MAKING YOGURT ITALIAN PARSLEY DIP


Ingredients

1 1/2 cups Greek Yogurt (organic if you can)

1 large cucumber, peeled and diced (about 2 cups)

1/4 cup fresh Italian parsley (minced)

3 cloves garlic, minced

1 tsp lemon juice

1/4 tsp black pepper

1/4 tsp salt

1/4 tsp oregano

Instructions

In a medium bowl, combine Greek yogurt, diced cucumber, parsley, garlic,

lemon juice, salt, pepper and oregano.

Refrigerate for 1/2 hour.

Serve with vegetables or pita.

My choice for today: French fries

The recipe is super simple and easy.

So if you want to make healthy, light and easy recipe this is for YOU!

Shopping List

  • red potato
  • olive oil, Italian parsley
  • paprika, oregano, salt and pepper

ACTION TIME

Making …. Oven baked French Fries

Ingredients

5 red potatoes (you will get about 4 cups cut potatoes)

1/4 cup extra virgin olive oil

2 tsp paprika

1 TBSP fresh Italian parsley

1/2 tsp salt

1/4 tsp black pepper

1 tsp oregano

Instructions

Preheat oven to 425 F.

Cover a baking sheet with aluminum foil and spray with nonstick cook spray.

Place in the oven.

Peel the potatoes and cut them into lengths about 1/4 inch square using a knife.

Place the cut potatoes into a large bowl filled with cold water.

Swirl the potatoes.

Drain and repeat.

Dry potatoes using a paper towels.

In another bowl combine olive oil, paprika, parsley, oregano, salt and black pepper.

Add potatoes to olive oil mixture and toss to coat.

Remove the hot baking sheet from the oven and dump potatoes onto the sheet.

Spread in a single layer.

Return to the oven and bake for 30 minutes at 425 F.

After 15 minutes stir the potatoes and keep baking until fully baked.

Serve with ketchup, Greek yogurt, feta cheese.
