First step is shopping. Be sure to have the following ingredients:

  • flour
  • eggs
  • milk (2%)
  • coffee
  • Nutella
  • whip cream

How to make Coffee Crepes with Nutella Filling?

Ingredients

1 cup flour

2 eggs

1 cup COLD Greek coffee (or use your favorite homemade coffee)

1 cup milk

1/2 tsp pure vanilla extract

1/8 tsp salt

Fillings: Nutella, whip cream

INSTRUCTIONS

Mix all ingredients by KitchenAid mixer (or your favorite one)

Yes, this step is simple. Add flour, eggs, coffee, milk, salt and vanilla into mixing bowl and mix until smooth.

I will repeat: Be sure that all ingredients are mixed well. (BE SURE BATTER IS LUMP-FREE)

Refrigerate for 1 hour. (I don’t)

Next step is to heat and grease the pan. ( I used very small one, 5 inches.)

Grease the pan using 1/2 tsp of oil.

Heat 5 inch pan until hot.

Pour 1/4 cup of batter into the center of the pan.

Swirl it to spread the batter evenly over the bottom.

Cook for 1 to 2 minutes, until the crepe is golden on the bottom.

Flip crepe and cook for another 10 seconds. Remove from pan and place on a plate as you go.

Be sure to cover cooked crepes with aluminum foil to keep them from drying out.

Repeat this process until no more batter remains.

Now, is my favorite part. Adding Nutella filling to the perfect crepes.

YES, yes and yes.

Spoon Nutella filling onto each crepe. (use as much as you want to)

Top with whip cream and fold the crepe. Repeat until done.

Optional: Dust crepes with icing sugar.

How to make Banana Bread French Toast

(4 slices banana bread)

Ingredients

2 eggs, large

2 TBSP milk (2%)

1 tsp vanilla extract

1 tsp ground cinnamon

In a medium bowl mix eggs, milk, vanilla extract and cinnamon by fork. (Also you can use hand mixer.)

You can use blender if you want to.

Be sure that all ingredients are mixed well.

Place first crepe on the baking sheet.

Spread chocolate, nutella onto each crepe.

Top each with 3 marshmallows or as many as you want to.

Sprinkle with graham crumbs.

How many crepes can you fit into baking sheet?

I did 3. You can do just one or two.

Turn on your broiler to 500 F.

Transfer baking sheet to the broiler for a minute or until marshmallow is melted and dark.

IMPORTANT: Keep checking every 10 seconds.

Remove from heat.

Roll or fold into quarters.

Cover with Nutella,melted chocolate and whip cream.

In 10 minutes you or your mixer will make between 6 and 9 pizza dough for your busy future.

So, how to make the pizza dough using the mixer or KitchenAid mixer?

First step is getting all ingredients or I like to call it:

  • flour (AP)
  • olive oil
  • salt, sugar
  • instant yeast or active yeast

Now, you are ready to make it happen. Yes, let’s do it.

How to make pizza dough in 10 minutes using the mixer?

Ingredients

5 1/2 + 1/8 cups AP flour (please read note below if you want to measure correctly)

1 TBSP instant yeast or active yeast

3 cup warm water (you will use 3/4 cup + 2 1/4 cups)

1 TBSP salt

1/2 tsp sugar

1/4 + 1/8 cup olive oil

Instructions:

If using instant yeast:

In the bowl of stand mixer, combine 3/4 cup of warm water, yeast, sugar and salt. (Optional:Let it stand for 1 min.)

Add 2 1/4 cups warm water, 1/4 + 1/8 cup olive oil, stir all ingredients together and follow the steps for adding the flour. (below pictures)

IMPORTANT: If using an active yeast please check below:

If you are using the active yeast: Add warm water (110 F to 120 F) to the bowl, then add yeast and sugar. Stir. Let it sit for about 10 to 15 minutes. Then add 2 1/4 cups warm water, 1/4 + 1/8 cup olive oil, 1 TBSP salt. Continue to the the step below – adding flour. (below pictures)

Adding the flour

Attach the dough hook to the mixer and start on a low speed. (just for a few seconds)

Then add 3 cups of flour and mix until combined. (about 1 minute)

Your next step is to add the rest of the flour which is 2 1/2 +1/8 cups.

Keep mixing in a low speed for about 2 minutes and then gradually increase the speed to medium until a ball forms.

Then let the mixer kneed your pizza dough for about 6 minutes.

SUPER IMPORTANT WHEN MAKING PIZZA DOUGH

IMPORTANT: If the dough doesn’t release from the sides of the bowl, add 1 or 2 TBSP of flour.

IMPORTANT for YOU: Don’t judge me but for this pizza dough recipe I don’t measure the flour correctly. (blame my grandmother. She never did for any kind of the bread or pizza). If you measure correctly which means stir in the bag to lighten it, PLEASE use about 9 cups. (1141 grams). Again, don’t be afraid to play with the flour. Remember, the dough needs to be released from the sides of the bowl. (so keep adding until it happen).

Once the kneading is finished, shape the dough and coat with olive oil.

Cover with kitchen towel and let dough rise in warm area until double in volume, about 60 to 90 minutes.

Remove the kitchen towel from bowl and place your fist in the center of the dough to punch down.

Fold the dough back onto itself 5 to 6 times. (it doesn’t need to be perfect)

Then divide the dough into 6 to 9 equal portions or form the dough into individual balls.

Lightly coat each ball with olive oil.

Wrap each ball with plastic wrap and slide into a freezer bag.

You can freeze pizza dough for up to 3 months.

I will repeat again: Please read super important note below.

SUPER IMPORTANT NOTE: If you measure correctly which means stir in the bag to lighten it, PLEASE use about 9 cups. (1141 grams)

    If you are using the active yeast: Add warm water (110 F to 120 F) to the bowl, then add yeast and sugar. Stir. Let it sit for about 10 to 15 minutes. Then add 2 1/4 cups warm water, 1/4 + 1/8 cup olive oil, 1 TBSP salt. Continue to the adding flour.

    ADDING FLOUR

    Attach the dough hook to the mixer and start on a low speed. (just for a few seconds)

    Then add 3 cups of flour and mix until combined. (about 1 minute)

    Your next step is to add the rest of the flour which is 2 1/2 +1/8 cups.

    Keep mixing in a low speed for about 2 minutes and then gradually increase the speed to medium until a ball forms.

    Then let the mixer kneed your pizza dough for about 6 minutes.

    IMPORTANT: If the dough doesn't release from the sides of the bowl, add 1 or 2 TBSP of flour.

    Once the kneading is finished, shape the dough and coat with olive oil.

    Cover with kitchen towel and let dough rise in warm area until double in volume, about 60 to 90 minutes.

    Remove the kitchen towel from bowl and place your fist in the center of the dough to punch down.

    Fold the dough back onto itself 5 to 6 times. (it doesn't need to be perfect)

    Then divide the dough into 6 to 9 equal portions or form the dough into individual balls.

    Lightly coat each ball with olive oil.

    Wrap each ball with plastic wrap and slide into a freezer bag.

    You can freeze pizza dough for up to 3 months.

IMPORTANT for YOU: Don't judge me but for this pizza dough recipe I don't measure the flour correctly. (blame my grandmother. She never did for any kind of the bread or pizza). If you measure correctly which means stir in the bag to lighten it, PLEASE use about 9 cups. (1141 grams). Again, don't be afraid to play with the flour. Remember, the dough needs to be released from the sides of the bowl. (so keep adding until it happen).

Also, right away you can make a little pizza for your family….the rest is for the freezer.

Ingredients

3 3/4 cups AP flour

2 tsp instant yeast or active yeast

then 2 cup water (you will use 1/2 cup + 1 1/2 cups)

2 tsp salt

1/2 tsp sugar

4 Tbsp olive oil

Instructions:

INSTANT YEAST:

In a bowl, combine 1/2 cup of water, instant yeast, sugar and salt.

Then add 1 1/2 cups warm water, 4 TBSP olive oil.

Mix all ingredients together using a metal spoon.

Then start adding the flour. (instructions below the pictures)

If using ACTIVE YEAST PLEASE SEE NOTE BELOW:

Important: If using the active yeast, pour 1/2 cup of the water into bowl and add active yeast and sugar. Let stand for 5 min. (or up to 15 minutes). Then add salt, 1 1/2 cups warm water, olive oil.

Mix all ingredients together using a metal spoon.

Add 2 cup of flour and mix with a spoon.

Then add 1 cup of flour and keep mixing. Add 1/2 cup flour keep mixing using a metal spoon. (just imagine yourself as kitchenaid mixer).

Your next step is to start to knead. Yes, I know some people are afraid of it.

Don’t. It is an easy as 1, 2, 3.

Knead dough until smooth, adding more flour by TBSP. (1/4 cup) You will know.

Transfer to prepared bowl and coat with olive oil.

Cover bowl with tea towel and let dough rise in warm area until double in volume, about 60 to 90 minutes.

And you are done. Well, almost.

How to FREEZE?

Remove the kitchen towel from bowl and place your fist in the center of the dough to punch down.

Fold the dough back onto itself 5 to 6 times.

Then divide the dough into 3 equal portions or form the dough into individual balls. .

1 TBSP butter

2 TBSP water

Italian parsley

salt and pepper to your taste

Our first step is to boiled 3 eggs. HOW?

Place eggs in a medium size saucepan and add 1 TBSP white vinegar.

Cover them with cool water.

Bring eggs to rolling boil over high heat.

When the water has reached a boil, set the timer for 12 minutes.

Important: Boil the eggs for 12 minutes at medium heat.

If you really like hard, hard boiled eggs set your timer for 15 minutes.

After 12 minutes or your ideal time, remove the saucepan from the heat and let the eggs rest for 10 minutes.

It is simple to make and so tasty. It can be served for breakfast or Sunday brunch.
I will repeat, simple yet special.

Ingredients

  • Large package of fresh Spinach (454 gr) -
  • 1 cup shredded Mozzarella cheese
  • 1 large red pepper, chopped
  • 3 eggs (large, organic)
  • 1 cup milk (2%)
  • 1/3 cup flour (AP)
  • 1 tsp baking powder
  • 1 1/4 tsp salt
  • 1 tsp black pepper
  • 1 small onion, finely chopped
  • 3 cloves of garlic, chopped

Instructions

    Spray 9 x 13 glass pan with baking spray.

Childhood memory…

I still can remember cold winter days with heartwarming sandwiches made by my grandmother.

She called it Oven Hot Cheese Sandwiches.

These pretty little sandwiches make a great lunch, dinner, breakfast or Sunday brunch.

They are simple, melty and cheesy.

Also, done in the blink of an eye. Almost.

Because of that I am sharing my grandmother’s favorite cheese sandwiches with all of you that I love.

You will need to buy the following ingredients:

  • sour cream
  • egg
  • mozzarella cheese
  • Swish cheese
  • red peppers
  • oregano
  • salt, black pepper

How to make Oven Hot Cheese Sandwiches?

Ingredients

5 slices of your favorite bread (French, Wholewheat…)

3/4 cup sour cream (14%)

1 large egg (organic)

1/2 cup Mozzarella and Swish cheese (cubed)

1 small red pepper, diced

1/4 tsp salt

1 tsp Oregano

dash of black pepper

Optional: Basil paste

INSTRUCTIONS

Preheat oven to 400 F.

Line a baking sheet with parchment paper. Set aside.

After that you need to find medium size bowl.

Add into the following ingredients: sour cream, cubed cheese, red pepper

and mix everything with metal spoon.

Finally add salt, pepper and oregano to your taste.

Stir until all ingredients are incorporated.

Then arrange the slices of bread on the baking sheet.

Spread the cheese mixture over the bread.

Almost done, just place pieces of cheese and red peppers over each sandwich.

Bake at 400 F for 15 minutes.

Take out of oven and drizzle with basil paste, feta cheese or Italian parsley.

Serve warm with Yogurt Italian Parsley Dip – Salad Version or Healthy Homemade Salad.
