Your first step is to toast hazelnuts. If you don't know how check this link -
Caramelized Lazy Hazelnuts-100 Percent Easy
Place the toasted hazelnuts into food processor and process until hazelnuts are coarsely chopped. (just for a minute)
Then add the flour, sugar, salt and process until the hazelnuts are finely ground.
Cut the cold butter into small pieces and add to the flour mixture.
Process everything until the mixture looks like course meal.
Then add egg yolk, pure vanilla extract, hazelnut extract and process until the mixture comes together.
Transfer the mixture from the food processor into the bowl.
Shape the dough into balls using a small cookie scoop and place on a baking sheet.
Wrap in plastic and transfer to freezer overnight.
NEXT DAY
Preheat oven to 325 F.
Line baking sheet with parchment paper or silicone mats.
Place 10 cookies on baking sheet and bake for 21 minutes or until done.
Remove from the oven and cool.
Dust with icing sugar and decorate with melted chocolate.
