Are you coconut/jam fan?

Raspberry Apricot Coconut Square!
To make this recipe you will make the following:
-yellow base + jam + coconut meringue.
INGREDIENTS
Yellow Base
4 egg yolks
1 cup butter (cold and diced)
1/2 cup sugar
2cups flour
2 tsp baking powder
Jam Layer
3/4 cup apricot jam
3/4 cup raspberry jam
Coconut Meringue
4 egg whites
3/4 cup sugar
1 cup desiccated coconut
2 TBSP vanilla instant pudding
Optional: Chocolate for decoration
Preheat oven to 350 F.
In a food processor, process 2 cups flour, 2tsp baking powder,1/2 cup sugar and cold, diced butter. (about 5 min)
Then add 4 egg yolks.
Process again until you get a ball of dough.
Press the dough into 13×11 baking pan with parchment paper.
Bake for 15 min.
Take out of the oven and cool for about 15 minutes.
Then spread 3/4 cup of apricot jam and 3/4 cup raspberry over the baked yellow base.
Beat 4 egg whites at medium speed for about 1 min.
Gradually add 3/4 cup sugar and beat until shiny.
Add coconut and vanilla instant pudding and mix for only few seconds using spatula.
Be gentle when mixing. (The white mixture will lose some of its volume but it is OK.)
Spread the white magic over the jam layer, return to oven and bake from 20 to 25 minutes. (until golden)
Cool it. Cut into triangles or any shape you want to.
Enjoy!

So, for today I choose our escape to be this amazing, easy and no bake cake called Chestnut Cake Fake News.
Why is it called fake…(keep reading…)

2 cups mashed potato
1 and 1/2 cup icing sugar
1/2 cup butter
2 1/2 cups finally ground walnuts
1 TBSP rum
1 TBSP cocoa or 1 oz melted chocolate
whip cream (optional)
Mix 2 cups mashed potato and 1 1/2 cup icing sugar.
Add 1/2 cup butter and mix again.
When you have mashed potato, sugar and butter mix well add 2 1/2 cups finally ground walnuts and 1 TBSP rum.
Mix all ingredients well.
You are almost done.
Take 2 cups of the mixture and pour into plate.
To the rest of the mixture add 1 TBSP cocoa or 1 oz melted chocolate.
Pour this dark mixture over the light one.
Roughly chop the chocolate over the cake and put in the fridge for a few hour or overnight.

Slice your piece, add whip cream and enjoy.

Do I need to say more.
No, I really don’t.
All I need is to share this amazing recipe with you.
-butter,sugar,cocoa,flour,eggs,chocolate,peanut butter,salt,vanilla extract

-Before you start making brownies preheat oven to 350 F.
-Grease 6 cup muffin pan.
1/4 cup unsalted butter
3 TBSP cocoa
1/2 cup sugar
1 egg
1/4 cup AP flour
1/2 tsp salt
1/4 tsp vanilla
Melt 1/4 cup butter and 3 TBSP cocoa on low heat.
Add 1/2 cup sugar and stir constantly for about 5 minutes.
Remove from heat and cool for 5 minutes.
Add 1 egg and mix well.
Then add 1/4 cup flour, 1/2 tsp salt and 1/4 tsp vanilla.

Mix well.

Pour the batter into greased muffin tins.

Bake at 350 F for 15 minutes.
Cool.
1/3 cup smooth peanut butter
2 TBSP unsalted butter, melted
4 TBSP icing sugar
1/4 tsp vanilla extract
1/8 tsp salt
Mix the melted butter and 1/3 cup peanut butter.
Add 4 Tbsp icing sugar, 1/4 tsp vanilla extract and 1/8 tsp salt.
Mix well.
Spread on top of each brownie.
Refrigerate for two hours.

Cover with chocolate icing.
1 cup chocolate chips
1/2 tsp oil
Over a double boiler slowly melt chocolate and oil.
Now, you can go outside and look into your final product.

It’s the September 24 of this amazing 2017…and it is my birthday.
Happy Birthday to me (I) ! And to you if it is your birthday!
Since today is the day of the celebration in my house let’s make something special.
Yes, ladies and gentlemen let’s make ….

To make the Cinnamon Cheese Roulade you will need to make two things:
-roll cake
-cheese filling
Like always before we start we need to be sure that we have all ingredients that this cake is asking for!
-CAKE – eggs,sugar,flour,baking powder,cinnamon
-Filling – cheese,whip cream, sugar,vanilla extract
Now, let’s start our baking show!
3-2-1 READY?
Before you start preheat oven to 350 F. (please)
Line the bottom of an 18×13 baking sheet with parchment paper or Al foil.
Equipment: KitchenAid Mixer, whisk attachment
Ingredients
5 eggs (organic is the best)
3/4 cup sugar
3/4 cup flour (AP – all purpose)
2 tsp cinnamon
1/2 tsp baking powder
Instructions:
Using the KitchenAid stand mixer fitted with whisk attachment beat 5 eggs on high speed for 1 minute.
After eggs get foamy add 3/4 cup sugar very slowly. (use tablespoon to add sugar, it has to be done gradually).
Beat for about 9 minutes on high speed or until tripled in volume.
In another bowl mix 3/4 cup flour, 2tsp cinnamon and 1/2 tsp baking powder.
Sift flour mixture into egg batter 1/3 at a time, folding to incorporate between each addition.
Be sure that the flour mixture is incorporate into eggs/sugar batter.
Then transfer mixture into lined baking sheet and bake for 15 minutes at 350 F.
(Use fork or toothpick to check if cake is done).
While cake is baking prepare 2 large linen or cotton towels.
Wet two towels with cold water and wring it out.
When cake is baked run a thin edged knife around edges of your cake to loosen from the pan.
Invert cake face down onto a wet towel, remove parchment paper, cover with second wet towel.
Let to cool for about 35 to 45 minutes.
Meanwhile, make the filling.
Filling:
6 oz cheese, room temperature
1 1/4 cup icing sugar
1 1/2 cup heavy cream
1 tsp vanilla extract
In a large bowl mix cheese and sugar.
Add 1 tsp vanilla.
In another bowl whip 1 1/2 cup whip cream.
Fold the whipped cream into cheese/sugar mixture.
Keep it in the fridge until ready for use.
Now, let’s go back to our cake.
Remove the top towel and try to roll the cake.
(If not, wet the top towel again with cold water and cool it for another 10 minutes.)
If you are successful the cake is ready for your cheese filling.
Place the cheese filling by large spoonfuls all over it.
Spread the cheese filling evenly.
Using the bottom towel roll the cake into a log and place into a long serving platter.
Refrigerate the cake until set.

Yes, ladies and gentlemen this recipe is coming from that kind of the morning.
Dreamy, lazy Sunday morning full of fun and possibilities.
The recipe is – FRENCH TOAST!
OUTSTANDING!
And trust me, hand down the BEST French Toast Recipe ever.
To make this recipe you don’t need to be reach or to have a million dollar view.
All you need is a few ingredients.
-Eggs
-Old French Bread
-salt, milk, oil
And love. LOVE is the most important ingredients for baking and life.
So, let’s start our baking show.
2 eggs

1 tsp milk
salt, pepper
4 slices of French bread (the bread must be old,stale)

Prepare: Heat 1 TBSP of oil in a large skillet or pan.
In a medium bowl or deep plate using a fork whisk together 2 eggs and milk.

Important: The plate or bowl needs to be wide enough to place a slice of the French bread
Add salt and pepper to your taste. Mix all ingredients again.
Place each slice of French bread into milk/egg mixture, allowing the bread to soak in.

Shake off the excess and place the bread onto the hot skillet or pan.

Fry until browned on one side, then flip and brown the other side.
Repeat until all four pieces are done. Enjoy!
Optional: Serve with:
-sour cream
-Greek Yogurt
-Italian parsley
-sliced garlic

And then I woke up. Reality! Time for my new post.
This torte doesn’t need an introduction.The formula is:
Chocolate + Hazelnuts + Nutella = Fererro Rocher Torte!
Now, let’s start our baking show.
5 large eggs
6 TBSP sugar
2 cups ground Hazelnuts
2 TBSP flour
2 TBSP cocoa powder
2 tsp baking powder (no aluminum)
1 cup mascarpone cheese
2 cups Nutella
1 cup whip cream
1 1/2 cup crushed Wafers
1/2 cup Hazelnuts
Line 8 inch round pan with foil.
Whisk 5 eggs and 6 TBSP sugar on high speed for about 7 minutes.

Mix until tripled in volume!

In another bowl (bowl #2) sift 2 TBSP flour, 2 TBSP cocoa and 2 tsp baking powder.
Then add 2 cups ground hazelnuts and mix all dry ingredients together.
Using spatula fold dry ingredients into the eggs, in 3 additions. (slowly)
IMPORTANT: Be very gently when mixing with a spatula.
I will repeat, be very gently because you don’t want to upset the dough.
You want the dough to have the fluffiness. Even if you are a jerk you will have to control your anger and be gentle.
Pour batter into prepared pan and bake at 350 F for about 30 minutes.
Use a toothpick to check if the cake is done.
Just stick a toothpick into the center of cake. If it comes out clean, your cake is done!
Once baked, leave in the pan for 10 minutes, then transfer to a cooling rack.
Once the cake is cool, slice it into two layers.
Mix 1 cup Mascarpone and 2 cups Nutella.
In another bowl mix 1 cup of whip cream.
Now add whipped cream to Nutella Mascarpone mixture.

Mix all ingredients together for about 1 minute until colour is dark brown.

Using your food processor ground 1 cup wafers and 1/2 cup hazelnuts together.

Now, you have everything: Cake, Filling and ground hazelnut/wafers mixture.
First layer cake + 1/2 of Nutella filling and sprinkle with crushed wafers/hazelnut mix


Second layer cake and cover with Nutella filling.
Decorate outside with crushed wafers/hazelnuts mixture.
