I hope you are doing well and you are ready for this dramatic cake called

Opera Cake.

This cake was born in Paris by the legendary pastry chef Cyriaque Gavillon.

He was a pastry artist who created the most amazing cakes and sugar decorations.

When inventing the Opera cake he wanted to create cake for which only one bite would give a taste of the whole cake.

He worked on layers and tastes and came up with what we know today as the OPERA CAKE.

Since we know that there is always a woman behind every man’s success we are not surprised that his wife was the one

who named the cake. She told him it reminded her of the Paris Opera House, Palais Garnier.

And that’s how the Opera cake was born.

So, dear my readers are you ready to sing an Opera? Pardon me, I mean are you ready to make the Opera Cake.

Because I am!

So, let’s make it happen my baking nation.

Now, let’s be precise or in chemistry they called it the measurement time!

Cake Ingredients for French Cake

2 eggs, separated and at room temperature

1 egg at room temperature

1/4 cup + 2 TBSP sugar

2/3 cup ground almonds

6 TBSP cake and pastry flour, sifted

Ganache Layer

1 cup heavy cream

8 oz or 240 gr baking chocolate, chopped

Italian Buttercream

2 egg whites, room temperature

1/2 cup + 2 TBSP sugar

2 TBSP water

1 cup butter, room temperature

1 TBSP cappuccino or coffee extract

1 tsp vanilla extract

Coffee Syrup

1/2 cup hot coffee

2 TBSP sugar

Chocolate Brush

1/4 cup chocolate chips, melted

Chocolate Glaze for Cake

1/3 cup from the Ganache Layer

1/4 cup chocolate chips

2 TBSP oil

Preheat oven to 400F.

Line an 11×17 sheet pan with parchment paper.

Whip 2 egg yolks, 1 whole egg with 1/4 cup sugar. Use whip attachment.

Using high speed beat until thick and pale.

In another bowl mix 2/3 cup of almonds and 6 TBSP cake and pastry flour, sifted.

Using bowl number 3, whip 2 egg whites on high speed until foamy, then slowly add 2 TBSP sugar.

Whip until they hold a soft peak when the beaters are lifted.

Now, let’s take next step very carefully.

Fold the whipped whites into the yolks mixture in two additions.

After that add almond/flour mixture. Fold all ingredients together.

Now use your prepared baking sheet pan and spread the batter evenly.

The batter will be very thin, like crepes. (something we all dream about it but let’s not talk about body issue now)

Bake the cake for about 7 to 8 minutes at 400 F.

Cool it.

Now, lets make the ganache layer.

Ganache Layer Instructions

Chop the baking chocolate.

Heat the cream until it just begins to simmer.

Pour cream over baking chocolate.

Let this sit for a minute, then start stirring using a spatula.

Stir until the chocolate is fully melted and the ganache is smooth.

Set aside to cool.

Italian Buttercream Instructions

Whip 2 egg whites with 2 TBSP sugar on high speed until just past foamy.

Use 1/2 cup sugar and 2 TBSP of water and bring to a full boil over high heat.

Boil until sugar hits 240 F on a candy thermometer.

With the mixer on medium speed, carefully add the hot sugar to the whipped whites by pouring it

down the side of the bowl, then increase the speed and whip until the whites cooled to room temperature (4 to 5 minutes)

Add the butter, a few pieces at a time until combined.

Add the cappuccino/coffee extract and vanilla extract.

Mix all ingredients well.

Coffee Syrup Instructions

Stir 1/2 cup hot coffee and 2 TBSP sugar until sugar dissolves.

ASSEMBLY CAKE

Remove the sheet of cake and cut cake into 3 rectangles size 5×11. If you have extra eat it.

Brush the bottom of one of the layers with the melted chocolate chips.

Put into fridge to firm.

Once it is firm place this layer chocolate-side down on a flat cake board or platter.

Brush it with coffee syrup.

Spread half of the buttercream on top.

Add second cake layer.

Brush with coffee syrup, spread with 2/3 of the cooled ganache. Enjoy it. It will be perfect…eventually.

Place the third cake layer.

Brush with coffee syrup.

Spread with the remaining Italian buttercream over top.

The final step is to spread chocolate glaze.

Re-warm 1/3 chocolate ganache, add 1/4 cup chocolate chips and 2 TBSP oil.

Stir until smooth.

Spread over the top of the cake .

Chill until set.

Decoration:

Chocolate cover coffee beans, coffee buttercream or use your imagination.

  • 1/2 cup ground almonds
  • 6 TBSP cake and pastry flour, sifted
  • Ganache Layer

-You will need three ramekins.

-Spray them with baking spray and dust with cocoa powder. (be generous)

Now we can list the ingredients.

Ingredients

100 gr Lindt Hazelnut Chocolate

1/4 cup unsalted butter

1 large egg + 1 egg yolk

1/4 cup icing sugar

1/8 cup all purpose flour

1/4 tsp salt

1/2 TBSP rum

Optional: 1/4 cup chopped hazelnuts

Place the chopped chocolate and 1/4 cup unsalted butter in a bowl set over a pan of gently simmering water, ensuring the bowl doesn’t touch the water.

-homemade Oreo chocolate chips

Now if you have all ingredients we can start our baking show.

Ingredients

300 ml sweetened condensed milk

3 cups white chocolate chips

3 cups frozen chopped homemade Oreo chocolate chips

Directions

Line an 8 inch pan with foil. Spray with baking spray. Set aside.

Melt 3 cups white chocolate chips and 300 ml sweetened condensed milk in a glass bowl set in a pan of hot water.

When chocolate and milk are melted and smooth add 3 cups frozen Oreo chocolate cookies.

Stir all ingredients.

Pour into prepared 8 inch pan.

Refrigerate at least 6 hours of overnight.

Cut into squares and store in a sealed container.

Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

Simple and easy.

So, let’s make the best Chocolate Mousse Towers.

SHOPPING LIST

Before you start making this fabulous Chocolate Mousse Towers please be sure that

you have the following ingredients.

-Chocolate (white and dark)

-heavy cream

-fresh raspberries

-fresh blueberries

Now if you have all above in your kitchen you are ready to start this baking show.

BAKING TIME

The first thing we are going to make is the White Chocolate Raspberry Cream

Ingredients:

3/4 cup heavy cream

2  and 1/2 cup of white chocolate chips

6 oz or 170 gr fresh Raspberries

Puree raspberries using food processor.

Pour the raspberry mixture through a fine sieve to get rid of seeds. Set aside.

Bring the heavy cream to a boil.

Pour over 2 and 1/2 cup of white chocolate.

Let sit for 5 min.

Then use the mixer and mix for about 3 minutes. It will be smooth.

Allow to cool for a few minutes (if it is not already) and add the raspberry juice.

Mix well.

Refrigerate until cold, at least 4 hours or overnight.

So, you just made your White Chocolate Raspberry Cream.

MAKING CHOCOLATE DISK

Now, let’s make the chocolate disk.

For this you will need only one ingredient – DARK CHOCOLATE!

I used Lindt chocolate.

100 gr Dark Link (70% cocoa)

Cut the chocolate into small pieces.

Melt the chocolate in a bowl set in a saucepan half-filled with hot water.

Cut 2 stripes of parchment paper. The size is 14 inch long and 3 inch wide.

Very quickly spread the chocolate on the paper stripes.

Let cool until on the point of setting. (You will know. It is still soft but not melting)

Using the cookie cutter cut into the shape you like.

When the chocolate is firm, very carefully peel the paper away from the disk.

Now, you can store in the fridge. (up to one week).

ASSEMBLE THE CHOCOLATE TOWERS

Prepare about 1/2 cup of blueberries for decoration.

Fill the pastry bag with White Chocolate Raspberry Cream.

Use 1M or 2D frosting tip.

Pipe out a small rouse on chocolate disk,

Arrange a few blueberries around the rose.

Set the chocolate disk on top and press down gently.

Pipe another rose and add blueberries.

Cover with 3rd chocolate disk.

1/2 cup butter

Intense Mint Lindt Chocolate (100 gr)

1 oz semi-sweet chocolate

1/3 cup sugar

3 eggs

1 tsp vanilla

1/2 tsp organic peppermint extract

For decoration vanilla caramel cone, chocolate, whip cream

Instructions

Preheat oven to 425 F.

Spray 4 ramekins with baking spray and dust with cocoa powder.

Coarsely chop Lindt Intense Mint chocolate and 1 oz semi-sweet chocolate.

Place 1/2 cup butter (1 stick) and chopped chocolates into a medium heat-proof bowl.

Place the bowl over a saucepan of simmering water.

Stir butter and chocolate occasionally as it softens.

Mix all ingredients together with a wooden spoon or a spatula.

The whole mixture will be about 2 cups.

Using a 1/4 measuring cup, place one scoop of batter into each ramekin.

My recipe for today is kind of romantic and delectable.

To make this recipe you need only a few ingredients and a little time.

For this recipe you will need the following ingredients.

-Puff pastry

-Organic Apples

-Cinnamon

-Apricot Jam

-Icing Sugar

Apple Roses – ACTION MODE

Puff pastry -Unwrap the puff pastry over a lightly floured counter.

Using a rolling pin stretch the dough to the size 12 inches by 9 inches.

Cut into six pieces. Each piece is 2 inches by 9 inches.

Organic Apples – Use 2 organic apples.

Remove the core.

Slice apples into thin slices because they will become roses.

Prepare a bowl with water and 2 TBSP lemon juice.

Place the sliced apples in the bowl and boil for about 6 minutes using your stove.

You can also microwave for 3 minutes.

IMPORTANT

Spread  1 tsp of apricot jam on each strip of dough. ( you have six of them).

Arrange the apple slices on the dough, overlapping one another.

Be sure that the top of the slices sticks a little out of the strip. (see the picture below)

Sprinkle with cinnamon.

Fold up the bottom part of the dough.

Yes, dear Nutella nation, let’s make the homemade Vegan Nutella.

How it is the same or different  to real Nutella…well, you be the judge.

Now, what do we need? What kind of ingredients we need to buy.

First of all, you will need the king of this post. It is called the HAZELNUT.

Let me repeat ….we need

1.HAZELNUT!

The other ingredients are:

2.Icing Sugar (yes, I know! Have you heard the word “compromise”. We all need to do that.

Never mind which group you belong to)

3.Cocoa Powder

6.Vanilla Extract

Now, if you are ready as I am let’s start our cooking show.

ACTION MODE

Ingredients:

1 and 1/2 cup hazelnuts

1 cup icing sugar

1/2 cup cocoa powder

2 Tbsp coconut oil

1 and 1/2 tsp pure vanilla extract

3/4 cup almond milk

Preheat oven to 350 F.

Spread 1 and 1/2 cup hazelnuts, in a single layer, evenly over a baking tray.

Bake for 10 min.

Let the hazelnuts cool for 5 to 7 minutes. because you will need to touch them.

Place the hazelnuts in a clean tea towel and gently rub together. The skin will be removed.

Ingredients

  • 1 and 1/2 cup hazelnuts

Today we are going to make the perfect vanilla cupcake. This recipe is the only one you will ever need if you want to make cupcakes.

The recipe is 100% success. So, I will repeat again 100% success.

Before we start let’s see our finished products.

Vanilla Cupcake

Ingredients:

1 and 1/4 cup cake flour

1tsp salt

2 tsp baking powder

1/2 baking soda

3/4 cup sugar

2 large eggs

1 1/2 tsp vanilla extract

1/2 cup oil (Crisco – soybean oil)

1/2 cup buttermilk

Instructions:

Sift cake flour, salt, baking powder and baking soda. Set flour mix aside.

Using an electric mixer beat 2 eggs for about 1 min. (medium speed- KitchenAid mixer)

Add 3/4 cup sugar and mix for another minute.

Add vanilla extract, oil and mix for another 2 min.

Next step is to add about half of flour mixture. Mix until incorporated.

Add 1/4 cup buttermilk. Mix.

Add remaining flour. Mix.

Add 1/4 cup buttermilk. Mix.

Be sure that all ingredients are incorporated. The butter will be thin,

Pour batter into a lined muffing pan. (about 3/4 full)

Bake for 15 min at 350 F.

Insert a toothpick in the center. If it comes out clean, cupcakes are done.

Cool the cupcakes.

You will get 12 cupcakes.

Now , we need frosting.

Frosting:

2 and 1/2 cups sifted icing sugar

1/2  cup + 1/8 cup butter

3 TBSP heavy cream

1 tsp vanilla extract

1/8 tsp salt

gel food coloring

Beat butter with a whisk attachment for about 3 min.

Add 1 cup sugar, 3 TBSP heavy cream, 1tsp vanilla extract and 1/8 tsp salt.Mix for 2 min.

Add 1 and 1/2 cup sugar and mix for another 3 min on high speed.

Spoon about 1/3 cup of the frosting into another bowl. Stir in a couple of drops of coloring. I used pink one.

Spread the pink frosting around the edges of a piping bag fitted with a Wilton 1M tip.
Spoon the white frosting in the center.
Place the tip directly on top of the center of the cupcake.
Using steady pressure, pipe a tight spiral around the cupcake.

Strawberry Buttercream Roulade

For this cake you need only a few ingredients:

eggs, sugar, flour, baking powder.

NOTICE: Buy organic eggs if you want your cake to be in gorgeous, yellow color.

(Visit your local Farmers Market and support your community)

Now, let’s make it happen.

Follow the recipe below.

Strawberry Buttercream Roulade

Ingredients

6 eggs, separated

6 TBSP sugar

6 TBSP flour (AP)

1/8 tsp baking powder

Directions:

Separate egg whites from yolks.

Whisk the egg whites in a bowl to form stiff peaks.

Gradually add the sugar. (S-L- O-W-L-Y!!!)

Then add egg yolks. Mix.

Gently fold in the flour and baking powder, so that you lose as little air as possible.

Pour the mixture evenly into the pan.

Bake from 10 to 15 min at 375 F.

How do you know if your cake is done?

Insert toothpick into your cake. If comes out clean – cake is baked.

Now, if you finish baking the cake prepare yourself for the next step! It is very, very important step.

Prepare two wet kitchen towel. (Kitchen towels must be wet with warm water).

So, you will have the following situation:

Bottom wet towel + Your CAKE + Top wet towel

After 30 min. check if you can roll up the cake. Please start with a short side of the cake.

If cake refuses to cooperate and still wants to stay straight, please wet the top kitchen towel again.

Cover the cake with wet towel and after 10 min try to roll up. It will work.

Unroll the cake, then spread the Strawberry Buttercream filling, leaving a 1 inch border all around the edges.

Using both hands, roll the cake up.

Then wrap in cling wrap or wet towel and refrigerate. (Also, you can keep it in the freezer)

Strawberry Buttercream Frosting

Made from fresh strawberries – Yes, it it homemade!

Ingredients:

1 lbs strawberries (454 gr)

1 cup unsalted butter

4 1/2 cups icing sugar (you can use less, it is your choice)

1/4 tsp vanilla extract

1/8 tsp salt

1 TBSP whip cream (optional)

Instructions:

Core the strawberries to remove the white center.

Place cleaned strawberries in a food processor and pulse until smooth.

You will have about 1 and 1/4 cup of puree.

Then put the pureed through a sieve to remove the seed. You don’t need to do this step if you like seeds .(Weirdo! I am not judging you…)

Place strawberry puree in a small saucepan over a medium heat.

Bring mixture to a simmer, stirring often. Simmer for about 30 min or until the mixture is reduced to 1/3 of the original volume.

Place the reduced puree into the fridge to allow to cool.

Beat the butter. Be sure that there is no lumps.

Then add 2 1/2 cups of  icing sugar and mix until butter and sugar are combined.

Add your strawberry puree, vanilla and salt.

Beat together until combined.

Then add 2 cups of icing sugar and mix well until well combined.

Add 1 TBSP of whip cream if needed and wanted.

And you have it, your homemade Strawberry Buttercream Frosting made from fresh strawberries.Enjoy.

If you want to add chocolate ganache because they say “Life is short eat chocolate” who am I to say “NO”!

To make chocolate ganache you need only 2 ingredients: heavy cream, chocolate chips.

Chocolate Ganache

1 cup heavy cream

1 1/2 chocolate chips

Bring 1 cup of the heavy cream to a simmer.

Remove from heat and pour over 1 and 1/2 cup chocolate chips.

Let stand until chocolate has softened. (5 min)

After 5 min. stir with a whisk until smooth and shiny.

Cover any surfaces you want to…even your body! For this post I suggest you cover your cake and enjoy your chocolate moment.
