Ingredients

  • 3 eggs
  • 1 cup brown sugar
  • 1/3 sugar
  • 3/4 oil
  • 1/2 TBSP vanilla extract
  • 2 cups flour (AP)
  • 2 tsp baking powder
  • 1/2 TBSP cinnamon
  • 1/2 tsp baking soda
  • 1/4 ground cloves
  • 1/4 salt
  • 2 cups finely grated carrots
  • 1 cup walnuts

  • Cream Cheese Frosting
  • 8 oz cheese
  • 1 3/4 cups heavy cream
  • 1 1/3 cup icing sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350 F.
  2. Line 9x13 with aluminum foil.
  3. Whisk 3 eggs, 1 cup brow sugar, 1/3 cup sugar and 3/4 cup oil.
  4. Add 1/2 TBSP vanilla and mix it.
  5. In a separate bowl, sift 2 cup AP flour, 2 tsp baking powder, 1/2 TBSP cinnamon, 1/4 salt, 1/4 cloves, 1/2 tsp baking soda.
  6. Add flour mixture to the eggs/oil/sugar mixture.
  7. Mix everything together.
  8. Add 2 cups grated carrot and 1 cup walnut.
  9. Mix all ingredients together and pour into 9x13 pan.
  10. Bake for 30 to 35 minutes at 350 F or until toothpick inserted into center cake comes clean.
  11. Cool it.

  13. Whip Cheese Frosting
  14. Beat 8 oz cheese and 1 1/3 icing sugar and then add 1 tsp vanilla extract.
  15. In a bowl #2 whip 1 3/4 cups heavy cream until thick and fluffy.
  16. Fold whipped cream into cheese mixture.
  17. Mix until incorporated.
  18. Spread cheese frosting over your carrot cake.
