This is not 7-layer bars or hello dolly bars. No it is not.

But it is better. Way better.

It is made for all of you coconut lovers, walnuts lovers and of course the Chocolate lovers. 

Add to this a little bit of coffee and you you will have the most magic cookie bars you will ever imagine.

Shopping List for Walnut Chocolate Bars

  • eggs
  • milk
  • sugar
  • flour
  • unsalted butter
  • Dr. Oetker Pudding Vanilla
  • walnuts
  • coconut
  • dark chocolate chips or milk chocolate
  • heavy cream
  • Wafers (tort wafers or oblatne)

Equipment Needed

-KitchenAid mixer (or the stand mixer you are using. Can be hand mixer too)

-food processor

-mixing bowl (large bowl)

-measuring cup

-separate large bowl 

-sauce pan

-2 baking sheet (16 by 12)

Making Coconut Walnut Chocolate Bars

Ingredients

First Layer

4 egg whites

2/3 cup sugar

3 TBSP flour

2 cups coconut

1 wafer 

Second Layer

4 egg whites

2/3 cup sugar

1 1/3 cups walnuts, ground

3 TBSP flour

1 wafer

Filling

8 egg yolks

1/2 cup sugar + 2 TBSP sugar

1 Dr. Oetker Vanilla pudding

2 cups milk

1 TBSP flour

1 cup butter, room temperature

Chocolate Icing

1 cup dark chocolate chips  (semi-sweet chocolate chips)

1/3 cup heavy cream

Instructions for Making Magic Bars

Preheat oven to 375 F.

Line baking sheet with parchment paper and place 1st wafer, flat side down. Set aside.

To the mixing bowl add egg whites and start slowly adding the sugar.

Mix until soft peak and then add flour/coconut.

Then mix until all ingredients are incorporated.(very quick)

Then spread the coconut mixture evenly across the wafer.

Bake at 375 F for 10 to 12 minutes or until the top is golden.

Remove from oven and cool.

Steps for walnut layer. (everything is the same as the previous layer and you are using walnuts and not coconut)

Line baking sheet with parchment paper and place 1st wafer, flat side down. Set aside.

To the mixing bowl add egg whites and start slowly adding the sugar.

Mix until soft peak and then add flour/walnut.

Keep mixing until all ingredients are incorporated.(very quick)

Then spread the walnut mixture evenly across the wafer.

Bake at 375 F for 10 to 12 minutes or until the top is golden.

Remove from oven and cool.

Making the best Vanilla Filling

Add 8 eggs yolks and sugar into the mixing large bowl. Mix for about 3 minutes.

Then add Dr. Oetker Vanilla pudding, flour and 1/2 cup milk

Mix until all ingredients are incorporated. (another minute or two)

Meanwhile add 1 1/2 cups milk and 2 TBSP of sugar to the medium/larger pot.

Bring the milk to a boil. Remove from heat and stir in the egg/pudding mixture.

Return to heat and stir non stop for about 3 minutes or until thickness.

Cover with plastic wrap and let it cool.

While the filling is cooling, mix the butter which must be the room temperature. Set aside.

When vanilla filling is cooled add the mixed butter and mix until all ingredients are incorporated.

BTW, the best part is that you are ready to assembly one of the best sweet treats ever.

Assemble of Coconut Walnut Chocolate Bars

On a flat surface, lay down baked walnut wafer, cover with the best vanilla filling and top your second baked coconut wafer or coconut lovers layer.

Important: Spread the filling evenly across the wafer. Be sure the entire surface of magic bars is covered

Press the top of coconut layer with the palm of your hand, gently. (this is done to be sure there is no major gaps between two layers)

​Then place a few heavy books on the top or something heavy.

​Transfer to the fridge for a few hours or overnight.

Next day or after few hours, let’s make the chocolate icing.

​Bring heavy cream to the boil and pour over dark chocolate chips (or chocolate you are using)

Let it sit for 3 minutes and then stir using wooden spoon until dark chocolate chips are melted.

Then, cover the top of the bars with chocolate icing.

Decorate with shredded coconut, flaked coconut, butterscotch chips, graham cracker crumbs, walnuts or with your favorite things.  

Return to the fridge until chocolate is set.

Then cut the wafers in whatever shape you like. (square, 3 by 3, 3 by 6…)

You can store magic bars in an airtight container until you are ready to eat them.

Wafer – also known as tort wafers, oblande, oblatne. You can find in Canada/USA at specialty stores, some grocery delivery services (Instacart), online retailers. (Safeway, Superstore has, Walmart…)

Heavy Cream – use 33% or 35%

Chocolate – I used dark chocolate chips but you can you semi sweet chocolate chips, baking chocolate.
