Healthy Baked Spinach!
It is simple to make and so tasty. It can be served for breakfast or Sunday brunch.
I will repeat, simple yet special.

Total Time 55 minutes

Ingredients

  • Large package of fresh Spinach (454 gr) -
  • 1 cup shredded Mozzarella cheese
  • 1 large red pepper, chopped
  • 3 eggs (large, organic)
  • 1 cup milk (2%)
  • 1/3 cup flour (AP)
  • 1 tsp baking powder
  • 1 1/4 tsp salt
  • 1 tsp black pepper
  • 1 small onion, finely chopped
  • 3 cloves of garlic, chopped

Instructions

    Spray 9 x 13 glass pan with baking spray.

    In a small bowl combine flour, baking powder, salt and pepper. Set aside.

    Chop spinach by cutting them in small pieces and transfer into a large bowl.

    Add shredded Mozzarella cheese, eggs, milk, chopped pepper, onion and garlic.

    For your last step add flour mixture and stir until all ingredients are combined.

    Transfer into prepared baking glass pan.

    Bake at 350 F for 35 minutes or until set.

    Remove from oven.

    Optional: Top with yogurt or sour cream.

    Let cool for 15 minutes, slice into squares.

Serve with organic yogurt.
