Ingredients

  • 1 1/2 cups Greek Yogurt (organic if you can)
  • 1 large cucumber, peeled and diced (about 2 cups)
  • 1/4 cup fresh Italian parsley (minced)
  • 3 cloves garlic, minced
  • 1 tsp lemon juice
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/4 tsp oregano

Instructions

  1. In a medium bowl, combine Greek yogurt, diced cucumber, parsley, garlic,
  2. lemon juice, salt, pepper and oregano.
  3. Refrigerate for 1/2 hour.
  4. Serve with vegetables or pita.
  5. My choice for today: French fries
  6. Refrigerate leftovers in an airtight container for up to three days.
