Homemade Easy Marshmallows Recipe
Super tasty and an elegant dessert that will for sure spread smiles and joy
Line bottoms of 6 inch cake pans with parchment paper. (do not grease the sides or the bottom).
Preheat oven to 375 F.
Plastic Bowl: Add flour and ground walnuts. Stir it together and set aside.
Mixing Bowl:
First mix eggs whites until foamy and then add sugar and mix until firm peaks and sugar is incorporated.
Your next step is to add the flour/walnut mixture. You are not going to use mixer at this point.
Fold flour and walnuts into eggs mixture using a spatula.
Stop mixing when no streaks of flour remain.
Important: Be sure the flour/walnuts is incorporated.
Pour the batter into 6 inch prepared pan.
I used about 2 cups for each pan.
Bake at 375 F for about 14 minutes or until done. (start checking after 10 minutes)
Remove from the oven and let it cool in pan for about 15 minutes.
Making the Yellow Filling
Add egg yolks, sugar, pudding and flour into 1/3 cup of milk.
Mix with your mixer until smooth.
The rest of the milk and 1 TBSP of sugar transfer to the sauce pan and heat until it boils.
When milk boils remove from the heat and add egg and pudding mixture.
Return to heat and stir non stop for about 5 minutes or until thickness.
Then remove from heat, transfer to the mixing bowl, cover with plastic wrap and let it cool.
While the filling is cooling, mix butter until smooth.
Add cooled yellow filling to the mixed butter.
Mix all ingredients until incorporated.
IMPORTANT: Take 6 tea cookies (munchmallow cookies) and separate marshmallows top from the bottom of the cookie. (check the picture below). USE The BOTTOM OF THE COOKIES AND CRUMBLE INTO SMALL PIECES.
Your next step is to divide yellow or sunshine filling into 3 parts.
One will stay yellow filling, the second one will have crumbs from the tea cookies and third one will be mixed with melted cooled chocolate.

Place first layer of the cake and cover with cookie crumble filling.
On top of cookie crumble filling add 6 marshmallow cookies (just the top of tea cookies)
Cover with yellow filling.
Add second layer cake and top with chocolate filling.
At this point transfer the cake to the freezer or fridge for about 6 hours or overnight.
Next day - Mix heavy cream and cover the whole cake.
Decorate as you wish. You can use shaved chocolate, ground walnuts or sprinkles.
