How to make healthy raspberry truffles

Healthy raspberry truffles are homemade chocolate magic from your kitchen.

Wonderful after lunch treat. Also, don't forget breakfast or dinner.

Or really any time of the day when you need to go from blah to aah.

Ingredients

  • 1 cup coconut butter (I used homemade)
  • 3/4 cup fresh raspberries
  • 3 TBSP maple syrup (organic, if you can)
  • 1 1/2 cups chocolate chips
  • Optional:1 TBSP oil

Instructions

    In a food processor mix coconut butter and fresh raspberries until combined.

    After that refrigerate for about 1 hour.

    Shape into 1 inch balls or any size you like.

    Freeze uncovered 30 minutes. (or cover and freeze overnight)

    Your final step is to melt chocolate using double boiler method.

    Cool it.

    Optional: Add 1 TBSP of oil to chocolate and melt it until smooth.

    Now, dip raspberry balls into melted chocolate, tap off excess chocolate.

    Place on lined cookie sheet or large plate.

    Immediately decorate.

    Decoration options: fresh raspberries, walnuts, coconut, icing sugar....

    Refrigerate truffles until set.

    STORAGE
    Store in covered container in the fridge.
