AP flour, 1/4 cup icing sugar and 1/8 tsp salt.

4.Whisk 1 large egg and 1 egg yolk in another bowl.

5. now mix flour and egg mixture into chocolate mixture.  Used a rubber spatula or wooden spoon to mix it. (be sure that there is no lumps).

The mixture will be about 1 cup.

Next Step:

Spray 2 ramekin with baking spray and dust with cocoa powder. Spoon chocolate batter into prepared ramekin.

Place ramekins into baking sheet and bake for 14 min.

Cool for 1 min., cover each with inverted plate and turn over.

Add topping.  Whip Cream, shaved chocolate ….

Total Time: 21 minutes

Well, they say “When the student is ready, the master appears.”

So, my students are you ready to make the White Chocolate Fruit and Nut Bars”?

We need the following:

almonds, walnuts, coconut, apricots, raisins, apricot jam, honey, chocolate, rice flour,almond flour

If you have all ingredients we can start making our White Chocolate Fruit and Nut Bars.

We start by mixing 1 cup silvered almonds, 2 cups chopped walnuts,1 2/3 cup desiccated coconut,3/4 cup apricots,

1 cup + 2 TBSP raisins, 2TBSP + 1 tsp flour and 1/4 cup ground almond together.

In a small saucepan, gently warm 1/2 cup apricot jam and 1/2 cup honey together over low heat until melted.

Pour the mixture into the fruit mixture, stir well to combine, then pour into the prepared pan.

Bake for 30 min at 325 F.

Remove from the oven and let the cake cool completely before spreading the melted white chocolate over the top.

Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients

  • 1 cup silvered almond
  • 2 cups chopped walnuts
  • 1 2/3 cups desiccated coconut
  • 3/4 cup dried apricots,chopped
  • 1 cup + 2 TBSP raisins
  • 2TBSP + 1 tsp rice flour
  • 1/4 cup ground almonds
  • 1/2 cup apricot jam
  • 1/2 cup honey
  • Optional: 9 oz white chocolate

Instructions

  1. Preheat oven to 325 F. Grease a shallow 8x12 inch pan with butter and line with baking paper.
  2. In a large bowl, mix the almonds, walnuts, coconut, apricots, raisins, flour and ground almond together.
  3. In a small saucepan, gently warm apricot jam and honey until melted.
  4. Pour the melted jam and honey mixture into the fruit mixture, stir well to combine, then pour into pan.
  5. Bake for 30 min.
  6. Remove from oven, cool completely.
  7. If you wish spread the melted chocolate over the top.

Birthday is a special day. This special day requires extra special cake…so I will warn you again,

read this post only if you like Nutella, Oreos, chocolate, peanut butter, popcorn..Also if you are one of those who can’t make decision…pie or cake…cake or pie…You are my kind of people!!!

Now, if you are still reading this post you are the best person I have ever met. And I love you like I love my own family. As you can guess my judgment is solely based on Nutella, Oreos, chocolate, popcorn and peanut butter. So sue me, Universe!

Now, back to our birthday extra special cake!

Prepare yourself…it will be a few hours of work!

Ingredients for sponge cake:

3 eggs

6 TBSP sugar

6 TBSP flour

1/2 tsp baking powder

3 TBSP water

Cut wax paper or Al foil to fit 9″ round cake pan.

Mix eggs and sugar until double in size.

Fold flour and baking powder until well mixed. Add water. Be gentle, you don’t want to deflate the cake.

Bake at 370 degrees for approximately 20 minutes or until inserted toothpick comes out dry.

Cool for a few minutes, remove from pan and remove wax paper or foil.

Cool completely.

Make Oreo filling 2 or 3 days in advance!

Oreo Spread:

30 Oreo Cookies (Double Stuffed Cream Oreo)

1/4 cup coconut oil

In the bowl of a food processor whiz the cookies and coconut oil until they are fine crumbs. (10 min)

If you would like it thinner, add more coconut oil.

Next step is to make peanut butter filling. (the recipe is below)

Now if you have the following:

1.Sponge cake

2.One cup of Nutella

3. Oreo Spread

4.Peanut Butter Filing

5.Popcorn Ice Cream Cones

We can start building our cake:

1 and 2. Sponge Cake + 1 cup of Nutella

4.Next level is adding the Peanut Butter Pie Filling!

Insert 4 popcorn ice cream cones into peanut butter filling. Stop for a moment and enjoy your life!

3/4 cup heavy cream

4 oz cream cheese, softened to room temperature

1 1/2 cups creamy peanut butter

3/4 cup confectioners sugar

1/2 Tbsp pure vanilla extract

Filling:

Beat the heavy cream until stiff peaks form.

Spoon the whipped cream into a bowl and set aside.

Using the same mixing bowl beat the cream cheese, peanut butter,sugar and vanilla extract until combined. Mixture will be thick.

I wanted to make something that is healthy, delicious and gluten free.

But do you know what is gluten?

Gluten is the protein component found in wheat, rye and barley. If our body can’t digest or break down the gluten protein we have a gluten allergy.

It can range from a mild sensitivity to full-blown celiac disease.

If you want complete control (even if you are not controlling freak), cooking from scratch is the easiest way to avoid gluten.

So, let’s start baking from scratch.

What ingredients do you need for Almond Bars?

-Apricot Jam

-Almond

-Sugar

-Rum

-Chocolate

Ingredients

  • 1/4 cup apricot jam
  • 2 1/2 cups almond
  • 1 cup sugar
  • 3 TBSP rum or gluten free vanilla
  • 150 gr chocolate (your choice)

Instructions

  1. Line 8x8 inch baking pan with parchment, waxed paper. (or Aluminum Foil)
  2. In a small saucepan warm the apricot jam until it is hot.
  3. In a food processor, grind together almond and sugar until the mixture is smooth.
  4. Add the jam and rum (or vanilla) and process until smooth.
  5. The dough is very thick and if it is hard to process add more rum or vanilla.
  6. Spread the dough into baking pan. Refrigerate for a few hours.
  7. Melt the chocolate and spread over the almond base.
  8. Refrigerate for an hour.
  9. Enjoy!
  10. Simple and easy!

Sandwich Threesome-Oreo Reese’s Oreo

Welcome to my food porn experience. We are making 69-19=50 shades of grey Sandwich Threesome.

Ingredients

  • 10 oreos
  • 5 Reese's
  • 10 tsp Nutella
  • 1 Cup Chocolate chips, melted

Instructions

  1. Place a Reese's peanut butter cup between 2 Oreos using 1 tsp Nutella to keep them together
  2. Dip and cover the Reese's Oreo sandwich completely in chocolate.
  3. Place them on a tray lined with parchment paper.
  4. Sprinkle crushed Oreos on top of each sandwich and refrigerate for 20 minutes.
  5. Enjoy
