Chocolate Chip Brownie Cookies

Amazing union between chocolate chip cookie and 5 star brownies

Ingredients

  • Chocolate Chip Cookies
  • 1 cup chilled unsalted butter
  • 1/2 cup white sugar
  • 1 cup dark brown sugar
  • 2 large cold eggs
  • 1 tsp vanilla
  • 2 cups AP flour
  • 1 cup cake flour
  • 1tsp salt
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 TBSP corn starch
  • 2 cups semisweet chocolate chips ( I used Ghirardelli)
  • 1 cup toasted chopped walnuts

  • Brownies
  • 1/2 cup unsalted butter
  • 1/2 cup cocoa
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup AP flour
  • 1 tsp salt
  • 1/2 tsp vanilla extract

Instructions

  1. Cube 1 cup of chilled butter into 1″ pieces.
  2. Put white and brown sugar in stand mixer bowl and mix until well combined.
  3. Add cold cubed butter and continue mixing for about 5 min.
  4. Add eggs, one at a time until well incorporated.
  5. Add 1 tsp vanilla and mix.
  6. In a bowl combing all purpose and cake flour,salt, baking powder, baking soda and corn starch.
  7. Whisk until all dry ingredients are well mixed.
  8. Add flour mixture to butter mixture and mix until fully incorporated.
  9. Add 2 cups of chocolate chips and 1 cup of walnuts and mix by hand.
  10. Refrigerate cookie dough from 2 hrs.
  11. Scoop and roll balls of dough. The size is 1 TBSP.
  12. Freeze them.
  13. For this recipe you will need 6 of frozen chocolate chip cookies
  14. Now, let's make the brownies.
  15. Instructions
  16. Preheat oven to 350 F.
  17. Line a 6 cup muffin tin with cupcake liners.
  18. Melt 1/2 cup butter and 1/2 cup cocoa on low heat.
  19. Add 1 cup sugar and stir constantly for about 5 minutes.
  20. Remove from heat and cool for 5 minutes.
  21. Add first egg and mix well.
  22. Add second egg and mix well.
  23. Then add 1/2 cup flour, 1 tsp salt and 1/2 tsp vanilla extract.
  24. Mix well all ingredients by hand.
  25. Assembly Time - Chocolate Chip Cookies and Brownies
  26. In each cupcake liner add brownie batter using the ice cream scoop. (size 2 oz)
  27. Drop frozen chocolate chip cookie dough in the middle of each brownie.
  28. Bake at 350 F for about 23 to 25 minutes.
  29. Cool it.
  30. Pour raspberry sauce over chocolate chip brownie cookie.
  31. Decorate with whip cream.
  32. Enjoy and share.
