I am a prude and this cake is very nude.
So nude that the name is the naked cake.
But, don’t worry. I am going to give you a mini version of the nudity. (lucky you)
And as soon as you see it, you will fall in love with this cake.
Naked cake is amazing, don’t you think?
I know, I do. I love all naked cakes. ( so much for being a prude)
Now, we are ready for baking show.
BAKING SHOW STARTS NOW
I feel pretty…and pretty – this cake is singing.
And I hope, my dear readers, you feel too.
It is important to love yourself.
Carrot Mini Naked Cake-Action Time
From this recipe you will get
- 15 cupcakes
- 2 mini carrot naked cakes
1/2 cup white sugar
1 cup brown sugar
1 cup oil (Crisco)
1 cup sour cream
1/2 TBSP vanilla extract
2 1/2 cups flour (AP)
2 tsp baking powder
1 TBSP cinnamon
1/2 tsp nutmeg
1/2 tsp salt
2 1/2 cups shredded carrots
1 1/4 cup walnuts, finally chopped
Cream Cheese Frosting
8 oz cheese
1 1/4 cups heavy cream
1 1/3 cup icing sugar
1 tsp vanilla extract
Line your mini baking pans with parchment paper. Set aside.
Preheat oven to 350 F.
In a bowl #1 combine 2½ cups flour, 2 tsp baking powder, 1 TBSP cinnamon, ½ tsp salt and ½ tsp nutmeg.
In the bowl of a stand mixer fitted with the paddle attachment, mix together ½ cup white sugar, 1 cup brown sugar and 1 cup oil.
Add 4 eggs, ½ TBSP vanilla and 1 cup sour cream and beat together until creamy.
Gradually add the flour mixture to the stand mixer and beat just until combined.
Stir in 2½ cups shredded carrots and 1¼ cup finely chopped walnuts.
Fill 3 mini pans with the batter. (the rest of the batter will be used for cupcakes)
Bake at 350 F until toothpick inserted comes out clean. (start checking after 10 minutes)
Optional:You can freeze overnight. It is easier to cut cake.
Then cut three of the layers in half horizontally. (you will have 6 layers)
Cream Cheese Frosting
Beat 8 oz cheese and 1 1/3 icing sugar and then add 1 tsp vanilla extract.
In a bowl #2 whip 1 1/4 cups heavy cream until thick and fluffy.
Fold whipped cream into cheese mixture.
-You are almost done. Let’s continue…
Place one sliced cake layer on wire rack or plate.
Optional: Add raspberries
Pipe cheese frosting and top with second cake layer.
Pipe cheese frosting and add 3 layer.
Spread cheese frosting on top.
Decorate using your imagination.
Sprinkles, raspberries, candies…
Store in the fridge, covered for up to 4 days.
Repeat same for another 3 layers.
Now, you have 2 naked mini carrot cakes.
