Moist! Delicious! Chocolaty!
These muffins are super easy to make.
This recipe is for absolute beginners.
Preheat oven to 350 F.
Line a 12 cup standard muffin pan with cupcake liners or spray with nonstick spray.
In a medium size bowl add dry ingredients: flour, sugar, cocoa, cinnamon, baking soda, baking powder and salt.
Whisk together the dry ingredients and set aside.
In a mixing bowl add egg, oil, mashed bananas and whisk until incorporated.
Add the flour mixture and stir until just combined.
IMPORTANT STEP: MIX DRY INGREDIENTS AND WET INGREDIENTS UNTIL JUST COMBINED.
Then fold in chocolate chips and chopped chocolate.
Spoon chocolate batter equally into muffin pan. (about 2 oz for each muffin cup)
Bake at 350 F for 24 minutes or until toothpick inserted into the center, comes out clean.
IMPORTANT LESSON FOR BEGINNERS!
Why is it so important not to over mix the muffins?
Because you don't want to make dense muffins. So, be sure when you combine dry and wet ingredients it is not over done. So, how are you going to know? Well, just stir until moistened. (no flour visible)
How to know when chocolate muffins are baked if they are full of chocolate?
This is how. When you insert the toothpick into the center, some melted chocolate on toothpick is OK (after all toothpick is just like us, in love with chocolate.) However be sure there is NOT batter on toothpick.
So, yes some chocolate on toothpick is OK!
This is the most important - use your imagination and create, create until it hurts. Don't be afraid.
So, my suggestion for this recipe is to use Nutella ganache to top the muffins.
