Pizza + pierogies or Pierogi Homemade Pizza.
The perfect layers of yum.
It can be made for lunch, dinner, lazy Sundays or the football season.
Super easy to make and very tasty.
This is my favorite pizza dough. I made this recipe about billion times and will continue.
So, let’s start.
In a bowl, combine 1/4 cup of water, yeast and salt. Let stand for 5 min.
Add 3/4 cup warm water, 2 TBSP olive oil, 1/4 tsp sugar.
Mix all ingredients together using a metal spoon.
Add 1 cup of flour and mix with a spoon.
Then add 3/4 cup of flour and keep mixing
until the spoon says: “Leave me alone your hard working bitch!”
Trust me, you will hear it. At this point retire your spoon unless you want the conflict to escalate.
Since I know you are kind and peaceful human being you will start using your hands at this point.
Calmly and surely. (don’t be afraid, you need to practice)
Knead dough until smooth, adding more flour by TBSP. You will know. If you add 2 TBSP of flour and
dough is happy you can stop at that point. You don’t need to use all 1/8 cup of flour.
Transfer to prepared bowl and coat with olive oil. (or use the oil you have)
Cover bowl with tea towel and let dough rise in warm area until double in volume, about 60 min or 1 hour.
THE PIZZA TOPPINGS AND FUN
Flatten your dough ball with your hands and stretch out into a round or any shape that you like. (about 9 inches or 23 cm)
Brush dough top with organic olive oil.
Spread the pizza sauce all over the top of pizza.
After that add toppings: mushrooms and mozzarella grated cheese.
To finish sprinkle olive oil and add generous amount of dry oregano.
Bake at 400 F for about 21 minutes.
While your pizza is baking in oven we will need to cook pierogi.
Take 3 to 5 pieces and cook in boiled water according to the instructions.
Remove pierogi from water. Dry them using the paper towel.
Your next step is to remove pizza from the oven. If you are asking when to remove...
Remember, after 21 minutes remove pizza from the oven.
Cover the pizza with cooked pierogi.
Top each pierogi with small slice of mozzarella cheese.
Return to the oven and bake for additional 2 to 4 minutes or until cheese is melted.
Then remove pizza from oven and sprinkle the feta cheese on top of it.
Optional: you can top with fresh onions, garlic or sour cream.
