DESCRIPTION OF Walnut Chocolate Torte Recipe

This is the best chocolate dessert you will ever make. The cake base is made of eggs, sugar and walnuts.

To the cake base you will add the most delicious filling full of creamy dreams. And there will be two of them. Sunshine and chocolate. BTW, the filling is very easy to make. It is the vanilla pudding made with chocolate and more chocolate. If they say the proof is in the pudding … I agree. In this case literally.

To make this dessert you will need to buy the following ingredients…

  • eggs
  • sugar
  • flour
  • walnuts
  • baking powder
  • heavy cream
  • Dr. Oetker Vanilla pudding
  • milk
  • corn starch
  • butter
  • semi-sweet chocolate (or dark chocolate)
  • chocolate bananas (or Lindt white chocolate)

EQUIPMENT NEEDED

-KitchenAid Mixer (or any mixer you have and like)

-round baking pan (8 or 9 inches)

-mixing bowl

-3 medium size bowls (1 for yellow filling, 1 for chocolate and 1 for heavy cream)

-small sauce pan (to melt chocolate)

Making Walnut Chocolate Torte Recipe

Ingredients

Cake Base

3 eggs (large size)

3 TBSP sugar

1 TBSP + 1 tsp flour (all purpose, unbleached)

6 TBSP walnuts, ground

1/2 tsp baking powder (no aluminum)

Chocolate Filling

4 cups of milk

1 cup sugar

3 egg yolks

2 DR. Oetker Vanilla Pudding

3 TBSP corn starch

1/3 cup flour, all purpose

6 oz chocolate (semi sweet or dark)

3/4 cup chopped chocolate bananas (or Lindt white chocolate)

1 cup butter, unsalted

1 1/4 cup heavy cream

Optional: Whip It

3 Layer

2 1/3 cup heavy cream

Whip It

Decoration: shaved chocolate and walnuts

INSTRUCTIONS for the best Chocolate Torte

Line baking pan with parchment paper. Don’t spray.

Preheat oven to 375 F.

To a small bowl add flour, baking powder and ground walnuts. Stir and set aside.

Add eggs and sugar to the mixing bowl.

Mix until triple in volume. (6 to 7 minutes).

Stop the mixer and stir in the flour / walnut mixture.

Be sure that walnuts and flour is incorporated into the eggs mixture.

Pour into the baking pan.

Bake until done. For me it was 12 minutes.

When baked remove from the oven and let it cool.

Important:

At this point you can cool the cake, remove from the baking pan and place into the freezer. You can keep it in the freezer for a few days or until you are ready to make the chocolate fillings.

HOW TO MAKE CHOCOLATE FILLING?

(There will be 2 filling made from one base filling.)

To the mixing bowl add 3 eggs yolks and sugar. Mix for about 3 minutes.

Then add 2 Dr. Oetker Vanilla pudding, flour, corn starch and 1 cup milk. (room temperature).

Mix until all ingredients are incorporated. (another minute or two)

Meanwhile, add 3 cups of the cold milk into the large pot.

Bring the milk to a boil. Remove from heat and stir in the egg/pudding mixture.

Return to heat and stir non stop for about 3 minutes or until thickness.

Remove from the heat, transfer to the mixing bowl, cover with the plastic wrap and let it cool.

What ELSE you will have to do to finish this filling:(don’t be scared, it is very easy)

melt the chocolate

chop the chocolate bananas or white chocolate

whip 1 1/4 cup of the the heavy cream

beat the butter

mix the cooled filling with beaten butter, then add whipped heavy cream. Mix everything together.

divide the filling into 2 equal parts.

1 part – add melted chocolate

2 part – add chopped bananas or white Lindt chocolate

Now, back to the recipe.

MAKING CHOCOLATE FILLING PART 2

Divide the filling into two bows. To the first one add melted chocolate and to the second one the chopped chocolate bananas or white chocolate.

Meanwhile, melt the chocolate using the double boiler method.

Remove the chocolate from the heat and let it cool.

Chop the chocolate bananas or white chocolate to small pieces. I used 6 chocolate bananas.

Add the butter room temperature to the mixing bowl and mix until smooth. Set aside.

Whip the heavy cream and whip it (if using) until medium to stiff peaks form.

When your yellow pudding is cooled, add the butter and mix until incorporated.

Then add whipped heavy cream and just quickly mix.

Then divide the whole cream between two bowls.

To the first bowl add melted semi sweet or dark chocolate and mix.You just make the chocolate filling.

Now, you are ready for sunshine filling.

To the second bowl add the chopped chocolate bananas or white chocolate. Stir until incorporated. And you are almost done.

Your next step is…

Assemble of the chocolate cake

Using the same 8 inch removable pan start building the cake. (or 9 inch if you bake the cake in 9 inch pan)

Place the cake base into the pan of your choice.

Then add chocolate filling + yellow sunshine filling

Cover and transfer to the fridge or freezer for a few hours.

Whip heavy cream and whip it.

Remove the cake from the freezer and add the 3 layer of heavy cream.

Decorate with shaved chocolate and walnuts.

Quick Note Chocolate Torte Recipe

Chocolate bananas – you can buy online or you can check mini markets or store from Europe in your area. If you can’t find, please use chopped white chocolate. It can be Lindt or Milka White chocolate.

Vanilla pudding – YOU CAN’T USE INSTANT. It has to be Dr. Oetker.

Milk – use 2% or higher

Butter – use unsalted, good quality butter. Be sure it is at room temperature.

Heavy cream – I used 33%.
