INSTANT YEAST
In a bowl, combine 1/2 cup of water, instant yeast, sugar and salt.
Then add 1 1/2 cups warm water, 4 TBSP olive oil.
Mix all ingredients together using a metal spoon.
Then start adding the flour.
If using ACTIVE YEAST PLEASE SEE NOTE BELOW:
The water temperature has to be between 110 F and 120 F.
Important: If using the active yeast, pour 1/2 cup of the water into bowl and add active yeast and sugar. Let stand for 5 min. (or up to 15 minutes). Then add salt, 1 1/2 cups warm water, olive oil.
Mix all ingredients together using a metal spoon.
ADDING THE FLOUR
Add 2 cup of flour and mix with a spoon.
Then add 1 cup of flour and keep mixing. Add 1/2 cup flour keep mixing using a metal spoon. (just imagine yourself as kitchenaid mixer).
Your next step is to start to knead. Yes, I know some people are afraid of it.
Don't. It is an easy as 1, 2, 3.
Knead dough until smooth, adding more flour by TBSP. (1/4 cup) You will know.
Transfer to prepared bowl and coat with olive oil.
Cover bowl with tea towel and let dough rise in warm area until double in volume, about 60 to 90 minutes.
And you are done. Well, almost.
Your next question is:
How to FREEZE?
Remove the kitchen towel from bowl and place your fist in the center of the dough to punch down.
Fold the dough back onto itself 5 to 6 times.
Then divide the dough into 3 equal portions or form the dough into individual balls. .
Lightly coat each ball with olive oil.
Wrap each ball with plastic wrap and slide into a freezer bag.
Seal, squeezing out all the air.
You can freeze pizza dough for up to 3 months.
How do you thaw frozen pizza dough?
Option 1: Put the ball of dough in the fridge to thaw overnight.
Option 2. Remove the ball from freezer and let stand at room temperature until thawed, about 2 hours.
