Happy Valentine’s Day!

And welcome to my fantasy land, the Internet sensation called 5starcookies.com

Baking you can trust.

My top recipe for today is….

Valentines Chocolate Fantasy Torte.

50 shades of grey will be dismissed if you try this torte.

This torte says, born for food porn.

So, let’s do it.

Shopping Time

  • flour, baking soda, salt
  • chocolate, water, cocoa
  • brown sugar, white sugar, butter, eggs
  • yogurt, vanilla extract
  • white chocolate, whip cream, blueberries
  • Nutella, cheese

Equipment

-Mixer

-baking sheet 13×18

-bowls

Line a 13×18 baking sheet with an aluminum foil.

Valentines Chocolate Fantasy Torte

Ingredients

1 cup unsalted butter

1 cup brown sugar

1/2 cup white sugar

4 large eggs (room temperature)

1/2 cup yogurt

1 tsp vanilla extract

1 1/2 cups flour (AP)

1 tsp baking soda

1 tsp salt

1 1/2 cups boiling water

4 oz semisweet chocolate (chopped)

1/4 cup cocoa

Nutella Filling

2 cups Nutella

8 oz cheese

1 cup whip cream

Blueberry white chocolate filling

3/4 cup heavy cream

2 and 1/2 cups white chocolate chips

3/4 cup fresh blueberries

Instructions

In a bowl #1 mix 1 1/2 cups flour, 1 tsp baking soda and salt.

Using bowl #2 combine the following:

1 1/2 cup boiling water, 1/4 cocoa and 4 oz chopped chocolate.

Mix all ingredients until chocolate is melted.

Set aside to cool.

Beat 1 cup butter and both sugars until light. (about 5 min.)

Add 4 eggs (one at a time) and beat well after each addition.

Then add 1/2 cup yogurt, 1 tsp vanilla extract.

Mix it.

Alternate adding the flour mixture with chocolate mixture.

(3 addition flour, 2 addition chocolate or flour+chocolate+flour+chocolate+flour)

Be sure all ingredients are incorporated.

Pour the batter into the prepared baking sheet.

Bake from 20 to 25 minutes and 325 F.

Cool it.

When you are ready to assembly the torte, cut into 3 equal pieces. (width = 4 inch)

The size is 4 x 13 for each layer. (the rest of the cake you can eat)

Nutella Filling

In a bowl mix 8 oz of cheese (Philadelphia).

Add 2 cups Nutella and mix again.

In another bowl mix whip cream.

Add whipped cream into cheese/Nutella mixture and mix until incorporated. (don’t over mix)

Keep in the fridge.

Wash blueberries with a mixture of 3 parts water and 1 part white vinegar.

Rinse under cool water and dry.

Now find your food processor.  I hope you have it.

Add 3/4 cup of blueberries into a food processor.

Process until smooth, about 1 minute.

Strain through a fine-mesh sieve into a bowl.

Set aside.

Add white chocolate chips into 4 cup measuring glass (or bowl).

Leave it for 5 minutes. (don’t mix)

The mixture should be smooth.

Cool it. (about 1 hour)

When you have your white chocolate mixture cooled add blueberry juice.

Mix using a spatula or wooden spoon.

Keep in the fridge until ready to be used.

This recipe represents a very slutty frosting that can be seen with all kind of sweet human beings.

Cakes, cupcakes, tortes or anything else….

Blueberry White Chocolate Frosting has no borders.

It will jump on, in or to.

So, it is your call.

And, BTW-Very important!

It only requires 3 ingredients.

So, let’s start shopping.

Shopping List

-white chocolate

-heavy cream

-fresh blueberries

Equipment

-food processor

-hand mixer

-2 bowls (1 for blueberries, 1 for white chocolate)

-1 small saucepan (to heat heavy cream)

Now, if you have everything ready we can start our baking show.

Blueberry White Chocolate Frosting

Ingredients

3/4 cup heavy cream

2 and 1/2 cups white chocolate chips

3/4 cup fresh blueberries

Instructions:

Wash blueberries with a mixture of 3 parts water and 1 part white vinegar.

Rinse under cool water and dry.

Now find your food processor.  I hope you have it.

Add 3/4 cup of blueberries into a food processor.

Process until smooth, about 1 minute.

Strain through a fine-mesh sieve into a bowl.

Bowl #2 sift together 1 1/2 cups flour and 2 tsp baking powder.

Now slowly add the flour mixture (bowl #2) to the bowl #1.

Mix all the ingredients.

Mix 1 1/3 cups blueberries with 1 TBSP flour.

Add blueberries / flour mixture into the batter.

Fold the blueberries into mixture very gently.

Pour the batter into prepared pan.

Bake at 350 F for 60 minutes. (use toothpick to test it)

Cook 1/4 cup lemon juice and 2 tsp sugar until sugar dissolves. Set aside.

When cake is baked, allow to cool for 10 minutes and then pour the lemon/sugar mixture over the cake.

So, let’s make the best Chocolate Mousse Towers.

SHOPPING LIST

Before you start making this fabulous Chocolate Mousse Towers please be sure that

you have the following ingredients.

-Chocolate (white and dark)

-heavy cream

-fresh raspberries

-fresh blueberries

Now if you have all above in your kitchen you are ready to start this baking show.

BAKING TIME

The first thing we are going to make is the White Chocolate Raspberry Cream

Ingredients:

3/4 cup heavy cream

2  and 1/2 cup of white chocolate chips

6 oz or 170 gr fresh Raspberries

Puree raspberries using food processor.

Pour the raspberry mixture through a fine sieve to get rid of seeds. Set aside.

Bring the heavy cream to a boil.

Pour over 2 and 1/2 cup of white chocolate.

Let sit for 5 min.

Then use the mixer and mix for about 3 minutes. It will be smooth.

Allow to cool for a few minutes (if it is not already) and add the raspberry juice.

Mix well.

Refrigerate until cold, at least 4 hours or overnight.

So, you just made your White Chocolate Raspberry Cream.

MAKING CHOCOLATE DISK

Now, let’s make the chocolate disk.

For this you will need only one ingredient – DARK CHOCOLATE!

I used Lindt chocolate.

100 gr Dark Link (70% cocoa)

Cut the chocolate into small pieces.

Melt the chocolate in a bowl set in a saucepan half-filled with hot water.

Cut 2 stripes of parchment paper. The size is 14 inch long and 3 inch wide.

Very quickly spread the chocolate on the paper stripes.

Let cool until on the point of setting. (You will know. It is still soft but not melting)

Using the cookie cutter cut into the shape you like.

When the chocolate is firm, very carefully peel the paper away from the disk.

Now, you can store in the fridge. (up to one week).

ASSEMBLE THE CHOCOLATE TOWERS

Prepare about 1/2 cup of blueberries for decoration.

Fill the pastry bag with White Chocolate Raspberry Cream.

Use 1M or 2D frosting tip.

Pipe out a small rouse on chocolate disk,

Arrange a few blueberries around the rose.

Set the chocolate disk on top and press down gently.

Pipe another rose and add blueberries.

Cover with 3rd chocolate disk.

Pipe your rose, add any decoration you like.

Recipe for all people that like chocolate. Dark and White.
Ingredients
  • ¾ cup heavy cream
  • 2 and ½ cup of white chocolate chips
  • 6 oz or 170 gr fresh Raspberries
Instructions
  1. Puree raspberries using food processor.
  2. Pour the raspberry mixture through a fine sieve to get rid of seeds. Set aside.
  3. Bring the heavy cream to a boil.
  4. Pour over 2 and ½ cup of white chocolate.
  5. Let sit for 5 min.
  6. Then use the mixer and mix for about 3 minutes. It will be smooth.
  7. Allow to cool for a few minutes (if it is not already) and add the raspberry juice.
  8. Mix well.
  9. Refrigerate until cold, at least 4 hours or overnight.
  10. So, you just made your White Chocolate Raspberry Cream.
  11. MAKING CHOCOLATE DISK
  12. gr Dark Link (70% cocoa)
  13. Cut the chocolate into small pieces.
  14. Melt the chocolate in a bowl set in a saucepan half-filled with hot water.
  15. Cut 2 stripes of parchment paper. The size is 14 inch long and 3 inch wide.
  16. Very quickly spread the chocolate on the paper stripes.
  17. Let cool until on the point of setting. (You will know. It is still soft but not melting)
  18. Using the cookie cutter cut into the shape you like.
  19. When the chocolate is firm, very carefully peel the paper away from the disk.
  20. Now, you can store in the fridge. (up to one week).
  21. ASSEMBLE THE CHOCOLATE TOWERS
  22. Prepare about ½ cup of blueberries for decoration.
  23. Fill the pastry bag with White Chocolate Raspberry Cream.
  24. Use 1M or 2D frosting tip.
  25. Pipe out a small rouse on chocolate disk,
  26. Arrange a few blueberries around the rose.
  27. Set the chocolate disk on top and press down gently.
  28. Pipe another rose and add blueberries.
  29. Cover with 3rd chocolate disk.
  30. Pipe your rose, add any decoration you like.
  31. Chocolate, sprinkles, blueberries...
  32. Enjoy.
  33. Keep going until you use all your disks.

Farmers Market and Strawberry Sunshine Drink

It is Monday morning (my day off), the sun is shining outside and I am ready for the Strawberry Sunshine Drink.

Ingredients:

1 cup fresh strawberries (they came from the Local Farmers Market and they are full of sunshine)

1 banana (organic)

1/2 cup water

Optional for decoration: blueberries, whip cream

Just for a moment stop your life and enjoy strawberries full of sunshine…don’t you love your Local Farmers Market…

Find your blender….(it does not need to be expensive one)

Put all ingredients into blender and blend.

Fill your glass with Strawberry Sunshine Drink and enjoy…
