I am in mood to eat something chocolaty, romantic … something that has story from the last century. In Europe
A famous Hungarian Gypsy is playing violin at a Paris restaurant, where husband and wife are having dinner.
The wife is Clara Ward, the only daughter of American millionaire E. B. Ward.
The husband is Prince Joseph. That is how the story started…Just a dinner with the music..
Of course at that time we did not have TMZ but I am happy to report to you what happened.
The wife, Clara Ware was seduced by this famous violinist player, Rigo Jancsi. And she left her husband Prince Joseph.
And married a famous Gipsy, Rigó Jancsi in Hungary.
In order to celebrate their romantic love story this cake was created. It is called Rigo Jancsi.
The cake has two layers of chocolate-sponge cake. Between the two chocolate sponge cake layers is a thick layer of very rich, chocolate and cream filling

Ingredients

  • Cake:
  • 4 eggs
  • 4 TBSP icing sugar
  • 4 TBSP flour
  • 2 TBSP cocoa powder
  • pinch of salt
  • Filling:
  • 3 cups heavy cream
  • 3 TBSP icing sugar
  • 1 TBSP cocoa powder
  • 9 oz semi-sweet chocolate (about 250gr)
  • 2 TBSP gelatine powder
  • Glaze:
  • 7 oz chocolate (200gr)
  • 1/2 cup butter

Instructions

  1. Heat oven to 350 F.
  2. Coat the 9x13 pan with butter.
  3. Cream egg yolks with icing sugar. Add cocoa and mix.
  4. Beat egg whites and pinch salt, add icing sugar and beat until stiff peaks form.
  5. Add to egg yolks mixture about 1/3 of the whites.Fold it in without decreasing the volume.
  6. Then, carefully, fold in the remaining whites. Sprinkle the flour and fold it ...very carefully.
  7. Pour into prepared pan and bake for 10 min or until cakes start to pull away from the sides.
  8. Do not over bake. Cut in half.
  9. FILLING:
  10. Pour gelatine powder into 1/2 cup water.
  11. Rest it for 10 min.
  12. Melt 250 gr chocolate and 1 TBSP cocoa powder.
  13. Mix 3 cups of heavy cream and 3 TBSP icing sugar.
  14. Mix melted chocolate and gelatine together. Add to mixed cream and mix it all together.
  15. Spread the filling over the cake and top with the other.
  16. GLAZE:
  17. Melt the chocolate and butter.
  18. Pour evenly and cover the sides.
  19. Refrigerate for 5 hours or longer.
  20. Decorate with whipped cream or chocolate.

Happy Valentine’s Day! For today I am going to make very special cake.

It is very light cake with rich, dark filling. It looks like a little dreamy boat with fluffy filling ready

to make all your dreams come true.

So, lets make this “”Chestnut Love Boat Cake”…

Prep Time: 25 minutes
Cook Time: 50 minutes
Total Time: 1 hour 15 minutes

Ingredients

  • 4 egg whites
  • 1 cup icing sugar
  • 1/2 tsp vinegar
  • Filling
  • 500 gr chestnut puree
  • 4 TBSP heavy cream
  • 1/2 cup icing sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp rum
  • 2 cups heavy cream

Instructions

  1. Preheat oven to 250 F.
  2. Mix 4 egg whites and vinegar until they are stiff and leave peaks when the whisk is removed from the egg whites.
  3. Gradually add the sugar (1 TBSP at a time - very important) .
  4. It is important to add 1 tablespoon at a time because you want to lose as little air as possible.
  5. Line baking sheets with silicone mats and spoon the meringue mixture into shape of imaginary boat. (it does not need to be perfect shape of the boat...it can be circle or any shape that your mind have connection to. You should be able to make 10 of them).
  6. Bake them for 50 min. Turn off the oven and leave them to cool inside.
  7. Filling:
  8. Put the chestnut puree in a bowl with the sugar, vanilla, rum and 4 tablespoons of heavy cream.
  9. Beat together until smooth.
  10. In a separate bowl, whisk 2 cups of heavy cream.
  11. Put 1 1/2 TBSP of chestnut filling between two meringues.
  12. Top each meringue with the whipped cream. Dust with icing sugar or add chocolate.
  13. Serve and enjoy...

Honey and Cinnamon - Lose Weight

Ingredients

  • 1TBSP honey
  • 1 tsp cinnamon
  • 1 cup boiled H2O or water

Instructions

  1. Add 1 teaspoon organic cinnamon in a mug.
  2. Boil 1 cup water. Pour H2O over the cinnamon.
  3. Steep for 20 min to 25 min.
  4. Add 1 tablespoon of organic raw honey.
  5. (DO NOT ADD HONEY TO BOILED OR VERY HOT WATER BECAUSE IT WILL DESTROY ENZYMES IN RAW HONEY)
  6. Drink this 1/2 hour before breakfast on an empty stomach.

Baby, It is cold outside. So cold that  I need to make something hot…

Since Valentine’s day is in 2 days I am going to make Pink Coconut Hot Chocolate.

To make this you only need some milk, some cream and a lots of chocolate….and one special ingredient “LOVE”.

Pink Coconut Hot Chocolate

Pink Coconut Hot Chocolate

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 3/4 cup milk (2%)
  • 1/3 heavy cream
  • 4 squares or 50 gr White Coconut Chocolate (I used Lindt)
  • 1/4 cup pink chocolate chips
  • 1/2 tsp rum

Instructions

  1. Heat milk and cream until just below simmering point.
  2. Remove from heat and add chocolate.
  3. Let stand for 3 min and add rum.
  4. Whisk everything together. Reheat on very low head until chocolate is melted.
  5. Pour into glasses.
  6. Garnish with whipped cream, chocolate...or anything your red heart is asking for. ( listen to your heart)
  7. Drink and love your life.

Happy Chinese New Year, Lady in Red or Raspberry Truffle Cake

Ingredients

  • Chocolate Base
  • 3oz. unsweetened chocolate
  • 1/3 cup of butter
  • 1/4 cup raspberry jam
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup flour
  • Topping
  • 2 Tbsp. light cream
  • 2 Tbsp. raspberry jam
  • 1 Tbsp. butter
  • 4 oz. semi-sweet chocolate chopped
  • 1 cup raspberries

Instructions

  1. Chocolate Base
  2. Preheat oven to 300 F.
  3. Line an 9 inch square pan with foil-set aside.
  4. Combine chocolate, butter and jam in a small saucepan. Stir over low heat until smooth. Remove from heat.
  5. Beat eggs in a large bowl until foamy. Mix in sugar, vanilla and chocolate mixture. Stir in flour just until incorporated.
  6. Spread batter evenly in pan and bake for 30 minutes, or until set. Cool completely in pan on rack.
  7. Make the topping
  8. Combine cream, jam and butter in a saucepan.
  9. Heat to a simmer stirring constantly until melted. Remove from heat and add chocolate, stirring until smooth.
  10. Let stand until cool about 20 minutes then spread over chocolate base.
  11. Immediately top with raspberries and chill until cold. Cut into small squares.

Cook Time: 5 minutes
Total Time: 15 minutes

Ingredients

  • Spinach Tortilla
  • 2 Tomatoes (chopped)
  • 1/4 cup shredded romaine lettuce
  • Basil
  • Feta (as much as you wanted...I used 2 TBSP)
  • Sweet Red Peppers (flame roasted)
  • Omelette ( 1 egg organic, salt pepper)
  • Spinach

Instructions

  1. Crack the egg into a small mixing bowl. Stir gently with a fork until well-beaten. Add the salt, pepper, basil, and set aside.
  2. Heat a 6- to 8-inch omelette pan over high heat until very hot (approximately 30 seconds). Add the oil, making sure it coats the bottom of the pan.
  3. Slowly pour in the egg mixture.
  4. Continue to cook until the egg mixture holds together.
  5. Place the omelette in the center of the tortilla, then top it with the crumbled feta, peppers, chopped tomatoes,lettuce and spinach.
  6. To wrap, fold up one end, then both sides. Serve immediately or wrap in foil and take to go.

You can make it for breakfast or it can be lunch in your office.

Chocolate Cinnamon Cake, Novak Djokovic and Victory

Ingredients

  • Cake
  • 1/2 cup unsalted butter
  • 1 1/2 cups sugar
  • 3 large eggs, separated
  • 1 tsp vanilla extract
  • 2 cups sour cream
  • 3 cups AP flour
  • 1 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • Filling/Topping
  • 2 cups chocolate chips
  • 1/2 cup sugar
  • 2 tsp cinnamon
  • 1 1/

Instructions

  1. Preheat oven to 350 F.
  2. Use 9x13 pan, cover with foil or parchment paper.
  3. Cream butter and sugar. Beat in egg yolks and vanilla.
  4. Sift flour,baking soda, baking powder and salt into a separate bowl.
  5. Alternately mix in sour cream and then dry ingredients into butter mixture until both are used up.
  6. In a medium bowl, beat eggs whites until stiff, then fold into batter.
  7. Filling / Topping
  8. Whisk together sugar and cinnamon.
  9. Spread half the cake batter in the bottom of pan. Sprinkle with half of cinnamon mixture and add 1 cup chocolate chips,
  10. Dollop remaining cake batter over filling in spoonfuls. Gently spread it over the filling and smooth the top. Sprinkle with the remaining cinnamon mix and 1 cup chocolate chips.
  11. With the palm of your hand, ever -so - gently press the chocolate chips a bit into the batter.
  12. Bake for 40 to 50 min. (I baked for 46 min).
