And how can you not when 5 star cookies is sharing this amazing and easy recipe that I modify from Lindsay Czarniak.

Yummy and so easy. Your 3 year old son can make his own pizza. It is fast and very kid friendly. The ingredients are super simple. So, if you are looking to make lunch with your whole “little family” this is your recipe.

And I will say again: Very yummy, very quick and so simple when you need something fast.

  • English muffins
  • pizza sauce
  • spinach
  • cheese
  • oregano
  • olive oil

How to make English Muffin Pizzas

(recipe for 3 people)

Ingredients

3 English muffins, sliced down the center

6 TBSP pizza sauce

3/4 cup fresh spinach

1 cup grated cheese or more (I used Mozzarella cheese)

3 tsp oregano

1 TBSP olive oil

INSTRUCTIONS

Preheat oven to 400 F.

Line your baking sheet with aluminum foil.

Place the English muffins cut side up on a foil lined baking sheet.

Spoon 1 TBSP of pizza sauce over each muffin half.

Top with spinach and Mozzarella cheese.

Sprinkle with oregano and olive oil.

Bake at 400 F for 9 minutes. Cool for 5 minutes.

Serve with my favorite Healthy Homemade Salad

Your 3 year old son can make his own pizza. It is fast and very kid friendly.

Hello baking nation,

I am not going to talk about you or me or any of us in this moment.

All I want to talk is this LOVE called Garlic Spinach Pizza.

Yes, even if life is not the most certain in this moment and we are moving towards “new inside life” I need to share this recipe. It will bring you so much happiness. And JOY! Call me crazy, but JOY is all we need.

Or maybe I should called Dostoevski who said: “Beauty will save the world.”

Of course, it will. That is why I am here. Make me now! – says Garlic Spinach Pizza.

Since arguing with food is not an optional and rational thought yet, I suggest we move into the action mode and make it happen.

SHOPPING LIST

For this recipe you need simple ingredients:

  • flour
  • spinach
  • cheese
  • mushrooms
  • Dr. GARLIC
  • yeast
  • salt, sugar
  • Oregano
  • oil

How to make Garlic Spinach Pizza?

Ingredients

1 cup + 3/4 cup  + 1/8 cup AP flour (almost 2 cups)

1 tsp instant yeast

2 Tbsp olive oil

1 cup water (you will use 1/4 cup + 3/4 cup)

1 tsp salt

1/4 tsp sugar

THE TOPPINGS

mushrooms, spinach, grated cheese, garlic, Oregano

INSTRUCTIONS

This is my favorite pizza dough. I made this recipe about billion times and will continue.

So, let’s start.

In a bowl, combine 1/4 cup of water, yeast and salt. Let stand for 5 min.

Add 3/4 cup warm water, 2 TBSP olive oil, 1/4 tsp sugar.

Mix all ingredients together using a metal spoon.

Add 1 cup of flour and mix with a spoon.

Then add 3/4 cup of flour and keep mixing

until the spoon says: “Leave me alone your hard working bitch!”

Trust me, you will hear it. At this point retire your spoon unless you want the conflict to escalate.

Since I know you are kind and peaceful human being you will start using your hands at this point.

Calmly and surely. (don’t be afraid, you need to practice)

Knead dough until smooth, adding more flour by TBSP. You will know. If you add 2 TBSP of flour and

dough is happy you can stop at that point. You don’t need to use all 1/8 cup of flour.

Transfer to prepared bowl and coat with olive oil. (or oil you have)

Cover bowl with tea towel and let dough rise in warm area until double in volume, about 60 min or 1 hour.

THE PIZZA TOPPINGS AND FUN

Flatten your dough ball with your hands and stretch out into a round or any shape that you like. (about 9 inches or 23 cm)

Brush dough top with organic olive oil.

Spread the pizza sauce all over the top of pizza. Then top your pizza sauce with minced garlic.

After that add toppings: mushrooms topped with garlic, spinach + garlic and finish with grated cheese.

To finish sprinkle olive oil and add generous amount of dry oregano.

Bake at 400 F for about 25 minutes or until done.

IMPORTANT FOR THIS RECIPE

How much garlic to use?

I use 6 cloves of garlic. 2 for pizza sauce, 2 for mushrooms and 2 for spinach.

Be sure the garlic is minced. (if you or your kids don’t like the garlic)

Also if you are not afraid of garlic you can chop into larger pieces and sprinkle over your toppings.

What kind of pizza sauce did I use?

I use Catelli. BTW, you can use your favorite.

15 garlic cloves or about 1/3 cup

1/8 tsp salt

1/2 cup olive oil

1 slice of whole wheat bread

1/2 cup of walnuts

Italian Parsley, minced

Using a food processor, blend garlic, salt and olive oil.

Add walnuts, slice of bread and mix until all ingredients are incorporated.

Transfer into a plate or cup, add as much as you like fresh Italian parsley and stir.

1 cup white chocolate chips or chocolate, melted

Toppings:

M&M, Reese’s peanut butter cusp, Oh Henry chocolate, Oreo cookies, Kit Kat chocolates ….

INSTRUCTIONS

Line baking sheet or pizza pan with parchment paper and spray with baking spray. Set aside.

Using a medium pot, melt chocolate chips, corn syrup and peanut butter over a medium heat. Stir constantly.

Remove from heat and add oats and chopped peanuts.

Spread eat more crust evenly onto a well greased baking sheet. (9 inch diameter round)

Let it cool.

Using a double boiler method, melt white chocolate chips.

Spread melted chocolate over the eat more base, leaving a 1 inch or 2.5 cm border around the edge.

Top with chopped Reese’s peanut butter cups, Oh Henry chocolate, Oreo cookies, M&M and so on….

Transfer to the fridge for about 1/2 hour.

Cut into slices and serve.

  • Spinach
  • red pepper
  • eggs
  • milk (2%)
  • small onion
  • garlic
  • Mozzarella cheese
  • flour
  • salt, pepper

ACTION TIME

How to make Healthy Baked Spinach

Ingredients

Large package of fresh Spinach (454 gr) – Check the link

1 cup shredded Mozzarella cheese

1 large red pepper, chopped

3 eggs (large, organic)

1 cup milk (2%)

1/3 cup flour (AP)

1 tsp baking powder

1 1/4 tsp salt

1 tsp black pepper

1 small onion, finely chopped

3 cloves of garlic, chopped

INSTRUCTIONS

Preheat oven to 350 F.

Spray 9 x 13 glass pan with baking spray.

In a small bowl combine flour, baking powder, salt and pepper. Set aside.

Chop spinach by cutting them in small pieces and transfer into a large bowl.

Add shredded Mozzarella cheese, eggs, milk, chopped pepper, onion and garlic.

For your last step add flour mixture and stir until all ingredients are combined.

Transfer into prepared baking glass pan.

Bake at 350 F for 35 minutes or until set.

Remove from oven.

Optional: Top with yogurt or sour cream.

Let cool for 15 minutes, slice into squares.

Healthy Baked Spinach - I Am Enough

If you crave a meal without meat ... it is your lucky day. We have recipe for you.
Healthy Baked Spinach!
It is simple to make and so tasty. It can be served for breakfast or Sunday brunch.
I will repeat, simple yet special.

Ingredients

  • Large package of fresh Spinach (454 gr) -
  • 1 cup shredded Mozzarella cheese
  • 1 large red pepper, chopped
  • 3 eggs (large, organic)
  • 1 cup milk (2%)
  • 1/3 cup flour (AP)
  • 1 tsp baking powder
  • 1 1/4 tsp salt
  • 1 tsp black pepper
  • 1 small onion, finely chopped
  • 3 cloves of garlic, chopped

Instructions

    Spray 9 x 13 glass pan with baking spray.

    In a small bowl combine flour, baking powder, salt and pepper. Set aside.

    Chop spinach by cutting them in small pieces and transfer into a large bowl.

    Add shredded Mozzarella cheese, eggs, milk, chopped pepper, onion and garlic.

    For your last step add flour mixture and stir until all ingredients are combined.

    Transfer into prepared baking glass pan.

    Bake at 350 F for 35 minutes or until set.

    Remove from oven.

    Optional: Top with yogurt or sour cream.

    Let cool for 15 minutes, slice into squares.

    Enjoy and share.

Notes

Serve with organic yogurt.

IMPORTANT NOTES

  • Use organic eggs
  • Spinach must be fresh and organic (organic if you can)
  • If you don’t like onions don’t use it
  • Serve with plain yogurt
  • You will need extra large bowl to mix all ingredients

STORAGE

Store in the fridge for 2 days.

You had me at hello is really … you had me at Chocolate Lindor Tart.

Yes, ladies and gentlemen this is your chocolate heaven recipe.

And to top that…let’s pause for a moment. It is also healthy. (maybe not 100 % but who wants perfection … it is not healthy for you).

The base of this recipe is fantastic for you – walnuts and dates.

For the filling you can use dark chocolate (70% and more) or you can use semi sweet chocolate.

It is your choice.

Your last step is the “magic Lindor hello” called Lindor chocolate truffles. I used white chocolate truffles. (love, love them)

Before we start making this amazing chocolate recipe be sure to have the following ingredients:

  • walnuts
  • dates
  • heavy cream
  • chocolate chips or chocolate (semi sweet or dark)

Making Chocolate Lindor Tart

Ingredients

2 1/4 cups walnuts

1 1/3 cup dates

Chocolate Filling

1 1/2 cup heavy cream

3 cups chocolate chips

15 Lindor truffles (12 for recipe, 3 for YOU)

INSTRUCTIONS

Optional: Line a tart pan with plastic wrap. Set aside.

For Crust:

Add walnuts and dates to your food processor.

Let’s the magic happen or pulse until the crust is crumbly and hold together when pinched.

Press into a tart pan. I used 13 3/4 x 4 3/8 or 35 x 11 cm. (check the link)

Cover with foil and transfer to a freezer for 3 hours.

Chocolate Filling

In a medium saucepan, heat the heavy cream until almost boiled. (you will see tiny bubbles around the edges of the saucepan)

Remove from heat and pour over chocolate chips.

Start daydreaming for 3 minutes then start stirring until the cream and chocolate is blended and smooth.

Pour the filling over the walnut/date crust and return to fridge. (for about 1/2 hour or until is cooled)

Important: You will have some extra chocolate filling.

After that top with Lindor chocolate truffles.

Optional: Decorate with grounded walnuts, icing sugar or sprinkles.

Return to fridge for a few hours or overnight.

Hello my dear readers,

It is Sunday, February 23 of 2020.

On our menu today I have recipe that is for all of you out there who work from 9 to 5.

You know who you are. Your favorite sentence is always “I don’t have time.”

So, we are going to make 3 lasagnas today, one to eat today and 2 to freeze for next week or weeks. (your choice)

ABOUT ZUCCHINI LASAGNA 9 x 5

This is classic comfort food dish.

The flavor is amazing and with the right amount of ricotta and cheese, it tastes like The Best Grandma’s Lasagna

or like “the real” lasagna.

You will make this recipe very often.

After all it is 5 star recipe.

IMPORTANT:

First of all, you will need 3 pans, size 9 x 5.

Line them with aluminum foil before assembling it. Set aside.

(This will help you lift the lasagna out of the dish once its frozen.)

Before we start making the best Zucchini Lasagna, let’s list all ingredients you need to have.

  • Zucchini
  • Spinach
  • Ricotta cheese
  • Parmesan cheese
  • Feta cheese
  • Mozzarella cheese
  • Marinara sauce
  • Catelli, fine herbs (640 ml)
  • Peppers (red or green)
  • Eggs
  • Garlic
  • Italian parsley
  • Oregano, black pepper salt

Making the best Zucchini Lasagna

Ingredients

6 large zucchini

Spinach, chopped (I use organic 1 lbs or 425 gr)

2 1/2 cups ricotta cheese

1 cup Parmesan cheese

2 1/2 cups mozzarella, grated

1/2 cup feta cheese

3 eggs (organic and large)

1/2 cup Italian parsley, chopped

3 red peppers, chopped

5 1/2 cups marinara sauce

1 jar Catelli, fine herbs (640 ml)

6 cloves garlic, chopped

1 TBSP oregano

Salt and black pepper to taste

Optional: carrots ( I like to use it)

INSTRUCTIONS

Slice your zucchini lengthwise into thinner slices because thinner slices mean less water.

Add lightly salt and let it sit for 15 minutes.

Then, just blot it dry with a paper towel.

Optional: Grill the zucchini for 2 minutes on each size. (I don’t because I don’t mind if zucchini is a bit watery)

Meanwhile add into a large saucepan marinara sauce, 1 jar Catelli-fine herbs (640 ml),

chopped Italian parsley, chopped red peppers, garlic, oregano, salt and pepper.

Bring to boil.

While your red sauce is heating, prepare ricotta filling.

Using a large bowl add the following ingredients:

ricotta cheese, feta and parmesan cheese, chopped spinach, eggs, salt and pepper.

Mix all ingredients. Set aside.

ASSEMBLE OF LASAGNA

Pour red sauce in the bottom of baking dish. (9 x 5)

Add single layer of sliced zucchini.

Spread with ricotta cheese filling and grated mozzarella.

Repeat the process. The last layer top with zucchini and red sauce.

Do the same steps for pan 2 and 3.

Bravo, you just made 3 zucchini lasagna.

Two of them will be frozen. See instruction below how to freeze.

Bake uncovered for about 35 minutes at 400 F.

Now, how to freeze lasagna?

FREEZING LASAGNA

Cover 9 x 5 pan with foil and freeze overnight.

Then remove lasagna with the aluminum base out of baking dish, fold foil over lasagna.

Wrap in additional foil, making sure it is tightly sealed. (it is important to keep out the air)

Optional: Also, you can placed tightly sealed lasagna in the large zip bag.

Freeze for 4 weeks.

Important: Label lasagna with the date.

How do I bake the frozen lasagna?

I bake it straight from the freezer at 400 F for about 55 minutes.
