Ingredients

  • 9 oz chocolate, chopped (semi-sweet)
  • 1 2/3 cups heavy cream
  • 1/2 cup milk
  • 1 1/2 TBSP sugar
  • 6 egg yolks
  • 1/4 cup grounded hazelnuts
  • 1 TBSP hazelnut extract

Instructions

    You will need 7 ramekins for this recipe.

    Place them in a roasting pan or baking dish.

    PREHEAT OVEN TO 350 F.

    Heat the cream and milk in a medium saucepan until almost boiling.

    Remove from heat and pour over chopped chocolate.

    Stir until smooth. Add hazelnut extract.

    In a medium bowl, whisk 6 eggs yolks.

    After that add sugar and keep whisking until incorporated.

    Your next step is very important:

    GRADUALLY add the melted chocolate while whisking.

    Please don't rush this step. You don't want to scare egg yolks.

    I will repeat, gradually add the melted chocolate and whisk until all ingredients are incorporated

    and they are part of this happy chocolate life.

    Now, divide this chocolate mixture among 7 ramekins.

    Add hot water to the baking dish until reaches halfway up the outside of the ramekins.

    Transfer to the oven and bake for 30 minutes at 350 F.

    Remove from oven and let it cool for about 30 minutes.

    Then remove ramekins from the hot water and let it cool completely.

    Decoration

    Serve with whip cream, shaved chocolate and hazelnuts.
