Delicious, soft and easy. You can make for the breakfast or brunch. It is a terrific and unique dish to take to any potluck.

Ingredients
2 cups AP flour
1 cup milk (2%)
1 TBSP active dry yeast
1 tsp sugar
1/2 cup olive oil
1 egg + 1 egg yolk
1/2 TBSP salt
Optional: Sesame seeds
Instructions
Add 1 TBSP active dry yeast to warm milk (1 cup). Add 1tsp sugar and stir.
Leave it for 5 minutes until foams.
Then add 1/2 TBSP salt, 1/2 cup olive oil and 2 cups of AP flour.
Using KitchenAid mixer mix for 5 min on medium speed.
Let it rest for 5 min. Remember, just like any human, machine needs a break too.
After 5 minutes of rest, turn the mixer on and mix for another 3-4 minutes.
It should be medium firm.
If it is too soft, add more flour.
Dust your working surface with flour and knead your dough by hand (10 to 15 times).
If you don't like to knead don't worry, this process is really short, like 1 to 2 min.
And remember, just play with your dough. It doesn't need to be perfect.
Place the dough back into bowl, cover with kitchen towel and let it rise for about 45 min.
You can also place the bowl into the heated oven. It will rise faster(see note below)
When dough rises, divided into 3 equal pieces, knead each piece for 1 min.
Roll each piece into a 9 inch circle (22.5cm).
Cut each circle starting with first cut vertically, second horizontally and twice diagonally to get 8 triangles.
Fill each triangle with filling of your choice. I used feta cheese and sour cream.
Roll them.
Place each roll into prepared baking sheet.
Mix one egg yolk and 1/2 TBSP olive oil.
Brush all your breakfast rolls with egg yolk and oil mixture.
Sprinkle with sesame seeds and salt.
Bake for 20 min at 375 F.
Remove from the oven and brush with melted butter.
I melted 1/3 cup of butter.
Cover with tea towel and wait for 10 minutes before you start eating them.
They are soft and delicious.
You can serve them with cream cheese, butter or sour cream.
Note:If you decide to use the heated oven-Heat your oven to 270 F and then open the oven door. Bring the bowl into heated space for about 30 min.
