Roll Cake

Ingredients

6 large eggs (organic)

3/4 cup sugar

1 cup flour (AP)

1 TBSP cocoa

1 tsp baking powder

1/8 tsp salt

INSTRUCTIONS

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

Sift the flour, cocoa, baking powder and salt.

Add into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Bake at 350 for 15 minutes.

Cool completely. (for about 2 hours)

While cake is cooling, you are going to make Cheese filling.

Cheese Filling

-8 oz cheese, room temperature

-1 1/2 cup icing sugar

-1 1/3 cup heavy cream

-1 tsp vanilla extract

In a large bowl mix cheese and sugar.

Add 1 tsp vanilla.

In another bowl whip 1 1/3 cup whip cream.

Fold the whipped cream into cheese/sugar mixture.

Keep it in the fridge until ready for use.

WHEN YOUR CAKE IS COOLED…

Place the cheese filling by large spoonfuls all over cake.

Spread the cheese filling evenly.

Roll the cake into a log, wrap in foil and store in the freezer. (preferably overnight)

NEXT DAY – MAKE NUTELLA FILLING

Nutella Filling

2 2/3 cups Nutella

2/3 cup heavy cream

1/2 tsp rum

Mix heavy cream for about 3 minutes on high speed.

Add 2 2/3 cups Nutella and mix until incorporated. (about 2 to 3 minutes)

Your last step is to add rum and mix for a second.

ASSEMBLE

Line 9×9 pan with aluminum foil. (don’t spray)

Take our roll cake from the freezer and cut into slices with a sharp knife. (1 inch or 2.5 cm)

Cover the bottom of the pan with slices of roll cake. (you will use half of the roll cake)

Add Nutella filling.

Your next step is to place 5 croissants.

Lightly press them into the Nutella filling.

Let it rest on the counter until you make chocolate ganache.

2 cups chocolate chips

1 cup heavy cream

Place chocolate chips into a medium size bowl. Set aside.

Heat the cream until almost boiled.

Pour the hot cream over chocolate chips.

Wait for 1 minute and then whisk until smooth.

Pour hot mixture over 5 croissants.

Transfer into the fridge for a few hours or until chocolate ganache is set.

Cut into desired sizes.

Decorate with whip cream and shaved chocolate.

In a small bowl boil water and sugar for a few minutes.

Remove from heat and add rum or vanilla.

Let it cool for 5 minutes.

Your next step is to add sugar/water mixture to the cookie crumbs mixture.

Mix all ingredients together using spoon.

(If the mixture is dry add more warm water.)

Lay plastic wrap on baking sheet or counter.

Place the dough in the middle and roll to desired size.

Mine was 15×10.

Instructions

    First step is to make cheese filling.

    Mix cream cheese and icing sugar until smooth.

    Add heavy cream and mix for a few minutes.

    Cover with plastic wrap and store in the fridge.

    Add chocolate chip cookies into the food processor and pulse until you get fine texture.

    Transfer cookie crumbs into large bowl and add 3 TBSP cocoa. Mix it and set aside.

Using a double boiler method melt butter and chocolate until smooth.

Add 1 TBSP of vanilla and mix until incorporated.

Use 12×16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

In another bowl sift the flour, cocoa, baking powder and salt.

Add into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour/cocoa mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Bake at 350 for 15 minutes.

Cool completely. (for about 2 hours)

2 1/3 cups Nutella

2/3 cup heavy cream

1 cup chocolate chips melted, cooled

Mix heavy cream for about 3 minutes on high speed.

Add 2 2/3 cups Nutella, melted chocolate and mix until incorporated. (about 2 to 3 minutes)

When your cake is cooled spread the Nutella filling evenly.

Roll the cake into a log, cover with plastic wrap and keep in the freezer. (for at least 1 hour)

cheese filling (ever). No discussion about it.

Should I mention the icing on the cake?

Of course I should.

It is the best chocolate icing with only two ingredients…or 3 if you decide to add “alcohol”.

After all, Thanksgiving can be very stressful family event…(wink…wink…)

So, let’s make the best cake to impress your family and friends.

ACTION TIME

How to make Pumpkin Chocolate Bombes?

Ingredients

4 eggs (organic and room temperature)

1 3/4 cups pumpkin puree

1 cup oil

1 and 2/3 cups regular sugar

2 cups flour (all purpose)

1 TBSP cinnamon

3 TBSP espresso powder

1/2 tsp nutmeg

2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

Cheese Filling

8 oz cream cheese

1 1/2 cups heavy cream

1 cup icing sugar

1/2 tsp pure vanilla extract

3/4 cup crumbled pumpkin cake

Chocolate Icing

6 oz chocolate

1 TBSP oil

Optional: 1 TBSP rum/brandy

INSTRUCTIONS

Preheat oven to 350 F.

Line 12×17 inch baking sheet pan with aluminum foil.

Spray with baking spray and set aside.

Dry ingredients: To a medium bowl add the following ingredients:

Flour, cinnamon, baking powder, baking soda, nutmeg, espresso powder and salt.

Mix all of them together and set aside.

In a large mixing bowl add eggs, sugar, pumpkin puree and oil.

Mix all ingredient together until smooth.

Add flour mixture and mix until incorporated.

Pour into baking sheet and bake at 350 F for about 21 minutes.

Cool it.

Cheese Filling

In a large bowl mix cheese and sugar.

Add vanilla.

In another bowl whip 1 1/2 cup whip cream.

Fold the whipped cream into cheese/sugar mixture.

Add crumbled pumpkin cake into it and mix all ingredients.

Add ground pumpkin cake into it and mix all ingredients.
Add ground pumpkin cake into it and mix all ingredients.

Keep it in the fridge until ready for use.

Assemble the bombes

You will need two silicone bombe molds for this recipe.

Turn the cake out onto a cutting board.

Use round cookie cutter and cut 12 circles from pumpkin cake.

You will have extra cake. Crumble some pumpkin cake to get 3/4 cup.

You will use it for the best cheese filling.

Reserve the remaining cake for Pumpkin Cheese Nutella Trifle-Leftovers Life

Scoop about 1/4 cup of cheese filling into each mold.

Press a cake circle into each mold.

Cover with plastic wrap and freeze overnight.

NEXT DAY

Unmold the frozen bombes and cover with chocolate icing.

Decorate with pumpkin candy, whip cream or shaved chocolate.

Chocolate Icing

Using a double boiler method melt the chocolate and oil.

If you wish you can add rum or brandy to melted chocolate.

Ingredients
