Ingredients

9 oz chocolate, chopped (semi-sweet)

1 2/3 cups heavy cream

1/2 cup milk

1 1/2 TBSP sugar

6 egg yolks

1/4 cup grounded hazelnuts

1 TBSP hazelnut extract

INSTRUCTIONS

You will need 7 ramekins for this recipe.

Place them in a roasting pan or baking dish. Set aside.

PREHEAT OVEN TO 350 F.

Heat the cream and milk in a medium saucepan until almost boiling.

Remove from heat and pour over chopped chocolate.

Stir until smooth. Add hazelnut extract.

In a medium bowl, whisk 6 eggs yolks.

After that add sugar and keep whisking until incorporated.

Your next step is very important:

GRADUALLY add the melted chocolate while whisking.

Please don’t rush this step. You don’t want to scare egg yolks.

I will repeat, gradually add the melted chocolate and whisk until all ingredients are incorporated

and they are part of this happy chocolate life.

Your last step is to add grounded hazelnut. Stir until well blended.

Now, divide this chocolate mixture among 7 ramekins.

How to make the best butter tart cookies?

INGREDIENTS

2/3 cup butter, unsalted and room temperature

1/2 cup icing sugar

2 egg yolks

1 tsp vanilla extract

1 3/4 cups flour, all purpose

1/8 tsp salt

OPTIONAL: walnuts, raisins, pecans, melted chocolate

BUTTER TARTS FILLING

3 eggs

1 cup brown sugar

1/4 cup corn syrup

1/2 tsp vanilla extract

INSTRUCTIONS for Butter Tart Cookies

Line baking tray with parchment paper or use silicone baking mat.

Set aside.

Beat butter and sugar until smooth.

Add egg yolks and vanilla extract. Mix for about 1 minute.

Add flour,salt and stir until blended.

Divide dough into 2 portions, wrap in plastic wrap and refrigerate for a few hours or overnight.

Mix all ingredients in stand mixer until light and fluffy. Set aside.

Roll dough to 1/4 inch thickness.

Cut using 2 1/4 inch cookie cutter. Cut 10 cookies or as many as you can from your first dough.

Now, use your second portion of dough and roll to 1/4 inch thickness.

Use same round cookie cutter and cut out rounds.

Now use the smaller cookie cutter (about 2 inches) and cut out the centers of the each cookie.

(it looks like donut shaped cookie).

If you don’t have smaller cookie cutter, use smaller glass.

Stack the donut shaped cookie (the ones with the holes) on top of other cookies (from first portion of dough).

Do your best to make them look unified.

Return to freezer for about 30 minutes.

This is important, so I will repeat again:

Only for second portion of the dough you will cut out the center of each cookie.

Preheat oven to 350 F.

Remove baking tray from freezer, and spoon 1 tsp of butter tart filling into the center of each cookie.

THE BEST CRANBERRY CHOCOLATE ROLL CAKE

Ingredients

6 large eggs (organic)

3/4 cup sugar

1 cup flour (AP)

1 tsp baking powder

1/8 tsp salt

1 tsp cornstarch

Cranberry Filling

3 cups fresh cranberries (I used organic)

3/4 + 1/8 cup sugar

1 tsp gelatin powder

1 cup cold cranberry juice (2 TBSP for gelatin powder and the rest for cooking)

Cheese Filling:

8 oz cheese, room temperature

1 3/4 cup icing sugar

1 1/4 cup heavy cream

1/2 tsp vanilla extract

Chocolate Ganache

1 1/3 cup chocolate chips

3/4 cup heavy cream

Decoration: sprinkles, cranberries, icing sugar…

INSTRUCTIONS

Use 12Ă—16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

In a large bowl beat 6 eggs and 3/4 cup sugar until triples in volume. (9 minutes)

Sift the flour, cornstarch, baking powder and salt.

Add into eggs mixture and fold gently using a spatula.

Important: Don’t use mixer when adding flour mixture.

Fold using a spatula.

Be sure that flour mixture is incorporated into eggs mixture.

Spread the batter on the prepared jelly roll pan.

Bake at 350 for 15 minutes.

Cool completely.

Use small cup and add 1 tsp gelatin powder.

Sprinkle 2 TBSP cranberry juice over gelatin and let it bloom for 5 minutes.

Meanwhile, find small or medium size pot and add fresh cranberries, sugar and the remaining cranberry juice.

Bring to boil.

Boil for about 7 minutes on medium heat, stirring constantly until thickened.

Remove from the heat and stir in the gelatin mixture.

Transfer to a 4 cup measuring glass, cover and let it cool.

Refrigerate for 1 hour.

MAKING CHEESE FILLING

In a large bowl mix cheese and sugar.

Add vanilla.

In another bowl whip 1 1/4 cup heavy (33%) cream.

Fold the whipped cream into cheese/sugar mixture.

Keep it in the fridge until ready for use.

ROLL CAKE ASSEMBLY

Place you cooled cake on the kitchen table or counter.

Spread the cranberry filling evenly over the cake. (the best you can)

After that, put dollops of cream cheese filling and carefully spread over the jam.

Roll up the cake.

Store covered in the freezer for a few hours or overnight.

Next Day

Add chocolate chips into a small glass.

Bring heavy cream to a simmer and pour over chocolate chips.

Don’t mix for 3 minutes.

After 3 minutes, stir using a spatula or metal spoon.

Stir until chocolate is melted and smooth.

CHESTNUT FILLING

314 gr chestnut puree or 1 jar Raureni

1 1/3 cup heavy cream

1 bag or 7 gr Knox gelatine

2 tsp rum

1/2 cup icing sugar

DECORATION

1 cup heavy cream

Optional: white chocolate, semi-sweet chocolate, pink chocolate…

Making the cake:

Use 12Ă—16 inch jelly roll pan, line with aluminum foil (dull side up).

Spray with baking spray and set aside.

Preheat oven to 350 F.

Using the double boiler method melt chocolate. (dark, white and pink)

Get your mold and start making your dream houses.

To help you, for each house I used 1 cup of melted chocolate.

The color is your choice.

I like dark base with pink roof.

Also, I always wanted pink house. So, I did it.

So pour melted chocolate into each mold until you have 6 houses done.

Then carefully transfer into the freezer and leave for a few hours or overnight.

Next Day

Remove your chocolate houses from the mold.

Be careful. If it breaks, use Nutella or jam to seal it.

Enjoy and share.

And like every builder, I wanted to build special house.

Swirl around until chocolate is covering all the walls of the house.

After that start adding popcorn into the mold.

From time to time cover popcorn with more chocolate.

Keep adding popcorn until house is almost full.

Finish with melted chocolate.

Now, it is your turn.

Start making 6 different chocolate houses for you and your family.

  • 3 cups semi-sweet chocolate
  • 1 1/2 cups white chocolate
  • 1 1/2 cups pin chocolate

IMPORTANT: For each house I used about 1 cup melted chocolate.

So, if you want all houses to be dark , melt 6 cups semi-sweet chocolate.

If you want 3 pink and 3 white, melt 3 cups pink chocolate and 3 cups white chocolate.

Also, important if you don't have pink chocolate, just melt white chocolate and add pink food color.

IMPORTANT NOTICE FOR THIS RECIPE:
