Yes, this recipe is my favorite one since I was five.

I don’t know why but potatoes always makes me happy. There is something about it…

I can’t explain because love is just love.

You know it. And I always did and will.

For this recipe you need only a few ingredients:

  • potatoes
  • cheese (Mozzarella or use your favorite cheese)
  • sour cream (14%)
  • Italian parsley
  • salt, black pepper

Oven Baked Potatoes – Cheese Addition

Ingredients

3 potatoes (medium or large), use organic if you can

1 cup Mozzarella cheese (grated)

salt, pepper to your taste

Italian parsley

1 cup sour cream

INSTRUCTIONS

Preheat oven to 400 F.

Line a baking sheet with aluminum foil. Set aside.

Wash potatoes with skin. Dry.

Cut in half.

Then place them into prepared baking sheet.

Sprinkle each half of potatoes with salt and pepper.

Bake for 45 to 55 minutes or until potatoes are baked.

How to know if potatoes are baked?

Use the fork to test if potato is done. It should slide in easily if it is done.

Then remove potatoes from the oven and top each half with grated Mozzarella cheese. (2 TBSP or as much as you like)

Return back to the oven and bake for additional 3 to 5 minutes or until cheese is melted.

After that remove baked potatoes from the oven and cover with sour cream (I used 3 TBSP).

Decorate with Italian parsley. Let the life be the best one it can be.

First step is getting all ingredients or I like to call it:

  • salt, sugar
  • instant yeast or active yeast

How to make pizza dough in 10 minutes using the mixer?

Ingredients

5 1/2 + 1/8 cups AP flour (please read note below if you want to measure correctly)

1 TBSP instant yeast or active yeast

3 cup warm water (you will use 3/4 cup + 2 1/4 cups)

1 TBSP salt

1/2 tsp sugar

1/4 + 1/8 cup olive oil

Instructions:

If using instant yeast:

In the bowl of stand mixer, combine 3/4 cup of warm water, yeast, sugar and salt. (Optional:Let it stand for 1 min.)

Add 2 1/4 cups warm water, 1/4 + 1/8 cup olive oil, stir all ingredients together and follow the steps for adding the flour. (below pictures)

IMPORTANT: If using an active yeast please check below:

If you are using the active yeast: Add warm water (110 F to 120 F) to the bowl, then add yeast and sugar. Stir. Let it sit for about 10 to 15 minutes. Then add 2 1/4 cups warm water, 1/4 + 1/8 cup olive oil, 1 TBSP salt. Continue to the the step below – adding flour. (below pictures)

Adding the flour

Attach the dough hook to the mixer and start on a low speed. (just for a few seconds)

Then add 3 cups of flour and mix until combined. (about 1 minute)

Your next step is to add the rest of the flour which is 2 1/2 +1/8 cups.

Keep mixing in a low speed for about 2 minutes and then gradually increase the speed to medium until a ball forms.

Then let the mixer kneed your pizza dough for about 6 minutes.

SUPER IMPORTANT WHEN MAKING PIZZA DOUGH

IMPORTANT: If the dough doesn’t release from the sides of the bowl, add 1 or 2 TBSP of flour.

IMPORTANT for YOU: Don’t judge me but for this pizza dough recipe I don’t measure the flour correctly. (blame my grandmother. She never did for any kind of the bread or pizza). If you measure correctly which means stir in the bag to lighten it, PLEASE use about 9 cups. (1141 grams). Again, don’t be afraid to play with the flour. Remember, the dough needs to be released from the sides of the bowl. (so keep adding until it happen).

Once the kneading is finished, shape the dough and coat with olive oil.

Cover with kitchen towel and let dough rise in warm area until double in volume, about 60 to 90 minutes.

Remove the kitchen towel from bowl and place your fist in the center of the dough to punch down.

Fold the dough back onto itself 5 to 6 times. (it doesn’t need to be perfect)

Then divide the dough into 6 to 9 equal portions or form the dough into individual balls.

Lightly coat each ball with olive oil.

Wrap each ball with plastic wrap and slide into a freezer bag.

You can freeze pizza dough for up to 3 months.

SUPER IMPORTANT NOTE: If you measure correctly which means stir in the bag to lighten it, PLEASE use about 9 cups. (1141 grams)

Making Pizza Dough – Easy Recipe

Ingredients

3 3/4 cups AP flour

2 tsp instant yeast or active yeast

then 2 cup water (you will use 1/2 cup + 1 1/2 cups)

2 tsp salt

1/2 tsp sugar

4 Tbsp olive oil

Instructions:

INSTANT YEAST:

In a bowl, combine 1/2 cup of water, instant yeast, sugar and salt.

Then add 1 1/2 cups warm water, 4 TBSP olive oil.

Mix all ingredients together using a metal spoon.

Then start adding the flour. (instructions below the pictures)

If using ACTIVE YEAST PLEASE SEE NOTE BELOW:

Important: If using the active yeast, pour 1/2 cup of the water into bowl and add active yeast and sugar. Let stand for 5 min. (or up to 15 minutes). Then add salt, 1 1/2 cups warm water, olive oil.

Mix all ingredients together using a metal spoon.

Add 2 cup of flour and mix with a spoon.

Then add 1 cup of flour and keep mixing. Add 1/2 cup flour keep mixing using a metal spoon. (just imagine yourself as kitchenaid mixer).

Your next step is to start to knead. Yes, I know some people are afraid of it.

Don’t. It is an easy as 1, 2, 3.

Knead dough until smooth, adding more flour by TBSP. (1/4 cup) You will know.

Transfer to prepared bowl and coat with olive oil.

Cover bowl with tea towel and let dough rise in warm area until double in volume, about 60 to 90 minutes.

And you are done. Well, almost.

How to FREEZE?

Remove the kitchen towel from bowl and place your fist in the center of the dough to punch down.

Fold the dough back onto itself 5 to 6 times.

Then divide the dough into 3 equal portions or form the dough into individual balls. .

Lightly coat each ball with olive oil.

Wrap each ball with plastic wrap and slide into a freezer bag.

Seal, squeezing out all the air.

You can freeze pizza dough for up to 3 months.

How do you thaw frozen pizza dough?

So, let’s start making our 5 star recipe called Pierogi Homemade Pizza.

Our first step is getting all ingredients or I like to call it:

  • mushrooms
  • yeast
  • salt, sugar

  • pierogi (buy your favorite kind)

How to make Pierogi Homemade Pizza

Ingredients

1 cup + 3/4 cup  + 1/8 cup AP flour (almost 2 cups)

1 tsp instant yeast

2 Tbsp olive oil

1 cup water (you will use 1/4 cup + 3/4 cup)

1 tsp salt

1/4 tsp sugar

THE TOPPINGS

mushrooms, grated mozzarella cheese, Oregano, Pierogi, Feta cheese

INSTRUCTIONS

This is my favorite pizza dough. I made this recipe about billion times and will continue.

So, let’s start.

In a bowl, combine 1/4 cup of water, yeast and salt. Let stand for 5 min.

Add 3/4 cup warm water, 2 TBSP olive oil, 1/4 tsp sugar.

Mix all ingredients together using a metal spoon.

Add 1 cup of flour and mix with a spoon.

Then add 3/4 cup of flour and keep mixing

until the spoon says: “Leave me alone your hard working bitch!”

Trust me, you will hear it. At this point retire your spoon unless you want the conflict to escalate.

Since I know you are kind and peaceful human being you will start using your hands at this point.

Calmly and surely. (don’t be afraid, you need to practice)

Knead dough until smooth, adding more flour by TBSP. You will know. If you add 2 TBSP of flour and

dough is happy you can stop at that point. You don’t need to use all 1/8 cup of flour.

Transfer to prepared bowl and coat with olive oil. (or use the oil you have)

Cover bowl with tea towel and let dough rise in warm area until double in volume, about 60 min or 1 hour.

THE PIZZA TOPPINGS AND FUN

Flatten your dough ball with your hands and stretch out into a round or any shape that you like. (about 9 inches or 23 cm)

Brush dough top with organic olive oil.

The perfect layers of yum.
It can be made for lunch, dinner, lazy Sundays or the football season.
Super easy to make and very tasty.

Ingredients

  • 1 cup + 3/4 cup + 1/8 cup AP flour (almost 2 cups)
  • 1 tsp instant yeast
  • 2 Tbsp olive oil
  • 1 cup water (you will use 1/4 cup + 3/4 cup)
  • 1 tsp salt
  • 1/4 tsp sugar
  • THE TOPPINGS
  • mushrooms, grated mozzarella cheese, Oregano, Pierogi, Feta cheese

Instructions

    This is my favorite pizza dough. I made this recipe about billion times and will continue.

    So, let’s start.

    In a bowl, combine 1/4 cup of water, yeast and salt. Let stand for 5 min.

    Add 3/4 cup warm water, 2 TBSP olive oil, 1/4 tsp sugar.

    Mix all ingredients together using a metal spoon.

    Add 1 cup of flour and mix with a spoon.

    Then add 3/4 cup of flour and keep mixing

    until the spoon says: “Leave me alone your hard working bitch!”

    Trust me, you will hear it. At this point retire your spoon unless you want the conflict to escalate.

    Since I know you are kind and peaceful human being you will start using your hands at this point.

    Calmly and surely. (don’t be afraid, you need to practice)

    Knead dough until smooth, adding more flour by TBSP. You will know. If you add 2 TBSP of flour and

    dough is happy you can stop at that point. You don’t need to use all 1/8 cup of flour.

    Transfer to prepared bowl and coat with olive oil. (or use the oil you have)

    Cover bowl with tea towel and let dough rise in warm area until double in volume, about 60 min or 1 hour.

    THE PIZZA TOPPINGS AND FUN

    Flatten your dough ball with your hands and stretch out into a round or any shape that you like. (about 9 inches or 23 cm)

    Brush dough top with organic olive oil.

Yummy and so easy. Your 3 year old son can make his own pizza. It is fast and very kid friendly. The ingredients are super simple. So, if you are looking to make lunch with your whole “little family” this is your recipe.

  • pizza sauce
  • spinach
  • cheese
  • oregano

How to make English Muffin Pizzas

(recipe for 3 people)

Ingredients

3 English muffins, sliced down the center

6 TBSP pizza sauce

3/4 cup fresh spinach

1 cup grated cheese or more (I used Mozzarella cheese)

3 tsp oregano

1 TBSP olive oil

INSTRUCTIONS

Preheat oven to 400 F.

Line your baking sheet with aluminum foil.

Place the English muffins cut side up on a foil lined baking sheet.

Spoon 1 TBSP of pizza sauce over each muffin half.

Top with spinach and Mozzarella cheese.

IMPORTANT FOR THIS RECIPE

How much garlic to use?

I use 6 cloves of garlic. 2 for pizza sauce, 2 for mushrooms and 2 for spinach.

Be sure the garlic is minced. (if you or your kids don’t like the garlic)

Also if you are not afraid of garlic you can chop into larger pieces and sprinkle over your toppings.

What kind of pizza sauce did I use?

I use Catelli. BTW, you can use your favorite.

On our menu today I have recipe that is for all of you out there who work from 9 to 5.

You know who you are. Your favorite sentence is always “I don’t have time.”

So, we are going to make 3 lasagnas today, one to eat today and 2 to freeze for next week or weeks. (your choice)

ABOUT ZUCCHINI LASAGNA 9 x 5

This is classic comfort food dish.

The flavor is amazing and with the right amount of ricotta and cheese, it tastes like The Best Grandma’s Lasagna

or like “the real” lasagna.

You will make this recipe very often.

After all it is 5 star recipe.

IMPORTANT:

First of all, you will need 3 pans, size 9 x 5.

Line them with aluminum foil before assembling it. Set aside.

(This will help you lift the lasagna out of the dish once its frozen.)

Before we start making the best Zucchini Lasagna, let’s list all ingredients you need to have.

  • Zucchini
  • Spinach
  • Ricotta cheese
  • Parmesan cheese
  • Feta cheese
  • Mozzarella cheese
  • Marinara sauce
  • Catelli, fine herbs (640 ml)
  • Peppers (red or green)
  • Eggs
  • Garlic
  • Italian parsley
  • Oregano, black pepper salt
ZUCCHINI LASAGNA -5 star recipe
ZUCCHINI LASAGNA -5 star recipe

Making the best Zucchini Lasagna

Ingredients

6 large zucchini

Spinach, chopped (I use organic 1 lbs or 425 gr)

2 1/2 cups ricotta cheese

1 cup Parmesan cheese

2 1/2 cups mozzarella, grated

1/2 cup feta cheese

3 eggs (organic and large)

1/2 cup Italian parsley, chopped

3 red peppers, chopped

5 1/2 cups marinara sauce

1 jar Catelli, fine herbs (640 ml)

6 cloves garlic, chopped

1 TBSP oregano

Salt and black pepper to taste

Optional: carrots ( I like to use it)

INSTRUCTIONS

Slice your zucchini lengthwise into thinner slices because thinner slices mean less water.

Add lightly salt and let it sit for 15 minutes.

Then, just blot it dry with a paper towel.

Optional: Grill the zucchini for 2 minutes on each size. (I don’t because I don’t mind if zucchini is a bit watery)

Meanwhile add into a large saucepan marinara sauce, 1 jar Catelli-fine herbs (640 ml),

chopped Italian parsley, chopped red peppers, garlic, oregano, salt and pepper.

Bring to boil.

While your red sauce is heating, prepare ricotta filling.

Using a large bowl add the following ingredients:

ricotta cheese, feta and parmesan cheese, chopped spinach, eggs, salt and pepper.

Mix all ingredients. Set aside.

ASSEMBLE OF LASAGNA

Pour red sauce in the bottom of baking dish. (9 x 5)

Add single layer of sliced zucchini.

Spread with ricotta cheese filling and grated mozzarella.

Repeat the process. The last layer top with zucchini and red sauce.

Do the same steps for pan 2 and 3.

Bravo, you just made 3 zucchini lasagna.

Two of them will be frozen. See instruction below how to freeze.

Bake uncovered for about 35 minutes at 400 F.

Now, how to freeze lasagna?

FREEZING LASAGNA

EASY MASHED POTATOES WITH CABBAGE ROLLS

This is it. The best 5 star mashed potatoes from my kitchen to yours.

So easy and yummy.

The perfect addition to this amazing 5 day meal plan.

Now, are you ready to make it happen?

5 STAR MASHED POTATOES

Ingredients

6 medium potatoes (if large, cut in half)

salt and black pepper to taste

3 TBSP sour cream (14%)

Instructions

Place potatoes in a medium saucepan, cover with cold water and add sea salt.

IMPORTANT! Use cold water. (see note)

Bring everything to boil and cook for about 25 minutes or until potatoes are tender.

Your next step is to drain potatoes and transfer into medium bowl.

Using a potato masher or electric beater, slowly blend sour cream into potatoes until smooth and creamy.

Taste then add salt and pepper to your liking.

Serve with the easy cabbage rolls.

And this is your perfect meal for day 2.

Storage Mashed Potatoes

Keep in the fridge covered for up to 2 days.

NOTE

Never drop potatoes into boiling water. NEVER!

Always use cold water to cook potatoes.

WHY?

Because if you use boiling or hot water the outside of the potatoes will be cooked faster than the insides and

you will have unevenly cooked potato. If you keep boiling until fully cooked to the core, the outside will start to flake apart.

So, you are not going to win. The only way to have perfect cooked potatoes is to use COLD WATER.

ALSO VERY IMPORTANT

How to know if potatoes are cooked?

Use FORK!

If the fork slides easily all the way to the center, the potatoes are done.

Cheesy, spicy – ideal recipe for game watching parties.

Super easy to make and you need only a few ingredients.

One of them is my favorite tortilla chips – check the LINK.

So, lets make the best nachos – Cheese Diet Nachos.

How to make Cheese Diet Nachos?

Recipe for one person on diet

Ingredients

7 chips or 25 gr

1/3 cup cheese (use your favorite)

1 sliced tomatoes

Italian parsley (chopped)

feta cheese

basil pesto (homemade version – check the link)

sour cream

For 4 people

28 chips or 100 gr

1 1/3 cup cheese

tomatoes (as much as you like)

chopped Italian parsley

as much as you like feta cheese

homemade or store bought basil pesto

Serve with: sour cream or salsa

INSTRUCTIONS

Preheat oven to 350 F.

Line a baking sheet with aluminum foil or a silicone baking mat.

For 4 people spread chips over cooking sheet or per person spread 7 chips.

Sprinkle with grated cheese and basil pesto.

Bake at 350 F for 10 minutes. (or until cheese is melty)

Top with feta cheese, sliced tomatoes and parsley.

Easy Cabbage Rolls

Ingredients

2 large heads of sour cabbage (about 2.5 kg or 5 to 6 lbs)

900 gr or 2 lbs ground beef ( or use mix of ground pork and ground beef)

1 large onion, minced

1/2 cup brown rice, cleaned and washed

1 tsp ground black pepper, 1 tsp salt

can of crushed tomatoes (28 oz)

INSTRUCTIONS

Remove and separate cabbage leaves from head.

Cut the thick root on the back of the each leaf because of the easier folding.

Then, wash them in cold water or follow the notice below. (Please do not skip this step.)

Very Important: Immerse all cabbage leaves in cold water for 1/2 hour or longer because you need to wash off the salt so cabbage rolls are not too salty.

Prepare MEAT FILLING for Cabbage Rolls

Mix thoroughly ground beef meat, 1/2 cup brown rice, onion, 1 tsp salt and ground black pepper.

For this recipe use the biggest pot you have.

Cover the bottom with 6 to 7 cabbage leaves.

Your next step is to make cabbage rolls.

Take one by one cabbage leaf and on each put the meat filling, roll cabbage rolls and place them on top of cabbage leaves.

If you are wondering how much filling to use for each rolls…

I used about 1 TBSP for bigger rolls or 2 tsp for small rolls.

Repeat until all the filling has been used.

I made 30 cabbage rolls.

Your last step is to cover sour cabbage rolls with remaining cabbage leaves.

Pour the cold water above the rolls.

Again, be sure the rolls are covered with water.

At the beginning cook on a high temperature until water boils.

Then continue cooking at medium temperature for about 3 hours.

IMPORTANT: DURING THE COOKING OF 3 HOURS KEEP ADDING THE HOT WATER, so cabbage rolls

are always covered with liquid.

After 3 hours add 28 oz can of crushed tomatoes and 1 TBSP of salt. (you can add less or more salt, taste to your liking).

Continue cooking for another 15 min…and then remove from heat.
