Let me give you a little more information about this elegant dessert …
Description of Austria Sacher Chocolate Torte or Sacher-Torte Recipe
The world famous recipe was created by Franz Sacher in 1832.
Austrian state chancellor Prince Klemens Wenzel has requested a dessert for a special occasion to impress a group of guests.
The head chef was ill that day which left a 16 year old Franz Sacher to use his imagination and talent and step up to the challenge.
And he did. He created the most famous cake made of chocolate cake layers with one or more layers of apricot jam and covered with smooth chocolate glaze. God, who doesn’t want this cake.
The cake is full of melted chocolate, butter, eggs and apricot jam.
Yes, this cake is the true magic full of chocolate flavors and served with heavy cream in many coffee shops in Austria.

Equipment Needed
-baking sheet (16 by 12 inches)
-glass measuring cup (4 cups size)
-sauce pan
-KitchenAid mixer (or the mixer you are using. Can be hand mixer too) or electric hand mixer
-large mixing bowl (for the chocolate cake)
-wooden spoon

Making Austria Sacher Chocolate Torte or Sacher-Torte Recipe
Ingredients
6 eggs
1 1/2 cups sugar
1/2 cup unsalted butter
6 oz dark chocolate
3 oz semi sweet chocolate
1/3 cup unsalted butter
1/2 cup sour cream (14%)
1/2 TBSP pure vanilla extract
1 1/2 all purpose flour
1/2 TBSP baking powder
1/2 tsp salt
Syrup
1/3 sugar
1/2 cup water
Filling
1 jar apricot jam (375 gr)
Chocolate Glaze
1/2 cup heavy cream
1 1/2 cups chocolate chips
Whipped Cream
1 cup heavy cream
1/4 cup sugar
1/2 tsp vanilla extract
Instructions for making Sacher Chocolate Torte
Preheat oven to 325 F.
Line baking sheet with aluminum foil /parchment paper. Spray with baking spray.
To a medium size bowl add sifted all purpose flour, baking powder and salt. Set aside.
Add to the mixing bowl 6 egg whites and mix using the whisk attachment until foamy.
Reduce mixer speed and add 3/4 cup sugar very slowly.
When all sugar added increase the speed and mix until medium peaks form. (picture 1)
Meanwhile using the double boiler method add chopped chocolate and unsalted butter into sauce pan.
When chocolate and butter are melted and happy together remove from the heat. (picture 2)
Add 3/4 cup of the sugar to the the melted chocolate and mix together. (picture 3)
Set aside to cool. (about 10 minutes)








When the chocolate mixture is cooled add 6 egg yolks, sour cream, pure vanilla extract and mix until well combined.(picture 4 and 5)
Your next step is to add flour mixture. (picture 6)
Mix until flour mixture is incorporated with the chocolate mixture.
Then carefully fold 1/3 of egg white mixture. (picture 7)
Continue adding egg whites in 2 additions.
Important: Carefully fold the egg whites using the spatula.(don’t use the mixer when adding egg whites)
When egg whites and chocolate mixture are incorporated transfer to the prepared baking sheet.
Bake at 325 until done. (picture 8)
For my oven it was 17 minutes.
Let it cool.
Making Sugar Syrup and Chocolate Ganache
To a small sauce pan add sugar and water.
Cook over high heat util water is boiled and sugar is dissolved.
Remove from heat and cool.
Making smooth chocolate glaze
To a small sauce pan add heavy cream and heat until steaming hot.
Pour the heavy cream over the chocolate chips and let it sit for 3 minutes.
Then stir until you get smooth chocolate glaze.
Assembly of the Austria Sacher Chocolate Torte
Cut the cake into 6 by 9 inches.
Place first cake layer on wire rack and brush with cooled syrup.
Spread apricot jam and top with second cake layer.
Brush the top of the second layers chocolate cake with syrup.
Spread remaining apricot jam.
Transfer to the fridge until set. (about 45 minutes)
Remove from the fridge and pour smooth chocolate glaze over the top of the cake and sides of the cake.
Decorate as you wish. I used shaved dark chocolate and icing sugar.





Transfer to the fridge until set.
Serving Sacher Torte
Select your best plate, add the slice of the most delicious chocolate cake and serve with generous amount of whipped cream.
Of course if you are planning trip to Austria and visiting Sacher hotel you will have to order cup of coffee too.
Yes, Sacher-Torte and coffee are the best friends in Austria.
How to prepare whipped cream
Add heavy cream, sugar and vanilla to the mixing bowl.
Mix until stiff peaks.
When ready to cut the cake use the serrated knife or the best knife you have for cutting the cake.
Important: Dip knife into hot water and dry. Make cut. Again dip into hot water and dry. Cut.

Quick Note
Eggs – use large, organic eggs
Chocolate – for the best chocolate flavors I used combo or dark chocolate and semi-sweet milk chocolate.


BTW, you can use all dark chocolate.
Flour – I used all purpose flour, unbleached
Heavy Cream – I used 33%
Butter – unsalted butter, room temperature
Apricot Jam – this is the one I used for this recipe
