  • eggs
  • walnuts
  • sugar
  • chocolate
  • butter
  • pure vanilla extract
  • flour
  • heavy cream (optional)

QUIPMENT NEEDED

-your favorite mixer (I like to use KitchenAid)

-mixing bowl

-baking sheet (11 by 17 inches)

Reform Torta Easy Chocolate Recipe for you

MAKING Reform Torta Easy Chocolate Dessert

Ingredients

8 egg whites

8 TBSP sugar

1 TBSP flour, all purpose and unbleached

14 TBSP grounded walnuts

Chocolate Filling

8 egg yolks

8 TBSP sugar

2 oz chocolate, chopped

2/3 cup butter

1 tsp vanilla extract

Decoration:

2 cups heavy cream

1 Whip It (optional)

INSTRUCTIONS FOR Reform CAKE

Line an 11×17 sheet pan with parchment paper. (don’t spray with baking spry)

Preheat oven to 375 F.

In a small bowl add flour and grounded walnuts. Set aside.

Beat egg whites while slowly adding the sugar. (add sugar by TBSP, S-L-O-W-L-Y)

Eggs whites should be beaten until stiff peaks.

Then stop the mixer and carefully fold in the mixture of flour and ground walnuts.

Be sure walnuts and flour are incorporated into egg white mixture.

Pour the batter into prepared baking sheet.

Bake at 375 F for about 12 minutes or until done.

Remove from the oven and cool.

When you are ready to assembly, cut the cake into 3 equal peaces. (5 by 11)

Chocolate Filling for Reform Torte

Very quickly mix the egg yolks and sugar. (just for a minute)

Then using a double boiler method cook the yolks and sugar on a medium heat for about 10 minutes or until thickens up. (for some people 15 minutes or shorter)

Stir constantly until yolks thickens up.

Then add the chopped chocolate and stir until melted.

Take of the heat, add vanilla and cool it.

In a mixing bowl mix the butter.

Then add the half of cooled chocolate mixture.

Mix everything and then add the rest of chocolate mixture.

Again mix until the chocolate filling is smooth.

Ok, you just made the best chocolate filling.

IMPORTANT for double boiler method: First let water boil for the bottom pot and then add the top pot with mixture of egg yolks and sugar.

ASSEMBLY OF THE REFORM TORTA

Lay first piece, cover with chocolate filling.

Then cover with second piece of the cake.

Add the rest of the chocolate filling.

Cover with the third piece of the cake. (5 by 11)

At this point I like to transfer the cake into the fridge or freezer.

While the cake is resting in the fridge, mix the heavy cream and Whip it (if you are using it)

Cover the whole cake with heavy cream and decorate with shaved chocolate and ground walnuts.

Quick Note

Butter – I used organic, unsalted butter. For this recipe the butter must be at room temperature.

Chocolate – I used semi sweet chocolate but you can use dark or unsweetened.

Eggs – use large, organic eggs (say hello to your local farmers market)

Heavy Cream – I used 35%

Walnuts – I bought the walnuts from the Costco. (in my opinion the best price. $15 for 1 kg)

It is an old fashion traditional recipe from Serbia.

And let me say again: The best chocolate dessert where the cake is almost invisible because the chocolate filling is the BIG BOSS! You will love, love this cake.
