Potato Feta Onion Pie

Ingredients

  • Phyllo (thawed if frozen)-10 sheets
  • 2 1/2 lbs potato
  • 3 - 5 onions, chopped
  • 1/2 cup Feta cheese
  • 1/2 cup sour cream
  • 1/2 cup water
  • 1 1/2 TBSP salt
  • 1/2 +1/8 tsp black pepper

Instructions

  1. Coat an 9x13 inch baking pan with 2 TBSP oil and set aside.
  2. Make filling:
  3. Peel and grate potatoes, rinse and allow to drain in a strainer.
  4. Then transfer into a large bowl.
  5. Add chopped onions, salt and pepper.
  6. Your filling is ready for phyllo sheets.
  7. Now, place 2 sheets of phyllo dough on a work surface.
  8. Spread potato/onion filing.
  9. Roll into a cigar shape.
  10. Repeat until all potato/onion filling is used.
  11. Drizzle oil on top  and spread 1/2 cup of sour cream over oil.
  12. Bake at 400 F for about 30 minutes.
  13. Use 1/2 cup warm water and spread over the baked pie.
  14. Drizzle feta cheese on top. (I used 1/2 cup, you can use as much as you want to)
  15. Return to oven for additional 5 minutes.
  16. Cool it for 15 minutes.
