Famous Tom Cruise Coconut Cake

Ingredients
- 1 1/2 cups flour, all purpose
- 1/4 tsp baking powder
- 1/2 tsp salt
- 3 eggs
- 1 1/2 cups sugar
- 1/2 cup unsalted butter, room temperature
- 1 cup sweetened flaked coconut
- 3/4 white cup chocolate chips
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1/2 tsp coconut extract
Cream Cheese Frosting
- 4 oz cream cheese
- 1/4 cup unsalted butter
- 1/2 tsp vanilla extract
- 1 3/4 cups icing sugar
- 2 TBSP heavy cream
- 1 2/3 cups coconut
Instructions
Preheat oven to 350 F.
Spray bundt pan with baking spray. Set aside.
To the plastic bowl add flour, salt and baking powder. Set aside.
Your next step is to add butter and sugar to the mixing bowl.
Beat with the electric mixer for about 3 to 5 minutes or until light and fluffy.
Add 3 eggs, one at the time, beating well after each addition.
Then add coconut extract, vanilla extract and sour cream.
Mix for a minute and then add the flour mixture.
Again mix until all ingredients are combined and happy together.

Just add the coconut and white chocolate chips and stir with the spatula.
Pour the batter into the prepared pan and bake at 350 F for about 60 minutes.

How to make cheese frosting?
To the mixing bowl add cream cheese, butter and vanilla extract.
Mix until smooth then start adding the icing sugar.
Be sure to gradually add the icing sugar and mix slowly until incorporated.
Add heavy cream and mix for additional 2 minutes
Frost the top and sides of the cake.
Decorate the whole cake with coconut.
