If you love/like walnuts this is MUST make recipe.Yes, my dear reader you need to make this recipe for any holiday season.

You don’t need to be Martha Stewart to make this easy Walnut Christmas cake. 

​So, to make this cake you will need to have the following ingredients…

Shopping List for Walnut Christmas Cake

  • butter (room temperature)
  • sugar
  • eggs (room temperature)
  • flour
  • walnuts
  • baking powder
  • milk

Equipment Needed

-KitchenAid mixer (or the stand mixer you are using. Can be hand mixer too)

-mixing bowl (large bowl)

-measuring cup

-separate bowl 

-sauce pan

-baking pan 9 by 13 inches

Action Time

Making Moon Walnut Christmas Cake

Ingredients

1 layer

1/2 + 1/8 cup butter (unsalted and room temperature)

2/3 cup regular sugar

5 egg whites

3 TBSP flour (AP)

1 and 1/4 cups ground walnuts

1 tsp baking powder (aluminum free)

Filling-2nd layer

5 egg yolks

5 TBSP regular sugar

Walnut Topping

1/4 cup butter

4 TBSP sugar (or 1/4 cup)

1/4 cup milk

3 cup grated walnuts

​Decoration: ground walnuts

Instructions for Festive Recipe

Line 9×13 baking pan with aluminum foil (or parchment paper)

Preheat oven to 350 F.

Dry ingredients

Mix flour, baking powder and ground walnuts. Set aside.

Mixing bowl 1:

Using a large bowl beat 5 egg whites to stiff peaks. Set aside.

Mixing Bowl 2:

In another bowl mix butter and sugar until light and fluffy.

Then add egg whites from bowl 1 and mix all ingredients in a very low speed.

Your next step is to add flour mixture with walnuts.

Mix until all ingredients are incorporated.

Pour batter into the prepared 9×13 baking pan.

Bake at 350 F for about 12 minutes. (it will not be completely baked)

While your cake is baking, prepare the layer 2.

Yellow Layer

Mix 5 egg yolks and 5 TBSP sugar until the mixture becomes thick and triples in volume. (about 5 minutes, check image 1 and 2 below)

Set aside.

After 12 minutes remove cake from the oven.(image 3 below)

Spread egg yolks mixture on top of the cake. (image or picture 4 below)

Return cake to oven and bake for additional 12 to 14 minutes.

Use toothpick to test if cake is done. (image 5 above, cake is baked)

While first and second layer of the cake are in the oven, make the best walnut topping.

Walnuts Topping Recipe

Using a small bowl add 1/4 cup butter, 1/4 cup sugar and 1/4 cup milk. (image 1 below)

Heat on a medium temperature until boils. (image 2)

Add 3 cups grounded walnuts and mix all ingredients together. (you can add more walnuts, image 3)

Important: You can add more walnuts but be sure the mixture is spreadable.

When cake is baked, remove from the oven and top with walnuts topping. (image 4 below)

Sprinkle with additional ground walnuts. 

Cool the cake.

When cake is cooled or next day if you can wait…

Cut the walnut cake into moon shapes. 

You can use cookie cutter or you can just use glass and cut into moon shape.

Transfer to the baking tray.

Important: you can cut into squares, moon shapes or any smaller sizes you like.

Quick Note

Eggs – please use large, organic eggs

Flour – use all purpose flour, unbleached

Milk – I used 2% milk

Walnuts – my favorite place to buy walnuts is Costco. The best price.

Baking Powder – use aluminum free baking powder
